I’ve been visiting the Watermark Grille for over 10 years and have NEVER had a bad thing to say about the food or service. I’m laughing at these reviews about the decor. It’s Naples, people, not South Beach of NYC. Who cares? It’s clean and fits the theme of the restaurant. I absolutely LOVE the saginaki. Not many American places have this tasty appetizer and what’s even more enjoyable than eating flaming hot cheese, is watching potential heart attack victims (aka other diners) grab their hearts as the flame ball is lit and “OPA!” is exclaimed. This appetizer is delicious and entertaining!

Cass Wyant is a self-taught artist who enjoys exploring the depths of the human condition and invites her viewers to confess peer into the human soul. Her works of art are confessions and contemplations of desire, intrigue, sensuality, fear, pain, freedom, and transformation. Her fascination and obsession with the human body are a common theme in her work. Raised in the Midwest, Cass tried her hand at custom artwork for family and friends as she pursued a degree in fine arts as a first generation college student. After acquiring an associate in fine arts degree, she switched gears to graphic design and earned a bachelor of science in computer graphics and interactive media from the University of Dubuque in Dubuque, Iowa. mur As if by fate, Cass was given an opportunity to do mural Wh work for a commercial property in Naples, Florida. What mon started as a temporary job became an exciting six month th adventure, and during that time, she fell in love with the p area. After returning home to the Midwest for a short period of time, she felt Naples tugging at her heart and knew there was nowhere she would rather be.

A

visit to Cuzco and the Sacred Valley had been an item on our ‘’bucket list’’for a long time. A previous attempt had been side-tracked, but this past November everything clicked to make our dream trip a reality. We soon discovered that the Inca culture, one of the richest in South America, is still very much alive in this region.

We arrived in Cuzco, the historic capital of the Inca Empire, a few days before heading off to the Inca trail and Machu Picchu. This stop-over is necessary for your body to acclimate to the high altitude, 3,400 meters above sea level. Headaches, dizziness or intestinal problems are easily relieved with a coca leaf or ‘’muña’’

tea. These natural remedies really work! Coca leaf tea is an analgesic (nothing more) and‘’muña’’ is a digestive herb. A few days walking around the city, marveling at the architecture, the quality of the food, the colors of the artesian and artistic production, and savoring the more than 100 varieties of pisco (a grape-based hard alcohol from South America), can be a fun vacation in itself. But our goal was to reach the Sacred Temple of Machu Picchu, walking on the trail. There are several ways one can do this: a four or five day adventure to complete the “Classic Inca Trail” (sleeping in tents along the way) or a two day trek from Km 104, sleeping in a hotel in the town of Aguas Calientes. We opted for the ‘’easier’’ trip. From Cuzco, we were taken to the train station at Ollantaytambo. We traveled by train for 1 hour and 30 minutes until we reached Km 104 - the start of the trail. We started to walk and climb up for about 4 hours to the Inca site of Wiñayhuayna (‘Forever Young’). I am not sure if I felt young when we got there, but the sites along the way were so beautiful that age or physical conditioning was not an issue along the trail. Stunning ruins, lush forest, crisp waterfalls, and beautiful mountains kept us entertained along the way.

After resting for lunch and exploring the site, we continued our walk for another 2 hours to reach the Inti Punku (‘Sun Gate’) from where we had our first panoramic view of Machu Picchu. We were stunned, mesmerized, hypnotized by the view! Even though we had seen hundreds of pictures and talked to dozens of people who had been there, no words can describe the feeling of seeing Machu Picchu from that distance, for the first time. Tears rolled down my face as I contemplated the majestic site. It was three o’clock in the afternoon, and the sun was shining on the stone walls, making them look like marble. Light emanated from the temple as if it was its source. The Inca emperors believed that the sun had founded their dynasty, and at that moment, I truly believed it had! It took us another hour to walk down to Machu Picchu and after a brief rest, we rode the bus down to Aguas Calientes to spend the night. Up early the next morning, we took one of the first buses to Machu Picchu to see the sunrise from the temple. It was well worth the effort, as the Inca City is quietest in the early morning and you are free to wander around before the crowds (an average of 4,000 people a day) arrive later in the day.

At 8:00 am, we were started to climb Wayna Picchu (‘’Young Peak’’), where entrance is restricted to 400 people a day. The Incas built a trail of steps up the side of the Wayna Picchu and built temples and terraces on its top. The peak rises 1,180 feet over Macchu Picchu and the awesome view from there gives you a totally different perspective of the temple. To reach the top, we climbed 1,700 steps! No, I did not count them! I was very concentrated on looking straight ahead to where I was going to land my foot and not looking at the steep cliff on the side of the mountain, but that is the official count according to the local guides. Coming down the mountain was even more of an adventure, as another set of visitors was starting their climb and the narrow steps became even narrower! A few more hours exploring the marvels of the Sacred Temple of Machu Picchu and we were ready to take the train back to Cuzco. This experience turned out to be one of our best trips ever! A UNESCO World Heritage Site since 1983 and designated one of the New Seven Wonders of the World in 2007, Machu Picchu is Peru’s most visited attraction and South America’s most famous ruins. If you have not been there yet, make sure to put it at the top of your list!

or those of you who grew up in the US, you know what the first days of the summer season signal – time to get outside and cook on the grill! For the majority of the US, the long winter days really make us yearn for the warm sunny days of summer – and the sounds and smells that juicy burger or sizzling steak cooking on the grill creates. Here at Shula’s Steak House Naples we know steak, so we decided to poll our corporate Chef Peter Farrand, for his tips on buying and grilling the perfect steak on your own home grill. Chef Farrand says to look for a cut of meat with the most amount of “marbling,” the small white flecks of fat dispersed throughout the lean red muscle of the meat. By choosing a piece like this, the flavor of the meat and tenderness are enhanced. It also adds to the chew-ability of the steak. How to prepare your steak offers a wide variety of options. Some stay with the traditional grilling with charcoal or gas, while others like the flavor that wood chips provide. Using a strong pair of 12” tongs, a flexible spatula, and a high-quality grill brush, round out a good group of tools for the at-home-griller. Keeping the lid on the grill is what Chef Farrand recommends. Starting with a good hot grill and keeping the lid on while cooking will keep the heat inside and provide the best grilling results. To keep food from sticking to your grill, Chef suggests cleaning and scraping the grill regularly with a good brush. Use of an oiled paper towel or cloth after cleaning will assist with keeping food from sticking as well as ensuring you pre-heat the grill prior to use. A tougher question was posted to Farrand that asked how to know when the food is done. This is a tough one for the average backyard griller, so he suggests using a meat thermometer inserted horizontally rather than vertically. This way you will avoid a false temp reading. Another option to test is how the item feels. With a few exceptions, the softer the item or the easier the “yield” the less cooked it is. A firm item with a good “bounce” back is more cooked. Good rule of thumb to most cooking is that you can always put food back on the grill to cook a little longer, but you can’t take it away once it has been overcooked.
