Health & Safety Program Viking has completed installation of the first full-scale PCR laboratory at sea. These new onboard facilities – an industry first – allow for unprecedented COVID testing capacity, enabling Viking to conduct daily PCR testing of every crew member and guest. The Viking Health & Safety Program is one of the most well-researched and comprehensive COVID-19 prevention and mitigation plans in the travel industry.

You have travelled to a number of places with Viking – including the Sydney to London leg of the 2019 World Cruise – what has been your favourite destination? Our four Viking voyages have each been special experiences… our first Viking voyage in 2016 was the Baltic Cruise and of course St. Petersburg was a highlight amongst many others on that itinerary. Having been inspired by this Viking experience we embarked on a 23-day Mediterranean cruise from Athens to Barcelona in 2017. In 2018 we had the pleasure of being part of the inaugural British Isles Explorer cruise which offered such wonderful and varied travel experiences. The visits to the Shetland and Orkney Islands were especially interesting. The 2019 Sydney to London leg of the World Cruise, whilst a lengthy 56-day duration, afforded us the opportunity to experience South Africa. The highlight was the optional 3-night Safari in Kruger National Park. vikingcruises.com.au
We recommend everyone give careful consideration to the optional excursions offered on each voyage to give the greatest breadth of experience in each port. What was the best part of doing a longer length cruise? A longer voyage is less rushed and provides the opportunity to get to know fellow passengers especially if you are travelling as a couple rather than with a larger group of friends. Plus, taking in lectures, enjoying the ambience of the ship and utilising the Spa are among the more relaxing experiences. Do you have any hints or tips for other cruisers when travelling with Viking? A good tip is to pre-book and pay for your shore excursions well in advance to ensure you get the excursion you want. Explore the ship’s Library if you enjoy reading. Adding a pre and post voyage to your travel plans is a special bonus. Booking the Chef’s Table is a true feast for the senses and well worthwhile. A NNE DI A MOND In January 2021, Viking delighted its guests around the world with the announcement that much-loved and respected British journalist and broadcaster Anne Diamond will be the godmother of its seventh ocean ship, Viking Venus, scheduled to debut later this year. Anne is best known for her pioneering work on morning shows in the United Kingdom during the 1980s—along with a legendary career in frontline television that has lasted for more than 40 years, and made her a household name in the United Kingdom. She has also been an inspirational campaigner, having pioneered the 1991 UK cot death campaign, following the death of her own son, Sebastian. The “Back to Sleep” campaign saved over 20,000 babies lives, and has inspired other life-saving campaigns worldwide.

The Australia to New Zealand run (as we call it) is a favourite of ours, especially over the Christmas/ New Year period. If we had to narrow it down, our favourite ports are Auckland for it’s central location to the main CBD, Tauranga for its location for a fantastic walk around the base of Mount Maunganui and the beautiful scenery that Milford Sound offers. The Debate That Spans The Tasman The Pavlova, a sweet dessert comprising a crisp meringue shell topped with whipped cream and fruit, is quintessentially Australian— after all, “baking a pav” and turning up for the backyard BBQ is about as Aussie as it gets - at least according to Australians. New Zealanders, however would beg to disagree. And so has started the debate across the Tasman with the nationality of the “Pav”, a source of light-hearted banter between the two nations for many years.

Australians and New Zealanders have squabbled endlessly for years over everything and anything from Russell Crowe, to Crowded House and even Phar Lap. But the debate over the origins of Pavlova is without a doubt one of the longest running between these two countries.
But the most recent research – years spent unravelling a culinary tangle – by Dr Andrew Paul Wood and Annabelle Utrecht, suggests that the true origins of the pavlova come from Europe and North America. Between them they discovered more than 150 recipes for meringue-based cakes that resembled the modern day Pavlova, all published before Anna Pavlova even arrived down under in 1926! And they identified the grandfather of the Pavlova, as the Spanische Windtorte, an Austrian dessert consisting of a meringue shell or layers, filled with whipped cream and fruit.
The Pavlova is named after the famed Russian ballerina Anna Pavlova, who toured Australia and New Zealand in 1926. As the New Zealand story goes, the chef of a Wellington hotel at the time created the dessert in her honour, claiming he got his inspiration from her tutu. Australians, on the other hand,
So in the end it appears that neither New Zealand nor Australia can really lay claim to the origins of the Pavlova. However, surely we can both take credit for ensuring this dessert has become a signature part of any celebration – whatever side of the Tasman you hail from.

Roast Leg of Lamb Australia and New Zealand are among the greatest lamb producers in the world and yes, yet again there is some debate over which produces the best quality! But for an absolute melt-in-the-mouth slow-cook recipe, no one can argue with this one.
INGREDIENTS
DIRECTIONS
2-2½ kg whole leg of lamb (bone-in)
1. Preheat the oven to 160°C
50g butter, softened 2-3 cloves of garlic Sea salt and black pepper
2. Before cooking, allow the lamb to come up to room temperature. Mash the butter with a fork, then crush the garlic with a generous pinch of salt and pepper until it forms a paste. Add into the butter, then rub this paste all over the lamb.
250ml boiling water
3. Place the lamb into a roasting tin and pour in the water, then allow to cook for three hours.
For the sauce:
4. Remove the lamb from the oven, draining any fat and meat juices into a bowl. Cover with foil and allow to rest.
2 tbsp plain flour 250ml lamb or chicken stock
5. To make the sauce, skim most of the fat from the meat juices, then pour into a saucepan over a low heat. Add the flour and mix well. Cook the paste for a couple of minutes, then slowly whisk in the stock. Simmer until thickened. 6. Serve the lamb with buttered new potatoes, steamed seasonal vegetables and the sauce.

Black Forest Gateau The Black Forest’s most famous dessert, Schwarzwälder Kirschtorte, should traditionally contain kirsch, a clear spirit made from cherries. This recipe uses jars of cherries in kirsch, but if you can’t find them, soak canned or fresh cherries in kirsch or brandy overnight before using.
INGREDIENTS
DIRECTIONS
170g butter, at room temperature
1. To make the cakes, preheat the oven to 180°C and grease and line two large 23cm springform cake tins.
170g caster sugar 6 large eggs, whisked 140g plain flour 2 tsp baking powder 2 tbsp cocoa powder 680g black cherries in kirsch syrup 750ml double cream 200g bar of dark chocolate Serves 6-8
2. Beat the butter and sugar together until pale and creamy, and then slowly add about half the eggs. 3. Sift together the flour, baking powder and cocoa and add about half to the butter and sugar mixture, then add the remaining eggs and finally the remaining flour mixture. 4. Split the mixture evenly between the two cake tins and level the tops. Bake for about 30 minutes or until the cakes are springy to the touch. Set aside to cool. 5. Drain the cherries, reserving the liquid, and chop into small pieces, reserving 12 for decoration. 6. Cut each of the cooled cakes in

half horizontally. Whip the cream until stiff peaks start to form. 7. To assemble, start with one of the cake halves. Drizzle generously with kirsch syrup, then spread over a thick layer of whipped cream. Scatter over a third of the chopped cherries. Repeat again with the next two layers. For the final layer, drizzle with kirsch syrup, then cover the cake with the remaining cream. 8. For the chocolate shards, brace the chocolate against you, flat side up, and carefully bring the blade of a sharp knife towards you, shaving the chocolate into curls and shards. Shower the top and sides of the cake with the chocolate shards. Finally, decorate with the remaining whole cherries. VIKING CRUISES
