That time of year has come upon us when there is a nip in the air and snow in the clouds as shorter days lead to longer evenings. The thoughts of many across the world turn to those of family, kindness, and charity. People begin bustling in preparation for special meals, family visits, and perfect gifts - while getting all wrapped up themselves in the excitement of the children. This will be the first holiday season for our new Virginia Brew Hub family. The year has been exciting, fulfilling, rewarding, and more fun than we can express. We’re looking forward to all the seasonal special brews that will flow from all our amazing, regional craft breweries. It’s a time of creativity and innovation, which are the hallmarks of craft brewing. We know that the family atmosphere of the tap houses will become even more special as decorations, warmth, and a sense of community make them glow. As the year comes to an end, we are counting our blessings and looking forward to a new year in which we will continue to not only grow as a publication, but as a joined culture of regional musicians, food wizards, and phenomenal craft brewers. The Salem Beer Trail!

Salem Virginia has a rich history of hospitality that has not only drawn those who passed through on their way to settle the west, but that has also hosted some pretty big names in American History. Lewis and Clark visited the area, as well as Andrew Jackson; the 7th President of the United States. Also among those who took advantage of Salem’s hospitality were the family of the famed General Andrew Lewis. General Lewis was not only a visitor, but a resident. In these historic times, people would have found a large number of taverns and inns at which to pass the time, mingle with the community, and find food and lodging. In the early 1800’s, Downtown Salem was laid out much the same as it is today, with inns such as The Mermaid, The Salem Hotel, The Golden Bell, The Bull’s Eye, The Brick Tavern, William Blaine’s Tavern, The Indian Queen, and the American Hotel lining its streets. Many of the buildings from that time are still standing today. The founding of Salem can be traced to James Simpson, who in 1802 purchased a 31-acre tract of land along The Great Road; still with us today as Main Street, US Rt. 11/460. This was the pathway that settlers took from the more developed East into the West as our young country expanded. It was a smart play on Simpson’s part, for his goal was to develop the area as a town. He wanted to take advantage of the flow of people along the Great Road by selling off lots for development. 6

His ultimate dream came true on January 6, 1806, when the General Assembly of Virginia established “A Town by the Name of Salem” in what was then Botetourt County. Over the years, Salem grew into a prosperous community by serving the needs of travelers along the Great Road. The town earned an early reputation for excellent hospitality and service. A reputation that is still alive today, more than two hundred years later. Downtown Salem has many restaurants offering some of the finest dining in the Roanoke Valley. In more recent years, the legacy has even expanded to include the craft beer scene, thanks to longtime favorite, Parkway Brewing. But it hasn’t stopped there. Salem is currently in the process of rebuilding its Downtown into a world class entertainment district. Starting in the Spring of 2018, the sidewalks will be replaced with historic-style brick, featuring large areas of widened sidewalk specifically designated for outdoor dining. New landscaping and historic street lights will be installed. Perhaps most exciting of all, however, is that the entire area will be overhung with lights above the streets, creating the kind of romantic atmosphere and setting that should encourage patrons to explore the area, meandering from one establishment to the next under the lights. In seeming anticipation of this romantic makeover, two new breweries will join Parkway

Brewing in what will become the Salem craft beer fraternity. Olde Salem Brewing just celebrated its grand opening on November 21st. Located at 21 East Main Street, in the heart of Downtown Salem, owner Sean Turk says opening day was a huge success, with packed-in crowds from open till close. Sean is the visionary behind Olde Salem Brewing, and it’s no secret that there is a large place in his heart for thoughtful, well-crafted beer. Sean has been in Real Estate for ten years, and began his craft brewing journey five years ago. He really enjoys the process of learning new styles of beer. As the market progressed, he thought it would be a good opportunity to own a brewery. Having spent most of his life in Salem, and with the announcement of Salem’s revitalization getting underway, he knew the time and the place was perfect. Together with Brewmaster, Kevin Campbell, Olde Salem Brewing will be focusing on a consistent, quality product. Sean says they want to concentrate on developing solid, high-quality beers, rather than experimenting with different flavors each month. They introduced six beers on opening day, and Sean says the feedback was great. People especially loved the coffee stout, which is made using fresh coffee from Mill Mountain & Tea, just down the street. There was also high praise for

their “Township Rebellion”, which is a New England style IPA featuring a fruity, juicy, hoppy character. The brewery building was constructed just 114 years after the town was founded, and has long been known as the iconic Tarpley’s Appliance building. Those who venture inside looking for tasty brews, however, will find the interior has changed quite a bit. The atmosphere is rich and classic, with a modern feel. Sean says that in addition to the joy he gets from crafting delicious beers, he is looking forward to spending time at the center of a culture he’s already come to appreciate for its family-focused sense of community. Like many others just starting out in this business, Olde Salem Brewing received first class help and advice from Parkway Brewing and others that are longer established. “There’s not a lot of other industries out there where you can get help from others in the business!” For more information on Olde Salem Brewing, the beers you can enjoy there, and the swag you can buy, visit their website at www.oldesalembrewing.com. While Olde Salem Brewing was getting set up in the historic Tarpley’s building, David Ober had his eye on a location very near what was once the historic Lakeside Amusement Park! In January of 2018, Ober Brewing Company will open its doors at 1443 Lakeside Circle! David started home brewing eleven years ago, enthusiastically making new beers as often as he could. It wasn’t long at all until the idea entered his head that he could possibly turn his passion into a business. Eight years ago, he got to work on his education. He attended brewing school at the Sieble Institute of Technology in Chicago, where he studied Master Class beer styles. He also learned packaging and processing technologies. David says he went through it all because he wanted to prepare. “There’s no room for mediocre,” he says about the craft brewing business. Most people know what the basic beers are supposed to taste like, and if you get it wrong or just so-so, people are going to notice. You have to be innovative. David says he looked at many places over the years, but Salem was the only town that came to him offering the help and resources to make his dream come true. Ober Brewing Company will have a 3.5 barrel brew house where they will be perfecting their barrel aged beers. In addition to ordering on tap, customer will also be able to sample their brews bottled, on premises. Ober Brewing wants to be innovative, offering beers with distinct and seasonal flavors. He’s looking forward to crafting beers that will reflect the tastes of whatever fruit is in season, but he will not just be limiting himself to Mother Nature. He wants to offer beers that you just can’t find anywhere else, such as his planned sweet potato casserole beer! On opening day, however, you’ll be able to sample the Appalachian Mama American Amber Ale, the Ragutis IPA, the Daily Grind Stout, the Hanging Rock Pilsner, and the White Lady Belgian Witbier, which promises to be a favorite with the ladies! David and his family have been working hard to get the taproom ready for opening day. His wife, Jennifer, as well as their children, Austin and Ashten, have spent many hours installing the machinery and all the taproom fixtures. He says they want to create a warm and inviting, cozy industrial look. After all, the brewery will be in the middle of an industrial park, and they want the

atmosphere to compliment the surroundings. David is very proud of his decision to have no televisions in the taproom, as he wants people to come, have a good time, and talk to each other. There will be live music, and he even hopes to add Karaoke! Above all, however, is the beer. “I want to stand out. The beer should stand out on its own. It should be spectacular, and people should be talking about it! It shouldn’t be just another brewery stop…it should be a beer experience.” To check out Ober Brewing and follow their progress till opening day, visit www.oberbrewing.com. Welcoming both these breweries into the fold is the four-year veteran, Parkway Brewery, located at 739 Kessler Mill Road. Not only known for its amazing beers and its taproom experience, Parkway Brewing has become a true fixture of the community. In addition to the main beer menu, they also make pilot batches of just one or two kegs. Each week, they choose a charity or cause that is close to their hearts and donate all the proceeds from the pilot-batch sales. So far, they have given over $15,000 to charities in 2017 alone! General Manager, Mike Pensinger, says Parkway always does its best to support the local community. And they’ve been doing it since January of 2013. Founded by Keno and Lezlie Snyder, the beers of Parkway Brewing and now bottled and distributed state-wide across Virginia, North Carolina, and Ohio. In 2018, that distribution will also include Tennessee, West Virginia, Maryland, and DC. Many of the beers are named after local things and Parkway features, such as the “Get Bent Mountain” IPA, which is a light bodied, west coast-styled IPA with a delightful bready character, balanced by lots of citrusy hops. There is also the “Raven’s Roost Baltic Porter”, with a robust and roasty aroma, featuring notes of chocolate, caramel and toffee. Today, they are the largest brewery in the area, but even they received a lot of support and collaboration from bigger breweries when getting started. Now they are happy to be the one helping the new guys get going. When asked what he liked about being part of the craft brewing industry, Mike said that the interactions with customers is second to none, because there are so many fans. In so many other professions, interactions with customers are often negative. In craft brewing, however, interactions are often filled with praise for the delicious beers and great experiences. Mike says in all his time in the industry (15 years) he’s almost never have a bad interaction with a customer. Star City Brewers Guild celebrates 20 years of home brewing in the Roanoke Valley! Twenty years ago, a group of people came together with the idea of promoting home brewing as a hobby in the Roanoke Valley Region by creating and maintaining a network of hobbyists that range in skill levels from novice to expert. Since its beginning, the Star City Brewers Guild has grown in membership from an initial few to 120 active members! However, the Guild doesn’t just keep happily to itself, saving the all the fun for its members. They actively promote home brewing at public events such as the Home Brew Demo Day in the spring, and Learn to Homebrew, which happens in the fall. Both events are hosted by Southern Hills and Blue Ridge Hydroponics home brew supply shops. Also, competitions for a pre-selected style of beer are held quarterly. The guild meets monthly at public locations such as homebrew supply shops, as well as in the homes of its members. Many

long-term Guild members remember the days before craft beer was widely available. The only way to get it was to make it. On October 22, the Guild celebrated its 20th anniversary at Big Lick Brewing Company in Downtown, Roanoke. And on November 11, at Chaos Mountain Brewing in Callaway, the latest competition was held. This Star City Homebrew Throwdown featured ninety-five entries, judged per BJCP (Beer Judge Certification Program) competition and style guidelines. The competition attracted seventy-six registered participants, judges, and stewards. Categories for the competition were IPA, Light Standard, Belgian, Amber, Strong, Dark Standard, Light Specialty, and Dark Specialty. There were gold, silver, and bronze winners in each category, but the Best in Show award went to Ian McElhone for his Flanders Red, named “2015 Flanders Red”. For a complete list of winners, as well

as more information about the competition, visit www.throwdown.starcitybrewers.org. Ian got started ten years ago when he received an extract kit for Christmas. After a few years of extract brewing on the stovetop, he graduated to all-grain. About six years later, he started experimenting with different souring methods and bacteria strains. Since then, he’s made an annual batch of Flanders Red Ale, each version having been fermented for a year on the same yeast and oak dowels. He also tries to bottle-condition the beers for as long as he can stand, so the winning beer has been in the bottle for almost a year. Ian just got a new barrel and is very much looking forward to using it for his next batch of Flanders. Music bands often form because people want to get together and write music. But while sitting around a bonfire on a chilly Autumn evening in 2016, Wes Winebarger, Mike Loritsch, Jeremy Smelser, and Josh Smelser wrote a song. But what good is a song on paper? It wasn’t long until these four friends decided to become a band so that this song, and many others, could be heard. In just a little more than a year, these men have not only made a name for themselves on the local brewery and festival scene, they have also created enough original music to fill and album…which they released on November 4, 2017 during a concert-party at The Spot on Kirk. It’s not so easy to describe the kind of music they create, because like all the biggest bands of the late 1970’s and throughout the 80’s, these guys experiment with different styles. One song sounds like southern rock, while another sounds country. One sounds like 80’s pop, while another sounds like it came off an album by Queen. Place Called Home delivers song after song with incredible musical intelligence in every note, every chord, every lyric, and every harmony of their elaborate backing vocals! No two songs sound the same, so there is surprise after delightful surprise from this record-label caliber group. Even the cover songs they play are from a wide variety of favorites. 16

Marie Anderson: Spotlight Musician

Despite their national potential, the most important things to Wes, Mike, Jeremy, and Josh are the feelings of purpose, community, and camaraderie that come with deciding to play music for others. They love the breweries because the family friendly, community atmosphere is in perfect harmony with their own reasons for being there. Marie Anderson has always had a serious case of stage fright. With no plan to put herself in the spotlight anytime soon, she earned a Masters degree in social work and prepared herself for a career in that field. In doing all this, she’d managed to avoid the stage as much as possible. That is, until five years ago when some friends firmly encouraged her to sing with a local band. Though she was hesitant, it was the uplifting words of friend Ray Martin (from the band, “Shame for Sidney”) that finally gave her the courage to take that first step: “I don’t care if you sing ABC’s…you’re not leaving till you get up and sing!” Once that step was taken, Marie started doing open mic. Despite the fact she was still battling stage fright with every appearance, she soon had people approaching to book her for shows. Five years later…yes, she still struggles with facing the stage, but she’s become a soughtafter local artist; rarely having to reach out

for bookings. Marie’s original music is soulful, acoustic, and bluesy, and her voice is perfect for this style. Her 1500-song cover list, however, is as eclectic as it is long; including acoustic versions of tracks from classic rock, county, pop, R&B, southern rock, blues, and many more! She’s a onewoman band, with lots of fans all over Virginia. On her website (www.mariesmusic.org) you can find audio tracks and videos of both Marie’s original music, and a sampling of her covers. You can also find her original music, as well as all the up-to-date show dates, on ReverbNation.com. Marie says she loves playing at breweries bec ause of the atmosphere and the people. Despite the fact that her show schedule is almost always full, Marie still loves when people come out specially to see her. One of the best things about doing this, she says, is when people express how much they like what you do. She has a great appreciation for those who ask her to play, and for those who enjoy her music. That’s what it’s all about. Dojo Grill: Food Truck LaToia Jones spent most of her working life in management, which led to restaurant management. However, LaToia wanted to see what she could do on her own. She opened a coffee shop ten years ago, but competition in the area made being a small business difficult. Looking for an edge, she had the idea of making her coffee shop mobile. Inspiration led to inspiration, and so was born the idea of creating a unique food truck experience; serving a full menu of artisan grilled cheese sandwiches! The wheels hit the road in October of 2015, and LaToia says there’s not another food truck menu like it in the entire area. The public seems to really love it. Dojo Grill definitely does fill a grilledcheese-loving niche, with its menu that offers both vegetarian and non-vegetarian items. The signature sandwich, The Dojo’s Mojo, includes fresh baby spinach,

mozzarella, and basil pesto. A customer favorite from the meaty side of the menu is the Buffalo Chicken Grilled Cheese, which includes grilled chicken, mild cheddar, and Buffalo sauce. With a menu of over sixteen delicious choices, you’d have to visit again and again to try them all! LaToia just has the one truck now, but it’s on the road five days a week; visiting breweries, festivals, and even office buildings for lunches during weekdays. Dojo Grill also participates in lots of other area events, such as Party in the Park for Vinton and Roanoke, the Dr. Pepper Park, Roanoke and Salem Parks and Recreations, food truck rodeos, and more! Though she’d love to eventually get a second truck, she has, in the meantime, opened a companion restaurant. In May, The Vatican Bistro opened at 5524 Williamson Road, inside Lamplighter Mall. In addition to locally roasted coffees, they offer wraps, soups, and salads. Though the menu differs from the Dojo Grill food truck, the restaurant does offer the famous Dojo’s Mojo. LaToia is especially grateful to the area breweries. She says that brewery customers really made her truck popular, and remain her biggest group of fans. She loves meeting everyone, and says it’s really nice to go out to the people and offer her creations. The Imperial Designation. A Beer Fit for an Empress! By Chaz Blevins, Certified Cicerone ® The term “Imperial” today, in the United States, is attached to almost any high gravity beer, often being synonymous with “double”. Here in the U.S., we have beers that have been changed in title by the term itself. For instance, some Imperial IPA’s border the line with many of the hopped up Barleywines of the past, Imperial Brown Ales draw a thin line between the Strong and Old Ales of the past. Even Imperial Pilsners, that for all we know could be German Helles Bocks or 40 ounce malt liquor in disguise. And, of course, the rich and delicious American Imperial Stouts. However, there was a time not long ago where this term was reserved for only beers brewed specifically for the royal elite in Europe. Exporting beer was always an issue in England, spoilage being the major concern. With variations in temperature, age, and handling, this delicate cargo was not the easiest to transport. Even Bass Ale, whose “red triangle” was the very first trademark in the U.K., sank to the bottom of the sea on the tragic voyage of the Titanic. But bringing the world the unique ales brewed in the country was a challenge that entrepreneurial Englishmen seemed always up to, Henry Thrale included. However, it would be the acts of the Royal Empress of the Russian Imperial Court, Catherine the Great, that would open the doors of opportunity for and ultimately change the history of beer as we know it. After completely redefining the landscape of the Russian government for the better, Catherine sat her sights upon renewal of trade. In the year 1766, she agreed to a commercial treaty with Britain. Just perhaps, our favorite malted beverage helped proliferate the 22

treaty. You see, Catherine the Great’s love for London Porter was well known, and it was just the drink for which Henry Thrale and his Anchor Brewery were known. He decided to brew a beer, not just up to the task and of the voyage, but specifically to the taste of the Empress and her royal court. It was an extremely hopped and alcoholic beer of 25 degrees plato that made its voyage across the Baltic. Known as an “export stout” (the relatively more indigenous Baltic Porter would come some time after these high gravity English browns and stouts were established, though clearly an interpretation of the styles), the beer style quickly became linked to its Imperial connections, and was thus coined Russian Imperial Stout. It was in 1955, after many historical acquisitions and mergers, that the original Anchor Brewery, now Courage Brewery, officially rebranded their beer as “Courage Imperial Russian Stout”. Though many examples of the style appeared soon after, it was the ingenuity and passion of American craft brewers that revitalized the rich dark style we love. Today, we luckily imbibe this amazing drink without the pretion or pretense of a royal court. Though any attachment to a crown has been removed, here are some local examples of the Imperial style that will not only make you feel as if you have been transported back in history to those first voyages, but I think would meet, and maybe exceed, the expectations of one Russian Empress.

Hammer and Forge: Romanov’s Return

One of the most unique and true to style offerings in VA, this dark amazing beer is brewed with a very specific method that utilizes caramelization

for a richer and deeper brew. The soft delicate mouthfeel and slight vanilla sweetness hides the alcohol warmth. Bitterness creeps up at the finish, making you want just one more sip… and then another, and another.

Chaos Mountain: INK

One of a kind! Dark raisin and fall fruit are the star here, with a faintly dry grape and oak finish. Star City Brewers Guild’s winner of Best in Show in 2015. It was later brewed on the 7bbl pilot batch system, and aged in local red wine barrels at the brewery. Truly limited in release, this is an amazing beer that, hopefully, we will see return once again.

Big Lick Brewing: Dying Days

A dark sweet brew with notes of molasses and a perfect, full, soft, and chewy mouthfeel. It is roasted and chocolatey with a boozy warmth that fits the season; definitely a brew you will be dying to get more of.

Starr Hill: Debut Imperial Russian Stout

Walking a perfect tightrope act between bittersweet dark chocolate and roasted coffee, this brew lets you come back for more with a more subtle mouthfeel that leaves room for another round.

Parkway Brewing Co: For Lovers Only

Thick and roasty, this brew will grab a hold of you and never let go. An almost dark rum barrel finish is subdued perfectly at just the right moments by its smooth, nutty finish. Now the only problem is sharing.

Peanut Butter Stout Mousse-Topped Brownies Makes 24 Mini Brownies For The Mousse: 2/3 cup Heavy Cream 1/4 cup Powdered Sugar 1/2 cup Creamy Peanut Butter 3 tbsp. Stout For The Brownies: 1 cup Flour 1/4 cup Cocoa Powder 1 tsp. Baking Powder 1/2 tsp. Salt 1 tsp. Espresso Powder 1/4 cup Granulated Sugar 12 ounces (2 cups) Dark Chocolate Chips 6 tbsp. Unsalted Butter 3/4 cup Chocolate Stout 3 tbsp. Coconut Oil (melted) 2 Large Eggs Directions: • Preheat oven to 350° • In the bowl of a stand mixer, add the cream and powdered sugar; beat on high until soft peaks form. Lower speed to medium and slowly add the peanut butter, beating until peaks return. Slowly add the stout; mix 24

until combined. Chill until set, about 30 minutes. • In a large bowl, stir together the flour, cocoa powder, baking powder, salt, espresso powder, and sugar; set aside. • In the top of a double boiler, add the chocolate chips and butter; stir until melted. Remove from the heat. Stir the stout and oil into the chocolate. • Add the chocolate mixture and the eggs to the dry ingredients and stir until just combined. • Pour the batter into mini muffin tins that have been greased until 2/3 full. • Bake until the tops have set and look dry, about 1822 minutes. Allow to cool completely. • Frost the brownies with the peanut butter mousse prior to serving. Choose The Right Brew! Can you find a peanut butter stout? Grab it!
