It’s our passion – something you’ll find true of every member of our happily carnivorous team. We know every cut, every grade, every way to cook, grill, smoke and savour it. As a proud family of 5th generation butchers, we’ve learned that deliciously succulent meat and some well-paired drinks are the key ingredients to successful events, big or small. We’ve designed a specialty event space to host the ultimate in meat evenings as a part of our Sydney Fish Market location. This enables us to offer four sought after ways for you to party with us:

food and wine aficionados. Youâ&#x20AC;&#x2122;ll get to taste the finest Australian Wagyu from farmers such as David Blackmore and Rangers Valley, as prepared by our renowned Teppan chef,

Pit Stop with the Pit Boss Why not let our Pit Boss reveal the culinary secrets of the Midwestern barbecue. You can learn everything you need to know about
the culture of smoking, like how a smoker operates, offset smoking, and wood selection. Plus inside tips on how to prepare meat, select cuts, spices and rubs, and smoking times. The World’s first Wagyu and Penfolds Grange Bar Our resident Teppan chef can be on hand to walk you through the various cuts, marble grades, Teppan techniques and quirks of raising Wagyu premium cattle. This intimate experience for 8–10 people is partnered with 6 different vintages of Penfolds Grange. It is in fact a world first to have so many Grange vintages poured by the glass in one place, something we’re very proud to be able to offer here at Vic's Meat Market.;

Terms & Conditions of Hire 1. To confirm a booking, a $500 is required as a deposit along with a credit card authorisation and terms and conditions forms completed and signed. The balance of payment must be made on the evening of the function. 2. Should the deposit not be received when requested, the date of your function will not be held and may be offered to other clients. 3. Any variation in beverage consumption, any increase in confirmed numbers, any extension of the event time and any other agreed additional costs incurred are payable on the night, unless otherwise arranged. 4. Due to high demand, once made, no refund is offered on the $500 deposit. Transfer of dates will be accepted up to four (4) weeks prior to the function date (pending availability). 5. The client shall conform to the requirements of Local Government Acts and Vic’s Meat Market policies
and will be liable for any breaches of these. 6. The Management of the venue reserves the right to remove patrons attending the function from the premises for unruly behaviour and/or showing signs of intoxication as determined by the manager or under RSA legislation. 7. The client shall remain responsible at all times for any loss or damage to the property of Vic’s Meat Market caused by the client, guests and invitees. 8. Any property removed from the venue without the express written permission of the venue manager will be charged to the client. 9. We are extremely careful when looking after our guests and their property, though unfortunately we cannot take responsibility for damage/loss of items belonging to guests before, during or after a function. 10. Smoking is not permitted in any area of Vic’s Meat Market.
11. Under 18 guests are welcome at functions, but they must be supervised by an adult at all times. Under 18’s are to be made known to the manager on site and must not consume alcohol under any circumstances. Vic’s Meat Market reserve the right to request photo identification from any person attending a function or event. 12. Delivery of third party equipment must be advised in advance, the venue will not be responsible for cost, security, set-up or transportation of any equipment and will not be liable for any loss or damage sustained. As the venue prepares for trading the following day, all items must be removed at the conclusion of the evening. 13. In the event of inability to comply with any of the provisions of this contract by virtue of any cessation or interruption of electricity or gas supplies, plant or equipment failure, unavailability of food items or any other unforseen circumstance, we reserve the right to cancel booking and refund the deposit without notice. Every effort will be made in such circumstance to provide a nearby suitable venue as replacement.
