Hudson Valley restaurants are setting trends for the farm-to-table food movement. Chefs throughout the region use local and organic foods, including cheeses, grains, fruits, berries, vegetables, and meats. They create seasonal menus for their restaurants based on the bounty of our regional farms. This makes diners happy, as more and more people today understand the value of eating local, seasonal food.

and agri-tourism are creating more and more relevance for our farms. The farm-to-table scene focuses on health, as chefs create cuisine comprised of healthy, fresh ingredients without the need for preservatives. The health extends to our environment as we save thousands of gallons of fuel from processed foods traveling around the globe.

When restaurants source foods locally, they are not just pleasing our taste buds but also taking steps to sustain and grow the local economy. Small farms throughout the country are being jeopardized by development and regulation. Locally, however, restaurants, schools, consumers,

Cider-Brined Pork Chop

with pickled pumpkin + sage hash, braised kale, and bacon pan gravy with Chef Juan at Duo Bistro, Uptown Kingston

ingredients:

Yield: 4 servings This is a 2 day process although easy to prepare.

4 local pork chops—bone in or out (We at Duo use Northwind Farms in Tivoli) 1/2 gallon apple cider 3/4 cup kosher salt 2 teaspoons fresh-pressed garlic 1 large red onion, diced 1 small pumpkin, seeded and peeled 2 cups cider vinegar 1 cup water 1/2 cup local honey 4 whole cloves 1 cinnamon stick 4 ounces fresh sage 1/2 cup chopped raw bacon 2 teaspoons all-purpose flour 1/2 cup white wine 1 large yellow onion, sliced thinly 2 bunches of kale, stemmed and chopped 4 cloves garlic, sliced 1/2 cup olive oil

DAY 1: 1) cider-brined chops

Combine 1 quart apple cider, 1/4 cup kosher salt, 2 teaspoons freshly pressed or chopped garlic. Whisk or stir until salt is fully dissolved. Place pork chops in deep but narrow container, and pour brine over them, moving them around inside the container to make sure their entire surface has been submerged in the brine. Place in covered container overnight in refrigerator for up to four days. The longer they stay, the more the brine will penetrate their flesh; 24 hours, however, is a good start.

2) pickled pumpkin

Combine 1/2 cup salt, 2 cups cider vinegar, 1 cup water, cloves, and cinnamon stick in a pot, and bring to a boil. While waiting for liquid to boil, slice or dice the peeled pumpkin, and place in a large Mason jar or heatproof container. When liquid has boiled, pour boiling liquid over pumpkin; allow to cool to room temperature, and then cover and refrigerate. Pumpkin will last for months in the fridge.


RECIPE

DAY 2: 1) Preheat oven to 300 degrees Fahrenheit. 2) Heat a large cast-iron skillet or saucepan with a scant teaspoon of oil.

When very hot, sear both sides of pork chop. Since the pork chop was brined in cider, it will want to burn quickly, so check the underside often to make sure that it is not burning. Once both sides are browned, place entire pan in oven for 15-20 minutes, depending upon desired doneness of pork (less if medium rare is desired, which is fantastic!)

3) In a medium pot on high heat, sautĂŠ white onion and sliced garlic until

drippings! Place the same pan back on medium-high heat, and add chopped bacon and sautĂŠ lightly until bacon has started to brown. Add white wine and about a tablespoon of chopped sage. Reduce white wine by about 1/3. Add just enough water to flour to make an Elmer-glue consistency, and slowly pour into white wine bacon mixture while whisking at the same time. You may not need to use the entire amount of flour mix; add just enough to get desired thickness. Once gravy is finished, season to taste, and set aside in a heatproof container for placement on table.

5) Quickly rinse out gravy pan, and place again on high heat on stovetop. Add another 2 tablespoons oil, and sautĂŠ red onion, 2 cups pickled pumpkin, and about another 2 tablespoons of chopped sage. Do not over stir this mixture. The pumpkin is going to want to fall apart when done, so be very gentle to preserve its shape and to prevent it from turning into pumpkin puree. Salt and pepper to taste.

Using a pair of tongs, turn kale over from bottom to top every few minutes until all the leaves have wilted and have reduced in size by about 3/4. Allow to simmer for 20 minutes or until kale has turned from bright green to drab army green. Sprinkle with salt and ground black pepper to taste.

Never fear, reviewers have been using words like “adorable,” “stellar,” and “amazing,” to describe the hospitality and food here for a while now, and management smiles and nods and raises the bar: another innovation, a new recipe, another tray of scones. There are no plans afoot to attempt economies of scale.

“Then we read an article claiming the resurgence of the Catskills,” says Peter. “Since I grew up around here and love it, we started looking here.” “Peter flew to New York and went around with a realtor,” recalls Rose, “while I ran the restaurant we were working in. He looked in Woodstock, but there was a moratorium on building at the time and everything available needed a kitchen build.”

Peter DiSclafani grew up in some busy Catskills kitchens. At thirteen, he was cooking for hungry Boy Scouts at their camp in Tri-Mount and then for hungry cops at a camp in Elka Park. He moved on to Kingston, then to West Palm Beach, and from there to Boulder, where he met and fell in love with Rose, who shared his passion for hospitality. “In the mid-eighties, we were working in the same Colorado restaurant and the economy wasn't the best, although there were a lot of creative restaurants and chefs,” remembers Rose. “We got married knowing that we wanted to open an inn together, a place with a nice restaurant and a few rooms. We started looking in Frisco and Keystone in Colorado, then in Monterey, California, but there wasn't anything that grabbed us.”

MEET THE OWNERS

In the tiny Catskills town of Mount Tremper, Peter found a 1940s-era tavern. There was a big bar, a fifty-seat dining room, and room to grow. “The place had been closed for a couple of years, but it had all the right elements,” Peter recalls. The couple spent nine months cleaning, painting, waiting on their liquor license, and getting the place provisioned, finally opening their doors in December of 1987. “We opened a week before New Year's Eve,” Peter says. “It was a blast.”

The food alone, however, has long been enough to keep folks coming back, “We’ve always been keen on putting a variety of vegetables on the plate, and smoked duckling has been on our menu from day one,” says Peter. “We enjoy exploring different cuts of meat, heirloom vegetables, and a full range of methods: roasting, pickling, smoking, curing, and braising.”

The Rose began blooming during stormy weather. “Shortly after we opened, the stock market crashed. Then IBM closed in Kingston,” says Rose. “But we toughed it out.” Tough it out they did, filling in the details that would make their dream thrive: fruit, vegetable, and flower gardens; a greenhouse; a frog pond; an upstairs apartment; and a gracious brick courtyard. Twenty years later, the vision became complete: the original tavern became a four-room inn with an intimate 26-seat dining room. “When we added lodging, the dream came full circle,” says Rose. “ Since then, they’ve added the heated three-season saltwater pool.

Peter and Rose’s personal style pervades a guest’s experience; raves for the smoked duckling share space with raves about Peter’s knack for extending an open-arms welcome—while fastidiously avoiding the clingy intrusiveness that plagues some small-scale hostelries. Like a fine wine served with the perfect entrée, the DiSclafanis were plainly born to complement each other. “I'm a seed catalog junkie: I plan my gardens all year long,” says Rose. “We bounce food ideas off of each other. AS OF MID-JULY, the picturesque landmark that is the Accord train station was given delicious new life as Graze Farm-to-Table Tapas Bar and Restaurant, offering a sophisticated take on locavore comfort food and a place to meet and hang out. The community has embraced this new arrival with open arms. “Call me at three. It should be slowing down,” said proprietor Christine Atkinson—on a weekday, no less. When we called her back, she was still feeding the hungry hordes in mid-afternoon. Not hard to understand, given offerings like brunch sliders featuring local goat meat, a sunny-side-up quail egg, baby greens, and heirloom tomato jam. How did Accord come to be blessed with the likes of Graze? “It all started with a farm fresh tomato that I tasted at a dear friend’s wedding,” Atkinson says. “Something you just don’t get in Miami. We’d been making trips up north in the summer to beat the heat and chaos. My boyfriend Dylan grew up in this area; I’m a native New Englander. It didn’t take any convincing for me to agree to move to Ulster County – the quality of life here is second to none – and when we found our ideal house, it turned out to be in Accord.” Happily for the community, the depot offered a venue that met her standards.

Atkinson doesn’t remember a time when she didn’t love to cook. “It all started when I was just a kid, maybe five years old,” she recalls.

Working in South Florida, she realized that someday she’d have her own operation. “I decided while I was still living in Miami that

I wanted to do a restaurant, and I developed my business plan,” she says. “I worked with so many talented chefs and creative forces. It really inspired me.” Upon moving to New York, she opened her own full-service catering operation, Upstate Events, which will continue to operate, featuring the historic depot as its signature venue. The 1902 building, with its original woodwork, wood floors, and ample natural light, will be available for smaller events of 40 or 50 guests or up to 100 during tenting season. It might just be the only spot around where guests can be served their drinks from an authentic railroad ticket window and have access to a 1940s caboose as a partywithin-the-party spot. “I fell in love with the train station building the first time I saw it,” says Atkinson. “The space has so much character. And what makes it utterly perfect is that it’s in Accord. I live in Accord, and I really wanted to open a business within my own community.” Her own community couldn’t be happier. Great food and reasonable prices will do that for people. “So glad to have you join the ‘downtown’ Accord community,” says a fan on the restaurant’s Facebook page, while others salivate audibly that they can’t wait to check it out. That support is the wind beneath Atkinson’s wings. “I don’t think anyone is ever fully prepared for a project such as this,”

Atkinson knows she’s in a tough business in a competitive market, but she’s confident that she’s got the necessary fresh ingredients to add to the broth. “This business is so unpredictable; you have to have thick skin and the ability to just roll with things as they come. I know enough to expect the unexpected. But I love the people that I meet doing this. Their ideas and feedback really inspire me to learn, grow, and push on.

Her concept is clear-cut and will remain that way. “The simplicity of being able to offer farm-fresh foods is a very natural way for me to operate. It’s how I grew up, how I’ve always eaten. Having the tapas-inspired dishes allow me the opportunity to offer things that may be a bit more adventurous; I want people to explore that side of their palate.”

3. ZIPLINE AT FROST VALLEY OR HUNTER Ziplining is gaining popularity for those young and old kids who want a little height and a lot of thrill. When you tire of rock climbing on Frost Valley’s 50-foot Y-shaped tower (and, yes, climbs of all difficulty levels will lead you up), rest your legs and clip into the 300-foot long zipline. Wheeee! If rock climbing is not for you, the inside tower staircase can also get you to the top. You can find more details at frostvalley.org. Zipline canopy tours are also available at Hunter Mountain. Here you have some choices: the mid-mountain tour with six ziplines, four rope bridges, and nine aerial tree platforms; the daring sky-riding tour that is over four miles long and 600feet high and reaches speeds of 50 miles per hour; or the vertical obstacle course that spirals up the 60-foot adventure tower. 4. FERNCLIFF FOREST FIRE TOWER

Many people drive by this 200-acre game refuge and forest preserve on Mount Rutsen Road in Rhinebeck, not realizing the treasure that awaits for them a mere 30 minutes or so from the parking lot. A network of spidery trails leads to the top, where sits a 1933 Carnegie steel fire tower that was moved from Orangeburg, South Carolina. Standing 80 feet tall, this tower is perfect for taking in the autumn hues of the Hudson River and Catskill Mountains. The hike is completely manageable for little ones, who will feel nothing but pride for their big accomplishment of climbing to the top of the world!

If you’d rather view the Hudson from a boat, you’re in luck, for a cruise on the river delights the young and the old. Sit back and enjoy the lull of the river as you view spectacular reds and golds and oranges and greens. The 300-passenger Rip Van Winkle sails nearly every day from the historic Kingston Rondout Landing on the East Strand, and this narrated cruise along the Hudson will point out historic sites. Keep an eye out for blue herons as you pass the Kingston Lighthouse. On October 24, a special “Kids Kruize” features a DJ, magician, and face painting; check the schedule at hudsonrivercruises.com. Kingston is also the home port for the Clearwater sloop; check out their sailing schedule at clearwater.org to climb aboard this historic replica of a 106-foot vessel and symbol of the grassroots Hudson River conservation movement.

It’s simply breathtakingly beautiful on this 1.28 mile retired train trestle. After 16 months of construction to transform this railroad bridge into a pedestrian’s dream, it’s solid as a rock, and parents need not worry about their little tikes here. The railing is plenty high—four feet, six inches—to keep everyone safe and secure. It’s also ADA accessible and easy to push a stroller on the walkway. Ten benches made from reclaimed wood from the Coney Island boardwalk provide a place for both children and adults to rest and take in the view.


A visit to this historic 1869 landmark might just be the perfect outing with your child. The 1/2 mile gentle stroll leads over wooden boardwalks and through deciduous trees, shrubs, grasses and ferns—all changing their colors in the fall—and a glimpse through the trees of the mighty Hudson to the east means you are nearing this iconic lighthouse. On Sunday afternoons or by appointment, enjoy a guided tour of the lighthouse, complete with a climb up the tower ladder to a 360-degree view. A place to picnic awaits you down below, and during low tide a small beach offers the perfect place for

8. OVERLOOK MOUNTAIN IN WOODSTOCK The vista from atop the fire tower on Overlook Mountain is pure magic. Unadulterated views allow you to see the Shawangunks to the south and the Catskills to the west—and on a clear day the Ashokan Reservoir and Hudson River. There is even a useful map of the mountain ranges in the cab of the tower to help orient you. However, earning this view takes a bit of work. This 2.5-mile carriage road is quite steep at

times—you’ll gain 1400 feet in elevation. Fortunately, hotel ruins about two miles up the trail make for a great distraction and reconnoitering mission for the kids. Here is the place to grab some water and rest for a moment. The kids will completely forget they’re tired as they start to explore the hotel. From this point, the summit is easily within your reach, and the last 81 steps up the fire tower steps are well worth it. Just near the summit, a small museum is usually open on the weekends, and volunteer interpreters are often available to answer any questions. 9. MOHONK MOUNTAIN HOUSE SKY TOP TOWER During the autumn months, a climb to the top of Sky Top provides the perfect ending for little feet. There are several ways to access the memorial tower, and all are well-marked.

EASY: Walk on Sky Top Path, (passing the playground, where you can stop on the way down). The walk up to the tower is quick, but you’ll definitely want to linger either at the top or at one of the many tiny wooden summerhouses offering magnificent views of changing leaves, the Mountain House, and the lake.

MEDIUM: Begin behind the ice skating rink, and follow Pinkster Path to Sky Top Road. Definitely take a breather at the Lily Pond—remain quiet and perhaps catch a glimpse of a frog or two. Continue on about 15 minutes and the tower will come into view.

HARD (but way fun!): Scramble through the Mohonk labyrinth—a combination of climbing over and under huge boulders and through gaps in between rock slabs— and then squeeze through a narrow rock crevice known as the Lemon Squeeze. After climbing 50 feet on ladders inside the Lemon Squeeze, you will surface below the base of the tower on a giant rock slab with a view that takes your breath away. No matter which path you choose, don’t leave the Mohonk House grounds without stopping by the Victorian maze in the formal gardens. Made out of juniper trees, the maze delights any age. Don’t worry if your child gets temporarily lost here—thrills of delight will soon reveal his/her location! If not staying at the historic hotel, stop at the gatehouse to purchase a day pass. Park in the day hiking lot next to the gatehouse, and a shuttle will bring you up to the hotel. Arrive early because the lot fills up quickly and day passes are not available for advance purchase. When walking with kids, a fun destination always helps guide those little feet, and the Van Leuven Cabin is just the place. Built in 1889, this wooden plank house immediately transports you back in time. Childrens’ imaginations quickly take over as they pretend to be a Van Lueven family member and re-enact all the family did to survive, such as cutting stone and wood, shaping hoops for barrels, picking and selling berries, tending gardens, churning butter, and more. Park at the West Trapps parking lot on Route 44/55, and take the meandering Trapps Mountain Hamlet path. About 3/4 of the way there, you will need to cross Clove Valley Road, so make sure your little ones are within sight here. When you hear the spray of the Coxing Kill and the crunch, crunch of autumn leaves under your feet, you’ll know you’re almost there.

10. VAN LUEVEN CABIN ON THE MOHONK PRESERVE

This has to be one of the best hikes in the Hudson Valley. Even kids who whine when hiking will totally forget all cares when they begin the ascent up this rock scramble. A small body may need an adult’s helping hand at times, but lithe little children—and definitely adolescents and teens—almost always have an easier time than adults when it comes to maneuvering up the rocks. Just be sure to follow the marked path—it is the path of least resistance! Flat stretches of rock offer an opportunity for rest along the way, or at least a place for your kids to stand and say, “Hurry up! Let’s go!” as you negotiate your hand and foot placements. The panoramic view at the top won’t disappoint, and you are bound to see a raptor gliding below you. You can either hike the easier but longer Cedar Trail back down, or—if the kids have any say—descend back down the rock scramble the same way you climbed up. To access Bonticou, park at the Spring Farm parking lot on Upper 27 Knolls Road. If not a Preserve member, consider joining if you plan to hike on the Preserve multiple times throughout the year—it can save you money in the long run. Perhaps it’s Rhinebeck history. Or the Amtrak train stop giving people both coming and going easy access to the city. Or maybe it’s the fact that Rhinebeck’s western border is the very Hudson River itself. Whatever the case, Rhinebeck draws people into its forty square miles of natural beauty and leaves an impression. Some of these people are from the rich and famous faction. Millionaire John Jacob Astor IV, though unlucky to die on the Titanic, was lucky enough to be born in Rhinebeck. Gangster “Fat Tony” from the Genovese crime family owned a 100-acre estate in Rhinebeck, where he spent a good bit of his time, before he was finally convicted and

sentenced in 1986. Literary writer Edith Wharton made many childhood visits to Wyndcliffe mansion in Rhinebeck where lived her prominent NYC aunt, and Wharton later wrote about her experiences in Hudson River Bracketed. (Mind you, Wharton didn’t enjoy herself here, but that is mostly because of her granite-like stodgy aunt.) Chelsea Clinton tied the knot amongst a flurry of paparazzi in her over-the-top wedding right here in Rhinebeck. But it’s the people who live in and work in and visit Rhinebeck regularly who are the real wealth of this community. They give Rhinebeck its true flavor . . . and make people want to stay.

The banks of the mighty river have long inspired visual and literary arts as well, and you can go straight to the source firsthand with a visit to Poets' Walk, created on behalf of estate-dwelling Astors and Delanos by a gifted landscape architect. Wander two miles through woods and meadow and a series of fabulous views; linger with your own sketchbook or notepad at a rustic cedar pavilion.

Through October, you can tour Wilderstein, an eccentric relative in the family of great riverfront estates. Named “wild man's stone” for a nearby Native petroglyph, it was built first as an Italianate villa and re-envisioned 35 years later as a Queen Anne country house. Wilderstein was the homebase of generations of Suckeys, the last a cousin and close confidante of FDR, who gave it to the public as a giant Christmas present in the 1980s. The American Romantic-style grounds by Calvert Vaux are worth the trip in themselves.

The bounty of the Hudson Valley is no secret. After all, heavenly fresh produce, endless sources of outdoor fun, and incredible landscapes help give the valley its reputation. But two other cultural ingredients—MUSIC AND FOOD—also shape our identity here in the Hudson Valley. Prominent musicians like Levon Helm and Bob Dylan lived here once upon a time, and, if not for Pete Seeger, we probably wouldn’t be enjoying the Hudson River quite so much today. And with one of the world’s premiere culinary colleges in our own backyard, it’s no wonder of our daily lives. Now, mix these two elements together, and we have something very special. SMALLER VENUES In vibrant uptown Kingston, Diego’s Taqueria is just perfect for a handcrafted beer, fresh Mexican food (try the chili and lime street corn!), and some live tunes. Lydia’s in Stone Ridge offers the perfect blend of homecooked meals and live jazz on alternate Saturdays. At Rock and Rye, just a stone’s throw from historic Huguenot Street in New Paltz, mix live music on the weekends with its incredible wine, beer, and cocktail selection in this 1750s tavern. can catch one during the week. They have tasty specials every night, so don’t just stick to the set menu. Every now and then the 1850 House in Rosendale brings in some live talent, and their new garden deck situated on the banks of the Rondout Creek makes for an awesome place to just hang out. The sumptuous food at the Country Inn—whether going for one of their fine Italian dishes or a more casual Neapolitan pizza—lures folks back again and again, and their live music shows make for the quintessential country evening. If in the Rondout Valley, check out the High Falls Café if you want to hear music during the week or on the weekend. There you can find a more intimate setting with great specials on food and a view of the Stone Dock Golf course. Call ahead or check the websites of these cozy venues before heading out.

LARGER VENUES You can catch an exceptional show while you dine at The Falcon. Sit inside or on their deck overlooking Marlboro Falls—both options are beautiful. Renovated from an old button factory, this venue offers a powerful warm ambiance with high ceilings and dark wood with velvet curtains. The Falcon also showcases a rotating display of featured artists along the walls every three months. They usually have a show going on more nights than not, but again, always check beforehand. Other places like Hudson’s very sleek industrial Club Helsinki has a full calendar of live acts and the perfect event space to hear them in. Beacon’s 1972 landmark, The Towne Crier, combines farm-fresh food with live music Wednesday through Sunday.

It’s open late and shouldn’t be missed. THEATRES The Bearsville Theater is the brainchild of Albert Grossman, the music industry visionary and magnate whose clients included musicians like Bob Dylan, Janis Joplin, The Band, and Todd Rundgren. After years of planning and building, Albert’s wife, Sally Grossman, opened the theater in 1989. They always have a very impressive lineup of all genres; just check the calendar on their site. There’s no food available in the theatre, but just next door their sister restaurants are serving up good eats; you can even enjoy eating around the bonfire if you so choose. How about switching it up with a movie or a play? Shadowland

Shadowland Theatre

Theatre in Ellenville is a beautiful professional theatre with an ever-changing schedule of performances. They always have the full lineup on their site. Take a stroll afterward to Publik House or Aroma Thyme for dinner or just a drink. Publik House also offers live music on Fridays and Saturdays. Then there’s Rosendale Theatre—a 300-seat movie theatre offering movies ranging from indie documentaries to current blockbusters. The theatre even hosts music, live performances, and special screenings. Rosendale is overloaded with amazing eateries; the hardest part will be picking one.

CANOE OR KAYAK ON THE RONDOUT CREEK OR WALLKILL RIVER You can’t beat getting out on the water at night to view the full moon. Once the moon rises, there’s plenty of light to guide your way. You may even catch a glimpse of a nighttime critter at play, such as a beaver or snapping turtle or skunk. To access the Rondout, put in your boat at the DEC boat launch on Creek Locks Road between Kingston and Rosendale. The Wallkill can be accessed via the boat launch on Springtown Road 4.5 miles north of New Paltz in Rosendale or in New Paltz either on Plains Road or just south of the Ulster County Fairgrounds. “The Harvest Moon” got its name because Native Americans used this moon—most often occurring in September— to mark when to harvest their corn. This year’s Harvest Moon is on September 27, and this is a perfect day to pick the last of your tomatoes, plant some cold-weather seeds aka lettuce, kale, or chard, or just simply weed.

The ten-year-old sanctuary reopened at its lovely new home in High Falls, the very heart of Ulster County, welcoming you and yours to meet the fam: Walter the goat, Patsy the pig, Daphne the bunny, and dozens of their pals. Each one has a life story, and the animalloving volunteers of the sanctuary love nothing better than to help you make friends.

The Woodstock Farm Animal Sanctuary gives forever homes to oft-forgotten creatures and gives visitors an adventure to remember. As a reviewer said on Google, “Great place, great people, greatest animals.” In fact, the only criticism any reviewer had of the place was that it was “a bit of a trek from anything resembling civilization,” although even that visitor said it was well worth the trip.

“We’re excited that with a property this much larger, we’ll have the ability to provide life-long care and shelter to more farm animals in need. We’ve been at capacity for some time at our former location,” says WFAS founder and executive director Jenny Brown. Moving a place like the sanctuary has been an interesting logistical challenge, Brown says. “Especially for a few of our cows who’ve escaped slaughterhouses and were not so keen on getting onto a trailer! The travel has been stressful for some, but once they ar112

rived everyone seemed to adjust pretty quickly. They seem to love exploring their new spacious pastures and barns—and munching on nice grass too.”

At 150 acres, the former summer camp is six times the size of the organization’s former home. That means more room for more animals—and more room for you to come and visit with them. There’s room for overnight lodging and a permaculture garden and a commercial kitchen that will be put to good use in preparing delicious vegan eats. Brown is excited by the possibilities: “Outreach events, retreats, camps, lectures, workshops, cooking classes, in-residency programs, and so much more!” she marvels.

For now, the new facility will be welcoming visitors on weekends through September and October. Come meet the critters and some of the most love-centered humans around. Omnivores are welcome; expect to be educated, but not judged.

Our work nurtures greater awareness of those connections, and over time, many, many people embrace compassionate living, a state of purpose that precludes eating animals. One of the most important plans prospective parents can make is the birth plan. A birth plan is the document that lets your medical team know your preferences during the actual birth of your child. While you can’t predict the timing and circumstances of the birth, this document will let your medical team know what you feel strongly about. A birth plan can include what you can do while you are in labor, how you would like to manage pain, what procedures you would prefer to avoid during the birth, and who can be in the delivery room with you. There are advantages to knowing your options and discussing them with the people you entrust your birth to. You have the same goal of delivering a healthy baby in the best way possible, so communication is essential. Making the plan with your birth care provider offers the opportunity to discuss what happens during labor and birth, what’s standard, and how much you can deviate from standard practices.

“The purpose of a birth plan is to state your preferences—for you as a consumer to research your options and to communicate them with your birth care provider, midwife, or doctor, so that you are all on the same page,” says Suzanne Berger, CNM, a certified nurse midwife at Health Quest Medical Practice.


Would you like to avoid pain medication? What kind of pain medication is available, and how will it affect your experience of the birth? Do you want to breastfeed the baby right after birth? Can your partner cut the umbilical cord? Do you have a choice of birth care providers? What are your provider’s rates of cesareans (C-sections)? Are there restrictions about who can be with you during birth, either vaginal or C-section?

Can you eat or drink during labor? Will you need intravenous or IV therapy, and, if so, when? Can you wear your own clothes? Will you be monitored continuously or intermittently? Are there time restrictions on how long labor is taking before an intervention is considered? Can you birth in whatever position you want? Is water birth or laboring in water an option? Can cord clamping be delayed? How does your provider feel about the necessity of performing an episiotomy?

There’s a lot for prospective parents to research and think about. Here are a few questions you might want to ask:

A birth plan can be as individual as the individual having the baby. There are standard birth plans online that you can review, but no pre-printed plan is right for everyone or will work in every situation. However, a prospective mom can use such plans to discuss and customize her plan with her birth care provider. Berger, who has been a certified nurse midwife for 25 years, says that over the course of her practice she has seen an increase in the number of women asking about a birth plan. Don’t be afraid to explore your options and ask questions. Researching what happens during labor and birth and considering your preferences can also help you decide where you want to have your baby. Options include a birthing center or a hospital, although many hospitals now also have birthing centers. You can choose to have your baby delivered by a doctor or a midwife. Some women even prefer a home birth.

Occasionally ensuring the health and safety of mother and baby does require a medical intervention. A birth plan can also offer prospective parents the option of discussing what might happen should medical necessity require a deviation from that plan. It’s good to prepare yourself for all eventualities. “You may find your labor is long and hard,” says Berger. “You may need some pain medication. If you discuss it beforehand, you can ask what your options are should interventions be needed.”

If you’re entertaining the idea of painting a color on an interior ceiling, there are several strategies to help color choices. You could match the ceiling to the rest of the room–giving completion and richness to the effect of the atmosphere you desire. Another concept is to tweak the chosen wall color, altering it to be several shades darker or lighter on the ceiling. This retains a tranquil environment with cohesiveness—but adds intensity and the element of dimension. Yet another approach is to paint your ceiling an entirely different color that not only contrasts and complements your walls but also adds personal character and sparks interest.

Representing one-sixth of a room’s space, a ceiling may be lost in decades of white paint. Mostly overlooked in well thought-out design choices, this “fifth wall” is usually painted in the safest color—white. WHAT THE EXPERTS HAVE TO SAY COLOR TRENDS: According to Allison Keck, Interior Decorating Consultant for Herzog’s Design Center, “Currently, colors with gray bases are the trend tying everything together. We are recommending gray tints in the kitchen, dining room, and bedroom every day. More and more often our clients are requesting neutral colors yielding soothing effects.”

COLOR AND CLUTTER: Ann Williams, another one of Herzog’s Interior Decorating consultants, advises to use a “soft color palette to help clutter fade into the surrounds of the room. A monochromatic color scheme uses tints and shades of the same color. It creates a look that is sophisticated and elegant. The effect of a monochromatic color scheme can be subtle and subdued when using a soft color; it also creates a calming effect. If the goal is to achieve a decluttered atmosphere, I would not recommend using an accent wall with a pop of color because it interrupts the flow of the room, making it more disjointed.” PAINT TEXTURE: Allison Keck finds that glossy finishes tend to accentuate wall imperfections that could become distracting to the room. She adds that sheen creates visual excitement that could overpower the room’s decor. She says, “Conversely, a matte finish absorbs light, creating a soothing environment.”

A dwarf, mounded, small tree with a weeping habit. Also called a Threadleaf maple, the leaves are finely dissected (ribbon-like) and come in many different varieties—too many to name! Well-drained soil is a must. Planting in a raised bed with good drainage (and even slightly sandy soil) is recommended. This tree is particularly stunning when it cascades over the edge of a garden pond.

‘Butterfly’ is small, ornamental variety of Japanese Maple with variegated foliage that is green and white and edged with pink in spring. Look closely in April and you will notice the small reddish-purple blooms too! An eye-catching tree all summer long, in the fall it puts on an extra little show—the white portions of the leaves turn a brilliant magenta.
