eafood is among those foods that we can’t ever seem to get enough of (kind of like cheese or chocolate—or wine). This is one food category, however, where it’s especially important to be mindful when it comes to our buying and eating habits. We’re not referring to food portions on our plates; rather, the portions of fish in our oceans. Seafood options like cod, salmon, tuna and shrimp often appear on restaurant menus, but the seemingly overavailability of these fish has destroyed fisheries, damaged marine habitats and influenced harmful seafood farming practices in foreign countries. With the world’s fisheries stretched to the limit, it’s time for us to make choices that are more sustainable—and more sensible. The Virginia Aquarium & Marine Science Center in Virginia Beach promotes their Sensible Seafood Program, inspiring us to only eat seafood that comes from local and sustainable sources that aren’t over-fished or harvested in environmentally destructive ways. Cullipher Farm Market Blooms By Patrick Evans Hilton

T

here was a time not too long ago when the distance between farm and fork was not very far at all. Even if a family didn’t live in the country, there was often a small garden in the backyard, and produce—beans, peas and the like—didn’t come canned; they came fresh, and kids helped to shell, cut and wash to get them ready for the dinner table. About 50 years ago, that all started to change when an emphasis was put on speed and convenience, and not so much on eating local and eating fresh. That’s a pity, and the legacy we have to show for it includes a penchant for highly processed foods and skyrocketing obesity. Thank goodness a revolution in the way we eat is occurring. Whether it is a greater awareness of the problems associated with eating canned and packaged dishes or a desire to get back to a simpler way of life, many folks are returning to the earth. But some never left—like the Culliphers, who operate a country farm market in the sleepy southern Virginia Beach hamlet of Pungo and a city market along the bustling First Colonial corridor in the northern area of the resort town. The Culliphers can also be found at area farmers markets, like the Shore Drive Farm Market in Virginia Beach and Farmers’ Fare at East Beach in Norfolk. They also operate a strawberry patch each spring and a pumpkin patch each autumn. Cullipher also offers CSAs— Community Supported Agriculture—where subscribers directly receive fresh items particular to the season. Produce for the markets come from the 250-acre farm, located in Pungo, which has operated for six generations by members of the Cullipher family. Currently, more than 10 acres are certified as USDA organic land. Look for vegetables from the good earth, like snap beans, asparagus, lettuces, sweet corn, squash, pumpkins, tomatoes, sweet potatoes and greens. Fruit includes strawberries, raspberries, blackberries, blueberries, melons and figs. Grab a basket, and let’s hit the market!

Craft Cocktails, Commonwealth Style Create These Refreshing Summer Sippers Using Virginia-Made Products

ith all the exciting new distilleries popping up throughout the state, along with the distinguished establishments that have been crafting quality small-batch spirits for years, you have no reason not to give your summer sippers some love this season by using Virginia-made liquor—rum, bourbon, vodka, gin and more. Whether you shake them up by the pool, on the back porch, at the beach or on a countryside picnic, cool off with our suggestions for refreshing and delish drinks. When available, don’t forget to also incorporate local produce, honey and herbs into the creations below or in any of your favorite adult beverages to truly make them commonwealth-style cocktails.

Bowman Bourbon Punch Ingredients

4 oz b ourbon (Recommend: Bowman Brothers from A. Smith Bowman Distillery in Fredericksburg) 4 oz orange juice A few dashes blood orange bitters Ginger beer Serves: 2 Method

Combine bourbon, orange juice and a few dashes of blood orange bitters in a shaker filled with ice. Strain into mason jars filled with ice about until about two-thirds full, top with ginger beer and garnish with fresh orange slices.

About 1 cup watermelon, diced 2 tbsp sugar 6 mint leaves Juice from ½ lime 2 oz. Virginia-made white rum ( Recommend: Silver Fox Light Rum from Great Dismal Distillery, Norfolk) Splash club soda Serves: 1

Method

In a glass, muddle the watermelon, sugar, mint leaves and lime juice together. This can take a minute or two to finely muddle the watermelon down. Add a few ice cubes, the rum and a splash of club soda on top. Stir and enjoy.

The Royal Blush Ingredients

6 oz V irginia-made vodka (Recommend: Blue Ridge Vodka from Chesapeake Bay Distillery, Virginia Beach) 3 oz fresh lime juice 2 oz simple syrup 4 tsp cherry juice 10 fresh mint leaves 8 oz V irginia sparkling wine Serves: 4 Method

Combine vodka, lime juice, simple syrup, cherry juice and mint leaves in a shaker with ice. Shake until chilled and strain into 4 martini glasses. Top each glass with champagne and serve.

Virginia Bee’s Knees Ingredients

1 ½ oz honey simple syrup made with local honey 1 ½ oz fresh lemon juice 4 oz V irginia-made gin (Recommend: Strange Monkey Gin from Silverback Distillery, Afton) Serves: 2 Method

Combine honey syrup, lemon juice and gin in a shaker with ice. Shake until chilled and strain into 2 glasses.
