Tradition A richness and a fertility that has remained intact for thousands of years When you stand upon a hill, the view of the silver of the olive trees, the green geometry of the vineyards, the roads lined with tall green cypresses and the borders of the woods lined with yellow broom combine in a palette of colors that seem to create a unique painting. Tuscany is located in the center of Italy and between Florence, Siena and Arezzo is Chianti, a charming hill-covered region surrounded by the main art cities in the region. The name “Chianti” is synonymous of excellent wine all around the world. We are an association of Winemakers, established in 1970, which brings together more than 500 producers, the owners of more than 800 hectares of vineyards in the province of Arezzo. The initial structures have been modernized and expanded to the current total capacity of more than 120,000 hectoliters, of which 5,000 are dedicated to the elevation of the wine in wood in fine oak barrels, in order to obtain the highest quality products. In the

last 10 years, agricultural production of grapes has been largely optimized, intervening on space organization for the benefit of Culture density, going from 3,300 to 4,500 vines per hectare. This brought the average annual harvest about 8,000 tons of grapes. The winemaking facilities have all the automatic control of fermentation temperatures with over 4 km of coolant channels, with the availability of more than 800,000 refrigeration units / hour. Part of our production is realized through the application of the method of vinification Ganymede patented, unique and innovative, which gives goodness and gentleness to our wines. The bottling is done with automatic techniques and aseptic, with a production of 4,000 bottles / hour. Are guaranteed the origin and processing from grapes to the bottle, with the utmost respect of the Disciplinary Production and a perfect traceability. For over a decade, our company has a certified quality system UNI EN ISO 9001:2000 certification for its entire production cycle and we are also in possession of “Global Standard for Food Safety” and “BRC” A substantial part of the production is sold bottled in foreign markets, mainly the U.S., Canada, Japan and Russia, and of course all over Europe 5


Manufacturing Process From grape to wine

The innovative fermenter

1. FILLING AND CAVITY SATURATION Filling can be performed either from above, or from the total discharge valve or from the partial discharge valve. During the rising of the must, the cavity between the outer casing and the funnel diaphragm remains empty because the air, unable to escape through the closed bypass, prevents the cavity from being filled. The grape marcs accumulate on the surface to create the cap. The carbon dioxide produced by the fermentation process quickly takes the place of the air in the cavity. As soon as the environment is saturated, the exceeding gas goes out by overflowing and since it is under pressure it creates large bubbles through the diaphragm neck, resulting in a constant restirring of the grape marcs that will always be saturated with the liquid and well shelled. Such restirring causes the fall of the grape seeds to the bottom by gravity. 2. BYPASS OPENING The opening of the bypass causes a more massive action, releasing an enormous amount of gas accumulated in the cavity directly on the grape marcs, which are flooded and deeply restirred, resulting in an effective yet smooth breakdown of the cap, preventing mechanical actions that may lead to the forming of lees. Once the grape-seeds have emerged, they accumulate in large

amounts on the bottom of the fermenter. It is at this stage that the winemaker, according to his evaluations and the characteristics of grape-seeds, may decide to exclude them from the winemaking process, by extracting them in large amounts through the total discharge valve. 3. DÉLESTAGE As soon as the gas goes out, the cavity is flooded with the must, causing a sudden lowering of the level. The grape marcs saturated with liquid continue to release noble substances extracted from the skins; thus, repeating the typical stage of static draining DÉLESTAGE, in a controlled environment and without the use of pumps. LEACHING AND STATIC DRAINING Once the bypass is closed, the carbon dioxide from the fermentation process re-accumulates in the cavity causing a new rising of the level, which, by pushing upward the grape marcs collected on the surface, results in a further stage of static draining that continues the leaching process and allows the grape marcs to release an increasing quantity of substances into the must. The gas saturates the cavity once again and the whole sequence can be repeated whenever it is deemed appropriate. 7

Region: Tuscany Territory of origin: Hills of Arezzo History: The Chianti has always been high on the wood the flagship of Tuscan. History: Chianti has always been the quintessential Tuscan wine, a product that has become famous for our region and our territory all over the world.
