Crossing the creeks for great craft beer! by Vickie Holt
Andy Bishop discovered craft brewing during time spent in southern California. He took a keen interest not only in the delicious varieties of beer to be found on the brewery scene, but also in the making of those beers. Once he was back home, however, he no longer had access to that world. There was no craft brewing scene in Roanoke at the time. This was a problem. But not for long! Rather than ordering craft beers and having them shipped, Andy, along with his brother, Jason Bishop, decided to start brewing on their own. If they couldn’t buy it locally, they’d make it! They began with home brewing kits in 2007. Though the product was solid, the brothers found the kits to be limiting and uniform. 6
They stuck with it, however, for two years before they began experimenting on their own. In 2009, they made their first all-grain system, but found limited success. They’d need some help if they were to expand their brewing operation. Later that same year, wanting to build additional brewing equipment, they enlisted the welding help of their friend, Barry Robertson. Once Barry found out what all the welding was for, he wanted in! With their mutual love of beer, Andy’s engineering prowess, Barry’s engineering and welding skills, and Jason’s talent for recipes, the trio set foot on the road to a craft brewing future! In 2013, after four years of ongoing learning and experimentation,

the boys purchased a professional small batch brewing system. They were getting great feedback from family and friends, and even then, the first murmurs of opening a brewery were filling the air. But first, they had to know if their beers were good enough. In 2015, they entered ten competitions across the region; submitting various styles of beer. In nine out of ten of those competitions, they came in first or second! With that question answered, they got down to the business of… going into business. They started the ball rolling with the 2016 Gauntlet competition held for the town of Vinton by The Advancement Foundation. The Gauntlet is a small business enterprise development event held each year to help entrepreneurs and community advocates hone their business ideas and concepts. They won first place, and the cash they were awarded helped them take the next step. The town Vinton was also enormously supportive. Vinton approached the Bishop brothers and Barry when they first learned the trio were thinking seriously about opening a tap room. On November 12, 2017, all the hard work and careful planning came to fruition when Twin Creeks Brewing opened its door to a massive, capacity crowd that kept the boys and their families hopping for hours! Since then, Twin Creeks has become the social hub of Vinton and surrounding areas. The interior has a rustic-industrial feel with images of Vinton history adorning the walls. While marveling at the canoe hanging over the bar and listening to great, live music on the dock in the corner, visitors can enjoy a generous variety of seasonal specials, as well as old favorites. The boys tell us that their Spring Water Kolsch is currently very popular. Not only can it be found in the Twin Creeks tap room, but also at more than a dozen other tap rooms and restaurants in the region. The Summerfield Blonde, too, is a favorite. But these guys are no one-trick pony. The menu is always changing, with new brews, small batch features, and old favorites so that no one ever gets bored, and so everyone can always find their favorites! When asked about the secret for their popularity, Andy told us, “good equipment, good processes, and good ingredients make great craft beer. You treat it like an engineering problem. You break it down to its elements, and you solve those problems.” Despite the mathematical approach, Andy, Jason, and Barry have also done the more artistic side of their brewing homework. Andy and Barry got their feet wet when they were part investors in Roanoke Railhouse. All the men have attended seminars, and there is a library of books between them.
They did a great deal of selfstudy and research. They have also talked to a lot of breweries both locally and abroad. Jason says the learning never ends, and they continue this self-motivated approach to their brew-mastery education. And they must be doing it right! In December 2017, just one year after opening, they got new equipment because they’d maxed out their production area! Just a few months later and they are already feeling the growing pains again. In 2018, they hope to expand so they can have the additional production space to begin distribution. They want to begin packaging beers for retail sales, and they also want to add tap-room space. Until then, however, customers and craft beer enthusiasts can visit the tap room at 111 S. Pollard Street in Vinton. For fans and newcomers alike, 2018 will be very exciting! Andy, Jason, and Barry will be focusing on a selection of barrel-aged beers and have plans for more small batch specials. They’ll be keeping at least one lager-style beer, rotating the flavors for the seasons. There are also plans for more fun ways for customers to become more involved with Twin Creeks! But no need to wait for the fun and games. Literally! Every day, there is a good stock of table games around which groups can have a great time! And there’s more! In addition to live music on Fridays and Saturdays, guests can also join in for Trivia Thursdays and Vinyl Sundays! Choose from the house selection of albums, or bring your own! There is a vendor selling albums on site, and trading is encouraged while the vintage music plays over the speakers. In addition to all this weekly fun, Twin Creeks hosts special-release events in the back parking lot, all year long. They also show large sporting events on the brewery’s large television. It all culminates, however, in

Creek Fest, which is an all-day music festival on the Vinton Farmers Market, with a cross-over to the brewery. This year, Creek Fest will be August 18, from 2:00 till 10:00. Like many other brewery owners and brew-masters, Andy, Jason, and Barry all love the tap house environment. After all the craft and science that goes into making the product, they just love watching people enjoy it. It’s a social place to spend quality time with family, friends, and co-workers. Parents bring their children, and Jason tells us they often see the kids playing games or doing homework. All the guys were happy to talk about how on any given night, there can be a party at one table, a group hanging out at another, and a business meeting at still another…all co-existing happily. Everyone loves getting to know folks, and they love the conversations that crop up about anything and everything! They enjoy the great feedback, and genuinely appreciate the response and comments. The guys tell us they acknowledge every comment made either on social media or in person. “We want to grow,” says Andy. “Without feedback, we can’t grow.” Also like many other brewery owners, the guys love the spirit of collaboration and the friendliness that can be found across the entire industry. It helps them to keep learning and improving. In the end, no matter what their specialties in the partnership, Andy, Jason and Barry all agree on one thing: they want to do everything they can to maximize the customer experience. They want to make sure everyone has a great time and enjoys a great product. “A brewery is more than just the beer. It’s the whole experience.” 7

Low Low Chariot Country music runs in JD Sutphin’s blood. A fact he didn’t discover until after spending several years touring with his rock band, Madrone. As a rock musician, JD had thousands of fans, and even got to hear his music on the radio. Through it all, however, his grandmother continued to say to him, “Country music is gonna find you.” One Christmas, like a movie-written miracle, it did. The family found a stack of old songs that had been written by JD’s grandfather, Jim Freeman, who’d died decades earlier, in 1974. Jim had been a gifted musician, himself, touring with the likes of bluegrass legends, Ralph Stanley and Bill Monroe. Pouring over the old documents, something happened inside of JD. He learned his grandfather’s songs and discovered a style of music that so profoundly affected him that he traveled all the way to Nashville. In front of the Ryman Auditorium there, his life changed. His path changed. The rock star didn’t go anywhere. He’s still very much alive inside of JD Sutphin. However, he’s moved over to make room for a simpler man, gripping his grandfather’s precious Martin guitar while setting out on a new journey. JD began to 24
write music that reached deep inside him and found a type of honesty he’d never known before. In 2015, JD began performing his new music solo, but missed the camaraderie that came with having band-mates. He also had the feeling that what he’d tapped into was far bigger than just himself. He told us about how great it was to play music with guys he’d been friends with for a long time, and wanted that again. He’d known Joshua Mason since high school, and knew Blaine Davis from their Madrone days. Together with friends Josh and Blaine, JD created The Low, Low Chariot in late 2016; named after his grandfather’s recording of the traditional, spiritual tune. Since then, the trio have played major festivals, large venues, bars, and breweries up and down the east coast. The band’s popularity has really taken off, too; gaining fans daily after having shared the stage with artists like Montgomery Gentry, the Marshall Tucker Band, Deana Carter, Phil Vassar and more. In November of 2017, The Low, Low Chariot recorder their first album, “Believer”, at the OmniSound studio in Nashville. With JD taking care of vocals and guitar, Josh on guitar, and Blaine on bass, this first recording features ten tracks that have been described as “explosive, melodic, hook-laden country music”. When asked where he sees The Low, Low Chariot going, JD told us that the band has spoken with record labels in Nashville and has even seen some radio play for the tracks they recorded. However, he emphasizes that the main focus is the music itself. “When you pay more attention to the music and the process, the business side of things takes care of itself.” At the end of the day, this group cares about the songs more than anything else. JD says the band loves playing the breweries because there is always a variety of people from all walks of life. Even though that rock-star made room inside for the spiritual country artist, JD still likes to let him out to play! At the breweries, the band gets a feel for the audience, then tailors the show. This allows them to play different genres, including rock, for different crowds and never get bored or stale. In addition to their country originals, JD tells us their repertoire of cover songs includes tunes from an eclectic array of genres, so there is always something everyone can enjoy. Crawford & Power Though Jake Crawford and Ethan Power attended the same school in Franklin County, they didn’t really meet until later in life. Through mutual friends at Virginia Western Community College in Roanoke, and through a mutual love of music, this country music duo finally came together and have been playing since January of 2014. With Jake on guitar and vocals, and Ethan on dobro, lap steel, and guitar, the two gathered a local fan base that eagerly follows them from venue to venue. Their shows are a mix of original tracks and fan-favorite covers from artists like Bob Segar and the Black Crowes. They also play many classic country hits from the 1990’s. Right now, the only place you can hear their original music is at one of their live shows. But the boys just got back from Nashville, where they worked hard to record their first album, which should be available this summer. Ethan tells us that, for now, he and Jake are still holding down regular jobs. Jake is a travel agent with the VA Medical Center, arranging travel for doctors and patients. Ethan works in the Personal Finance Department for Kroger. Thanks to some exciting recent events, however, both men hope the time will come soon when they leave time cards behind them and devote all their time to pursuing music. It’s all thanks to an award-winning night at Sidewinders Steak House and Saloon, in Roanoke. In a battle-ofthe-bands style competition, Jake and Ethan won not only the night, but a chance to open for national country artist, Luke Combs! Ethan says that really opened a lot of doors for them, as the contest win connected them with an agent who has since been able to get them opportunities that would previously have been out of reach. They are playing larger venues than before, and have been booking more and more shows out of state. In February, Crawford & Power opened for the Marshall Tucker Band at The Fillmore in Charlotte, and at the Ritz in Raliegh, North Carolina. Not only that, but they had the chance to perform on stage with Marshall Tucker during the show! If you search on YouTube, you can find an awesome video from that performance. Jake and Ethan would love to ride their musical wave as far and as high as it will take
them. However, Ethan says they will be happy, too, if their music is successful enough to make a daily living so they can do it full time. They’d also love to go on tour, soon. And though that fateful contest opened a lot of doors, they still love to play the local breweries; expanding their fan base at home. The boys like the breweries, and tell us how much they appreciate all the staff for providing their rowdy crowd a place to dance and have a good time, safely. Ethan says the breweries are a great place for local folks and new artists to get their stuff out there. They are a great avenue for local musicians. in Nashville. Betsy eventually married and had three children and was happy to be a stay-at-home mom. But an artist rarely stops being creative. She began doing voice-over work for marketing, and some freelance proofreading on the side. But it was at a fateful Majestic Mic night at Parkway Brewing two years ago that set her on a path to re-connect with her musical upbringing. This time, however, she’d be going solo. Not only did Betsy keep going to the Majestic Mic nights, she eventually began hosting them, which she continues to do today. Look for her the first and last Monday evenings of every month at Parkway Brewing! These open mic sessions helped Betsy to begin building a repertoire of alternative rock covers. She even began to write original music, which she’d then drop into her sets. Normally on her own with an acoustic guitar, she has sometimes been joined by Charro Gruver on electric guitar and bass. All of this was building up, of course, to the next step, which was to perform live shows that were not part of an open mic event. On March 30, 2018, Betsy played her first solo show at Twin Creeks Brewing in Vinton. She was a hit with her strong, clear voice and her guitar. The crowd loved her. Moving forward, Betsy has no plans to pursue music on the same scale as her ambitious brothers. “It started just as an outlet to enjoy playing music,” she says. “If it gets bigger, I’ll just roll with the punches. For now, I just enjoy playing music, and if other places want to invite me to play, I’ll be happy to. As long as I get to play music, I’m happy.” Betsy says she is still very much on the front end of this endeavor, and doesn’t really know what to expect, yet. The one thing she does know is that if she is able to create music she is proud of, she’d love to record it, someday. We always love to announce anniversaries here at Brew Hub, and we have five to tell you about for our April - May issue! Though April will go by quietly, May will be one big party! First up, it’s Chaos Mountain Brewing! On Saturday, May 12, at 3135 Dillions Mill Road in Callaway, Chaos Mountain will be celebrating four years of craft beer bliss from 12:00 noon till 10:00 pm. The Harwell Grice Band, and well as Billy Hurt and The Five Mile Mountain Boys will be keeping the place on its dancing feet, along with a third band yet to be announced. Rick’s Wrap It Up, Longfin Grill, and Fork in the Road will be keeping everyone happy with their delicious foods while Chaos serves up flagship beers as well as special firkins, seasonal releases, and limited pilot system brews. They will also be serving Aged Theory of Chaos on tap from 2016, and their newly-famed Federal Reserve: bourbon aged Squatch ale. There will be face painting for children and adults, as well as cornhole, free pool tables, and a photo slideshow featuring prior years of Chaos. That’s a whole lotta fun for one brewery, and it’s sure to be a big crowd! But don’t worry about parking. You can then take a week to recover, but you’d better be ready to head out to 4220 Mountain Valley Road in Axton for Mountain Valley Brewing’s triumphant first year celebration! On Saturday, May 26, the tap room will open at 1:00 pm. Music starts at 5:00 pm. The Faded Travelers will be performing from 5:00 - 6:30, followed by The New Habit Band from 7:00 - 8:30. Then both bands return to the stage together at 9:00 pm for the grand finale! There will be door prizes through the day in the form of brewery swag. There will also be corn hole and other yard games to keep everyone entertained. And for those with delicious craft beer on their minds, Mountain Valley’s Summer’s Sweet Raspberry Wheat will be back on tap just in time for the warmer weather! New-on-the-scene food truck, Delta Rae Café, will be supplying the delicious eats. Specializing in beer brats, specialty sandwiches, and homemade sides, most of their ingredients are bought fresh at the local farmers market!
And finally, though this is the April - May issue, Brew Hub doesn’t want Ballad Brewing to be missed in the interval between magazine releases. On Friday, June first, Ballad Brewing will also be celebrating its first year at 600 Craghead Street in Danville! From 4:00 – 10:00 pm, Ballad promises a selection of exciting new releases, including an exclusive New England IPA, as well as a Peach Sour Ale which has been aging in wine barrels for nine months! It’s still a bit early for final details, but there will be music and fun! As a food truck rodeo is scheduled nearby for the very next day, Ballad also hopes to offer an exciting variety of dishes to go along with all that great beer! Appomattox Gets Its First Brewery By Chaz Blevins, Certified Cicerone ®
Nestled in the very center of Virginia, you would be hard pressed to find a better example of local small-town Virginia hospitality than Appomattox. With a population near 2000, this is a place where family is key, and people still hold the door for you or throw up a hand to say hello when you pass by. Like much of Virginia today, keeping business local is not just key, it’s tradition. From organic farms, grocery stores, and vineyards, to stone cutting and cosmetics; Appomattox is a bazaar of local family owned business. Which makes it the perfect spot for family man (husband and father of 3) Keith Vogt to open its first brewery. Originally a machinist by trade, Keith’s tutelage in brewing came from 5 years of homebrewing and 2 local Virginia breweries: Loose Shoe, and the award-winning family owned Apocalypse Brewing. It’s evident he is no stranger to the unique labor of love that is brewing. Speaking with Keith reveals that his passion and creativity is drawn from a deep pool. And not just in his career as a machinist. “I liked to cook since I was young. Taking raw material and ending up with a final product. And brewing fell right into that.” When asked what is his favorite style to brew is? “I like brewing all of them. I did a lot of experimentation. Trying different things and seeing how different ingredients react.” Keith has plans to keep one or two of his taps open for such experimental, small batch brews. Such as “beers with added adjuncts”. “Something we would like to do is brew a beer local as possible, with all ingredients local as possible.” says Keith. He is already meeting with a local Virginia hop farmer. “We would like to have one beer that is from this area, where everything is from this area”.
But why open a brewery now, and here in Appomattox? “It’s a new step in our life,” says Keith. “Appomattox is our home country.” He goes out of his way to emphasize just how critical and supportive his friends and family have been since the beginning and how none of this would have been possible without them. His wife, Lori, not only supports the idea, but will begin working full time in the brewery. He, with the help of friends, has even taken on the task of building out the brewery! Even the name of the brewery itself is a testament to family and tradition. Krikelkay (pronounced crick-elkay), a dedication to his daughters, is a combination of their three names Kristen, Kelly, and Kayla. And what of the stress and complications of government red tape? Though many of the now archaic laws that prevented small brewers, such as Keith, to follow their dream have been amended to some degree, how difficult is it to deal with the VA ABC bureau and Virginia, or even local small-town legislation, when opening a new brewery, especially with so many unfamiliar with the process? Keith assures me it has been relatively headache free, which shows that craft brewers have made leaps and bounds here in Virginia with state legislation. “From what I have seen, they want the business here. Both state and local, and I think it has been a fairly smooth process.” Opening spring 2018 at 201 Old Courthouse Rd. in the heart of Appomattox VA, family owned, and operated Krikelkay Brewing Company will feature a 3-barrel brewing system, 8-10 taps, and growler service for beer to take home, and give Appomattox its very first, truly local brewery. Farm to Glass: How Virginia’s heartland is the perfect place for truly historic farm-to-table beer

The farmhouse. No single family trade is more alive, or has more history and tradition. Not only are trade secrets and procedures developed and handed down from generation to generation, but often times the land and farm its very self; allowing each new generation a chance to add their own fingerprint and persona to the farm. Virginia farmlands have a heritage that we are all familiar with. Of a simpler time, the fruits of our labors were much more literal. When we think of the Virginia farm, we can envision the silos or sanguine barn doors, the to the smell of the field, dried straw and hay, bright floral aromatics on a gentle breeze, and the sound and smells of fowl and livestock. Enter the Saison; arguably the truest farm-to-table beer to ever exist. Brewed out of necessity and almost lost forever to the jaws of time, this rediscovered style is encompassed in the ancient tradition of the farmhouse. Though many historical accounts of the style can vary and be hard to pinpoint exactly, almost all history/ origin can be traced back to the vast farmlands Wallonia, or the Frenchspeaking part of southern Belgium. More of a family of styles than an actual style, Saison remained one of the most elusive and mythological beer styles to track down. This cousin of the biere de garde was so diverse, that even today its complexity and attributes can vary from region to region and brewer to brewer, ranging anywhere from 2% in alcohol to upwards of 8%. Some brewers like Hill Farmstead’s Shaun Hill have even went as far to replicate (or add their own creativity, depending what well you draw your history from) the lactic acid or mild bacterial infections these brews would have had, creating acidic and tart delicacy that are unparalleled in the new American brewing frontier.

So what exactly is a Saison? Quick History: In French the word saison means ‘season’, and that is just what this style was. The world’s first seasonal beer. When it came time to harvest, most farms would have to hire temporary farmhands, known as Le Saisonniers, to help with the back-breaking field work. These workers needed sustenance that not only was refreshing and uplifting, but something that would fortify, quench, and most importantly, be safe. Especially in a time when water was a dangerous source of microbial infection, this posed a problem, until the first Saisons were born. Coming in at around 2%-4%, these first “table beers” were the perfect remedy. Though these brews were effervescent and light, they were also spiced with local flowers, orange and coriander, giving them an invigorating substance. And, most importantly, the wort had been boiled, making them one of the safest things a worker of the time could imbibe. As many of the geographic, middleage regions learned, it was best to brew in the cooler months. Not only was this usually after the harvest, but the temperature was ideal for preventing spoilage. Many of the historic farmers would use this time to employ the family to brew what would be used for the year, as well as allowing neighboring farms to brew. Some villages even had a “village brewery”. Not only did this birth the Saison brews for the upcoming year, but it created spent grain for animal feed in the winter, and could even be used to supplement income in the cold season.

today, making Saison one of the most diverse styles, here are some common attributes. • A top fermented, highly attenuated beer, mostly brewed from pale malts, sometimes with a bit of extra sugar added. • Spices were traditionally added to the boil, and though they may have varied from farm to farm, most included curacao orange peel, coriander, and a wide enough range of botanicals to make a fruit beer envious. • A strongly hopped beer but with restrained bitterness in taste. • Yeast strains from the Wallonia region were traditionally used but took many forms as they were shared through the generations,
but most kept the regional characteristics of “spicy clove”. • Almost always “bottle conditioned”, when poured this beer usually takes a deep orange color with very high carbonation and a large white frothy head. • Though alcohol variance is very common and wide, most traditional Saisions today range from 3.5-5% table Saison, 5-7% standard Saison, 7-9% super Saison.

yet subtle enough to not overwhelm the palate. Belgian yeast notes of light clove and orange peel with a slight tart finish, that was derived from a time when yeast strains were shared among neighbors, like borrowing a cup of sugar. With recipes handed down through generations and steeped in tradition, yet enough freedom to add one’s own touch, in addition to most being bottle conditioned, there is truly no style of beer that is more alive and steeped in tradition than the Saison. Though the rate of Virginia brewing is larger than ever, there is one thing we have never compromised on, and that is tradition. With that being the case I think it is safe to say the Saison as found a new home in the VA.
Saison is just the brew for you. Why, every sip of this magical decoction can be a journey to the farm house itself! Starting with pouring, the deep orange hue of the beer reminiscent of the sunset on the horizon. A long inhale from the glass reveals the tight white foamy barrier of champagne bubbles, each pop releases the warm breeze and all the wonderful and bright refreshing aromas that come with it. Orchard fruits, hibiscus, honeysuckle, dandelion, or lavender, are blended with the smells of driny hay and straw, barley and oats that are used to feed the animals, as well as the slight white peppercorn aroma of livestock. The herbal bitterness of hops is strong enough to restrain the sweetness,
