WHAT WE LOVE ABOUT WINTER our team shares their wintertime favorites
“In winter the forest sleeps, and into this dream world we go!” COLLEEN VITTI “For me the best thing about the Hudson Valley/ Catskills in the winter is the silence of the snow. When walking or cross-country skiing in the woods, sounds are muffled, which somehow seems to magnify the overall beauty.”
14
MATT PETRICONE “Every year when the air turns cold I’ve always looked forward to another season of being on snow. I began snowboarding in 1987 and I don’t think the nostalgic feeling will ever get old. There’s something so peaceful about heading up into the Catskills after a fresh snowfall and nothing beats a good powder day.
MELISSA HEWITT “Winter makes me really appreciate the warmth and safety of home. I could stay home for weeks on end just tending to the fire, reading books, taking walks, and working in front of a window of sparkly white. In fact, it’s literally what I do all winter. Hibernating and going inward makes the spring warmth and color all the more amazing.”
ABOUT US

“It makes us stronger and more resilient, there’s something special about knowing you’re taking JESSICA BRUSH “I love getting super cozy by wearing warm socks, layering lots of clothes, and sleeping in a sea of down and wool blankets. I also don’t mind the excuse to indulge in comfort foods.”
JESSE MARCUS “Moving to the Hudson Valley has brought me back to nature’s elements. There is also a really strong sense of community; you can be part of something but also have space to yourself. There’s always someone willing to lend a hand. I also enjoy the stillness; it feels like a time to reflect.”
good care of yourself and your family.”

JOAN MACDONALD “For me, it’s the first hour after a big snowfall. The world is transformed, bright, white-laced, and so still. Walking in snow showers is fun too.”
15
WOOD STOVE STEW Yield: 8 servings “This is a perfect weekend dish, as you can put it on a wood stove early and let the aromas fill the house until you can’t take it any longer and you just have to eat it!” —Phoenix
ingredients: Cubed meat or beans and any vegetables and herbs you have on hand PHOENIX TRENT “For me, wintertime coziness rivals the bright color parade of autumn and the blossoms of spring. Cuddling up close with loved ones by a toasty fire in the midst of a snowstorm, while indulging in a big bowl of beef stew, a hunk of fresh baked bread, and a glass of bourbon, is wonderfully comforting.”
16
method: Whatever produce and meat you have available can be mixed with a bundle of dried or fresh herbs to make for a sumptuously delicious stew. There are many winter farmers markets to choose from for ingredients. There’s no need to fuss over details; the great part of this dish is that it requires minimal planning and work to prepare. Lightly dust 2 cups of one-inch cubes of meat (beef, chicken, or lamb) with whole-wheat flour (or your favorite alternative), and pan-fry them in a cast-iron pot on medium-high heat in a few tablespoons of olive oil until lightly browned. Add in chopped carrots, celery, onion, beets, parsnips, garlic, potatoes, and any other veggies or legumes you have on hand. If you want to make a vegetarian stew, just skip the meat and use beans instead. Add in salt and pepper to taste, a few chopped sprigs of rosemary and oregano, a splash of red wine, and water or stock to fill the pot. Put the pot on the wood stove, and let the stew brew and bubble for 2 to 5 hours until thick. If using a stovetop, cook on medium-low heat. Enjoy.
RECIPES
HOT CHOKOLA Yield: 4 cups “Here’s a simple hot cocoa recipe, a variation on the traditional Hatian Chokola Peyi, which you’ll love.” —Charlene
ingredients: 2 cups of milk* 1 four-ounce bar of 100% unsweetened cacao 2 anise stars 1 cinnamon stick 1 fourteen-ounce can of sweetened condensed milk* 1 twelve-ounce can of evaporated milk*
method: 1) Melt the unsweetened cacao in 3 cups of milk on medium-low heat. 2) Once the cacao is melted, add in 2 anise stars, 1 cinnamon stick, the sweetened condensed milk, and the evaporated milk.
3) Whisk and steep on low heat for 15 to 20 minutes. Be careful not to bring the liquid to a boil, and whisk frequently to guarantee that it doesn’t burn.
4) Strain before serving, and garnish with a fresh cinnamon stick to stir. Mmmmmm. *For a healthier version, try replacing the milks with cream of coconut and coconut milk.

CHARLENE V. MARTONI “Coming in from the cold to homemade hot chocolate is something I love about the winter, especially after a long day at work or a weekend out exploring the Hudson Valley.”

HAPPY & HEALTHY how being positive can boost your immune system by Phoenix Trent

can have its moments of gloominess, but with the snow and ice also come pumpkin pie, hearty soups, ice-skating, and cozy nights cuddled up by a crackling fire. The best way to maintain a healthy body and spirit this winter is to stay positive and appreciate all the beauty our valley has to offer through the colder months.
Dr. David Cho, a primary care physician in Hyde Park with Health Quest Medical Practice, explained that “just as grief and despair can lead to fatigue, depression, and even illness, feeling joy and happiness can actually boost your immune system, helping you to heal faster, lower your risk of heart disease, and even help you to live longer.”
“So,” he said, “in addition to getting plenty of rest, eating healthy food, and exercising, be sure to add plenty of enjoyment and fun to your life.”

Winter in the Hudson Valley
21
“Just as grief and despair can lead to fatigue, depression, and even illness,
feeling joy and happiness can actually boost your immune system, helping you heal faster, lower your risk of heart disease, and even help you to live longer.”
HERE’S HOW YOU CAN DO IT ALL:
nutrition:
Nourishing your body with nutrient-rich produce will contribute to good health any time of year, and it just makes you feel great. Check out your local winter markets, despite the cold, where farmers will be glad to show you how to incorporate seasonal ingredients into a tasty wintertime meal. Ward off the sniffles and boost your mood by whipping up a warm feast, like a toasty bowl of porridge with churned butter, raisins, fresh fruit, and maple syrup, paired with a piping hot mug of spiced apple cider. Spend a cozy night in with a good book and something delicious to munch on, or take your meal on a hike to ogle at the beauty of this season. Whatever makes you feel good—do it. 22
exercise: Physical fitness and
getting fresh air are also essential to maintaining health because our highly sensitive immune systems are made more resilient through regular exercise, and exercise helps to boost your mood as well. Whether it is a daily walk to the park, a weekend on the slopes, or an ice skating outing with loved ones, a daily dose of exercise is absolutely essential in promoting wellness and good feelings during the winter and throughout the year.
HEALTH
Physical fitness and getting fresh air are essential to maintaining health because

other important component to warding off illness, both physical and emotional. Spending time with family and friends has its benefits, but remember to save some time to be by yourself, where you can clear your head and find some peace. Bundle up and sit outside by a warm campfire, listening to the stillness of the snow-covered trees, or go for a serene walk in the woods with a thermos of hot tea.
SO step outside and embrace that crisp air because winter won’t be so bad with these tricks up your sleeve.
You deserve to have a joyful and healthful winter season, and by engaging in all the wonders the Hudson Valley and Catskills have to offer, you definitely can.

CROSS-COUNTRY SKIING our pick OVERCLIFF/UNDERCLIFF, MOHONK PRESERVE This might just be the perfect cross-country ski loop in the Hudson Valley. It offers a little bit of everything: groomed trails, gorgeous views, long stretches of gliding, super fun downhills, mixed hardwoods, and stands of pitch pines. The carriage road is also wide enough for skate skiing if that is your passion. From the parking area, walk up the steps and turn left toward the large beckoning rock at the junction of Overcliff and Undercliff, which is a great place to put on your skis. You can head out in either direction, but most seem to prefer to begin by bearing left onto Overcliff. The trail starts off very gently and gives you plenty of time to get into your groove. After 20 minutes or so, you will probably need to stop and take off some layers; though the ascent is very gradual, cross-country skiing is a full- body workout, and you will heat up quickly. Keep your eyes out for views of the Clove Valley to the west and the site of a controlled burn on the right side of the trail. The trail continues gradually uphill for 2.4 miles, and after a couple of windy turns, you’ll reach the crest. Enjoy this nice stretch of downhill—you earned it—and make your way to Rhododendron Bridge, a perfect place for a snack and rest. The trail continues uphill on Undercliff, where you’ll ski under some of the best rock climbing cliffs found in the Northeast. Views of New Paltz and the Walkill River Valley abound to the east. After 2.3 miles on the Undercliff trail, you’ll find yourself back at the rock where you began. DIFFICULTY: Moderate LENGTH: 4.7-mile loop DIRECTIONS: From New Paltz, follow 299 west to the end. Turn right on Route 44-55. The Preserve Visitor Center will be 1/2 mile on your right. Go 1.3 miles past the Visitor Center, and turn right into the West Trapps parking area. At the gate, you can either become a member of the Preserve or pay the $12 day-use fee. 38

SNOWSHOEING our pick HIGH PEAK, CATSKILLS For brilliant views, an excellent workout, and winter solitude, there are few better places to snowshoe than in the Platte Clove. The most accessible summit from the Clove is High Peak, and its rocky promontories provide spectacular views to the east of the Hudson Valley, as well as the lofty ridges and summits of Indian Head, Twin, Sugarloaf, and Plateau Mountains. The trail is out of the back corner of the parking area and is well-marked. Follow the Long Path past the Huckleberry Point Path (a fine objective albeit shorter) to a well-marked path on the north side of High Peak. This is approximately three miles. It is quite gradual with the last short section climbing steeply to High Peaks summit. The hemlock forest you will pass along the way is especially gorgeous in the snowy winter. As always, be prepared when visiting the backcountry, particularly during the winter. Map, compass, appropriate clothing, food, and water are critical items when venturing out into the forest during the often brutally cold winter months. It is critical to not underestimate what you may need. 40
OUTDOORS
DIRECTIONS: Park at the Huckleberry Point/High Peak trailhead off of Platte Clove Road/Route 16. The extremely steep eastern portion of this road is closed during the winter, so the area must be accessed from Tannersville. Follow Route 16 past the Catskill Bruderhoff Community, just over 3 miles out of town. Look for a bit of roadside parking on the right beside a small red artist’s cabin, and a hundred yards further you’ll find the entrance on the left for the trailhead parking. If you come to the dead end, no need to worry. You’ve only just passed the parking, so turn round, and keep a close eye out just after the small stone bridge.

DOWNHILL SKIING/BOARDING our pick UPPER POWDER PUFF TRAIL AT PLATTEKILL MOUNTAIN The Catskills have a long and rich history of downhill skiing and riding. Snow resorts have dotted the landscape for generations, and Plattekill offers both gentle slopes for beginners and double-black diamond trails for advanced skiers. Known for its laid back family atmosphere, this small mountain resort is perfect for beginners. The Powder Puff trail offers two miles of gentle gliding. Always groomed, it’s wide enough for big turns and steep enough for a thrill—but not so steep that you can’t comfortably come to a stop. When 42
you get to the bottom, be sure to turn around and look at the very steep North Face. Keep coming back to Plattekill, and you’ll be cruising down this expert slope before you know it! DIRECTIONS: Take I-87 to exit 19 (Kingston). Follow Route 28 West approximately 40 minutes to Arkville. Turn right in Arkville onto County Route 38. Follow to the end. Turn right onto Route 30 North. Go
expert trail ANAPURNA TRAIL AT HUNTER Hunter Mountain has developed some of the finest snow-making technology in the industry and provides its guests with amenities from a big mountain area that is close to home. Since 1960, Hunter has provided some of New York State’s most accessible terrain, but there are also definitely trails for advanced skiers. Perhaps the best example of a more challenging run is 3,800 foot-long Annapurna. With a drop of 1,295 feet, Annapurna is consistently steep and challenging. Serviced by the modern high speed “Zee” lift, Annapurna is on the less traveled western aspect of Hunter. On a wintery weekday, the west side has a quieter, more remote feel than much of the otherwise busy area. Annapurna is “expert” terrain, narrow and tightly lined with moguls when the snow has been good. Arguably the hardest trail on the mountain, Annapurna demands good technique. The sweeping views of Rusk and West Kill Mountains, and the wilderness in between, are fantastic.

places. Perhaps the most sought after gem in the area’s collection is the multitiered cascade of Buttermilk Ravine. Dropping steeply into Kaaterskill Ravine from the north slope of High Peak, Buttermilk offers an all-day adventure for most climbers with seven distinct frozen waterfalls and an approach hike/snowshoe of forty five minutes to an hour. From the banks of Kaaterskill Creek, Buttermilk gains over 1,200 feet in one short mile. With a grade of water ice 4 and a relatively isolated location, this is an adventure for advanced to expert climbers. For less experienced climbers, enjoying the ravine’s frozen waterfalls might be best done in the company of a professional. DIFFICULTY: Advanced/expert LENGTH: 600 feet DIRECTIONS: To get to Buttermilk Ravine, follow 23a west out of Palenville. After crossing a bridge with a very steep cliff on the left rising directly from the edge of Kaaterskill Creek (“Moore’s Bridge”), travel just over a mile to an obvious parking area along the south (left) side of the road. From the parking area, walk downhill a short distance to where a guardrail begins, drop steeply down the embankment, and cross the creek. Head east (left) for approximately two hundred yards until the terrain drops down into the side drainage of Buttermilk. Follow the hillside south, climbing steeply uphill parallel to the ravine until reaching the first waterfall. In snowy conditions, it is typically easy to follow a boot-packed trail directly to the falls. When there is little snow, route finding is a bit more challenging.

ICE SKATING our pick Enjoy the wonders of Mohonk Mountain House from their 9,375 square foot ice skating rink. Built in 2001 after too many skateless mild winters on the unfrozen Mohonk Lake, Mohonk brought this quintessential wintertime activity back to life, and they have done so with sophisticated style in typical Mohonk fashion. Its 39-foot high stone fireplace offers the weary a place to warm cold hands and feet or just simply relax. The views of the lake and
mountain house itself as you circle around the rink will give your day a lift. If you choose a nighttime skating session, you’ll be sure to enjoy the holiday lights that brighten the house and grounds. If it’s been awhile since you last donned skates, no worries—you can grab hold of a metal chair to support you while you get your mojo back. It’s super accessible from the thruway or Routes 28 and 209 in Kingston and will give you all that you need for a downhill thrill, but without the long drive and fuss. CHEF RECIPE:
by chef matt hutchins of the hop: craft beer and artisanal fare photos by Ethan Harrison
“This is a perfect dish to bring to a party or to savor with a nice drink in front of the fire with a loved one.” —Matt
pâté, jam, cheese, & baguette I believe this dish, in spite of being a cold one, really represents warm, comforting flavors: earthiness, richness, and sweetness. It is so simple, yet wonderfully complicated, and it can be a playful balance of flavor if done correctly. It has made an appearance on every chef table menu I have done at the restaurant. I am a big proponent of Hudson Valley cheeses. Currently I use Vulto Creamery’s “Ouleout.” If you would like a less pungent cheese, a decent triple cream would do, like Nettle Meadow’s “Kunik” or Old Chatham’s “Kinderhook.”

The baguette should be sliced and toasted, after being brushed with olive oil and moderately salted. I often accompany this dish with Meyer lemon-Saison vinaigrette dressed on the plate, which gives just the right acidity to brighten the dish, and I love to mop up the dressing with a fully loaded baguette. The components of this dish are: chicken liver pâté, brandied prune and raisin jam, washed rind farmstead cheese, toasted baguette, and Meyer lemon-Saison vinaigrette.
RECIPE
BRANDIED PRUNE & RAISIN JAM Yield: 1 cup
jam ingredients: 1/2 cup prunes, deseeded and chopped 1/2 cup raisins, Thompson 2 tablespoons balsamic vinegar 1 ounce brown sugar 2 tablespoons sugar, granulated 1 tablespoon molasses 1/2 tablespoon honey 1 tablespoon brandy 1 tablespoon sweet vermouth 1/4 teaspoon cloves, ground 1/8 teaspoon juniper, ground 1/8 teaspoon salt 2 tablespoons water
reduce them to medium heat. Let them cook until the raisins are fully plumped and the liquid has reached a syrupy consistency, about 30 minutes.
2) Spoon into a Mason jar or a similar vessel, and refrigerate until needed.

jam method: 1) Combine all ingredients, and bring them to a simmer. Then,

CHICKEN LIVER PÂTÉ Yield: 1 pint
pâté ingredients: 1 cup chicken livers 1/4 cup duck fat (or lard), more as needed 1 tablespoon butter, cubed 2 tablespoons thyme, chopped 1/4 cup shallots, minced 4 cloves garlic, minced 1 tablespoon salt 1 teaspoon black pepper, ground 1/2 teaspoon nutmeg, ground 1/4 cup heavy cream 2 tablespoons brandy or sweet vermouth 84
pâté method: 1) Soak the chicken livers in milk for 30 minutes. Strain, then rinse them, and let
them stand to dry for a bit. Heat the duck fat and butter to medium-high heat, then add the livers, being sure not to crowd them in the pan. Get a nice, hard sear on one side before flipping them; cook them on the other side until a nice sear is accomplished but the livers are not quite done.
2) Remove the livers from the pan, but leave the fatty liquid. Add shallots, thyme, garlic, and spices; stir to coat evenly. Let the mixture cook until the shallots are halfway done and just beginning to turn translucent. Add brandy, and let it simmer for a bit, scraping the fond off the bottom of the pan as you do.
3) After about a minute, add cream; then, let it reduce, stirring and scraping the bottom of the pan occasionally until the mixture has thickened slightly.
RECIPE
MEYER LEMON SAISON VINAIGRETTE Yield: 1 cup
vinaigrette ingredients:
er. Blend thoroughly, scraping the sides when necessary. Repeat this until it is as smooth as it can get.
5) You can remove gritty parts by passing the pâté through a fine sieve, but
a strong blender can often do the trick. Taste the mixture and adjust the seasoning if desired. Remember: An item will appear saltier when it is hot, so items that are to be served chilled will appear a bit too salty when warm.
6) Spoon the pâté into a Mason jar or a similar vessel. Refrigerate for just 15
minutes or so, just enough to cool the surface of the pâté. Meanwhile, heat 1/4 of a cup or so of duck fat or lard until melted. Spoon a layer of the fat over each ramekin, sealing the pâté, then refrigerate until needed. This method of storage, when done properly, can hold the pâté for up to six months.
vinaigrette method: 1) Wisk oils then the beer slowly into all of the other ingredients. Refrigerate until needed.

4) Scrape all ingredients off the pan along with the livers into a strong blend-
1/4 cup extra virgin olive oil 1/4 cup olive oil 1/4 cup Saison beer, or bier de garde 1 tablespoon shallots, minced 2 tablespoons Champagne vinegar 1/2 tablespoon mustard, whole grain 2 tablespoons honey 1/2 lemon, juice only 1/2 Meyer lemon, minced, seeds removed 1 teaspoon parsley, minced 2 teaspoon salt Pinch of black pepper, ground Tiny pinch of cayenne

BRINGING THE OUTDOORS IN
MEET THE OWNERS
MOOSE CROSSING by Anne Pyburn Craig photos by Matt Petricone Moose Crossing is a work of creative retail passion, made up of hundreds of one-of-a-kind pieces by dozens of fine crafters. Items ranging from handworked bone knives and wooden toys to antler chandeliers and major pieces of furniture can be found in this Shokan store. It has got everything one could need to furnish a rustic cabin or add outdoorsy accents to any living space.
“PEOPLE WHO ARE DRAWN TO THE LIFESTYLE MOTIF WE OFFER COME
“People stop at the store expecting that they’ll be able to see everything in ten minutes,” said Dennis Sharp, Moose Crossing’s storeowner. “Forty-five

FROM HUNDREDS OF MILES.”
91
minutes later, they’re still exploring.” Sharp closed his men’s clothing store in Kingston Plaza when IBM left Kingston back in 1991, and he and his wife, Donna, took a break from retail to consider what they would most love to do. Seven years later, in 1998, Moose Crossing was born. “The nice thing is the way the community has embraced us in a very generous way,” Sharp said. “Locals are the heart of our business, but then, I had a regular from the Carolinas come in yesterday. She’s been coming in for ten years, every time she’s up visiting family. People who are drawn to the lifestyle motif we offer come from hundreds of miles.”
THE STORE’S THEME IS DRIVEN BY A BLEND OF SOUND BUSINESS SENSE AND A DEEP LOVE OF ALL THINGS WOODSY. “We have been campers at Lake George Islands for 30 years,” said Sharp. “We found several stores in the Adirondacks somewhat like this. The Catskills are glorious in their own right and actually originated that kind of getaway log cabin or timber-frame aesthetic. We thought the Catskills would be an ideal setting for this.”
92
93
Dennis and Donna travel to several states on buying expeditions, exercising exquisite taste by gathering things from the quirky to the classical. Plus, if you can imagine the perfect piece, but do not see it in the store, Sharp knows who can make it for you.
THE SHARPS HAVE AN EYE FOR THE UNUSUAL AND THE EXCELLENT... whether it is a piece made by a First Peoples weaver or an Adirondack woodcrafter. Twig, Mission, Adirondack, and Shaker furniture is featured in the store, along with upholstered furniture and some entirely unique pieces. “I have these Jack Daniels barrels that make great bistro tables,” he said. “I have a coffee table in the shape of a sleigh and a deerskin centerpiece adorned with antler and turquoise. It’s not stuff you’d find everywhere.”

MEET THE OWNERS
MEET THE OWNER:
David A. Walton HUDSON VALLEY GOLDSMITH, NEW PALTZ
DW: I grew up in the capital district and moved to New Paltz in 2001 to attend the metals program at SUNY New Paltz and never left. VV: How did you get into metalwork? DW: I was melting and banging on metal and fiddling with my mom's jewelry when I was a very little kid. I made
up my mind when I was ten to be a jeweler; I figured it was a way to make a living while being creative. No one in my family was in the jewelry business, but my parents supported my dream and drove me to all the jewelry stores in town, where I watched the jewelers work. VV: What were your previous jobs before opening Hudson Valley Goldsmith?
DW: I always knew I wanted to be a jeweler,
so I started working as a jewelry apprentice at 16 years old. After receiving my BFA in metals, I went on to make high-end jewelry for Tiffany & Co., then up to Saratoga to run a custom workshop as a high-end jeweler.
visitvortex.com
VV: Are you originally from the Hudson Valley area?
117
VV: When did you decide you wanted to open your own store? DW: Everyone in my family is self-employed, although none of them are in the jewelry industry. It was never a matter of “if” I'd open my own store, but rather, “when.” VV: How did you choose your location? DW: I always knew I wanted to be in New Paltz. The town has a great artistic vibe and a large number of residents and visitors who appreciate higher-end artistic creations. VV: Which year and month did your store officially open? DW: December 2013. VV: How did you prepare for launching this business? DW: I started the business many years before opening the store. My wife Sara and I traveled, attending juried art shows, selling at trunk shows, out of other jewelry stores, and out of my private studio. By the time we opened the store we had quite a nice loyal customer base. VV: How do you make it different from other custom jewelers? DW: We have five goldsmiths and jewelers working in-house, and we have zero sales people.
“ 118
When you visit, you’ll be talking with someone who makes the jewelry you’re seeing.
”
MEET THE OWNERS
We focus on custom, meaning that we will make you a beautiful piece of jewelry that no one else will ever have, And we make it all in front of you in an open studio. VV: How do you bring in new customers? DW: We still attend arts and crafts shows, we advertise, and most of all, we get word-of-mouth referrals from happy customers. VV: What do you like most about this business? DW: Being challenged to design something that’s far different than anything I've made before. VV: Any tough times? Exciting times? DW: Opening and running a store with a newborn was challenging. VV: How have your service offerings changed or grown since you opened?
VV: How do you make sure you grow and change with the times? DW: We've been able to grow organically, hiring more jewelers and building our inventory as needed. We've never overextended ourselves financially or creatively, which makes for a good experience for our jewelers and our customers.
visitvortex.com
DW: We've expanded from just me and Sara, when we first opened, to having four more jewelers. We also built a state-of-the-art workshop with more advanced equipment than any other jeweler in the greater Hudson Valley.
119
VV: What do you love most about what you do?
“
I love being challenged to design and make the impossible. Watching a customer's reaction, as a sketch becomes a prized family heirloom, still gives me goosebumps.
”
VV: What have you learned from your colleagues and competitors? DW: There is immense value in making custom jewelry in-house, which is something no other local jeweler does. VV: What is your philosophy about business, and how do you apply it to everyday operations? DW: We make a great product for a great price and provide amazing customer service. VV: How do you make every day of work enjoyable? DW: It's easy to have fun. We all get to express ourselves creatively, and it's very rewarding. VV: Any new plans for Hudson Valley Goldsmith this year? DW: We just moved to a much larger and more visible location at 71 Main Street in New Paltz. We’re very excited about it.

WINTERY WINDOW FASHIONS by Rochelle Riservato
With winter upon us, homeowners may notice that their window views lack the vibrant greenery and flowers of the warmer seasons, but this colder time of year blankets our world in white and gifts us with snow-filled vistas. These crisp Hudson Valley landscapes can be thoroughly enjoyed from the warmth of homes through windows with proper window treatments.
“Customization is a matter of blending the choices to your taste, needs, and interior design.
visitvortex.com
Both beauty and functionality can be had with unique window fashions that can help save money by insulating homes from winter chills. The energy saved provides sustainability, and as an added plus, window treatments can protect home furnishings from damaging UV rays and absorb sound to improve room acoustics.
125
Veronica Fannin, interior designer and sales manager at Marigold Home in Kingston, explained the reputation of one such window furnishing, known as the Hunter Douglas Duette Architella honeycomb shades. “They are the most popular choice as they are considered the company’s most efficient window coverings due to their versatility in operation and aesthetics,” she said. “The honeycomb design is a really good insulator.” Fannin said these shades come in a variety of fabrics, which are layered together to provide insulation. In addition, the various color choices can accent home décor, and the shades can be motorized and operated for convenience using a traditional remote or an iPhone, giving homeowners the ability to schedule sunrise and sunset views. Numerous fabric choices and other materials offer an array of coverage ranging from sheer to opaque. Sheer designs can diffuse harsh sunlight throughout a room, thus reducing the need for artificial lighting. Or, more opaque designs can provide a room-darkening effect for those who desire less light.

THE LURE OF THE HUDSON VALLEY How two Brooklynites made Ulster County their home photos by Matt Petricone
Whether they relocate for the environment, the people, or the food, former city dwellers fall in love with the Hudson Valley and stay here.
visitvortex.com
GRACE BONNEY AND JULIA TURSHEN MOVED TO ULSTER COUNTY LAST WINTER, AND THEY HAVE CALLED THE VALLEY “HOME” EVER SINCE.
131
VV: What drew you both to the area? GRACE: WE BOTH ARE SO IN LOVE WITH THE ACCESS TO NATURE, PEACE AND QUIET, AND SPACE—all the typical things that people who leave the city tend to gravitate towards. The thing we love the most about living here, though, is how so many people we meet have made the conscious choice to make a lifestyle change to be here.
JULIA:
It’s also great to be around people who have chosen to not make work 99 percent of their day by LIVING MORE SLOWLY AND SPENDING TIME WITH FRIENDS.
VV: How did you decide to relocate here? GRACE: I had spent the last six or seven years renting one particular house in Margaretville, staying there for a week each summer. I thought maybe, one day, it would be nice to buy a little house somewhere up there. So, when Julia and I got married we came up here, and we spent our honeymoon in Kerhonkson at our friends’ house nearby. Then, we came up to West Hurley for vacation last summer. That was our chance to get to know all the towns nearby. After that trip, we both, being people who dive into everything headfirst, started looking at houses. This was the fifth house we saw. We walked in, and we were silent because we just knew. It was fall, and it was magical and beautiful. We made an offer the next day, and we got it. 132
HOME
JULIA: We both wanted a place outside of the city. The plan wasn’t to move here immediately, but we very quickly fell in love with our house and the area; so, it was a surprisingly easy decision to move here full-time. The first time we saw the house, WE WALKED INTO THE KITCHEN AND I THOUGHT, “SOLD!” I DIDN’T NEED TO SEE THE REST OF IT—THE KITCHEN IS WHERE I SPEND THE MAJORITY OF MY TIME.
VV: What are the main differences between living here versus living in the city? GRACE:
I really appreciate that we can be homeowners here. This is a dream for us; we wouldn’t be able to do this in the city. We couldn’t have bought a studio in the city for what we paid for our house, and now when we want to go to the city we can be there in about two hours. I was born in Manhattan. I never had that “first time coming to New York” feeling because it was just all I knew. Now I can feel a bit like a tourist, and it’s kind of wonderful in a way. I feel like now, WHEN I GO INTO THE CITY, I TAKE ADVANTAGE OF IT IN A WAY THAT I NEVER DID BEFORE.
visitvortex.com
JULIA:
133
VV: What’s the design inspiration for your home? GRACE:
I’D SAY OUR DESIGN INSPIRATION COMES FROM A LOVE OF FAMILY AND HISTORY. Julia and I both love being surrounded by things that remind us of family, friends, and other special moments in our lives. Our design ideas are always lead by those cherished pieces, whether they’re a Blue Willow platter or an old farm table used at Julia’s family Passover meals.
JULIA: ONE OF THE FIRST THINGS THAT WE DID WHEN WE MOVED HERE WAS PUT UP THE WALLPAPER THAT GRACE HAS ALWAYS WANTED TO USE. She’s wanted to put it up for years, but when you rent apartment after apartment, you don’t want to invest in the place. We feel really fortunate to be able to invest in this home.
VV: What are some of your favorite things about living in the mid-Hudson Valley? JULIA:
I FEEL THAT I’M PART OF A COMMUNITY IN A WAY THAT I NEVER FELT BEFORE. People take time to stop and say “hello,” and that feels really nice. Even after being in the city for pretty much my whole life, and feeling so connected to it, I didn’t feel the roots there that I now feel here.
134
There’s a sense of permanence that doesn’t exist in the city. I think I got to an age where I WANTED TO KNOW PEOPLE WERE GOING TO BE HERE FOR A WHILE, and I wanted to be a part of a community that wouldn’t up and leave in a year to go somewhere else.
HOME
GRACE:
VV: How do you think your dogs feel about it? JULIA: Our dogs, Winky and Hope, are so much happier here. GRACE:
They’re both rescue dogs from Puerto Rico and are like our children. I’m on the board of The Sato Project, which works to rescue abandoned and abused dogs from Puerto Rico.
VV: How do you describe your work? JULIA: I’m a writer who specializes in cookbooks. GRACE:
VV: How is it running your business from here? GRACE: I used to spend so much time figuring out when I could get time off and planning little trips up here. Now, we can really just focus more
visitvortex.com
I’m a writer who focuses mainly on the creative community. I RUN A WEBSITE CALLED DESIGNSPONGE.COM THAT IS MOSTLY ABOUT INTERIOR DESIGN AND MAKERS. I’ve run it for the past 11 years, but as of the past two years, it’s shifted from being about the things people make to more about the people behind the things. It’s really nice to be directly part of a community here where so many people make things by hand.
135
on what we do. IT ALSO KIND-OF FEELS LIKE WE’RE PERMANENTLY ON VACATION.
JULIA:
We both work from home, so moving didn’t affect our work. If anything, IT MADE IT MUCH EASIER TO GET THINGS DONE SINCE WE’RE NOT DISTRACTED.
VV: How often do you go to the city now? JULIA: It varies. I’d say I probably, on average, go in once every other week for business or to see friends and family.
GRACE: I go in fits and spurts. In the winter I didn’t go in at all, and then when I was working on a book this summer I was in for days at a time, weeks in a row. I enjoyed that project, and I enjoyed getting to go to the city in a very different way. Then, I really loved getting on the bus and going home at the end of the day. You’re exhausted and get through all that traffic, and then you cross through New Jersey and hit the thruway. Then all the mountains start to become visible, and you can just breathe. THERE’S NO BETTER FEELING FOR ME THAN COMING HOME.
JULIA:
One thing that I think definitely drew us to this
home and this area was that it’s so accessible to New York. It didn’t mean we had to leave the city entirely. It can still be in our lives, but more on our terms. 136

PETS
TWO FRIENDS START FUND TO HELP
MAN’S BEST FRIEND by Joan MacDonald
Jill Shufeldt and Merle Borenstein, friends for over a decade, share a passion for the pet often called “man’s best friend.” In 2012, with a goal to help save the lives of needy pooches, the duo founded the Have A Heart Animal Welfare Fund, a 501c3 not-for-profit which primarily helps homeless pound dogs find forever-homes. Borenstein calls herself the mouthpiece of the fund, but she describes Shufeldt as the soldier in the trenches.
“Jill spends days in the woods searching for lost dogs, getting the calls at night”.
Borenstein, on the other hand, already had a career before deciding on her mission to help dogs, having run Kingston’s Armadillo Bar and Grill since 1987. While being a restaurateur might not directly involve interacting with pets, it was at the restaurant where she realized her mission.
visitvortex.com
For Shufeldt, helping animals is both a passion and a career choice. She has rescued dogs for more than 20 years, and she is currently the animal control officer for the towns of Esopus, New Paltz, Rochester, and Warwarsing.

142
“When we first moved up here and opened up the restaurant, I noticed a dog on a chain in the back,” she said. “We saw someone beating the dog with a garden hose. I was afraid of the dog until I got to know it, and one day I just decided to rescue it from the abuse.”
The fund is making a difference in several ways, like helping to reduce the euthanasia rates of dogs in local shelters by assisting with medical care and spaying and neutering.
“When I saw animal abuse with my own eyes,” Borenstein continued, “it changed everything for me. In everyone’s life something opens your eyes to your passion or what you are meant to do, how you’re supposed to make a difference in this world.”
“We find that spaying and neutering is the single most important issue in eliminating homeless animals and euthanasia,” said Borenstein.
“Although they try as hard as they can, they often don’t have enough of a budget,” she added. “We decided to privately raise money to help the animals in the pound.”
Once dogs receive the necessary care, they are introduced to prospective families through adoption events and by posting pictures on social media and sites like Petfinder. The fund also helps out by assisting pet owners who cannot afford to buy food for their dogs.
“Most people love their animals and are sad when they cannot afford to care for them,” said Borenstein. “You can provide a loving home, but maybe you are struggling because you lost your job and can just afford food for your children or yourself. We can help pay for food or that rabies vaccination.”
PETS
Unfortunately, pounds rarely have the budget to provide the necessary care that can make it easier for strays to find a new home, she said.
Additionally, the Have A Heart Animal Welfare Fund provides educational clinics, classes, and printed information on dog obedience, behavior, bite prevention, and basic care. The fund also works with Family of Woodstock, a human services agency, to help domestic abuse victims who need shelter for their pets. “We became aware that women who might be safer in a domestic violence shelter will not go into a shelter because they have to leave an animal and are afraid the animal will be hurt,” said Borenstein. “Now we can arrange to have the dog stay in a safe space, and when the person has a new home they can get their animal back.” Another reason dogs end up at shelters is that they were given as gifts, she said. “Never give a dog as a gift,” she said. “People have to choose their own pets when they are ready. A person needs to do a little research and find the dog that is going to touch their hearts.” Borenstein suggests, instead, helping someone search for a pet or giving them a donation to find one.
You can find more information about the fund at haveaheartanimalwelfare.org. Have A Heart Animal Welfare Program

“Put a leash in a box and say ‘we are now going to start our search for a rescue dog,’” Borenstein recommends.

DOING GOOD
ways to help
THIS HOLIDAY SEASON
by Charlene V. Martoni
The holidays have a way of inspiring the best in people, and whether it is helping to shovel a neighbor’s driveway or helping to take care of a friend’s dog, volunteering your time to make another person’s life better is really a noble thing—and it can be fun.
HERE ARE SOME SUGGESTIONS TO HELP YOU GET INTO THE HOLIDAY SPIRIT AND GET INVOLVED WITH YOUR COMMUNITY:
