Photos by Summer M Basile Crawfish Cookin’ For A Cause, a charitable organization supporting local families affected by catastrophic illness, held its eleventh annual fundraising event on June 12th. In 2020, thousands of members of the community turned out, drove through, ate crawfish, and made a difference. Boiling 3,200 pounds of crawfish at this years drive-through event, the worthy recipients were Project Red Light For Hope and Grant’s Gift Foundation.

How would you describe the Restaurant? Salty Joe’s is best described as a BBQ restaurant with an eclectic atmosphere and decor.
What sets you apart from other chefs? I always like to work hands-on with my staff, whether I need to be in the back cooking, washing dishes, or helping to bus tables. That’s what makes the difference in a chef.
What do you love most about the restaurant industry? The people. If you don’t love the people or your guests, then you are in the wrong business.
What is one ingredient you can’t live without and why? Garlic. It goes with such a wide variety of flavors, and we use it in about 80 percent of our recipes.
What is your favorite meal to prepare at home? Chilaquiles, which is a traditional Mexican dish consisting of strips of fried tortillas, salsa, cheese, crema, and other traditional toppings. I love this dish because the wide variety of flavors are the best representation of my Hispanic culture.

What sets you apart from other Chefs/Restaurants? What sets me apart is that I create, prepare, cook, and serve personalized coursed-out wine dinners that I bring to your destination of choice. The options are endless and customizable, depending on your drink/food preferences and dietary needs. I also run a meal prep business with healthier meal options for those who like to leave their cooking to the Chefs.
Do you have a favorite dish/entree? “The Old-Fashioned” Pork Belly would have to be my specialty. It conjures all of the flavor profiles of an oldfashioned cocktail. It consists of braised and seared pork belly, orange bourbon sweet potatoes, and bittered greens, topped with a luxardo gastrique.
What’s one ingredient you can’t live without and why? Lemon or citrus has so many different applications/levels of flavor. It adds a “pop” to enhance whatever you are preparing and is perfect for either starting or finishing a dish! What’s your favorite meal to prepare at home? My fiancee and I love Hispanic foods. I use lots of Latino spices and flavors when cooking at home. Tacos are a personal favorite because the combinations are limitless, and I always have room for salsa.
What do you love most about the local restaurant industry? The variety of people I’ve met. I wouldn’t be where or who I am today without them. Whether I’ve worked with them in this industry or not, most of the relationships/ friendships I’ve developed have revolved around the restaurant business. I am so grateful and humbled by the local community’s continuing support.
