A Secluded Swim In The Gunks

A trip to Minnewaska State Park isn’t complete without a short hike down to Awosting Falls, a 60-foot waterfall that roars in the winter and spring and thins out in hot, dry summers. The most beloved waterfall of the Shawangunk Ridge is a popular spot to visit, but far fewer hikers make the trek through the park to the lake where it all starts.

OUTDOORS Lake Awosting isn’t quick to get to, and that’s part of its charm. While you can basically park your car on the edge of Lake Minnewaska’s white cliffs, you’ll have to put in a little more effort for Awosting, a 1.5-mile-long glacial lake that offers a unique “beach” and swimming area with gorgeous views. The lake
feeds the Peter’s Kill, a stream that runs through the park and over the waterfall near its entrance. Lake Awosting began drawing swimmers in 1900 when America’s oldest boys camp—Camp Awosting—was founded. Campers broke up their days with swims in the lake, and while the cabins and tents are gone,
you can still enjoy a cool dip in the glacial lake’s clear waters. There are a few different routes you can take to reach Lake Awosting, but the quickest and straightest option is the Upper Awosting Carriage Road trail that begins near the Lake Minnewaska beach area, which is also a good swimming spot.

There’s a $10 parking fee for Minnewaska State Park Preserve, and you’ll want to park near Lake Minnewaska for this hike. Head to your right toward the swimming area and bathroom cabin for the trail—a wide, gravel road that meanders gently through the forest for 3.1 miles to Lake Awosting. At the end, you’ll turn around a corner, see the trail marker sign, and immediately want to jump into the shallow, clear water.
The lake has a designated beach about a half-mile further up the Lake Awosting trail if you stay to your left (walking to the right will put you on a trail that goes around the rest of the lake). The “beach” is the Gunks’ version of tropical white sand: large, flat, white rocks slope gently into the lake. Swimming is permitted in the roped-off area between 11am and 5:30pm, when lifeguards are on duty. Bring towels, some drinks, and a lunch and be sure to carry out whatever you carry in. Enjoy the secluded location and sun—often you’ll only hear birds and the breeze in this remote spot. Groups from New York City now charge around $100 for guided meditation trips to experience Lake Awosting’s calm scenes.

When you’re done swimming, make sure you walk up to the top of the rocky cliffs overlooking the lake for a sprawling view of the area—it's on the way back anyway. Head back toward the same trail you took for a return back to Lake Minnewaska.
For a little more adventure, hikers can also check out Rainbow Falls, which is marked on the side of the trail just before you reach Lake Awosting. A footpath through the forest quickly leads you to a small waterfall that you can stand directly underneath. This one is best to visit after a rainy day or you may only see a trickle of water. Also consider wearing pants as there may be poison ivy here.

While the trail is mostly flat, it may take an hour or so to walk the three miles at a leisurely pace. Leave yourself enough time to walk back to your vehicle before the park closes at sunset. So you’re interested in backcountry camping, huh? Wonderful! With the hullabaloo that is everyday life, it’s become more and more rewarding to disconnect from it all and escape into nature. Sure, you’ve been day-hiking and car-camping many-a-time, but you’re seeking a true wilderness experience. Cue backcountry camping—aka, the act of carrying survival essentials on your back for an overnight stay in
the woods—and enjoying it! While this activity is a truly exceptional way to experience the outdoors, you’ll need to satisfy a few prerequisites before setting out on the trail to wilder bliss. Below you’ll find a few steps to basic backpacking. Now this is not an extensive list, but an introductory guide to get you started and well on your way into the great outdoors. That being said … let’s begin!

• First time? Choose a park or area you’re familiar with.
• The Blackhead Range of the Catskills
• Know the backcountry-camping and leave-no-trace regulations for your destination! Do you need a permit? Overnight parking? Fires permitted? Look up primitive camping on the New York State DEC website for more info.
• Echo Lake in the Indian Head Wilderness of the Catskills
• Know your limits—don’t get too ambitious with mileage; expect to move more slowly with a heavy pack.

• Lakes and streams make wonderful destinations, just be sure to camp 150 feet away from water sources, or in a designated campsite. • Be sure to locate water sources on your map prior to setting out to ensure you’ll have water available to filter.
• Lean-to’s are also an option for backpacking (the encircled “S” on your map for shelter) … though I find tent camping more pleasant. • Check the weather and pack accordingly—shoot for a non-rainy day if it’s your first time (unless you’re a glutton for punishment!).

• It’s generally recommended, especially if you’re a beginner, to head out with a buddy (#buddysystem). This will allow you to split your gear load between the both of you! • The general idea is to pack your sleeping bag at the bottom of your bag, followed by heavier items in the middle, and light items on top. The trick is to evenly pack everything so you’re not lopsided. Pack so the weight doesn't throw off your center of balance. It's important to note that different types of frame packs should be loaded differently. • Place snacks and other essentials in an easily accessible spot. Many packs offer pouches on the waste band that are perfect for just this! • Be sure the weight of your pack (when worn) lies on your hips, not your shoulders. Adjust the pack accordingly to allow proper distribution.

All right! Once you’ve gotten all of that taken care of, you’re ready to escape civilization and enter the wonders of the wilderness. Just be sure to tell someone outside of your hiking party where you’re headed, just in case. Otherwise, you should be prepared to enjoy a marvelous excursion overnight in nature. Oh, and don’t forget to LEAVE NO TRACE! PACK OUT WHAT YOU PACK IN! etc., etc.... 26

• Cook your food away from your camp to deter critters. • Don’t forget to put all toiletries and food waste/wrappers (enclosed in a plastic bag) in your bear canister—this includes toothpaste, lip balm, sunscreen, deodorant, wipes … anything with an odor that critters can mistake for food. • Before bed, make sure to place your bear can at least 100 feet away from the camp. • Skittish of bears? Learn about them via the NYNJTC website so you know what to expect and what to do if you see one: nynjtc.org/content/bear-tips-hikers. • Hang your backpack on a tree away from the ground. This will prevent critters from rifling through/nibbling on your pack. • Craving a cold one? No problem! Sure, they’re heavy, but you know it’s worth it. Be sure to pack cans, not glass. You can chill ‘em in a nearby stream or lake—just make sure they’re secure! • Bring a hammock (DUH)!

Clove Cottages is the offspring of a proud husband-andwife team who’ve chosen to share their sense of creativity and environmentally-friendly hospitality with the public. “We love nature—hiking, camping, animals, gardening— and vintage items,” says Michelle Gullickson. “We are the proud owners of a 1963 Shasta Compact camper, a 1965 Ford Ranchero (to tow the little camper to our campsite), and two 1964 Honda motorcycles (to tour around on once we get there). Each of these is in need of some restoration work, which we also enjoy doing.”

a carpenter and had been building houses with his dad Ron. In 1995, Ron purchased a vacant, vandalized 1940s bungalow colony as an investment. Noah later purchased the property from him, built his house (incorporating two cottages in the structure), and began reclaiming the cottages. Though her degree is in geology, Michelle had
been working as a social worker for teens in foster care. After meeting Noah, she became an environmental educator at Minnewaska State Park while she and Noah continued renovating the cottages. “We opened Clove Cottages in 2002 with two cottages and continued getting the others restored over the next few years,” says Michelle. They now
operate seven cottages, all of which have a kitchen completely stocked with ammenities to cook with, an outdoor grill, a bathroom, heating and air conditioning, and wifi service. They are clean, simple, and charming, with plenty of space in between them, allowing for peace and quiet to enjoy the acreage and the views. They vary in size from studio to two-bedroom.

“We’re pretty unique at this point, since so many other bungalow colonies that were once so popular in this area have fallen into ruin. Our guests find it’s just so nice to be able to get away and have their own little house with a hammock and a grill that’s near great attractions. We’re child- and pet-friendly. We’ve got two pet llamas, many cats, a dog, and three hens.” Clove Cottages offers midweek and week-long stay specials to make their little slice of paradise affordable. “We rely a lot on repeat customers and word of mouth since we don’t advertise with the big online hotel sites,” says Michelle. “This is our sweet sixteenth year, and it’s so great because we now feel experienced in what we do, and that brings a confidence to all we do. And we do a lot. We actually do not have employees, though we plan to hire some help in the coming years.” When the cottages first opened, Michelle says, “we were a B&B and we would stock the kitchens with offerings of breakfast foods for guests to prepare. It was nice and most guests liked it, but it wasn’t something we could sustain. Because the cottages have kitchens, people would bring their own food so there was waste if they didn’t expect it. Also, it wasn’t what 35

people expected of a B&B, so guests who expected a B&B were disappointed. So we changed our model and stopped stocking the fridge and everyone became a lot more clear about what to expect, which increased everyone’s satisfaction. We kept our homemade granola and our Sunday scone delivery, much to everyone’s delight!” Michelle and Noah’s satisfaction is found in hearing what a great time has
been had, as well as in helping to make it happen. “It is always such a pleasure to see folks return from a day spent hiking or touring the area, sitting in their Adirondack chairs with a glass of wine, beer, or cider they just purchased locally, watching our llamas graze at the end of a beautiful day, and know we have provided the opportunity for that experience,” says Michelle. “It’s magical!”

Chris Kelder didn’t dream of growing up to be a farmer. “When I went away to Cornell, I wanted to do anything but,” he says. “But looking at other things in the business world, I kept getting drawn back.” He studied animal science and business economics, and came back to the Rondout Valley to begin what he calls his “trial by fire.” He did make some changes to the 200-year-old family spread. “We dairied, and I realized, I
have nothing against cows, but I wanted to be more customeroriented,” Chris says. “We have a really loyal customer base and that’s key to our success.” To win that base over and keep growing it like a fine crop, he’s built Kelder’s into a family-friendly farm focused on “creating an experience visitors won’t forget,” he says. “We want everyone to have a memorable time.” Memorable is indeed a good word

Kelder’s is an area leader in agritourism innovation and is an absolute original. And it’s still very much a family operation. “My wife Jackie and I, and our son John, are all very hands-on,” says Chris, “from bookwork to planning to repairs to farming to customer service. We’re all involved with every aspect of farming and direct marketing—everything from plumbing to fun stuff.”
“On a weekend day in the summer, the place can look like the United Nations. One thing we humans have in common that cannot be denied: we all enjoy food. It’s a necessity, but also a pleasure. And we think we have something for everyone here, from kids to connoisseurs.” Hands-on activities to explore include fishing, picking your own goodies, taking a hayride, and milking a cow. gust, there’s a corn maze; the jumping pillow, unique wooden playground, and mini-golf are open year-round. You can get up close and personal with alpacas, sheep, goats, cows, and donkeys, or watch the honeybees do their thing. “It’s all about unplugging for a day, getting away from your phone and doing something real and satisfying,” says Chris. “And when I see a child’s face light up in wonderment about a fresh strawberry or someone witnessing milking for the first time ... the exploration of things we usually take for granted is beautiful to witness.” Chris and Jackie bought the farm from his parents in 1994; in 1999, they opened their market in its current location. “The home farm is on a back
road, and to do what we wanted to do, we needed to be out on 209,” he says. “So we bought the market property in 1997. We strive to add new things often and try to give it our own flavor. We’re blessed with a gorgeous view, and I hope our customer service stands out and is memorable in a good way. And we keep prices reasonable; that’s the only way to keep the locals coming back.” It’s all about the customer at Kelder’s, and constantly evolving with the season and the times. “We have seasonal specials, of course,” says Chris, “and some online stuff coming up; that’s my son’s deal. He likes Facebook contests. He’s my internet crutch.” No matter how “with-it” you are or what you’ve studied in school, farming is always an unpredictable chal-

lenge. “Like all farmers, we have to cope with freeze-outs, flood-outs, and the rest of it,” Chris says. “We manage by being diverse, so if something fails we have something to fall back on, because the one certainty is that it’s gonna happen. When you think you’ve got it figured out, something changes. You’ve gotta look around the corner, which is not always easy.” Another resource that supports farmers and that Chris loves belonging to is the regional Rondout Valley Growers Association. “The RVGA is very important to the region,” he says. “Everybody works in the same direction, and the high water raises all of our ships at once.” Hiring the right staff is also essential. Chris looks for “a happy person who enjoys people and is a team player, someone who’s not afraid of getting their hands dirty and keeps a positive attitude.” Those who fit the bill find they’re part of a constantly evolving adventure. “We’re learning all the time,” Chris says. “We network, we talk all the time about what works and what to improve on. We’re constantly striving. This year we’re going to expand on the fishing, and we’re growing more and more small fruits. We’ve got more raspberries going in. I love the flexibility of being my own boss, and the way you can see what works and what doesn’t as you go along. I love the people I meet, and the diversity. Every day is different, every plant is different.”

Going into its third century, it seems likely that the original farmers who started all this back in 1779 would be gratified, if a bit bemused. A giant garden gnome and a jumping pillow probably never occurred to them. But moving into the 21st century, it’s clear that the Kelder family would not change places with any-
one on the planet. “Every day is an accomplishment,” Chris says. “Having a business that the next generation is interested in being a part of is an achievement; it doesn’t always happen in agriculture. But the only way to live is to find something you love and make it pay, and here we are.”

Just as they finished saying this, Craig had to peel away for a moment. “I’m gonna say goodbye to a couple of guests that are just checking out.” Coincidentally, these guests had flewn in from Edinburgh, Scotland.

Craig and David enjoy hosting special events, or just that special getaway weekend, in a country escape they in love with.
Whether they’re from the British Isles or from one of the five boroughs, guests at CS Coach House feel right at home in the historic accommodations set on 10 acres of property that dates back to 1760. Craig and David have been together for nearly 17 years and took over the site just before Memorial Day in 2017. Both Midwest natives who came to New York from Seattle two years ago, Craig and David fell in love with
the Hudson Valley and found the Schoonmaker property when it was for sale and decided to continue running the Coach House as an Inn. But to ensure it reflected their vision, they had to move quickly, as they opted to keep reservations that were made before the sale. “The big thing with the Coach House is we
bought everything in it, and then realized that in order to get it to be more aligned with us and our aesthetic and sense of what we wanted it to be, we cleared out all of the antique furniture and did a refresh,” says Craig, adding that they had three days to make the transition before the first guests arrived. “Carpets, art… we did a clean slate.”
CS Coach House is designed as “sort of a rustic chill getaway,” says Craig. Its four guest suites are comfortable and clean spaces that feel like cabins without the antique quilts and mounted fish on timber walls; instead, the walls are an eclectic mix of wallpaper and paint, the hardwood floors are dark, plenty of light comes in through numerous windows, and picturesque artwork adorns the
walls. Each room has a four-poster queen-size bed, a private balcony, and its own private bathroom. Antique charm still pervades the space: the Waterfall Room’s bathroom resides across the hall from the bedroom (a unique touch that can only be found at a historic residence), and The Streamside Room includes a cute vanity close to the bed and next to the bathroom.
A small deck tucked along rocks is perfect for meditation or quiet time. In the evening, guests might gather around the fire pit and share conversation.
The balconies, which all have seating, provide views of the Coxing Kill, a trout stream that runs behind the Coach House and connects to the Rondout Creek, just a half-mile up Route 213. The Coxing Kill ambles down two waterfalls right near the coach house, and the Waterfall Room offers the best balcony view of the nearest one.
Craig and David have placed Adirondack chairs streamside for those wanting to relax to the sounds of the water. A small deck tucked along rocks is perfect for meditation or quiet time. In the evening, guests might gather around the fire pit and share conversation. “There were multiple weekends
when we were totally booked, and the guests would all be out there interacting,” says David. “You would see community gathering.” All kinds of guests stay at CS Coach House, but Craig says our visitors are primarily looking to play in the wild outdoors. They may be heading to Woodstock or Hudson for shopping, or they may be hoping to hit the trails and mountains nearby. The Shawangunk Mountains at Mohonk Preserve are just a short drive away, while the Catskills are just a little more than 30 minutes away by car. Take Route 213 south and visit High Falls, or north and visit Rosendale, and, either way, you’re in a cool village with plenty of dining and shopping options.
CS Coach House also hosts smaller celebrations and events and can recommend a local catering service, plus photography, music, and flowers. Working in the customer service and experience and beauty and wellness industries during their professional lives, Craig and David enjoy hosting special events, or just that special getaway weekend, in a country escape they fell in love with. They feel they finally have a home to share. “I think this property kind of found us,” says Craig. “We’re really happy to be able to have the means and the experience of staying in multiple homes, and then to take what we’ve learned and take this house forward from a property that has a lot of history... it’s just awesome.”

Jessica is as genuine and as Woodstock as it gets. “I grew up here,” she says. “I spent time in L.A. and New York, but I’ve basically been here all my life, and I’ve been working in the restaurant scene since I was 14 years old. I love the mountains, the lakes, the people.” Like many Woodstockers, she has a creative background. “I come from an arts family— my grandmother and mom were artists, my dad a jeweler.” During her rare free time, she likes to paint, but most days her creativity is channeled through serving people amazing food.

We set you up with a bottle of Prosecco and a couple of juices— freshly squeezed OJ, peach puree, blueberry lavender—and you can customize.”–Jessica Anna, owner Jessica was always powerfully drawn to food and hospitality; she’s worked in some of Woodstock’s most enduring establishments: the Bear Cafe, Sunfrost, Heaven (now closed), and Joshua’s. “I love food and I love the business. I love serving people and hostessing parties—all of it. I love taking care of people.” She’s also quite fond of the town. “This is such an incredible community. People look out for each other, have each other’s back—just make a wonderful life together. I’m still friends with people I went to preschool with.”
As a young woman, Jessica earned a psych degree and taught for a time, mulling a career as a therapist, but the kitchen was calling her back. “I missed restaurants,” she says of that time. So when Oriole 9—which derived its name from the old Woodstock telephone exchange—first opened twelve years ago, she and her husband Mark got involved. At first it was an investment, but it grew into a labor of love, and when two other partners stepped aside three years ago, Jessica stepped up as operating manager. “It’s been interesting; one
thing I didn’t realize was how much I would enjoy the business side of the operation, the bookkeeping and organization,” she says. “It’s actually fun.” But nothing’s more fun than feeding people, and she enjoys the creative challenge of keeping the menu fresh and unique. “We have old classic favorites, things I love: avocado toast with arugula truffle oil and poached egg, quesadillas with fire roasted poblano peppers, our Catsmo smoked salmon bagel, our grilled Reuben and veggie tempeh Reuben,” she says. “It can be hard to change the menu when

you have things people love. I hear, ‘Oh, you’re my favorite restaurant!’ a lot. I so love hearing that. I never want that to change. But I do like to stay current and innovate. Lately I’m loving shakshuka, a dish with eggs poached in tomato, chili peppers, onion, spices like cumin.... It originated in Tunisia, and I just did Ancestry.com and found I have a tiny bit of Tunisian in me,” she says with a smile. Only the best local ingredients are used in the exquisite preparation of Oriole 9’s dishes, which is another secret to their success. “Eggs, milk, produce, coffee, beer, wine, cider—there are so many wonderful local producers to work with nearby,” Jessica says. The restaurant’s location—just off the Village Green in Woodstock—plays an important role in keeping the vibe interesting, and keeping the restaurant connected to the community. “It’s perfect, right in the center of things. I wish we had windows on the street and outdoor seating, but we’re doing fine; it’s a beautiful space in just the right spot. And I love the central Woodstock restaurant community. The restaurants in the center of town are all owned and operated by women, and we’re all friends; if one place runs out of something, they run to another place and borrow some. It’s
a genuine, giving community spirit, and I’m really happy to be part of it.” Both Jessica and the restaurant thrive on the Woodstock crowd. “We get locals, we get people passing through, we get people from the city—families, celebrities, all ages. People see the buzz on social media or hear about us and try us out, and then it’s our job to maintain the consistency and quality that keeps them coming back.” The newly renovated dining room—with all-new colors, new floors, and a small bar (“People can watch their handpulled coffee being made now!”)—will still be decorated with works by local artists. “Showcasing local art is super important to me. I base it solely on quality and change the show about every other month or so. It’s fluid. I fall in love with stuff and don’t want it to leave. I still have a Lenny Kislin piece up. But it’s great to be able to offer select artists a venue where, on a busy summer week, 1,000 people may see their work.” Equally important to Jessica is her crew. “My staff call me Mama Bear. We’re like a family of friends; a lot of us have been working together for 10 years. We treat one another well and have fun and take good care of the customers. I have such 63

For the community, and the spirit of it all.” a good crew now that I can step out and do some front-of-the-house work and public relations, which I love—but then, I love cooking too.” Being an independent entrepreneur is a scramble, especially in the competitive world of food in a busy tourist town. “When I took over, our kids were eighteen months, nine, and fifteen, if you can picture that. Chris is a partner, but he’s got his own contracting business. I’m so lucky to have a solid staff. Winters can be hard, too; you scrape by and work extra hard to make up for it in summer and fall.”
But the joy prevails, and Jessica’s always thinking up a new twist. “A fun thing that we do is Make Your Own Mimosa. Fear not—the WildFlower Cafe in Red Hook offers guilt-free and nutritious burgers, sandwiches, and sides. You never knew vegan food could be like this. Bobbi Jo Forte has already established a loyal following with her other two Red Hook businesses that are equally unique: Living Eden, which offers a wide variety of fair-trade, eco-friendly, handcrafted, upcycled, and cruelty-free clothing, accessories, gifts, and yarns, and Morgan’s Cat Cafe, a recently-renovated cat rescue and adoption center upstairs from WildFlower, where people are invited to relax and spend time with cats.

The menu reads much like that of your favorite pub: burgers, fully loaded franks, onion rings, and fries. Look a little closer: those are “fishless” filets and flame-broiled vegan burgers, and the Avocado Chik’n BLT features “fakin’ bacon.” Bobbi Jo is confident that one bite will be enough to entice even folks who have hitherto considered themselves complete carnivores. “Personally, I don’t like the word ‘vegan,’” Bobbi Jo says. “It has a long history of being harsh and inaccessible. We are raised being told vegetables are good, yet there is a stigma with people who continue that plant-based diet in adulthood.”
But the partners didn’t want the first floor to sit empty, and knew that a cafe was the right use. “Staying true to our devotion to animals, there was no question it had to remain plantbased. So we started talking to local chefs and seeing if anyone was interested in the space. We got nowhere. So we started talking about the menu.... We attended a food show, and one day over lunch we realized that comfort food and ‘all-American food’ had mass appeal. We talked about how to appeal to a broad audience, and the ‘burger bar’ concept was born. We took the concept from idea to opening in 12 weeks with lots of hard work, ‘analysis paralysis,’ and fine tuning.” It’s a bold idea, but when it comes to building a better world, Bobbi Jo is a bold soul. For
more than two decades she’s been deeply involved in animal rescue, helping dogs for a decade in Arizona, and shifting her focus to felines when she returned to her native Hudson Valley. Named a Hudson Valley Hero by Hudson Valley Magazine in 2016, she explained that growing up poor in Elizaville left her with a deep and intense commitment to animal welfare. “Watching the pets my family couldn’t provide food for slowly deteriorate was traumatizing for me,” she told the magazine. Instead of ignoring and trying to forget that painful experience, she’s harnessed it in the service of animals in need and is raising her tween-age daughter (the Morgan of Morgan’s Cat Cafe) to share her fiercely loving approach to life. A self-described “serial entrepreneur” since age 24, Bobbi Jo has put a lot of thought into what makes a great Hudson Valley burger bar. “We’re using technology to our advantage,” she says. “Our online and mobile ordering platforms allow people to order in advance and pay at pick up. That’s important. We’re also active on social media—mainly Facebook—and we’re utilizing rewards

The cats are so much happier,” says Bobbi Jo.

And we believe that the customer experience is key to repeat business and viral success.” That experience—a plant-based burger bar—is likely to be a brand-new one for many. The minds behind WildFlower, including business partner Martin Pucino who built the space and now cooks these vegan creations with love, have put considerable thought into the paradox involved. “We understand it is not realistic to convert meat lovers to vegans; however, we want to give them a positive experience consuming plant-based foods,” she says. “Creating a menu that appealed to meat eaters without alienating vegans was a challenge; creating a menu that appealed to vegans without alienating meat lovers was a challenge. I believe we found the perfect marketing approach, and that’s showing in our customer interactions and
feedback. The ‘wow’ factor is in place from both markets.” “What makes us different is our subtlety,” says Bobbi Jo. “When you walk in and read our menu it doesn’t scream vegan or plantbased. That was deliberate. Our menu items are described as ‘Chik’n’, ‘Fishless Fillet’ and so on, so customers are familiar with the food types. We have posters explaining why our plant-based burgers are unique, healthier, and better for the environment and animals.” Through running the Cat Cafe, she’s discovered suppliers of lesser-known vegan products that bring the zing. There’s a handy reference book listing every recipe’s ingredients, so that those who need to avoid soy, nuts, or wheat can order without fear. In between the opening of Living Eden (“a place for human(e) beings”) and getting Morgan’s Cat Cafe up and running, Bobbi Jo hit a crisis that might have stopped

many in their tracks. First, both she and Morgan had bouts with viral meningitis; soon after, Bobbi Jo got the news that she had a rare brain tumor and would have to undergo radiation. The Red Hook community rallied around her, and deepened her appreciation of the two-legged creatures in her circle. “I love most of all the fact that I’m working with people I enjoy,” she says. “Bonnie Schweppe and I have been business partners for over 5 years. Martin Pucino and I were friends for a couple of years and we’re now a couple. My daughter works the register with me; she’s 11 and an entrepreneur in spirit. And our employees are amazing. So far, they all started off as volunteers for Morgan’s Cat Cafe; they’re kind, trustworthy, vested, and fun to be around. They like working at the cafe because we’re great to them.” Being great to one another is very much the underlying philosophy of the whole endeavor, and Bobbi Jo knows that the food has to be equally great. “If you offer vegan menu
items, they need to impress,” she says. “Vegans and vegetarians are far too often disappointed in the limited options on menus and, yes, they take it personally. I’d like to invite everyone to take the challenge: check out our claim that we offer the best burgers in the Hudson Valley. I think most people want to feel good about their choices, and there’s so much upside to dining at our place. When you factor in flavor, environmental impact, price, nutrition, quality—hands down we are the best!”

Nearly 20 years ago, chef Josh Kroner discovered a run-down restaurant for sale with an attached apartment upstairs in West Hurley, a sleepy town near the Ashokan Reservoir. The idea of buying this building appealed to him— the mortgage for the restaurant was less than he was paying for a one-bedroom apartment in the city. Eager to leave city life behind, he moved upstate to begin a new adventure. In 1998, Terrapin was born. After five years of success, Josh decided to move the business to Rhinebeck—a quintessential Hudson Valley town with more energy, visibility, and foot traffic.

The menu changes seasonally, sourcing seasonal, local, and sustainable food whenever possible.
Terrapin offers a wide selection of food from various culinary influences. “It’s very loosely American,” says Josh. “I do a lot of Asian-influenced food. I have French training so there are French flavors. I have an Italian background so I do a lot of pasta and Italian dishes. I like to do Southern food. I don’t stop anywhere because of my own background. I’ll learn new things. I feel like if you use good ingredients, the food is going to be good. I want to keep it generally simple and let the ingredients themselves shine through.” Josh started his culinary career in New York City. After earning an architectural engineering degree at the University of Colorado, he eventually decided to pursue cooking and enrolled at the French Culinary Institute in Soho, now known as the International Culinary Center. He later became an instructor there, and also worked 74

During his 20 years as a chef in the Hudson Valley, Josh has been a pioneer of the farmto-table movement. “This is something that developed over the years,” he says. “When I
first came up here, there was no farm-to-table. Nobody understood what that meant. Nobody was using local farms. So I started going to farms and pushing to get local products. I did a lot of things to bring the farmers and the chefs together. It’s harder than you’d expect. If you wanted to get Hudson Valley products,
you’d have to go to the city to get them.” His hard work has paid off. Terrapin has received numerous awards, including Best Farm-to-Table Restaurant of the Hudson Valley, according to Hudson Valley Magazine readers in 2017, as well as Best Bistro of the Hudson Valley in 2017.

Howard and Chris Jacobs weren’t always restaurateurs. Before they opened The Amsterdam in Rhinebeck, the Jacobs, both originally from Toronto, Canada, spent weekends up-
state as a respite from the hustle and bustle of city life. After years of working a myriad of executive roles in marketing and sales, Howard began to consider leaving the corporate world behind.

The husband-and-wife duo then stumbled upon a listing for the restaurant’s current location—a picturesque 1700s Dutch townhouse on Rhinebeck’s Mill Street—and knew it was the space they’d dreamed about for years. In the spring of 2017, their pipe dream of opening a restaurant came into fruition, and The Amsterdam—the Jacobs’ citymeets-country eatery and bar—was born.
The Amsterdam boasts farm-to-table fare, including seasonal dinner and weekend brunch menus, and an impressive selection of cocktails and wines. The space offers all the comforts of country living with the refined feel of city dining, featuring light-colored walls, dark wood tables and seating, a fireplace, and warm lighting. Their team works with some of the best local farms to source fresh ingredients. At The Amsterdam, looking locally for produce isn’t an afterthought; it’s an integral part of how the restaurant operates. “It’s in our DNA, and in the soul of everything we do,” Howard says.

The Jacobs’ mission to provide top-notch cuisine doesn’t stop there: The Amsterdam recently added Head Chef Alex Burger, formerly of New York City’s French bistro Bar Boulud, to its roster. Alex is a total professional, Howard says. He’s got an impressive pedigree and acute attention to detail, honed after more than eight years of cooking under esteemed French chef and restaurateur Daniel Boulud.
“I love Alex’s optimism and enthusiasm for ideas and what he sees ahead for The Amsterdam,” Howard shares. “The energy he’s brought to the restaurant is unmistakable, and people are really buzzing.” The restaurant borrows its name from the capital city of the Netherlands. It’s a nod to the Dutch settlers who claimed the land, Howard says, and an hom-

age to his own father, a veteran who served in Holland during World War II. (Years after the war ended, his father, along with other soldiers who helped liberate Holland, were invited back to Amsterdam for an honorary celebration. “It was a lifetime memory,” Howard says, “and [it] forever touched our family.”) Patrons of The Amsterdam run the gamut: Howard sees regulars every week alongside a broad array of domestic and international tourists. It’s a diverse demographic, he says, but all of their customers value the restaurant’s exquisite bites and cozy atmosphere. Howard describes it as “refined
but casual dining,” made all the more memorable by The Amsterdam’s warm hospitality. “It’s The Amsterdam way!” he says. Going forward, Howard and Chris hope to expand The Amsterdam’s offerings with a separate lunch menu. They plan to continue hosting private events (the space is booking out well into 2019, Howard notes). The team also has a few other ideas brewing under wraps. “We’re always talking to our guests about what we can do to serve them,” Howard says. “And I’m super excited about where we can take The Amsterdam.”

Bring a picnic and the kids, because the distillery has a separate kids’ space, plus a beautiful stone fireplace, a 100-year-old piano that’s perfectly playable, plenty of indoor seating, and an outdoor patio.
Up until about five years ago, Brian Mulder and Todd Pascarella had just barely dipped their toes into the craft beverage waters: Brian made some cider and wine on the side, and Todd dabbled in home brewing. But otherwise, the two friends were construction workers living in the Catskills with their families. Eventually, they started talking about opening a distillery. The passing of the state’s farm distillery license made it easier for small craft spirit producers to establish and develop a business, while there was still plenty of space for new distillers in southeastern New York. Brian and Todd wrote up a business plan
and started looking for locations while driving back and forth from ventilation jobs. They found an old building on Route 28 in Arkville: originally built in 1920, it was a former roller rink turned public hall turned farm equipment servicer. The plumbing was shot and the structure was basically down to its shell, but if there was anything Brian and Todd knew, it was buildings. They renovated the space and prepared it for a February 2016 opening. But here’s the thing: If there’s one thing Brian and Todd didn’t know, it was how to distill a spirit.

They’re forging new ground in the distilling scene while running a family-friendly tasting room at their Catskills production facility. “Todd and I had never operated a still or ran a still or worked with a still in any capacity,” says Brian. “So we purchased a building and still and made our spirits. We really jumped in with both feet.” Union Grove Distillery opened February 10, 2016, and had cases of its first spirit, Vly Creek Vodka, ready for purchase. It sold. It sold again.
It has won awards. Since then, Brian and Todd have produced a vodka made with aged maple syrup, as well as a maple spirit. They’re forging new ground in the distilling scene while running a family-friendly tasting room at their Catskills production facility. There are a lot of people to thank for that, from family members to neighbors, but maybe we should start with the vodka.
“We actually hit a home run out of the gate,” says Brian about Vly Creek, which is distilled from locally sourced apples and wheat and won Best of Category at the 2017 American Distilling Institute’s Annual Craft Distillers Conference. It’s produced in equipment from a Polish company called GENIO, which boasts a reduced-energy footprint and a more precise, modern method for distilling. After 91

using the equipment and seeing success, Brian and Todd were recruited to be sales reps for the company; thus, the distillery doubles as a GENIO showroom and training center. That equipment also produces Union Grove’s maple version of their Vly Creek Vodka, which is distilled completely from maple syrup created
by Tree Juice Maple Syrup, another Arkville-based business. Tree Juice also supplies the syrup that’s used to produce Union Grove’s Catskill Mountain Maple Spirit. Aged for at least six months in oak barrels that were once used for bourbon, then maple syrup, the spirit is its very own classification and is one of the more unique beverages you’ll find.
The distillery also has a selection of infusions— from black tea to jalapeño to a pumpkin flavor that’s offered in the fall—that are quite popular.
“It became a small specialty but we couldn’t keep it on the shelf all summer,” says Todd. Summer is when Union Grove buzzes. Folks along the Route 28 corridor stop into the distillery for drinks inside a modern, rustic Catskill tasting room. Pick a spot at the timber bar capped by a beautiful copper top and order samples (three 0.25-ounce
tastings), or ask for a craft cocktail that really shows off Union Grove’s unique offerings. The distillery also has a selection of infusions—from black tea to jalapeño to a pumpkin flavor that’s offered in the fall—that are quite popular with visitors. A few local craft beers are available at the bar, too. And starting this summer, guests should be able to

purchase and order rye whiskey, as Union Grove finishes up its first batches. A larger batch of rye is due in 2019. Gin is also on the table, but Brian and Todd are working out ways to make it unique to their style.
helping out on weekends, while Brian’s stepson sometimes tends bar and works at farmers markets. Todd has kids, too, but they’re ages 8 and 12, so it will be a few more years before they can begin working.
While the distillery doesn’t serve food, it occasionally partners up with food trucks and welcomes outside bites. So bring a picnic and the kids, because the distillery has a separate kids’ space, plus a beautiful stone fireplace, a 100-year-old piano that’s perfectly playable, plenty of indoor seating, and an outdoor patio that seats about 25-30 people.
The distillery also hosts events by clearing out a production space for large gatherings such as concerts, movies, burlesque nights, birthday parties, and bridal showers. Wedding parties like coming into the distillery on summer weekends, too.

Craig opened the store with business partner Eric Savolainen, who runs the antique center upstairs, fully supplied by individual antique dealers, each with their own section. Craig’s love for the business started as a youth running yard sales and estate sales. “You never know what you’re going to find. I think I’ve seen it all. You can always find something that resonates with you. It’s the thrill of the hunt.”
Kingston Consignments is Craig’s first attempt at his own retail business. “This is what I wanted to do and I’m there. I love the antiques, the shop, and the store. It’s working and people are enjoying it.” Craig has years of experience working behind the scenes in the antique business, including exhibiting at antique shows in New York City, Rhinebeck,
and Blue Mountain Lake in the Adirondacks. His approach is to watch for trends, keep the inventory fresh and exciting, and offer reasonable pricing. “Our goal is to keep things moving. Not only is he happy with how well the business is doing, but Craig is happy to have found a home for his business in Uptown Kingston. “I think Kingston is a great place,” he says. It has restaurants, great places to visit, it’s historical, and I love the countryside.” Craig hopes to be a part of the beautification of Kingston by having a mural painted by a local artist on an outside wall of the building for the fall O+ Festival. But do be aware that those charming older farmhouses or in-town Colonials may or may not have been recently updated for energy efficiency or convenience. If you want a place to get creative with renovations and remodel ‘til it fits you like a glove, your buyer’s agent will be happy to hook you up with fine local tradespeople who can help. If you just want to move your things in, heave a sigh of relief, and begin finding new favorite restaurants, ask your agent to steer you toward newer construction. 3. Think long term. If you dream of developing a home business, or even putting in a B&B, check out the town’s zoning codes and make sure what you want to do will be welcomed. Zoning codes can also help you predict whether or not that beautiful woodland across the street may one day become the site of commercial development. Better to know. A pool is a large initial investment, so set up a tentative budget. “The homeowner should first come into the store to get the size and pricing options,” says Christine. Then move on to your wish list. Inspiration can be procured from magazines and websites such as Pinterest. Deciding what’s important to you in the long run will help you plan for everything from the basic requirements to design elements that can enhance your at-home vacation spot in the future.
Although you may feel you know precisely where you’d like your pool to be located, it’s not always in a homeowner’s hands. “Each town has its own set of rules and regulations; therefore, we recommend our customers go to their local building department,” says Christine. “Every pool requires a building permit, safety regulations, and inspections. The town will also identify any setbacks. We provide the town with the pool specs and blueprint.” This is why it’s important to have an installer come visit the site to look for areas of excavation and property setbacks, which include septic lines, irrigation systems, gas lines, etc.

In-ground pools can be made with several different materials including fiberglass, gunite, and vinyl. A professional can explain to you the pros and cons of each to help you decide which is suitable for your taste and budget. They can also advise you about the decking around the pool and design options such as tile mosaics and your pool surround. “During this process, we show the homeowner pictures and videos of prior installations and final products,” explains Christine. An expert goes over pool layouts and available decking options such as wood, concrete, or natural stone pavers to offer cohesiveness to your home’s style and architecture. In addition, there are three different options for the filtration system—sand, diatomaceous earth (DE), and cartridge. “We first would find the best solution for the homeowner. For example, it would all depend on how much use the pool is going to get and how much time the homeowner is willing and able to spend to maintain the pool. Using a salt system is less maintenance and the salt gets converted into chlorine. However, using BioGuard chlorine products are less expensive and require a once-a-week treatment.” 124

So many to choose from: lighting, both in and outside the pool; zero-entry or built-in stairs for entry ease versus ladders; retractable pool covers to protect the water from airborne debris and to provide safety when the pool isn’t in use. And, if aquatic exercise factors into your vision, consider the installation of underwater handrails and a variable flow of water that enables swimming in place. “We advise our customers about many different options, from decks, lighting, steps, fountains, and automatic covers. We also show them examples of existing pools. But, in the end, it all comes down to what the customer wants, and they usually do take our expert advice,” says Christine.
Christine advises homeowners to check with their insurance agents, as having a pool may affect your policy. Even if it doesn’t, it’s best to inform the company you’re having a pool installed. Also make sure you have proper building permits, as most locales require building permits with all types of construction.

When planning your idyllic poolscape, it’s best to list everything you’d like to include, even if your budget doesn’t permit building it now. It’s prudent to think about space/locations for future enhancements, such as a pool house, outdoor kitchen, fire pit, outdoor shower, swim-up bar, or gazebo. For example, if you know you’ll be adding an outdoor kitchen at a later date, it’s essential to run the gas lines to those areas of the poolscape in the beginning, which eliminates the need to tear up the deck and surrounding landscape at a later date.

Sure, summer often means beach days and cooling off at the pool, but in the Hudson Valley, few things epitomize the season as well as the county fair. From foods like cotton candy and fun-

The Dutchess County Agricultural Society, which was established in 1842, is comprised of 80 members that meet formally three times per year. The group pays $8,000 each year for four college scholarships, seeks to revitalize historic buildings by moving them
The Ulster County Agricultural Society, which was incorporated in 1868, has 21 members who run the fair and use the fairgrounds to promote farming, horticulture, and animal husbandry. Its fair began in Ellenville, where it stayed for more than 40 years. In 1932 the Ellenville Board of Education purchased the fairgrounds, ending the villageâ&#x20AC;&#x2122;s run of hosting the fair. It soon moved to Kingston and, finally, to New Paltz, where it has remained since 1967.

In the early days, both fairs leaned heavily on agriculture, including horse racing and horticulture displays, but they quickly expanded with more emphasis on entertainment. The Ulster fair hosted a fireman’s parade and balloon ascensions, plus a Kingston Day, in the early 20th century. The Dutchess fair dazzled audiences with airplane shows and a daredevil performance in the 1920s. As time progressed, both fairs branched out even more, from automobile races to thrill shows featuring cars shot out of cannons. Still, at the heart of each fair is agriculture. The Dutchess County Fair has equestrian events, activity tents, and 12 acres devoted to local livestock with milking demonstrations and daily judging. And the Ulster County Fair has multiple barns, a petting zoo, showmanship and judging from the 4-H club, a fair museum, and a blacksmith’s shop. The 147-acre Dutchess County Fairgrounds is home to a robust schedule of outdoor events that bring out thousands of residents and tourists. Among the most popular events are the Hudson Valley Wine & Food Fest (September 8–9), 153

which features a bounty of local foods, wines, spirits, and craft beers; the New York State Sheep & Wool Festival (October 20â&#x20AC;&#x201C;21), where visitors can browse and shop amongst 300 fiber artists and craft displays; the New York Country Living Fair (takes place in early June), an opportunity to get ideas to transform your home and life; and the Rhinebeck Antique Car Show & Swap Meet (takes place annually in May), paradise for classic car lovers with hundreds of displays and autos for sale. The 2018 Dutchess County Fair (August 21â&#x20AC;&#x201C;26) puts the spotlight on agriculture and history and showcases themed gardens with waterfalls and ponds, and a turn-of-the-century village that includes a 1900s printing press and Model-T shop. Free entertainment includes racing pigs, a scavenger hunt, a mentalist and mad science show, while the grandstand will showcase performances by The Wallflowers, as well as country musicians Kip Moore and Chris Lane. The Ulster County Fairgrounds is packed nearly every weekend of the summer. Spotlight events include the Bounty of the Hudson (June 16), a wine and food festival focusing on offerings from the Shawangunk Wine Trail; Hudson Valley Ribfest (August 17–19), which gives visitors the opportunity to sample sumptuous barbecue while being entertained by rock and country music artists; the Woodstock–New Paltz Art & Crafts Fair (September 1–3), a longstanding event over Labor Day Weekend (and Memorial Day weekend) at which hundreds of craftspeople from across the world exhibit their wares and host demonstrations; and Taste
of New Paltz (September 16), which highlights local restaurants, breweries, wineries, handcrafters, and makers in the New Paltz area. The 2018 Ulster County Fair (July 31–August 5) will feature plenty of old-fashioned country fun, from tractor and truck pulls to racing pigs to chainsaw carvers. The 4-H Club will be hosting daily judging and the annual livestock auction, while the main music stage will include rock, country, bluegrass, and pop acts, such as The Charlie Daniels Band and the former lead singer of Journey. Thursday at the fair is senior day, which means free admission for seniors from 10am to 4pm.
