Italian Cruise: Livorno

April is always an exciting time in the Sonoma Valley because it’s the month when our dormant season truly ends and we see bud break in the vineyards. It’s amazing how quickly tiny buds and flowers lead to full-blown leaves and the beginning of grape clusters. It’s not only the vines that come to life. As the weather warms, our beautiful and historic valley attracts visitors from all around the country and even from around the world. With that in mind, we have put together a very full calendar of special events between now and the end of this year. We’ll be barbecuing, pairing wine and food, feasting on lobster, making bruschetta and tasting wines from barrels. Explore the art of cooking pizza, making mozzarella cheese, decanting wine, and even the art of folding a dinner napkin! Events will be taking place nearly every weekend with special gatherings on Mother’s Day, Father’s Day, Fourth of July and Labor Day. One of our biggest events will be our Italian-California Festival set for July 17-18th. And of course September 5th, we embark on our 12-day Italian wine cruise. 2010 Italian Wine Cruise September 5th-17th, 2010 Places of Interest Duomo, Florence. The best-known site and crowning architectural jewel of Florence is the domed cathedral of the city, Santa Maria del Fiore. Piazza della Signoria, Florence. L-shaped square in front of the Palazzo Vecchio, which houses many historical buildings and statues, including the Fountain of Neptune and a replica of the David. Uffizi, Florence. One of the most famous art galleries in the world. Contains works of art from Giotto, Cimabue, Botticelli, Leonardo da Vinci, Donatello, Michelangelo and Raphael.

Palazzo Pfanner, Lucca. Once a palace, now converted into a museum of art and artifacts, is surrounded by beautiful gardens.

Monumento dei Quattro mori, Livorno. A symbolic monument of Grand Duke Ferdinando II and four bronze statues depicts the celebration of a Medici victory over the pirates who roamed the Mediterranean.

San Michele, Lucca. A majestic church, with its medieval façade, is built where Lucca’s Roman forum once stood.

Piazza dei Cavalieri, Pisa. The second main square of the city, his square was the political center in medieval Pisa.

Livorno

Livorno serves as a gateway to Tuscany and the great cultural centers of Florence, Lucca, Pisa and Siena. The national language evolved from Livorno with Dante and other great Tuscan writers of his period. But even more significant is the influence this area had on the culture of the rest of Italy and Europe, adding monumental wealth to the architectural and artistic history to its surrounding neighbors.

Explore Sonoma

After your next visit to Viansa, plan to spend the rest of your day exploring the picturesque town of Sonoma—the fatherland of California’s wine industry and home to some of the state’s oldest wineries. A few suggestions follow, and also feel free to ask our tasting room staff for help in putting together an adventure perfectly suited to you. Walk through history. The town of Sonoma is steeped in history and offers 20 historical sites for you to visit—many of which are within easy walking distance of each other. Start at the Mission San Francisco Solano (363 Third Street West), which dates back to 1823 and is the northernmost outpost of a trail of Franciscan missions that started in Mexico. From there, walk across the street to the Sonoma Barracks, built in 1836 and home to the Bear Flag Party. In 1846, the Bear Flag Party staged a revolt and declared California to be a republic free from Mexican rule. A large bronze statue marking the place where that revolt took place can be found on the Plaza. Lachryma Montis, the home of General M.C. Vallejo, (West Spain Street, near 3rd Street East) is less than a mile from the Plaza and definitely worth the visit. Shop for artisan treasures. Sonoma’s historic downtown Plaza is lined with art galleries, clothing and jewelry boutiques along with book shops and antique stores. Many of the items offered are local and handmade. Be sure to explore some of the charming passageways that weave between buildings. They will lead you to even more unique shopping experiences. Eat and drink well. Hard not to in this town that has to have more great restaurants per square foot than any other place in California. Enjoy a casual bite, a variety of ethnic delights or a full-on wine country feast. No surprise that Sonoma is known for its wine shops, along with delis, bakeries, coffee shops and cheese factories. Take in a view. Hike the Overlook Trail and you’ll be rewarded with panoramic views of all of Sonoma Valley and well beyond. The trail head to this three-mile hike is at the Mountain cemetery off First Street West, just four blocks from the plaza. The maximum grade is a not too intimidating: 7%. Roam around on two wheels. Sonoma is a cyclist’s paradise and offers both flat and easy cycling trails and grueling mountain rides. A paved trail that runs close to the plaza connects downtown with the historic site of General Vallejo’s home. Or rise to the challenge of a ride up Lovall Valley Road where you’ll briefly cross into Napa County before circling back into Sonoma.

How To

Pantry Spring Cleaning:

Ensuring the Freshest Food Possible

While it’s true that wine often benefits from aging, the same cannot be said for spices, oils and other food ingredients. Even when stored properly, many ingredients lose flavor and integrity with each passing week and month. So this spring, extend your housecleaning efforts to include your pantry, refrigerator and freezer. 1) Start with reviewing jarred and bagged spices. Spices and herbs are particularly delicate. In general, it’s safe to say that spices should be replaced every two to three months. So if you have a host of little jars in your pantry (and many with dusty tops!) it’s probably time to get rid of them. If you’re not sure, open up the container and take a deep whiff. If the spice smells dusty, or has a putrid smell at all, it’s too old to be used in cooking. You can also take a small pinch of a spice between two fingers, grind it slightly to release odors, and sniff again. If very little scent comes through, you can rest assure that the spice is tired and needs replacing. 2) Don’t do a blanket restocking of spices. Wait until you need a particular herb or spice for a recipe before you purchase it, and then buy only a small quantity unless you think you will soon have a need for the same ingredient. 3) Even though oils don’t spoil as quickly as other types of fat, such as butter, they do grow rancid over time and need to be disposed of. So dig out all those half-empty bottles of oil and check for freshness dates. Oils to which vegetables, fruit, herbs and spices have been added should be checked closely because sometimes mold can develop on the those extra ingredients. 4) Explore your refrigerator. Yes, it can be a scary place where mold happily grows and transforms food into science experiments. But explore you must. It’s easy to see when fruits and vegetables have no life left or that yeast packets have expired, but don’t forget to check each jar of mustard, jam, marinade, sauce and salad dressing. 5) And finally, freezers are wonderful for extending the life of various foods but they don’t add indefinitely to the longevity of an item. Freezing greatly contributes to the degradation of the food in every possible way. Depending on the food, changes can take place in a matter of a couple of weeks. Not sure how long something has been in your freezer? Then it’s probably time to throw it out.

Wine Pairing Recipes BRUSCHETTA al POMODORA 2 T Viansa Extra Virgin Olive Oil Fresh mozzarella, sliced 1 jar Viansa Tomato Basil Jam 2 green onions, chopped 2 T fresh basil, chopped Viansa Italian Sea Salt & Tellicherry Pepper, to taste 1 loaf crusty Italian bread, sliced Freshly grated Parmigiano-Reggiano

Heat oven to 350ºF. Slice bread into ¼ inch slices. Brush lightly with Viansa Extra Virgin Olive Oil. Place on cookie sheet. Bake until golden brown, about 10-15 minutes. Top with mozzarella, Viansa Tomato Basil Jam, onions, basil, salt and pepper. Serves 18-24. Serve with Viansa 2005 La Nebbia

PARMESAN PESTO RISOTTO 3 cup Chicken Stock or vegetable stock ¼ cup Viansa Extra Virgin Olive Oil ½ large sweet onion, chopped 1 clove garlic, minced 1 ½ cups Arborio Rice Viansa Italian Sea Salt & Tellicherry pepper to taste 7 oz Viansa Pinot Grigio ¾ cup Parmigiano-Reggiano, grated Pine nuts, garnish Optional toppings: Seared salmon, Sautéed mushrooms

Pesto ½ cup Viansa Extra Virgin Olive Oil Fresh basil leaves

Risotto: Add stock to saucepan. Bring to boil over high heat. Once boiling, remove from heat and keep warm. In separate pan over medium heat, add olive oil and onion. Stir and allow to sweat until translucent. Add garlic, stir well. Add rice, stir for one minute. Season with salt and pepper. Add wine and two ladles of stock to pan, stirring until absorbed. Repeat, each time allowing stock to be absorbed before adding more. Repeat until all stock has been used, about 15-20 minutes. Once cooked, remove from heat. Fold in ½ Parmigiano-Reggiano. Allow risotto to rest a few minutes prior to serving. Pesto: Add Viansa Extra Virgin Olive Oil and basil leaves to food processor. Pulse until well blended. Fold in to risotto just before serving. Garnish with remaining Parmigiano-Reggiano and pine nuts. Serves 16, ½ cup servings. Serve with Viansa 2009 Sauvignon Blanc

LAMB FRICASSEE WITH ARTICHOKES 1 ½ lb leg of lamb, deboned 5 T Viansa Extra Virgin Olive Oil 2 T unsalted butter 1 ½ cups Viansa Chardonnay 1 jar Viansa Artichoke Tapenade with Roasted Garlic 2 T Italian flat leaf parsley, finely chopped Viansa Italian Sea Salt & Tellicherry Pepper, to taste 1 egg yolk Juice of 1 large Meyer lemon

Trim fat off leg of lamb. Cut it into 1” cubes, set aside. Heat Viansa Extra Virgin Olive Oil in large pan. Add butter, lamb and wine. Cook until wine begins to boil. Sear over high heat for 1 minute. Add ½ the tapenade, parsley, salt and pepper. Cover and simmer over low heat for 15 minutes, or until center of meat is tender (if necessary, add a little water during cooking). Add remaining tapenade. A few minutes before removing from heat, beat egg yolk and lemon juice in small bowl. Pour into pan and mix well to thicken sauce. Serve over risotto or pasta. Garnish with Italian flat leaf parsley. Serves 6. Serve with Viansa 2005 La Nebbia

CANTUCCI TIRAMISU Viansa Almond Biscotti Mix, prepared, 7 cookies ½ cup espresso or Italian blend coffee, prepared 1 cup heavy whipping cream 8 oz mascarpone cheese ½ cup cane sugar 4 T dark rum or brandy Cocoa powder, garnish Chocolate shavings, optional garnish

Viansa Almond Biscotti: Prepare according to package directions. Prepare coffee and chill. Chill whipping cream in bowl, about 1 hour. After chilling, whisk whipping cream until stiff peaks form. In medium bowl, mix mascarpone cheese, sugar, and rum/ brandy, mix until smooth. Fold in whipped cream to create cheese mixture. Break biscotti into bite size pieces. Dip biscotti in espresso for a few seconds, coating all sides. Layer mascarpone cheese mixture in individual serving dish. Top with biscotti. Repeat 2-3 times, finishing with mascarpone mixture. Sprinkle cocoa powder and chocolate shavings for garnish. Refrigerate 4 hours. Serves 4. Serve with Viansa 2005 V Cabernet Sauvignon

Viansa Events: Weddings

Greg&Stephanie

After Stephanie’s first date with Greg, she called her best friend to tell her that she had found her future husband. Greg proposed to Stephanie months later via a custom Mad Libs game, which they used to play in their courtship days. Stephanie happily accepted. Rather than hosting a big, over the top wedding, Greg and Stephanie opted for a smaller, more intimate affair. Living in Florida, the couple knew they wanted a destination wedding in Sonoma wine country. “We wanted to go across the country with our best friends and family members, eat the best food and drink the best wine.” However, with busy schedules, neither had the time to make it out to California to scout a location. After months of researching venues online, the couple picked Viansa Winery - site unseen- “It was everything we were looking for - gorgeous, intimate, romantic, and fun.” Working closely with their Viansa coordinator and vendors, Stephanie and Greg were able to do all their planning from their home. She chose black and white linens and added a splash of color with bright pink in her floral arrangements. Their gourmet menu choices were that of filet mignon and diver sea scallops. The day before their wedding, Stephanie and Greg arrived at Viansa for the first time. As soon as they stepped onto the property, the couple knew they had made the right decision. Being November, the vines were decorated with various shades of burnt orange and red leaves and the winery was full of bright fall colors. Later that afternoon, the couple selected the wines to be serve at the wedding. Stephanie and Greg had their ceremony in the gorgeous wine cellar. The lights were dimmed and votive candles sparkled throughout the room, providing the perfect romantic backdrop for exchanging vows. Following the ceremony, guests were invited to the tasting room where they enjoyed a variety of passed hors d’ouevres and delicious wines. After cocktail hour, guests were escorted back to the wine cellar, which had been transformed from their ceremony site to an elegant reception. A long table was set with linens and plates perfectly complimenting Stephanie’s black and white theme. The rest of the evening was full of laughter, amazing food and wine and good company, giving Stephanie and Greg the wedding they had always dreamed of. Stephanie boasts, “We were such a small group that Greg and I had the opportunity to have meaningful and intimate exchanges with each and every guest. I’ve been to many weddings where guests only get a glimpse of the bride and groom, and to us, it was a blessing to be so involved with our guests” the newlyweds said of their dream wedding. 10 10
