hot summer days call for cool waters. Luckily we’ve got everything from crystal mountaintop lakes and streams to river beaches where you’re welcome to get your chill on. New York State is asking us to recreate close to home until the pandemic has fully receded, but chances are one or more of these spots will be near your neck of the woods.

take note: Swimming is officially permitted throughout the Catskill Forest Preserve, so plan your hikes where you see some blue on the map and feel free to dip at will. Most backwoodsy spots have no lifeguard, so bring a buddy and use common sense. And, please, please take your trash with you—we want these swimming holes to stay gorgeous and refreshing through future generations of summertimes.

ulster county minnewaska state park preserve has two crystalline lakes, lake minnewaska and lake awosting , both of which welcome swimmers in designated areas when lifeguards are on duty. You’ll want to get to the park early in the day to grab a parking space; the four-mile hike to Lake Awosting makes it less crowded, but both are glorious.

split rock, located at the Coxing Kill trailhead of the Mohonk Preserve, is shallow but it’s a great place for both kids and adults to cool off in the gorgeous mountain stream. As with Minnewaska, go early if you want to find a parking spot on a weekend.

The sandy belleayre beach at Pine Hill Lake is the state-operated summer face of Belleayre Mountain Ski Resort. Snacks, lifeguards, and restrooms are available, and you can rent several flavors of boat, including kayaks, stand-up paddle boards, and “aqua trikes.”

kingston point beach was once an amusement park; you’ll find river-polished remnants of the city’s once-vibrant brick industry mixed with the sand beneath your toes, and a chance to dip directly into the mighty Hudson herself. You can also take a dip in the big water at ulster landing park in Saugerties, which features several scenic trails—one of them is ADA compliant—along with grills, horseshoe and volleyball facilities, playgrounds, and basketball hoops. 16

big pond in Andes is a 51-acre lake with a nice beach, and getting there takes you through an exquisite section of Catskills. Its ease of access means it can draw a crowd on weekends; a six-mile hike takes you to yet another swim spot, alder lake, that’s likely to be quieter. little pond , another Andes spot, is only 13 acres; there’s a campground with amenities, but day-use guests are welcome to come dip, hike, and refresh. Neither Big Pond or Little Pond has lifeguards, so keep a close eye on little ones.

greene county d u tc h e s s c o u n t y copake falls , located within Taconic State Park, features a beloved swimming hole at Ore Pit Pond, open when lifeguards are on duty. The pond is deep, but there’s an adjacent kiddie pool, and you can wander the Harlem Valley Rail Trail or hike just over the state line to Bash Bish Falls, the highest single-drop waterfall in Massachusetts.

wilcox memorial park in Stanfordville has a guarded beach, and you can rent a rowboat or paddle boat.

colgate lake , in the Colgate Lake Wild Forest, is located two miles down Route 78, past the East Jewett Post Office, and the shoreline offers several spots to take a dip.

north-south lake is part of the campground of the same name and offers beaches, pavilions, restrooms, lifeguards, and some wonderful hikes. A great place for a family day in the sun.

c o lu m b i a c o u n t y nutten hook , in Stuyvesant, is a Scenic Hudson property with a historic ice house, and a generations-long history of locals jumping in for a dip. Take the Federal Footpath from the Ferry Road parking area and you’ll find yourself at the beach.

Gardiner Brewing Company came into existence after Colin Boylan, fifth-generation farmer, decided to try growing hops. He and his two sisters, Samantha and Mackenzie, all of whom

had grown up working the farm, were considering various ways to diversify when hops caught Colin’s attention. After some research, he decided to try brewing some beer.


The first fruit stand at Wright’s Farm opened for business in 1904, in the shade of a maple tree that still stands. In those days, a crop of ten kids worked the dairy operation with their

parents. When the current crop of three decided to transform the 100-year-old dairy barn into a brewery, they found themselves awash in family history. “There was a hundred years of stuff in there,” recalls Mackenzie. “It was a lot of work, but worth it. My 82-year-old grandpa told us it had been his and his brother’s clubhouse as kids—my brother found their initials carved in a beam. Grandpa remembers the barn with animals, Mom remembers it as full of tractors, we knew it as a catchall, and now our kids know it as a brewery.”

“Mom brought home brewing kits and he just played around with them until he made one batch and said, ‘Hey, I actually like this,’” says Mackenzie. “That was around five years ago, and he decided he needed to get licensed, start growing hops, and take the opportunity to branch out into something people could drink.”

Along with enjoying the brewery, visitors can pick their own apples or shop the bountiful farmers’ market, fruit stand, and bakery, where stone fruits fresh as the morning dew are transformed into wondrous, fragrant delights using Grandma Ann’s recipes.

Since September 2018, that barn has been the place to find “Beer From Here”—uniquely Gardiner choices like Ireland Corners Red and Muffler Bearings—along with hard cider from Bad Seed in Highland, Black Sheep from Arrowood Farm Brewery in Accord, cocktails crafted with Orange County Distillery liquors, the finest local wines, and much more. The food menu is loaded with feelgood creations like Loaded Nachos, Southern Gartucky Shrimp, and Ev-

The Barn offers both indoor and outdoor seating, and Mackenzie is happy to be fully open again after the pandemic-era closure. “Closing was mandatory; we were very lucky to have a lot of space and live on-site,” she says. “We made out better than many.” There are seldom enough hours in the day—along with the brewery operation, Colin is the primary farmer at Wright’s. “It’s a lot sometimes, and the farm has to stay first priority, so we do struggle with time management,” says Mackenzie. “But the larger brewing system will allow us to increase production within an eight-hour window. And there’s always someone to help tote the heavy kegs or watch the kids— we’ll soon have seven between the three of us. It’s very much a family affair—when you come in you’ll probably find my grandpa and parents there, which is very fun. People that work with us find it amazing. ‘Wow, you guys do all this and really like each other!’ We do. comeback—there are chickens, pigs, and cows, and lambs have been added just this year. “We always talk about the evolution of it,” says Mackenzie, “and bringing animals back had this feeling of, ‘Oh my goodness, life really does come full circle.’”

By the time he was five, he had mastered a few things on his own. “I was a hungry child and an early riser, and I’d be up and at it at dawn, making my oatmeal to eat while I watched Mr. Wizard and stuff,” he says. “I always felt comfortable in the kitchen.” After high school, he spent four years in the Navy and then settled for a time in the Southwest,

where he found himself working restaurants in Arizona and California. In 2009, he came back to the Catskills and enrolled in the Culinary Arts program at SUNY Sullivan. “The instructors were great,” he says, “and being back home in a small town, I knew everyone. The instructor was a family friend.” Richard teamed up with a fellow native, Kevin McElroy, to open the Local Table and Tap on Kauneonga Lake in 2013. Things went well, and when another lakeshore spot became available in 2015, Barrio Kitchen was born as the first full-service Mexican restaurant in the area. “Our strategy was to look at the local market and try to do something fresh, fill a hole,” Richard says. “We were torn between Mexican and barbecue, and decided to go with Mexican. We’re both professionally trained, so it was a matter of research and trial and error, making batches of tacos until we were happy. Everything has to be fresh and from scratch—all my salsas are house-made and so on, and customers seem to really like it.”

In 2018, the partners decided to part ways professionally, and the restaurants continue to thrive in their prime lakeside locations. “Kauneonga Lake has always had that fun, mellow vacation-land vibe, and we have a big deck—actually the biggest one here—overlooking the lake, where you can watch the boaters and jet skiers play,” Richard says. “Plus, we’re two miles from Bethel Woods Center for the Arts, the Woodstock Festival site. Our building is actually in some of the historic photos—it was Newman’s Pharmacy in 1969. For the 50th anniversary, we had an eight-piece ensemble on the deck playing all that good old Woodstock music, and everybody had a blast.” Live music at the Barrio, or Barrio’s—“I don’t care what they call

it as long as they keep coming back,” Richard jokes—is a steady, eclectic stream that includes rock, jazz, reggae, piano, or pretty much “whoever’s willing to come on out and is good at whatever their thing is.” It blends perfectly with the tasty dishes—current hits include pupusas made with local corn flour and elote, grilled Mexican street corn. “We make it with garlic aioli, Mexican cheese, cilantro, and lime,” says Richard, “and it’s just delicious, fresh, and summery. And we’re rolling out a really nice cocktail menu; we have a new bartender who’s a genius with margaritas and with all kinds of Sangrias, and I hope people will come give that a try. I think they’ll love it. It just goes really well with that feeling of shedding your worries and being transported.” 81

Nowadays, Richard still cooks first thing in the morning—for himself and his threeyear-old son, who’s inherited the early rising gene. “We try not to disturb Mommy,” he says. “And work is fun; the restaurant industry is an animal to take on, and you have to have fun with it. If you don’t, you won’t make it. Right now, this is working great, so it’ll stay Barrio Kitchen. “The fun part of having my own place is, if I decide something else would be more fun, I can reinvent it at the drop of a hat. But fresh, hot homemade food—that part will never change, you have to stick to that standard. And people are always going to be drawn to the water.”

Located in a renovated service station, Stella’s is the brainchild of a pair of Saugerties natives who knew that locals and visitors alike would love the kind of oasis they had in mind. And with a menu full of starters like steamers, soft pretzel nuggets, and spicy cheese curds, as well as classic 90

sandwiches, salads, skewers, and grillers, everyone is likely to find something to love—vegetarians can feast on a tomato and mozzarella or falafel wrap, while omnivores enjoy a Jalapeño Cheddar Bratwurst—all of it done to Culinary Institute standards. “I like to think we rebranded it,” says chef Mike DePoala, one of the partners who’s been running Stella’s since 2013. “We built it into a summer destination bar for locals and gave the menu a glow-up, reimagined it in our own image. We have great frozen drinks. We want people to come here, sit down, and feel like

The former gas station had already been renovated as a restaurant, so Mike and his partner Alex Lamb built upon the unique character of the space. Their journeys had converged at the Dutch Tavern on Main Street. Mike had previously ventured to the Culinary Institute of America in Hyde Park and then to Manhattan,

where he honed his skills for a few years before heading back upriver to home. Alex followed a different route to hospitality. “Both my parents were attorneys, which made me realize that was something I didn’t want to do,” he says. “I went to college and got my 91

We spaced the tables six feet apart. But, post-Covid looks a lot like pre-Covid here—relaxing in the fresh air. It’s been a comfort.” 92

f you were looking for a two-word description of a perfect Rondout Valley Saturday destination, the words “farm bar” might well catch your eye. Add “serves pizza,” “cider on tap,” and “dogs welcome,” and you begin to understand what makes Stone Ridge Orchard a hit with visitors and locals alike. While you’re enjoying the wood-fired pizza and refreshing cider, not to mention the delicious offerings at the farm stand and the beauty of the surroundings, take a moment to acknowledge how close we came to losing this 114-acre treasure to development pressure. Thankfully, it’s a destination and a living monument to the tenacity of its owner, Elizabeth Ryan, granddaughter of a farm family who now operates a family of farms.

The Stone Ridge tasting room, farm market, and u-pick operations welcome guests to a very genuine working farm experience, seasoned with intelligent fun, a wide variety of fruits, and ecstatically good apple cider donuts.

Elizabeth’s passion for agriculture led her first to the ag program and then to major in pomology, the science of growing fruit, at Cornell. It was there that she made her first barrel of cider in 1980, going on to study the craft in England. In 1984, she purchased Dutchess County’s histor-

ic Breezy Hill Orchard. She has, over the years, been a co-founder of the GrowNYC Greenmarket program, a Smithsonian fellow, and the recipient of the Cornucopia Award from the Stone Barns Center for Food and Agriculture. She helped foster the hard cider boom that’s now

an integral part of New York’s craft beverage renaissance as an industry advocate and keynote speaker at the Governor’s Alcohol Summit. And in 2008, Elizabeth took over management of the 200-year-old Stone Ridge Orchard,

implementing her ecological growing principles and fighting to keep the farm established enough to fend off the prime location’s development. In 2014 she succeeded in buying the farm after four years of negotiations, and it’s now—along with Breezy Hill—a source of the top-notch apples and pears that create Hudson

Valley Farmhouse Cider. She’s still one of a short list of women cidermakers, tapped by Williams Sonoma to create home cider, mead, wine, and sparkling wine for their agrarian line. And she’s still having an absolute blast. The Stone Ridge tasting room, farm market, and u-pick

The quaint shop has more of a homelike feel than your average pharmacy, complete with comfortable chairs to sit in and displays of locally made and sourced items

throughout the store, such as elderberry magic elixirs and CBD oils. This Catskills establishment is based on a broader, deeper model of what ails us than corporate pharma, and founder Ed Ullman has distilled a lifetime of analysis into a community institution for true healing.

“I’ve lived in Mount Tremper, just outside of Phoenicia, since 1975,” says Ed of his neighborhood in the Catskills. “I’ve left at times, traveled the world on other projects. And this place has always called me back. I love the culture of intertwined free spirits. If you can’t introduce a Renaissance idea in the Hudson Valley, you can’t do it anywhere.”

Ed was born into a challenging situation on Long Island and found himself on his own at age 14 in Walden, taken in by an aunt with an unheated cottage and then by a woman with five of her own to raise. “If there hadn’t been a hand reached out to me, I could easily have gone in another direction entirely and become a drug dealer,” he says. “Never dismiss the importance of caring. That gesture planted in me

What’s in it for you?’ Once I understood he that he really did care, I became a man and won the Citizenship Award at Cobleskill.” He 112

continued his studies at Albanay College of Pharmacy and Health Studies, and continued on to receive an MPA degree from Syracuse University. He went on to be a National HMO Fellow at Georgetown Medical School in Washington, DC. Then he set out on his own, in pursuit of helping people feel better.


Founder Ed Ullman has distilled a lifetime of analysis into a community institution for true healing.

Never one to color inside someone else’s lines, Ed’s developed 30 startups over the years and has been a pharmacy district manager, mental health director, county legislator, and owner/operator of the world-renowned Warm Mineral Springs in Florida. He also developed, founded, and operated WellCare Health Plans, Inc. which was for many years the largest HMO in the Hudson Valley and the second largest private employer in Ulster County.

“HMOs just turned into big business,” he says. “Insurers have to be mandated to do the right thing; we’re not demanding enough from them and they aren’t functioning as part of the solution.” Asked by the Hunter Foundation in Tannersville to start a hometown pharmacy in 2015, Ed informed every decision with that passion to be part of the solution. Wellness, he knows, is an all-

encompassing condition with roots in nutrition and self-care and branches that spread into how communities connect. None of it would be possible, says Ed, without the team, including his wife Patty, co-owner J. Scott MacKay, and a diverse group of assistants and practitioners. Staff includes a mental health counselor, a former hockey announcer who suffered a near-fatal car accident, and a woman whose suffering with a flawed IUD led her to take the matter to Congress and create change that affected 40,000 women. “I have a fellow refugee from corporate pharma, a new mom from Puerto Rico . . . . I hire people for their stories,” Ed says. “And their passion.” Wellness RX is more than a pharmacy; it’s emerged as a rural research and development center where the larger questions are coming into focus. “The question of how to meet community needs is a shared focus,” says Ed. “One study in progress: If we take the highest-risk people and assign a caseworker to follow their progress, bond with and adapt to their needs, can we reduce hospitalizations and emergencies and help them build a higher quality of life? We’ve had great success with the six families involved so far.” For Ed, everything stems from the human encounter. “You need to treat everyone the same

The IRS just approved our Wellness Rx Charitable Fund, so that will add even more help for those who are struggling.” Wellness Rx rolled out Greene County’s first COVID-19 vaccinations last winter and spring, with help from State Senator Michelle Hinchey’s office and a team of community volunteers. “We went after all the at-risk folks who are unlikely to leave the mountaintop and drive 80 miles,” Ed says. “Hotel workers, restaurant workers. . . we got 92-year-olds, people from shacks, people with oxygen tanks . . . . We also did a video of interviews, recording history. And I was so proud to watch volunteers doing hard work out of love—that is what I want to see coming out of Covid.” Throughout the pandemic, the mountaintop wellness center kept shining a light, whether by filling folks’ prescriptions or mixing up CBD and elderberry to help calm “autistic and hyperkinetic” kids. “I tell them, ‘I was you at your age, I learned to take

all that wild energy in my brain and make it productive, and you can, too,” Ed says. In his time off, Ed likes to build sculptures from the rocks in the mountain stream at his home. “I put them up and the birds and animals knock them down,” he laughs. “It’s fun. As for work, if you’re not trying for greatness, what’s the point? Every community should have a Wellness Center. What we have developed seems to be working for the patients and the community, and we’d like to help heal the wounded health care system, so we’ve developed a slide presentation on how to duplicate this model in other communities. We need beacons of hope. If we get backers, we’ll be moving full speed ahead. I hope we can break through. We need a lot of bright lights to connect.”
