Chocolate Digestive Tiffin

I don’t know about you, but I’m having to cook in a very different way these days, obviously entirely based on product availability. In the early days of this pandemic, it was nearly impossible to find flour. Which led to the question of how to make comforting sweet treats at home which didn’t contain flour. This tiffin was actually literally thrown together by my 6 year old, Billy, using what we could find in the snack cupboard. It’s not revolu tionary but has the double advantage of being great fun for young children to make, while also being insanely moreish too. Oh and plus it goes a long way – 20 big slabs of it! Obviously with all that dark chocolate and sugar, bedtime was a bit tricky when we made it. But if your children are anything like mine in these strange times, 10pm is definitely the new 7pm anyway! Enjoy…

Ingredients 1 pack chocolate digestives 125g butter 4 squirts golden syrup 300g dark chocolate 4 handfuls raisins (You can add whatever else you fancy really, handfuls of whatever you can find in the cupboard)

1. Gently crush up the digestives. 2. Melt the butter and syrup for 60 seconds in the microwave. When cooled, pour it into the biscuits and mix. 3. Add in 3 handfuls of raisins, mix again. 4. Melt the chocolate for 90-120 seconds in the microwave, then stir a couple of tablespoons into the mix. 5. Pour the mix into a non-stick tin and flatten out. 6. Spread the remaining melted chocolate over the top. 7. Pop it in the fridge for 45-60 minutes. 8. Slice into 16-20 pieces.
