It was stressful and I was putting a lot of pressure on myself – and him. So, I started to look at other options to diversify his diet. I wanted to simplify the cooking and baking process – and avoid having to use any fancy equipment – so came up with the ‘five ingredients’ concept. Whether you’re partial to a pizza, always choose chicken nuggets or love a leek risotto, you’ll find a recipe to suit all the family. You can sprinkle on a little grated parmesan and a squeeze of lemon if you wish.
Next, pass an adult the cup of rice you’ve measured out and get them to add it to the pan and toast it for a couple of minutes.
Ask them to turn the heat to low and add the chicken stock slowly. They need to add a good splash to start with! Once it has been absorbed, add a little more and so on stirring regularly to make sure it doesn’t stick to the pan. It will take roughly 20 minutes to cook all the way through.
Now, you can get a great big spoon and share out into bowls for your family.
Tip for grown ups: If at any point the rice looks to be drying out and you’ve used all of your chicken stock, just add a splash of boiling water until the rice is cooked.
INGREDIENTS: 1 packet of 6 sausages 1 chopped leek 1 cup of arborio rice 500ml of chicken stock 3 tbsp single cream SERVES 4 2 3 4 1 5 6 7
Halfway through (that’s 10 minutes on your timer!), ask them to add the leek to cook with the rice. Once the rice is cooked, they need to pour in the cream and turn the heat off. Carefully, you can give it a good stir and then leave it for 5 minutes. In this time it should get nice and thick.
Get an adult to get a sharp knife and chop the sausages into small chunks. They need to fry them in a little butter or oil in a frying pan on a medium heat until they are crispy.
This risotto recipe will impress your family and friends! It’s quite a difficult one, so make sure you have adults around to help.

Now, tip all of the tuna, spring onions, cream cheese and sweetcorn into a bowl and mix thoroughly. You can use your (clean!) hands if you like to make it messy, or a fork if not! Ask a grown up to turn the oven to 180 °C fan.
Feel free to sprinkle over a little extra grated cheese and black pepper if you like.

Tuna Stuffed Peppers

Ask a grown up to use a knife (or help you to) slice the pepper in two. Make sure they leave the stalks attached, but remove the seeds using a teaspoon. Get an adult to check that the oven is hot enough. Whilst they are doing that, you can spoon the tuna mixture into the pepper halves and lay them on a lined tray. Bake for 30 minutes at 180°C. Get your grown up to take them out of the oven and help you pull out the stalks.

Now, the whole sheet needs rolling into a sausage shape! You might need to ask your grown up for a hand as this bit is quite tricky. You need to make sure it’s not really tight or the pastry will stay raw!

Wash your hands with your favourite soap and dry with a towel. Ask an adult to switch the oven on to 180°C. It will be hot, so don’t touch!
Once you have your roll ready, ask a grown up to get a sharp knife and slice the roll into discs. They are now ready for you to place them flat on a tray lined with greaseproof paper. Brush them over with either beaten egg or milk. Make sure there’s space between them all so they have plenty of room to cook. Ask your grown up to take them out of the oven and make sure you wait until they have cooled before you peel them off the paper. Leave them to bake at 180°C for 25 minutes. That’s just enough time set the table for your family to enjoy your pinwheels together.
Ask an adult to help you chop up the tomatoes and grate plenty of cheese.
INGREDIENTS: 1 sheet of puff pastry 5 tbsp passata/chopped tomatoes 2 tbsp of cream cheese 1 handful of sweetcorn 1 handful of grated cheese It’s pizza party time! These pizza pinwhee ls are the perfect snack –or serve them with a little salad or chips for a yummy meal.

Mix up your grated cheese and sweetcorn in a bowl and grab a great big handful. Sprinkle the mixture across your cheese and tomatoes. Use the back of a big spoon and spread your cream cheese all over one side of the puff pastry. Wash your spoon in some warm soapy water and dry with a towel. Use it to collect your chopped tomatoes or passata and spread them all over the cream cheese. You will need to do this five times to use it all!
Optional: Add a blob of sour cream to the middle and dip in with some fresh bread.

INGREDIENTS: 2 rashers of bacon 1 tin of chopped tomatoes 1 onion 3 eggs 1 handful of chopped parsley Breakfast is the most important meal of the day. So, make sure you start your day right with these baked eggs. Yum yum! Baked Eggs
Once they’ve crisped up, it’s time to add the chopped tomatoes. Carefully tip them in –the pan will be hot so you will need help! Bring the mixture to a simmer. Ask a grown up to roughly chop the bacon and onion and fry them in a little oil or butter in a lidded saucepan until crispy. Get them to turn the heat down to low and carefully crack the three eggs into the wells you’ve created. Pop the lid on the pan and allow them to cook through for 5 minutes (or until all the egg whites have turned opaque). in these breakfastbakedeggs! done!

After about 10 minutes (wait patiently!), make 3 wells in the tomatoey liquid using a spoon. An adult will be able to help you with this. Finally, sprinkle some chopped parsley over the top if you wish.

Carefully add your chopped tomatoes and sugar. The mixture needs to simmer until it’s thickened. This will take approximately 15 minutes. Get a grown up to pop your spaghetti on to boil according to packet instructions. Top tip! Check it is cooked by throwing a strand at the wall and seeing if it sticks! Did you know that chorizo is a Spanish sausage? It’s ‘sabroso’! That’s Spanish for ‘tasty’.
Whenlike.it’s ready, add the spaghetti to the chorizo sauce along with the cream cheese and a small splash of the pasta water.
Ask them to add the chopped chorizo to a frying pan with a little oil and fry until crispy.

INGREDIENTS: 1 Weetabix 1 tbsp of peanut butter 2 tbsp of cream cheese 4 tbsp of yoghurt 1 tbsp of strawberry jam
Use your hands and crumble the Weetabix into a big bowl. Add the peanut butter. It’s sticky, so you might need to push it off the spoon with your finger! Add 2 tbsp of water to loosen the mixture. Mash it altogether and you should end up with a thick paste. Dig out spoonfuls of the mixture and squash it all down into the bottom of 2 small cups. You can use jars or ramekins if you have them in your holiday home cupboard! When they are chilled, why not ask an adult to chop up some of your favourite fruit and sprinkle on top? In another bowl, mix up the cream cheese, yoghurt and jam and stir and stir! Use a big spoon and spread the yoghurt mixture over the Weetabix bases. Pop them in the fridge and leave them for 30 minutes. This is just enough time to colour in the picture on the other page!
The summer can only mean one thing: strawberries! This recipe is simple, messy and fun – so, enjoy!

Spiced Chicken Nuggets
Make sure you have an adult around, as they will need to help you with a few parts of this recipe! First, ask them to use a sharp knife to chop the chicken into chunks.
Now, it’s your turn! Add the curry powder to the flour in a bowl and mix together really well. You can use a spoon or your hands!
Very carefully, pick up the egg and crack it into clean bowl. Try your best not to get any shell in the mix! Finally, the chicken needs to be coated in the crushed Weetabix. Make sure you cover them all over. It will stick well to the mixture! .

You now need a third bowl! Crumble the Weetabix into this. It will all make sense soon! Drop the chicken chunks into the flour and curry powder mixture. They will feel quite powdery in your hands.
INGREDIENTS: We promise, these will be the best chicken nuggets you’ll ever eat. Make enough to share with your family. We know they’ll be impressed with your skills in the kitchen! Dip them the powdered chunks into the egg. They will now feel quite wet!
The next part is grown ups only! Ask them to shallow fry the chicken nuggets on a medium heat until golden and crispy all the way around. The oil will be incredibly hot, so stand well back. You just need to wait a couple of minutes for them to cool down and they are ready to eat. Your grown up can pop them on kitchen towel to absorb any of the extra cooking oil that sticks.

Now, cover your baking tray with greaseproof paper and carefully lay your creation on top. Your pizza is ready to go into the oven! Make sure your grown up is wearing oven gloves and get them to pop it in.
Get an adult to turn the oven to 180 °C Be careful not to touch, it will get hot. This sunshine tortilla pizza is the mixture the day ahead.

Finally crack the egg into the middle. Take your time and try not to get any shell on the top.
Ask an adult to help you chop up the tomatoes and grate plenty of cheese. Sprinkle both of them all over the top. It doesn’t need to be neat! Get a fork and mash the avocado in a bowl. This can get quite messy, so make sure you are wearing your apron. Spread your mashed avocado over your tortilla bread. You can use the back of a spoon to make this easier.
The cheese will melt, the egg will cook and your pizza will be ready! Set your timer to 15 minutes. That’s just enough time to colour in the picture!

Well, you’re in charge, so pour in as much mixture as you want to create your perfect pancake. Carefully pour in the milk, crack the egg and tip in the flour. Pancakes
Ask an adult to drizzle some oil into a pan set at medium heat. They can carefully add the pancake batter in ladle-sized amounts. 12
When they have cooled slightly, pile them up into a large stack – the more the better! Use a whisk and beat until smooth. You might need an extra hand with this! 7 Get a fork and mash up the banana with the Biscoff spread. They will need to fry the pancakes on both sides until they look golden. If you want to make them extra special, ask an adult to melt some extra Biscoff in a microwave-proof jug for 10-20 seconds and drizzle over the top. Enjoy!

Tuna Sweetcorn&Patties
MAKES BETWEEN 10-12 Have you ever tried cous cous before? It’s a bit like rice and a bit like pasta. We know you’ll love it – especially when you use it to make these Tuna & Sweetcorn Patties!
INGREDIENTS: 2 eggs Half a cup of cous cous 1 tin tuna (drained) 1 handful of sweetcorn 1 handful of grated cheese
Top tip: tap it gently on a hard surface and use your thumbs to break open. Practice makes perfect! Ask a grown up to heat a frying pan on a low-medium heat with a little oil. Whilst they are busy doing this, you need to roll the mixture into pattie shapes. Get an adult to add the patties to the frying pan and fry until golden on both sides.

After which, use a fork to fluff it all up. Be careful not to tip it over the sides! Add the tuna and sweetcorn to the mix. This will help it cool down quickly. Tip the cous cous into a bowl and ask a grown up to pour over enough boiling water to cover it. Place a plate over the top to allow it to steam for 5 minutes.
When they look good enough to eat, get your grown up to remove and pat on a kitchen towel to absorb excess oil. That’s it! Quick, simple and very tasty. Once it is lukewarm, add the cheese and crack in the eggs.
Tip: don’t try and flip them too quickly or they’ll break apart.
