Turkey Burger with Cranberry Sauce and Brussels Sprout Coleslaw

Burgers 250g turkey breast mince Serves 2 ½ red onion, diced 2 garlic cloves, grated 1. Place the mince in a bowl with the remaining 1 egg, beaten ingredients for the burger and mix well. Shape the 1 small apple peeled and coarsely grated mixture into two burgers about 3cm thick. 1 tsp smoked paprika Chill for 30 minutes. Salt and pepper Olive oil (to cook) 2. Preheat the oven to 190C/170C fan/gas mark 5. Place Brussels Sprouts Coleslaw the burgers on a lined baking tray and brush the tops 125g Brussels sprouts, trimmed lightly with the olive oil. Bake in the oven for 20-25 ½ red onion mins, turning halfway through cooking, until cooked 1 carrot, peeled through. 50g Greek yoghurt 30g mayonnaise 3. To make the coleslaw, grate the Brussels sprouts, 1 tsp Dijon mustard onion and carrot in a food processor. Place in a bowl. 1 tbsp lemon juice Mix together the yoghurt, mayonnaise, mustard, Salt and pepper lemon juice, salt and pepper and cumin. Pour the ¼ tsp ground cumin yoghurt mixture over the vegetables and coat Handful of chives, chopped thoroughly. Stir in the herbs. Handful of parsley, chopped 4. Serve the burgers in buns with lettuce, a spoonful of Rolls, lettuce and cranberry sauce, to serve cranberry sauce and the coleslaw. Nutrition per burger with coleslaw: 340kcal, fat 14g (of which saturates 2.9g), carbohydrates 15g (of which sugars 13g), protein 36g, fibre 3.8g
