Our writers have been out and about across the county again meeting more of the champions of our food, drink and hospitality industry. Some of the names you may already be familiar with but others are new entrepreneurs in the sector with great products and ambitions to make their mark. Mike Webster went to Grimsby to meet the team at Docks Beers who have established the town’s only brewery, fifty years after Hewitts closed. Located in a former Mission Church, the brewery is set within a

regeneration area which will see considerable change in the future. Read Mike’s feature on page 3. Caroline Bingham was up with the lark to meet the bakers at Vine’s Bakery, the artisan bakery located on Steep Hill, Lincoln. This team are graduates of The School of Artisan Food, and led by founder Emma Vine, who is the fourth in five generations of her family to be in the industry. You can read her story on page 24. One of the great natural spectacles of the coastline are the seals which come
ashore to pup each autumn. Photographer Barbara Meyer has captured some wonderful images of these playful mammals but also reminds anyone visiting Donna Nook or any local sanctuaries to respect all boundaries and visitor notices. Finally, Good Taste Lincolnshire would not be complete without our fantastic selection of seasonal recipes. A quay player with great brewing in Grimsby By Mike Webster When the St Barnabas Mission Church on King Edward Street in Grimsby was first opened as a tin structure in 1874, later built in brick and consecrated in 1900, it could never have been envisaged that it would be converted into a rather different spiritual house in 2018. Now the home of the newfound company bearing the name Docks Beers, it has formally made its grand entrance into the brewing world and embraced an ever growing and appreciative clientele. Due to the Axholme Brewing Company outgrowing their premises in Crowle, North Lincolnshire, mainly due to the phenomenal success of their Cleethorpes Pale Ale, larger premises were urgently required. The existing team of Mike and Jules Richards joined forces with friends Will Douglas and Shahram Shadan in the creation of the new company which is now undoubtedly set to be a major force, not only in brewing but in the regeneration of the area. The new venue is something totally different to other breweries and quite a revelation to behold. It has already been considered – jokily but understandably – to be “the theatre of beer”. Not without good reason either, for the brewery is situated beside and in full view of a stylish bar and tap room with a well stocked shop too. The state-of-the-art fifteen barrel brewery in full swing holds a deep fascination for the brewery curious whilst still on hand to enjoy the best ale around. A canning process takes place in full view from time to time and this is an interesting twist with the supply of craft beer in cans rather than bottles. Putting the hard graft into craft beer, Docks Beers is the only brewery in Grimsby and this in itself A Lincolnshire Life Magazine publication

must have come as a welcome addition to the community after the demise of Hewitts, the last brewery here fifty years ago. With a capacity to produce around 20,000 pints per week, this place, which is off licensed oozes that “must come here again” feeling with customers. It can be booked for private events and brewery tours are available on the first and third Saturdays of each month. The tap room supplies a wide range of guest beers from other craft brewers along the tap wall as well as the ‘core’ beers of the business. These are ‘Hard Graft’, ‘Graveyard Shift’ and ‘Never Say Die’, all made with more hop varieties in each brew and being colder and carbonated. Director and head brewer, Mike Richards has said that currently the beers are the best that he has ever created but emphasises that this is just the beginning. Several more beers will be launched soon. Nothing has been spared with the designs on the cans either. The history and rich heritage of Grimsby as a hard working community has been remembered and transferred to the product. Inspired by the location, illustrations of work performed in Victoria Mill, The Ice House and The Dock Tower all feature on the merchandise. They all immortalise the grit and tradition of the Grimsby dock workforce that gave the town its ‘Great’ status. Plans for the further development of Docks Beers are nothing short of amazing. Since the deconsecration of
the church in 1954 it has been used as a furniture warehouse and has had an upper floor fitted. Will Douglas and his fellow directors have a wonderful vision for the future of the building. Shahram Shadan has a development background and together they have big ambitions for the building. Measuring 3,500 square feet, with a large vaulted roof and arched windows, the idea is to create a ‘cultural hub’ and it is certainly big enough to seat 200 and have 400 standing. Coupled with this, the possibilities of a stage, bar and live comedy, music, theatre and exhibitions make it a project that simply begs to be explored. Plans are in place to attract many high calibre cultural acts from all over the world and audiences from much further afield than just the Midlands. The company directors here are certainly wanting to put the Great back into Grimsby. Will is passionate about the regeneration of the area and he often reflects on the times when this was a rundown and somewhat impoverished area of the town. All the side roads off King Edward Street were once full of dock workers’ houses, the quayside being a short walk away. Now, as the large container ships are to be seen passing the end of the street and with a full modernisation programme well underway courtesy of grants from many different agencies, the culture and a new sense of wellbeing is about to flood through this once incredibly busy but still very proud town. Redhill Farm celebrates 20th Anniversary with Great Taste Awards success Farmers Terry and Jane Tomlinson are celebrating winning a fine food ‘Oscar’ in the 20th year of Redhill Farm Free Range Pork. This year’s Great Taste Awards attracted almost 13,000 entries with only 1.5% achieving the highest 3 Star rating. Redhill Farm earned three of these coveted 3 Star Awards along with the ultimate accolade, the fine food Oscar for this region, known as the Golden Fork, only seven of which are handed out each year. Jane and Terry joined the judges and other nominees on the red carpet in London for the awards ceremony, the highlight of the year for the fine food industry. Jane said: “A Great Taste 3 Star is incredibly hard to come by and has been likened to a Michelin Star for food, so for us to be awarded three of them is very rare and a fantastic surprise. To be topped off with our fine food Oscar really does make all the hard work worthwhile!” She added: “The 20-year anniversary of our business is a real milestone for us. We have proven that it is possible to build a sustainable business based on quality, provenance and authenticity, without the need to cut corners or lower standards. We are proud to have received national recognition for our free range meat and for our farm, year on year. For us to have achieved this level of

METHOD: Set oven to Gas Mark 3, 325F, 160C, or Top oven Aga. Place ham in the centre of a roasting tin on top of a large piece of tin foil. Wrap foil up and over the ham leaving room for air to circulate round the ham and seal all edges so that the steam will not escape. (Use two pieces of foil crossed if cooking a large ham.)
Bake in the oven for 20 min/lb for ham on the bone, and 30 min/lb for boned ham joints. Take out of the oven before the last 30 min to glaze. Turn oven up to Gas Mark 7, 425F, 220C, Top oven Aga. Remove foil and discard. Place ham on board to work. Score the rind in strips with a sharp knife and peel off leaving some fat on the ham for glazing. If using cloves, score the surface in a diamond pattern and stud the centre of each diamond with a clove. Spread a layer of strong English mustard over the surface and then sprinkle on a good layer of Demerara sugar until all the mustard is well covered. Put back in hot oven in a roasting tin for approx 20 min until golden brown. Remove from roasting tin and leave to cool.

An alternative Christmas with Rachel Green With the festive period upon us we’ve looked at something different you can create for friends or family. Foodie gifts are always a popular choice, and a great opportunity for kids to get involved. Rachel has come up with a great alternative to the traditional desserts with an Amaretti roulade and we’ve used some Eastern influence to create a monkfish curry.

Christmas tree firelighters METHOD: Line an old 12-hole cake tin with paper cupcake cases. Remove the metal container from around 12 tea lights and place the candles, wick side up in the centre of each paper case, making sure that the wicks are standing upright. Put the cake tin into a warm oven approx. 80°C and allow to melt fully.
Remove the tray from the oven and place on a surface to cool slightly. You can now add your choice of either colour or flavourings. Into each molten candle, I added some dried orange rind, a bit of bay, 3 cloves and 2 cardamom pods. Push the wick gently to the side of the paper case and place a fir cone on top, allowing the wick to
still protrude from the side. Repeat 12 times and allow to cool. Once cool and set, remove the fir cone candles from the paper cases and tie a little ribbon bow on top to make them look like Christmas trees. These firelighters are a lovely gift to take to people and when they burn, they smell lovely and Christmassy.

Nutty Christmas granola with cinnamon, orange coconut and cranberries This Christmas granola is made with all the flavours I associate with Christmas. Make a big batch and pack it into Kilner jars, or paper bags, with string and a lovely label to make a simple homemade gift. I serve this on Christmas morning with Greek yoghurt and winter fruits. INGREDIENTS: 350g jumbo porridge oats 150g buckwheat groats 50g flaked almonds 100g hazelnuts, roughly chopped 100g pecan nuts

100g desiccated coconut 200g dried cranberries 1 x 90g bag sour cherries 2 tbsp ground cinnamon ½ tsp ground cloves 1 tsp ground nutmeg ½ tsp ground ginger Zest of 1 orange Zest of 1 lemon 100ml coconut oil 4 tbsp runny honey Preheat the oven to 170°C/325°F/ Gas Mark 3 METHOD: Line 2 baking trays with parchment.
Place all the dry ingredients together in a mixing bowl and using clean hands, massage everything together. Add the coconut oil and honey and massage again until everything is evenly coated. Place the mixture onto the baking trays and bake in the preheated oven for about 20 minutes, turning the mixture often to stop it from burning around the edges. After 20 minutes, keep an eye on it until it is all lightly toasted. Remove from the oven, allow to cool and then put into 2 large Kilner jars.

Amaretti roulade with mascarpone and festive fruits Serves 6-8
INGREDIENTS: 100g Amaretti biscuits 3 large eggs 100g caster sugar 1 tsp almond extract 40g self-raising flour FOR THE FILLING: 100g luxury dried fruit mix 50g dried cranberries 50g dried dates, optional 3 tbsp Amaretto liqueur 300ml double cream 250g mascarpone cheese 2 tsp vanilla extract Icing sugar, for dusting Preheat the oven to 200˚C/400˚F/Gas Mark 6 METHOD: Line a Swiss roll tin with baking parchment. To start with, place all the dried fruit for the filling into a large bowl, pour over the Amaretto and leave to soak for an hour. Blitz the Amaretti biscuits to fine crumbs. Place the eggs, sugar and almond extract in a mixing
bowl and whisk until they form a thick, pale foam. Sift over the flour, sprinkle in the Amaretti biscuit crumbs and fold into the egg mixture. Pour the mixture into the lined Swiss roll tin and bake in the preheated oven for 10 minutes until risen and light golden brown. Remove from the oven and leave to cool in the tin. For the filling, beat together the double cream and mascarpone until thick. Fold in the vanilla extract. Lay out a piece of greaseproof paper larger than the Swiss roll tin and dust it heavily with icing sugar. Turn the roulade out onto the paper, browned side down. Cover the roulade with the cream and mascarpone mixture and lay the soaked fruits on top of the cream down the middle. Roll the roulade firmly into a log and chill, wrapped in the greaseproof paper and sitting on its seam, for 2 hours. To serve, carefully unwrap the roulade and place on a serving platter. Dust with some more icing sugar.

Turmeric and coconut monkfish curry with roasted chilli sprouts Serves 4
INGREDIENTS: 300g Brussels sprouts, trimmed 4 tbsp coconut oil Sea salt flakes Freshly ground black pepper A good pinch of red chilli flakes/½ tsp smoked paprika 2 tbsp flaked almonds 1 tsp fenugreek powder/ seeds 1 cinnamon stick 3 garlic cloves, crushed 2 large shallots, finely sliced 3 cardamom pods 2 tsp brown sugar (optional) ½ tsp fennel seeds 1 ½ tsp ground turmeric 1 x 400ml can coconut milk A little vegetable stock 2 lemongrass stalks, bashed and chopped 1-2 green chillies, finely chopped 2cm piece fresh ginger, peeled and finely grated 8 curry leaves 1 bay leaf 1 tbsp fish sauce Juice of 1 lime 500g of diced monkfish Chilli oil, to serve Preheat the oven to 220°C/425°F/Gas Mark 7
METHOD: In a bowl, toss the Brussels sprouts with 2 tablespoons of the coconut oil, some sea salt and pepper and the chilli flakes/smoked paprika. Place the mixture in a roasting tin and roast in the preheated oven until crisp and golden and soft inside. Remove from the oven and leave to one side. Toast the almonds in a dry pan until slightly coloured and set aside to cool. Heat the remaining coconut oil in a saucepan and add the fenugreek and cinnamon. Cook for 30 seconds. Add the garlic and shallot and cook until soft but not coloured. Add all the remaining ingredients, apart from the lime juice and chilli oil, and bring to a simmer. Cook for 8-10 minutes taking care not to let the mixture boil or the coconut milk might split. Add the monkfish to the pan, coat in the sauce and simmer until cooked, which will take about 5-7 minutes. Season with a little salt and pepper and add the lime juice. However, did you know that grey and harbour seals are the only two subspecies breeding in Britain? And that they live along the Lincolnshire coastline all year around.

GREY SEAL WITH PUP AT DONNA NOOK
Seals can be found all around the globe. Their stronghold in the UK is Scotland, though their distribution stretches along many parts of Britain’s coast. Donna Nook near Cleethorpes has, for example, one of the largest grey seal breeding colonies in the UK and The Wash near Boston has one of the highest densities of harbour seals. The grey seal population around the British Isles is estimated at approximately 150,000, which is around 40% of the global grey seal population. Their distribution extends across the North and East Atlantic, plus the North and Baltic Sea. In comparison the population of the harbour seal, also called the common seal, is estimated to be around only 45,100. Their global distribution is across
the North Atlantic and North Pacific – stretching from the Artic to the subtropics. Both seal subspecies spend most of their time in the sea and are counted when it is most likely that most of the seals wiil be out of the water. Grey seals are counted when they come ashore to give birth to their pups and stay ashore for about three weeks. As harbour seal pups are born with their waterproof adult fur coat and the adults don’t stay on haul-out sites for prolonged periods at this time, they are counted when they moult in August. Besides the difference regarding the seal pups’ coat and grey seals and their pups staying on land when giving birth, there is also a difference in view of when seal pups are born.

Harbour seal pups are born in summer, around June time. The time when grey seals are born varies geographically. At Donna Nook the grey seals come ashore from late October until December. Further south in Norfolk it is from late November until January and in Cornwall the grey seal pupping season is in August/September. The best place to see grey seals in Lincolnshire is at Donna Nook when they give birth to their pups. It is more difficult to watch harbour seals in their natural habitat as they haul-out on sand banks and other more remote areas. However, if you take a cruise on the Boston Belle, you have a chance to see them resting on the mudflats in the estuary of the River Welland. The two seal subspecies can
be distinguished by their size, the shape of the head and nostrils. The harbour seal has a more roundish head, V-shaped nostrils and is significantly smaller. Harbour seals weigh up to a maximum of 100kg while a male grey seal can reach up to 300kg and females up to 200kg. The food sources are similar for both seal subspecies and include cod, haddock, plaice, sole and squid. The fish the seals feed on is one of their problems. They are competing with our consumption and commercial harvesting of these fish species. Other problems for seals are also related to our doing. Our litter often ends up in the sea and many of these items, including frisbee rings mean seals get caught in them and either sustain

severe injuries or are unable to feed themselves. Last but not least, seals are also frequently disturbed by people walking too close to them, allowing dogs to get too close to them or riding boats or jet skis right up to where the seals are resting. Please remember, we are visiting their natural habitat, meaning their home. We need to leave them space and, for example, take photos only from a safe distance (safe for us and for the seals/wildlife). You can help the animals if you see an injured or weak seal on the beach by contacting the British Diver Marine Life Rescue (07738 596100 or lincolnshire@ bdmlr.org.uk), the RSPCA
(0300 1234 999) or the local seal sanctuaries. The local seal sanctuaries here in Lincolnshire are the Natureland Seal Sanctuary in Skegness and the Mablethorpe Seal Sanctuary and Wildlife Centre. Each of the seal sanctuaries in Lincolnshire has a designated rescue area along the coast. The Skegness based sanctuary covers the area from Boston up to Anderby Creek and from there the Mablethorpe Seal Sanctuary takes over. A visit to either of these sanctuaries is well worth it, as you can see both seal subspecies, learn about them and the work of the seal sanctuaries as well as how we can help to protect the seals and enjoy
watching them in their natural habitat safely. If you are a photographer, bring a long zoom lens. At Donna Nook, you will have some of the seals relatively close to the viewing area, but most of them are further away. I usually walk the entire trail to see what is going on and then position myself to take photos of activities like pups feeding and/or interacting with their mum and also the interaction of adult seals. During the pupping season the main area used by the seals at Donna Nook is completely off-limits to visitors, but watching from the path along the mudflats provides you with good opportunities to see the seals, and the volunteer
wardens of the Lincolnshire Wildlife Trust are doing an excellent job of keeping the seals and visitors safe. If you walk on other beaches, at Gibraltar Point, for instance, and see seals, please stay at least 100 metres away and keep your dog on the lead – well away from seals. Saying this, watching and photographing seals is one of the most rewarding experiences. It's a game changer We’ve teamed up with the British Game Alliance and Eat Wild to bring our readers some new ways of using local game to create mouth-watering recipes.
Pulled mallard pizza Starting with a shopbought margherita pizza, this tasty recipe couldn’t be simpler; just top with your slow-roasted pulled mallard, extra cheese and rocket, then serve with punchy sriracha mayo. If you’d like the extra challenge and have a pizza oven of your own, whip up the pizza from scratch.
Serves: 2 INGREDIENTS: 1x large stone-baked margherita pizza 4x mallard legs 25g sriracha sauce 100g mayo 25g strong cheddar, grated Rocket METHOD: Dry the mallard legs with a kitchen cloth, place in a deep tray and cover with vegetable oil. Slow roast the mallard for 1 hour 30 minutes in a
warm oven at 140 degrees. It’s ready when the meat is soft. Take the legs out of the oil and leave to cool. Once cool enough to handle, gently shred the meat from the bone; it should fall away easily. To make the sriracha mayo, simply mix the sriracha into the mayonnaise with a fork. Put your pizza on a baking tray and top evenly with the pulled mallard, then sprinkle over the grated cheddar. Cook the pizza in a preheated oven at 200 degrees for 10 minutes, or until the cheese has started to brown. Remove from the oven, cut into slices and serve on a board or plate, then sprinkle a couple of handfuls of fresh rocket leaves on top. Spoon blobs of the mayonnaise on to the pizza or serve in a small dish for dipping.

Slow roast pheasant ramen If you’re having friends over at the weekend these traditional ramen noodles are certain to impress, and mildly flavoured pheasant is the perfect starting point for those who have never tried game before. Set a little time aside to prepare the stock, as it really benefits from a long, slow simmer.
Serves: 4 INGREDIENTS: For the stock: 50g lemongrass 20g chilli 1 litre chicken stock 50g ginger, chopped 50g galangal, chopped 30g palm sugar 20ml fish sauce 50ml soy sauce For the noodles: 4x pheasant breasts 2x leeks 3x carrots 1x tin of bamboo shoots 1x pre-cooked ramen noodles
50g coriander, chopped 30g spring onions, chopped METHOD: First, start infusing the stock. Bring the 1 litre of chicken stock to the boil with the chilli, lemongrass, ginger, galangal and all of the palm sugar. Season with soy and fish sauce, then bring back to the boil and simmer for an hour. While the stock simmers, warm the oven to 140 degrees and julienne your leeks, carrots, and bamboo. That means slicing the vegetables into very skinny strips, usually around 5cm long. Set them aside. When the oven’s hot enough, season the pheasant breasts with a touch of salt and pepper, place on a baking tray and roast for around 20 minutes. Saving the liquid, strain your stock through a colander then re-boil and check the seasoning; it should be slightly hot and salted with

Brackenborough Hall Coach House, award-winning self-catering accommodation near Louth (www.BrackenboroughHall. com), is at the centre of Brackenborough Hall Farm where there is an abundance of wildlife. Paul and Flora live there and welcome selfcatering guests to the Coach House all year round. They regularly see pheasants, ducks, pigeons, hares, rabbits and deer. During the winter months the Bennett family often eat game from the farm and Flora has devised this recipe for game pie which easily and economically feeds large numbers. In nearby Louth, game can be purchased seasonally from the poulterer, Dales, or from the several butchers. The Lincolnshire sausage meat adds flavour to the dish and balances the lean game. Flora often uses pheasant and duck but adapts the recipe to what is available. The vegetables come from the wonderful Victorian Kitchen Garden at Brackenborough Hall and are different each time. Flora

adds homemade redcurrant jelly and chutney to add to the taste. Here is Flora’s recipe for Game Pie: ROUGH PUFF PASTRY 8 oz plain flour 4 oz butter 4 oz block vegetable fat Salt About ½ pint chilled water Juice of ½ a lemon PIE 1lb diced, lean game meat 1lb Lincolnshire sausage meat 1 onion & 1 carrot, chopped 1 leek, sliced & 1 stick celery Rapeseed oil Plain flour Salt, pepper and mustard powder ½ pint Lincolnshire beer or beef stock 1 tbsp redcurrant jelly

PREPARING THE INGREDIENTS
1 tbsp chutney 1 egg yolk and 1 tbsp milk for glaze METHOD: Make rough puff pastry using 8 oz plain flour, a pinch of salt, 4 oz butter, 4 oz block vegetable fat and chilled water with lemon juice in to mix. Roll and seal 4 times. Wrap and put in the fridge to chill whilst you make the rest of the pie. Form the sausage meat into small balls and roll in flour seasoned with salt, pepper and mustard powder. Brown in a frying pan and then put to one side. Dip diced meat in seasoned flour and brown in frying pan. Move to an ovenproof dish. Chop/slice the vegetables and place on top of the meat. Place the sausage balls on

top of meat and vegetables. Add beer/stock to frying pan with chutney and redcurrant jelly. Simmer gently until jelly has melted. Add to meat. Brush egg around top of dish, roll out pastry, cut to size and place on top of meat and vegetables. Decorate with scraps of pastry and cut holes in the pastry for steam to escape. Glaze with mixed egg yolk and milk. Bake for about 40 minutes in a hot oven, covering or reducing the temperature once pastry is risen and golden brown. Another berry good year for annual Strawberry Fayre Hundreds of people enjoyed festivities at Galley Hill Farm in Alford back in July when it held its Annual Strawberry Fayre. The public were welcomed to the farm to pick strawberries, enjoy cream teas and a hog roast, as well as a bouncy castle for the children and homemade jam stands – proving extremely popular, as the hog roast disappeared. The annual event has raised funds for Marie Curie Lincolnshire for the past four years with a target of £10,000 which has been smashed. This year was no exception and raised £5,400 – bringing the running total raised to over £12,000. Second generation farmer owners Ian Scaman and his
wife Sandra explain: “The event is always very well supported – we enjoy raising money for such a good cause as we as a family have used the services. This year Ian decided to shave off his infamous beard for the cause.” Ian joked: “I decided to shave off my beard, which helped to raise over an additional £1,500. By shave, I mean shear. In true farm style, with a sheep shearer!” The video of Ian’s beard shearing can be found on the farm’s Facebook page – Galley Hill Farm. The money raised from this year’s event has paid for a further 270 hours of night-time nursing within the county for terminally ill patients within their homes. This means that

Everything you knead to know for Sourdough November Bread-lovers are being invited by the bakers at The School of Artisan Food to rise to the real bread challenge by honing their sourdough skills at quickfire, starter sessions with resident expert, David Carter. David is running the 2.5hour evening workshop at The School on 9th November. The workshop takes its inspiration from Sourdough September, the month-long event by the Real Bread Campaign to raise awareness of the real thing vs ‘sourfaux’, the name given to inferior mass-produced fake sourdough using cheaper ingredients, additives and baking shortcuts. “I’m keen to show how easy it can be to make a fantastic loaf. All that’s needed to make real sourdough bread is flour, water, time for the yeasts to develop and a few simple techniques. The flavour is far superior to mass-produced bread and it will last longer too,” he says.
Sharing his tips and secrets to making, looking after and using a sourdough starter, David will finish a part prepared loaf during the workshop. Each of his bakers will get to taste some delicious bread and to take away a small portion of sourdough starter to practice bread baking at home. Set up to teach all aspects of artisan food production, The School is well placed to share its expertise in the making of ‘real’ bread using the slow fermentation artisan process, which rarely features in the supermarket version of so-called ‘sourdough’. As there is no legal definition for sourdough or artisan bread, there is little to prevent those terms being used to market any loaf regardless of how it’s made, leading to the Real Bread Campaign to call for better labelling. Wayne Caddy, head of baking at The School of Artisan Food, who has made a series of how to make sourdough videos for The

School’s YouTube channel, explains: “A good sourdough should reflect the character of the grain. It’s the baker’s job to get the best out of the grain. Similar to wine, the grape often determines the character of wine; sourdough bread is no different. “Dough with very little fermentation, such as a mass produced loaf, contains much higher levels of gluten. If you imagine gluten like an elastic band – tough, strong and resistant – this gives your gut a rigorous workout. Lincoln’s new artisan bakery Emma Vine, owner of Vine’s Bakery, switched career from academic to artisan baker, to follow in the footsteps of three previous generations of her family. Well, 7.30am felt like an early start to me but bakers, of course, shrug that off as halfway through their day. Emma travels in from Boston while head baker, Rob Taylor, only has a tenminute walk to begin his working day between 3am and 4am. Assistant baker, Emma Crawford, commutes from the Wolds but by 5am the bakehouse, in a small city centre commercial unit, is a hive of activity. Emma began the business in November 2018 and opened the Steep Hill retail shop in April. “It was much harder than I had anticipated to find suitable premises,” said Emma, “but in each case I grabbed the opportunities when they arose, which has made this year very busy indeed.“ She explained that her previous careers have ranged from roadie to academia – as a lecturer in psychology at Sheffield Hallam University – but her family’s roots lay in the East End of London, where her great grandfather Charlie established a bakery in Limehouse Causeway in 1904. By the 1950s her grandfather Ed had built this into a small chain of outlets covering south and east London. “My great, great grandfather Edwin had been the first baker in the family, laying the foundations for the reputation Vine’s Bakery had for fine quality and tasty products. His grandson, Ed (known as Guppy) was a multiple gold medal winning baker whose business even survived the Blitz.” Emma’s father worked shifts in the bakery as a schoolboy but wanted to pursue his own career as an engineer. Subsequently, the bakery and shops were sold to Aerated
Bakeries in the late 1950s just prior to the Chorleywood Bread Making process industrialising bread making in the early 1960s. Boston became Emma’s hometown when her father relocated his family there for his work. “It had been my ambition for a long time, though, to re-establish the family business and my first steps were to enrol on a Professional Baking Course at the School of Artisan Food at Welbeck. There is a huge difference between home baking and the skills required for advanced, larger scale production. The school has experts such as head of baking, Wayne Caddy and Yvonne O’Donovan, head of business and enterprise on hand to advise bakers wanting to start their own artisan bakery.” It was the school who recommended Rob and Emma (both graduates of Welbeck) as potential recruits and with support from her family and the Welbeck advisors, Emma launched nearly a year ago. The investment in premises, ovens, mixers, staff and equipment has been considerable. Each artisan baker I have interviewed is evangelical about the quality, taste and health benefits of eating slow-fermented bread over fast raised, industrially produced loaves. Emma and her team are the same. Investment is also considerable in using the best quality ingredients to produce the finest end product. “We have really bonded together and have worked closely to develop our own recipes using the highest quality ingredients to achieve the best possible taste and flavours.” The Vine’s Bakery week

begins on Tuesday, which is a prep day, then they bake Wednesday to Sunday. The retail shop on Steep Hill is open Wednesday to Sunday. The range of products is broad and growing all the time, from tasty sourdoughs to indulgent pastries. The house sourdough, which is similar to a Pain de campagne, is the base for other speciality breads such as a six-seeded loaf or rye sourdough. There is a traditional white, London, large tin loaf as well as a Deli Rye, Challah, Fougasse flavoured with Stilton, baguettes and a rustic French loaf. Emma is the house confectioner and has been working on the range of croissant, Viennoiserie and bakes. There are bagels,
croissants, pain au chocolat as well as daily specials. While Emma and I chatted, Rob was making a traditional Breton confection, Kouign-amann, a triple butter laminated dough which caramelises with sugar to a crisp rose shaped individual cake. While I watched the skill involved with fascination, assistant baker Emma had been loading the van ready for city deliveries to wholesale customers and to the retail shop. I followed along to Steep Hill and met shop manager Sophie Robinson who busily began to get the baskets and cake stands set out with fresh displays. Emma went on to tell me that the wholesale side of the business is growing steadily. “We are producing some own label products

for local businesses as well as supplying cafés, farm shops and restaurants. We are also working on a whey bread in association with Cote Hill Cheese. We take some of their whey and mix it with their Linden cheese to make a speciality whey loaf. These enriched breads are very popular.” Sophie was stacking the stands with rich brownie squares and New York plum crumb cake which are available along with fresh, takeaway hot drinks. There are macarons and seasonal specials such as honey cake which will be available until the end of October. Orders are also being taken from now until the end of November for Christmas cakes and puddings. There will be more
festive specials in the shop including a Stollen tray bake, gingerbread and a savoury Christmas loaf with chestnuts and cranberries.There are no gluten-free products produced by Vine’s Bakery but some vegan confectionery items are in development. The shop has a charming collection of framed photographs hanging on the wall with some archive images of Emma’s family and their London bakeries. I feel sure they will be smiling down, knowing that although the call may have skipped a generation, the baking gene is alive and well in Emma Vine. Studies show health benefits of drinking coffee In June 2019, Seven Districts Coffee, a Lincolnshire based specialty coffee roasting company undertook research into the health benefits of drinking coffee. Which begs the question, what can help prevent the risk? Polyphenols, magnesium and chromium can all be found within coffee. These have been found to help lower the risk of Type 2 diabetes. These properties work by improving insulin sensitivity, which helps to offset the opposite effects of caffeine. In addition to the health

issues which coffee is known to help remedy, it has also been found to boost mental performance, meaning the benefits of coffee become widely accessible. The way in which coffee enhances mental performance is by blocking the chemical adenosine. This wards off sensations of tiredness which naturally hinder attention and cognitive performance. What's more, caffeine is known to elevate mood, although some believe this results in withdrawal symptoms. The research which has been carried out isn’t related specifically to ‘specialty coffee’ or any other specific types of coffee roasts. It is also important that when talking about coffee and the health benefits of drinking coffee, the research relates to brewed, black coffee
with no milk, cream or sugar added to the hot drink. As a way of improving the industry, it’s important that researchers are pushed in a new direction, one where health professionals are more educated about the specific products they are investigating, so that there is a clearer understanding. Businesses choose to enter the VisitEngland Taste scheme, and if successful in securing this internationally recognised Local Food Accolade, their award will say Taste Lincolnshire under the Tudor Rose logo. It’s really important for VisitEngland to see the range and quality of locally sourced items on an establishment’s menu. Show back in June of this year. Over the two days of the Show, the Taste Lincolnshire sponsored food court and Lincolnshire Kitchen were an absolute hive of activity. Founding Taste Lincolnshire Ambassadors and renowned Lincolnshire chefs Rachel Green and Colin McGurran were drawing the crowds – Rachel with her always exuberant and always packed cookery demonstrations; and Colin with his book signings and passionate talk about using local and seasonal ingredients. The crowds were also treated to a wonderful ‘flash mob’ style performance from Washingborough Academy who worked with the Taste team to pull together a surprise rendition of Food Glorious Food! The Year 6 students pulled off a charming performance and even made the ITV News! Working with the next generation of food shoppers and home cooks is a really important area that the project would like to develop in the coming months. Parma Ham recipes for autumn Perfect for a delicious lunchtime snack or warming weeknight meal. With the summer now over, it’s time to pack up your beach gear. As you get back into your daily routine, it can be challenging to find
the time to prepare healthy but delicious meals that the whole family will enjoy. Thankfully, these recipes with Parma Ham are made to
help busy parents get back into the swing of things. Our flatbread with Parma Ham can be prepared as a quick snack or lunch for your
kids to pack up and take to school, and the Parma Ham, potato and rosemary soup is perfect for an easy weeknight dinner.
Flatbread with Parma Ham, mozzarella and cherry tomatoes INGREDIENTS: 250g strong Manitoba flour 250g flour type 2 (with fibre) 2 tsp salt 7g brewer’s yeast, freezedried 3 tbsp extra virgin olive oil 300ml warm water To serve: 200g Parma Ham 20 cherry tomatoes, chopped 2 chillis, chopped 2 pieces Mozzarella di Bufala, drained and sliced Basil Extra virgin olive oil Salt
Divide the dough into pieces weighing about 60g each and, with a dusted rolling pin, roll out the dough to thin discs of roughly the same size. Leave the dough discs to prove for 5-10 min. Heat a large pan over medium heat, place one disc at a time in it, and cook for 2-3 min on either side. Serve the flatbread stuffed with the dressed cherry tomatoes, Parma Ham and slices of mozzarella.
METHOD: Mix both types of flour with the salt, yeast and oil in a large bowl. Add the amount of water required to obtain a soft ball. Knead for 5 minutes. Place the ball in a slightly greased bowl, cover, and leave to prove until doubled in volume. Meanwhile, dress the tomatoes with the chilli, salt oil, and crumbled basil.

Parma Ham, potato and rosemary soup INGREDIENTS: 50g unsalted butter 170g onion, diced 500g floury potatoes (eg. Maris Piper, King Edward), diced in 2cm pieces 1 tbsp fresh rosemary, chopped (plus extra for garnish) Salt and pepper 450ml chicken stock, plus extra to loosen the soup (1 Oxo cube per 500ml) 100ml whole milk 6 Parma Ham slices, torn Single cream, to garnish METHOD: Melt the butter over a medium heat and then reduce before adding the onion, potato and
rosemary. Season well with salt and pepper. Cover with a lid or tin foil, then let the vegetables steam for 12 minutes until the potato is soft. Shake the pan every few minutes to ensure that nothing sticks to the bottom. Add the stock and milk, ensuring that the potatoes are covered in liquid. Simmer for 20 min until the potatoes crumble apart. Purée the soup until smooth. If the consistency is too thick, add more stock. Divide into bowls, garnishing with the Parma Ham, chopped rosemary and a drizzle of fresh cream. Serve with crusty bread and butter. GOOD TASTE LINCOLNSHIRE

Winter warmers Want the perfect dinner party menu? Look no further. Using seasonal produce you can create a whole menu that will be sure to wow your guests.
Isle of Wight balsamic roast tomato soup INGREDIENTS: 500g Isle of Wight tomatoes 1 red pepper, chopped 1 tbsp rapeseed oil 1 tbsp balsamic vinegar 2 cloves garlic, chopped 1 onion, chopped 1 carrot, chopped 500ml vegetable stock cube 2 tbsp parsley, chopped,
plus leaves to serve 100g ricotta Preheat the oven to 200C. METHOD: Toss the tomatoes and pepper with half the oil in a roasting tin. Roast for 20 minutes, then drizzle over the balsamic vinegar

and cook for a further 10 minutes. Heat the rest of the oil in a large pan and fry the garlic, onion and carrot over a low heat for 5 minutes. Add the stock, bring to a simmer and cook for 10-12 minutes, or until the carrot is tender. Add the tomatoes and
peppers to the pan. Cook for 5 minutes, season, then blend using a handheld blender. In a bowl, stir the parsley into the ricotta then whisk until light and fluffy. To serve, divide the soup into bowls and top each bowl with a spoonful of the ricotta mixture.

BerryWorld cranberry glazed ham Serves: 8 INGREDIENTS: For the Ham: 2kg-2.5kg gammon joint 500ml dry cider or apple juice 4 cloves 1 cinnamon stick 1 bay leaf For the Glaze: 200g cranberries 6 tbsp maple syrup 1 tbsp whole grain mustard 6 cloves 1 bay leaf 1 cinnamon stick 1 orange, zest only Preheat oven to 160C/140C fan. METHOD: Put the ham into a snugly fitting oven dish and pour over the cider or apple juice. Top up with water until the pan is half full. Add the spices and bay leaf to the liquid and cover the whole thing tightly with two layers of non-stick foil. Put in the oven and bake for 4 hours. After 2 hours carefully check the liquid level and add a little water if there’s
less than half of the liquid remaining. While the gammon is cooking make the glaze. Put all of the glaze ingredients into a saucepan and simmer gently for 10-15 minutes until the mixture becomes thick. Set aside. After 4 hours remove the ham from the oven and carefully remove the foil and pour away the liquid. Turn the oven up to 200C/180C. When the ham is cool enough to handle, cut away the skin leaving a layer of fat. Score slashes into the fat to create a diamond pattern. Discard the whole spices from the glaze then spoon and spread half of it over the ham. Return to the oven for 20 minutes or until the outside of the ham is sizzling. Serve, with the remaining sauce, as part of a buffet, main meal or sandwiches. Note: This method of cooking will produce a meltingly succulent ham so don’t worry if it doesn’t cut into perfect slices, it’s just as easy to serve it pulled into chunks and pieces.
Roasted asparagus with hazelnut gremolata INGREDIENTS: 30g hazelnuts 500g asparagus 2 tbsp olive oil Salt and pepper Leaves from a small bunch of parsley Zest of 1 lemon 1 garlic clove, crushed Crumbled feta (optional) Preheat oven to 200C. METHOD: Place the hazelnuts on a small roasting tray and place in the oven for 5-7 minutes until golden brown. Keep an eye on them to make they don’t burn. Once browned set aside. Trim off any woody ends from the asparagus and

place in a roasting tray. Drizzle with the olive oil and season with salt and pepper. Roast in the oven for 5-6 minutes until crisp but still tender. Meanwhile, coarsely chop the roasted hazelnuts and parsley and place in a bowl along with the lemon zest and crushed garlic. Slowly drizzle in 1 tbsp olive oil and stir to combine. Once the asparagus is done, place on a plate and top with the gremolata and enjoy. Or, if enjoying it with feta, crumble this on top of the asparagus and sprinkle over the gremolata, allowing the flavours to combine.

Baked shallots and squash with a crispy rosemary, chilli, orange and olive oil breadcrumb topping INGREDIENTS: 1kg butternut squash, peeled, deseeded and cut into 5cm/2in chunks 5 tbsp olive oil 12 shallots, peeled Sea salt and freshly ground black pepper 3 cloves garlic, peeled and finely chopped 1 red chilli, deseeded and chopped 1 tbsp rosemary leaves chopped 2 tbsp flat leaf parsley, chopped The zest of 1 orange 120g fresh white/brown breadcrumbs
Place the shallots in an ovenproof dish and toss with 1 tbsp of the oil, season with sea salt and black pepper and place in the oven for 15 minutes. Remove the dish from the oven and add the butternut squash, and making sure the vegetables are well coated with the oil and butter mixture, and cook for a further 15 minutes. Meanwhile heat the remaining olive oil in a saucepan over a moderate heat with the garlic and cook for one minute taking care not to burn the garlic. Add the chilli, rosemary, parsley and the orange zest, Preheat oven to 200C/Gas stirring all the time. When mark 6/400F thoroughly mixed add the breadcrumbs and season. METHOD: Cook for a further minute Peel the butternut squash then take off the heat and and discard the seeds. Cut the flesh into large bite sized set aside. Remove the shallots and chunks about 5cm.

butter and cook over a medium high heat. Whisk for a few minutes until the butter starts to become frothy and brown. Add the honey and garlic and remove from the heat. Add the carrots to the pan, toss until coated and spread evenly on a large baking sheet. Season with salt and pepper and bake for 15-20 minutes or until carrots are tender. Toffee BerryWorld cranberry puddings INGREDIENTS: 110g butter, softened 175g soft light brown sugar 2 free range eggs 1 tsp vanilla essence 110g wholemeal selfraising flour 50g cranberries, chopped 1-2 tbsp milk Sauce: 110g cranberries 4 tbsp water 110g soft light brown sugar 25g butter 50ml double cream Preheat oven to 180C/Gas mark 4 350F. METHOD: Cream the butter and sugar together until light and fluffy. Then blend in the eggs, vanilla, flour and cranberries, adding a little
milk if necessary to give a fairly soft consistency. Spoon the mixture into lightly greased individual pudding basins. Cover each loosely with a piece of greased greaseproof paper. Place on a baking tray and bake for 25-30 minutes until well risen and just firm. For the sauce place the cranberries in a saucepan with the water and sugar and heat gently until the cranberries pop and burst and the sauce reduces a little. Stir in the butter and continue for a few minutes until the sauce thickens and becomes slightly syrupy. To serve turn out the puddings and pour on a little of the cranberry toffee sauce. Serve with thick cream or ice cream and the rest of the sauce.
BerryWorld cranberry gin INGREDIENTS: 200g cranberries 500ml gin 160g sugar 60ml water 750ml sterilised preserving jar Muslin METHOD: Wash the cranberries and put into a sterilised preserving jar. Pour over the gin, seal the lid and put in a dark cool cupboard to steep for at least 4 weeks. In the first week invert the bottle every other day and once a week for the rest of the time. Once the berries have steeped and you’re ready to bottle, put the sugar and

water into a small saucepan over a medium heat until the sugar has dissolved. Strain the now flavoured gin into a jug through some muslin. Add the sugar syrup and stir. Pour the finished gin into a sterilised bottle and label. Note: The gin will be more or less sweet as the natural sweetness of the berries varies. It’s a good idea to add half of the sugar syrup and try, add more to suit the berries and your taste.
