WINERY CÁMBRICO

WINERY CĂ MBRICO D.O. Sierra de Salamanca, 20 Hectares

SALAMANCA

In the heart of the Sierra de Francia Natural Park and UNESCO Biosphere Reserve, at altitudes of 900 meters (3000FT.) the climatic conditions are perfect for growing high quality grapes. The Romans knew this too and planted vine on terraced slopes in the range. The respect for the land that they farm is not just a sales tool, they mean business here and have spent a lot of time researching, most notably, the ancient indigenous grape variety Rufete, believed to be a cousin of Pinot Noir. At Cambrico five wines are produced, all red. The cellar is built into the mountainside to spectacular effect. The Rufete vines have a very similar appearance to that of the local, old vine Tempranillo. The two varietals grow together in the vineyard and consequently only eagle-eyed locals are allowed to harvest at Cambrico. The vineyard is extremely natural, farming is based on Biodynamic principles and it is ploughed by mule. The wines are bottled unfined and unfiltered. These are totally unique works of art. True mountain wines.

Cámbrico Rufete 2008 At 800 m of altitude, we cultivate a centenary vineyard with some vines of the limited red grape variety Rufete.
