t’s hard to believe that there is only one region in the whole world that can grow sugar maples successfully. New York, New England, and Eastern Canada have just the right climate to allow the sweet sap of the sugar maple to flow in February and March, just as the ground is thawing and releases the earth from its winter grip. So when you think about Valentine’s Day this year, think about tapping your maple trees. In Vermont—the place where everyone thinks of when they hear maple syrup—trees are tapped everywhere

you look. It’s not just the big syrup producers tapping their maple stands, or sugar bushes, with miles of blue tubes that lead to collection tanks. Everyone’s doing it. Drive past almost any house and the maple trees are tapped, even just one or two. A small family can produce enough syrup out of two trees to supply themselves for one whole season—and it’s easy and fun! Start by identifying whether or not you have sugar maple trees. Look online, at Google Images for example, or in a tree book to see the smooth but crackly surface of the bark. It’s unlikely that the tree will still have

Now it’s time for boiling. Forty gallons of maple sap is boiled down to get just one gallon of succulent syrup, so you’ll be boiling a bit. If you have a wood stove, you can evaporate the water in the sap into your air by placing a pot on the wood stove. Or just place a pot on your stove and boil most of the liquid away. Add more sap or get ready for the final touches of boiling. You can also buy a large maple sap boiler and go all out with your set

Be very careful not to burn the syrup (what a mess!). There are ways to monitor the syrup by eye to make sure all of the water content has been removed, but owning a hydrometer makes the job much easier. Just float the device on the surface and a line indicates when the brew turns to syrup. Otherwise, watch the bubbles turn from being large, like boiling water, to very small, like boiling milk. The liquid also changes the way

it runs off of a spoon once it turns to syrup—it starts to look like slow moving...well, syrup. Making your own maple syrup is a great project to do with your family and friends. It produces sweet results and is a way to work with the land around you. This year as the snows melt away and spring is about to appear, get your body moving with the flow of the maple tree.

WINTER RECIPES from our local chefs THE “SISTER’S” COLD ANTIPASTO

Corn & Potato Soup with or without Pumpkin

2 romaine lettuce hearts 1 head iceberg lettuce 1 celery heart jar marinated artichoke hearts jar roasted red peppers can of black olives jar of green olives jar of marinated mushrooms handful of capers 1/4 cup of grated “locatelli” romano cheese 2 large ripe tomatoes 1/4 lb hard salami 1/4 lb chunk of imported provolone 1/4 lb imported prosciutto (sliced medium thickness) red wine vinegar olive oil

4 1/2 cups fresh corn 4 cups diced potato 2 cups milk 1 quart heavy cream 1/16 cup salt 1/8 cup white pepper 4 cups cooked and pureed pumpkin (optional) 2 cups gruyere cheese

Clean and cut up romaine, iceberg and celery heart. Put in large bowl, add artichoke hearts, roasted red peppers, black olives, green olives, marinated mushrooms, capers, and locatelli romano cheese. Add a splash of juice from each ingredient. Mix up really well. Cut provolone into cubes and mix it in. Lay it on a serving platter. Roll salami and prosciutto and lay on top. Slice tomato and lay on top. Serve with red wine vinegar, olive oil, Dominick Vanacore and bread sticks on side. Dominick’s Cafe Uptown Kingston

Put all the ingredients except the cheese and salt into a stainless steel soup pot. Bring to a boil and simmer for 30 minutes until the potatoes are soft. Although the pumpkin puree is optional it works well to help thicken the soup. Add the puree pumpkin if you wish and cook for another 20 minutes. Add the salt and stir constantly, taste for salt and add more if you wish,cook for another few minutes. Remove the soup from the burner and serve in one cup bowls garnished with the grated gruyere cheese. The original recipe was made for Rondout Valley Growers Association Barn Dance. The growers delivered 2 bags of fresh corn and 50 pounds of potatoes. The recipe was made to serve 125 guests a one cup portion. The recipe has been scaled down to serve 15 people expecting them to go back for seconds.

Blackened Salmon in Creole Sauce

12 oz. milk chocolate 1/3 cup light corn syrup 8 oz. butter 4 large egg yolks 2 Tablespoon sugar 4 Tablespoon amaretto liquor 2 Tablespoon water 1/4 cup heavy cream 1 cup sliced almonds 1/2 cup sour cream 1/4 cup heavy cream

2 7oz. salmon filets Cajun spice 1/4 cup diced red & green bell pepper 1/2 cup of diced onion 1/2 cup of white wine 2 cups of marinara or tomato sauce 2 tablespoons BBQ sauce Lousiana style hot sauce salt & pepper olive oil cooked brown rice (optional)

Prepare sauce first. Saute peppers, garlic and onions over high heat with oil. Deglaze pan with wine white, simmer for 2 minutes. Add BBQ and marinara, reduce heat and simmer for 15 minutes, stirring frequently. Salt & Pepper, Dash of hot sauce to taste. While sauce is simmering, in a separate heavy skillet heat oil. Roll each filet in Cajun spice until coated. Place in skillet top side first. Lower heat and cook for 7 minutes. Flip and cover, cook for five additional minutes.

For Topping: 9 oz dark chocolate 10 Tbsp. butter 1/3 cup light corn syrup

Place salmon over rice and cover with sauce! Yummy!

For terrine: Melt chocolate, light corn syrup and butter together in double boiler. In second double boiler combine egg yolks, sugar, amaretto liquor, water and ¼ cup heavy cream. Stir mixture until 168° on candy thermometer. Combine the two mixtures. Whip sour cream with ¼ cup heavy cream until soft peaks form. Fold into chocolate mixture. Stir in sliced almonds. Pour entire mixture into plastic lined terrine and refrigerate overnight.

Melt all ingredients together in double boiler. Pour just enough over cooled terrine to coat. Let cool one hour in refrigerator. Then, unmold terrine turning it over onto a plate and peel off plastic wrap. Pour remaining chocolate over top and allow to run down and cover all sides of terrine. Refrigerate another hour and slice into desired size pieces. Garnish and serve.
