Well that is pretty simple. A rice cooker is an appliance dedicated to cooking rice. They come in an array of cooking pots, or pans. Generally they are pots that are ceramic, metal glass or plastic. You can use them on the stove, microwave or little electrical pots. For the most part rice cookers are little independent electrical devices. I prefer the little electrical cookers that plug in separately. Some rice cookers are large; these are used commercially. Some rice cookers are small. Generally about 5 cups of rice is cooked in one. The smaller are units are used for the home. Fully automatic cookers will wash the rice and then cook it for you. I personally have never seen one of these. Rice cookers make the process automatic. Generally, you had to stand there and ensure that heat and timing was correct so the rice would cook properly. An electric cooker for rice will do this for you. The process is not really any faster, but you are free to do other things while the rice is cooking. All you have to do is have the right amount of water in the pot. Once the rice is cooked duo to an internal timer, the unit will switch over to "warm". The rice cooker boils the water and the rice absorbs the water. This is the cooking process. The steam heat softens the rice and makes it gelate because of the starchy make-up. Cooking time is about 15 minutes. I like the rice cookers over boil in the bag because you are able to get that "sticky rice" texture and taste. I have only been able to achieve this with the high quality rice cookers like Zojirushi or Cuisinart. Which cooker is more expensive? Generally, the ones with better materials and microprocessors on the inside and utilize the latest cooking techniques for automatic cooking. Some of theses techniques are pressure cooking and dual pressure cooking. The pressure cookers do well at cooking brown rice. The little rice cookers that are less expensive use a simple heating element to cook the rice. Rice cookers can cook other foods as well. As I stated before they can make sticky rice but also porridge. I have no idea what that is nor have I tried to make it. I only know about porridge from the three little bears nursery rhyme. These pots can be steamers or little slow cookers. I have never tried it, I have a crockpot for that and that is what I stick with. Some can bake bread and even allow you to make yogurt. Personally, why be bothered with that when you can get yogurt so cheaply at the store? To each his own. The one thing you have to be weary of is if the cooker isn't made for cooking different foods, then you shouldn't do it. It can damage appliance. Also, the rice can burn and damage the Teflon pot. Once this scarring takes place the rice can adhere to the pot and taint the future batches of rice cooked in it.
