Rachel Khoo’s Chocolate Bark

Making your own chocolate bark couldn’t be simpler. Great for a snack, after-dinner chocolates, or the perfect edible gift, and it will keep in the fridge for up to two weeks.
INGREDIENTS
l 200g dark chocolate (70%) broken into pieces l 15g mixed seeds (e.g. sunflower, pumpkin and sesame) l 15g pistachio kernels l 20g dried cranberries
METHOD

The toppings you can use for this are limitless. I usually see what I have left over in my cupboard – from dried apricots, figs or freeze-dried fruit (great for colour), to hazelnuts, pecans and sugar sprinkles.
1. Put the chocolate into a heatproof bowl and place over a pan of just simmering water, but don’t let the bowl touch the water. Stir occasionally until melted.
2. Line a tray with baking paper and pour the chocolate onto it, then spread with a spatula or palette knife into a rectangle about 18x22cm and around 0.5cm thick.
3. Immediately sprinkle the seeds, pistachios and cranberries evenly over the top.
4.Transfer to the fridge to set for at least one hour. Once set, break the bark up into jagged pieces.
LEARNING
On course for autumn workshops
Stephen Poulter is well known across Norfolk and Suffolk as a teacher of adult leisure courses, and for the one-off talks he gives to local community groups. This autumn, Stephen is launching a programme of workshops and courses along the border between the two counties, which are open to people from all ages and backgrounds, on weekdays and weekends.
Under the banner of Anglia Leisure Courses, Stephen will be teaching courses on Researching the History of Historic Buildings, exploring Historic Tours of Norfolk and Suffolk, and Adapting Plays and Stage Musicals for the Cinema, in Stowmarket, Stradbroke, Diss and Pulham St Mary.
Stephen explains: “I’ve delivered a whole range of adult training for the WEA, Coastal Leisure Learning and other educational organisations for the past six years, and I now want to offer a range of subjects in my local area where there is currently no provision for these types of courses. “I particularly enjoy interacting with the many older retired people who attend my courses – not only because they enjoy learning in a relaxed and informal setting, but they also appreciate meeting fellow residents and making new friends.”
Other speakers and tutors contributing to the programme include local historian, Baroness Elaine Murphy, who will be launching a series of monthly talks at Stradbroke Community Centre on 30 September, where she will discuss her recent books on Wingfield Castle and Monks Hall in Syleham. Artist and photographer, Anna Partington, will be running a two day workshop on Pet Portraits in Watercolour at the Pennoyer Centre in Pulham in November.
Stephen is very interested to hear from other potential tutors who could offer art, crafts, literature, history and other culturally themed courses in Norfolk and Suffolk from January 2023.
