The Publisher Vance Leavy What a long strange trip it has been since our last issue of BI Athens two weeks ago. On the very day the issue was due to the printer, it was also the morning that we woke up to over eight inches of snow. Needless to say, the issue would be delayed. However, we had completed 90 percent of the pages, so rather than making snow men or skiing down University Drive like our neighbors did, we grinded it out because that was much easier than starting back up when the weather cleared. At the time, I thought it was the right decision and boy was it ever seeing how the conditions only got worse when all the snow turned to ice. I will give the guys at Walton Press a big pat on the back as they were able to print the issue on Wednesday, only missing our normal time by one day. But like everyone else in Athens, replacing pretty much an entire week of work certainly made producing this issue a challenge. But as anyone will tell you that has ever experienced the rush of producing a publication, some of the greatest performances occur when the chips are down. And without question, our entire staff overcame the obstacles of old man winter and we have pulled off an excellent issue. From capturing folks having a big time in the snow to covering UGA teams excelling at the highest level, this issue of BI Athens covers the gamut. And that’s our number one vision for BI Athens. Because of the diversity of the Classic City, we are challenged to produce a unique publication that represents all the moxie of this town. For the music enthusiasts, we are delighted to have created a forum for Daniel Peiken’s passion of documenting the zillions of live shows that occur annually in Athens. On page 6, Daniel looks ahead at what’s coming to town. And as he notes, following your favorite UGA athletic team and watching good live music is very doable because most of the time the sports are over by the time the bands take the stage. And speaking of UGA sports, just in case you’re not up on things, both of our basketball teams are kicking butt right now (coverage on pages 14 and 16). Kudos has to go to Mark Fox and Andy Landers for having their teams’ competing every night they play. I encourage you to get to a game whenever you can because the enthusiasm at the renovated Stegeman Coliseum is contagious. And if you’re too busy to catch the game live, then listen to Scott Howard or Jeff Dantzler on the radio. I assure you, you will be on the edge of your sofa. Jay Clark’s Gym Dawgs (page 8) are finding their form despite a ton of injuries and are ranked number three in the country. Like going to a basketball game, the coliseum is electric every time our girls have a meet there. If I’m boring with sports talk, don’t worry my wife, Cheri, and our interns have plenty for you in this issue that have nothing to do with a ball. Are you foodie? Then turn to page 20 and see what local designer, Lisa Fiscus created for an awesome meal. I can attest to this because I devoured my leftover plate only a few hours ago. Are you into fashion or dance? Then check out the hot looks for spring on page 12 or see if you know any of the brave, local celebrities who will strut their stuff on March 6 at the 4th Annual Dancing with the Stars (page 18). My allotted space has come to a close, but it’s fitting that I get to end with a huge Happy 90th Birthday (January 25) to the ultimate Athenian and Bulldog, Dan Magill. Much of the growth and success of both Athens and UGA can be attributed to the vision of this incredible man. Please take the time to read Jeff Dantzler’s piece on Coach Magill on page 4. Much like the man, JD’s piece is a classic. And please go to bulldawgillustrated.com to listen to my interview with Coach Magill. His storytelling is unrivaled, but his humbleness is what I marvel the most. Even despite my trying to get him to talk about himself, he never took the bait, instead choosing to talk about the great accomplishments of someone he was lucky enough to have met in his legendary 90 years on this earth. The EDITOR Ryan Scates As I sit down to write the editor’s note for this fine second issue of BI Athens, I can’t help but be distracted by the large, frozen-over pile of snow that stubbornly refuses to melt in my backyard. You have to love the seasons of Athens. It seems like just yesterday I was out on the Woodruff Practice Fields sweating like a sinner in church, trying to get the best shots possible as the football team grinded through those voluntary summer workouts. Fast-forward through a Fall season jam packed with football and a healthy dose of law school, and now I find myself still trying to thaw out from one of the most severe winter weather events in Athens history. This being my fifth year in the Classic City, I have seen my fair share of seasonal transitions. From snow days spent sledding down Baxter Hill to spring Saturdays passed by on those glorious rocking chairs that line Milledge Avenue, every type of weather has it’s accompanying Athens rituals. But now being one full semester removed from my undergrad days, I am starting to recognize a new kind of “change in seasons” that seems to be unique to Athens. Allow me to explain. Walking down Clayton Street Friday night, I saw my old friend Mike walking with a pretty girl on his arm. The couple was dressed to the nines, probably headed to a formal somewhere downtown, another staple of the second semester. Only as I approached Mike to say “hey”, I realized it wasn’t Mike at all. He was just some Mike doppelganger headed on a date with a disproportionately pretty girl. What was I thinking, anyway? Mike has long since graduated and moved to Atlanta. Standing in the line to enter “9d’s”, a bar that plays exclusively, you guessed it, music from the 90s, the sobering realization dawned on me: My little slice of Athens, my four years as an undergrad that were so different yet just the same as everyone’s before me, has passed. What was Coach Felton is now Coach Fox, what was the “SLC” is now the “MLC”, what was “8e’s” is now “9d’s”, and what was my old bud Mike is now just another goober in a rented tux. Of course I realize the list of “what was” goes on and on, and has been doing so for over 225 years in this town. Establishments like Poss’, the 5th Quarter and even what will be referred to as the “old” Georgia Theatre take their rightful place in our collective memories alongside countless guys like my friend Mike in Athens lore. Forgive my nostalgic rambling; my point is that we are working hard here at BI Athens to highlight the best in all of Athens’ seasons. Be sure to catch our compilation of photos from the snow days, Chelsea Lipocky’s profiles of Lady Dawg Porsha Phillips and singer/songwriter David Richt, and the latest from what is now three-straight sellouts from the red-hot Hoop Dawgs. 2011 has already delivered a bang-up winter in Athens, now is the time to get out there and soak up every minute of it. Happy 90th to the greatest ... Dan Magill

Happy 90th Birthday to the greatest Georgia Bulldog ever. Dan Magill, the epitome of the heart, soul and spirit of Georgia, will be honored on his big day with a grand gathering at the Classic Center in Athens, with his family, friends and numerous admirers on hand to celebrate the brilliant, beloved, legendary icon’s remarkable life and accomplishments. From his first Georgia football game, as an eight year old clad in his youth football uniform for the opening of Sanford Stadium, the Bulldogs 15-0 victory over Yale in 1929, through the various red and black athletic annals of today, Dan Magill has savored every minute of this incredible relationship with his beloved alma mater and her people. Coach Magill, still going strong, whether its playing tennis, over-seeing the Collegiate Tennis Hall of Fame, or working on his impeccably manicured yard and muscadine vineyard, has inspired hordes while touching countless lives. There are now 40 full time employees at the UGA Athletic Association who divide up the duties that Magill used to singlehandedly perform. Molding Georgia into the mightiest tennis program in the Southeastern Conference and into a national powerhouse, Magill retired in 1988 as the winningest coach in collegiate history, highlighted by national championships in 1985 and 1987, and a record 13 outdoor S.EC. titles. His greatest impact on collegiate tennis came though as the father of the NCAA team championships. Athens became the regular site of the NCAA Championships in 1977 and the dual match team tournament format was born. Its popularity and the

tremendous success of the event in Athens made for a perfect marriage, while further enhancing the scope and notoriety of America’s greatest college town. Magill’s greatest impact on Georgia’s overall athletics program came as the founder of the Georgia Bulldog Clubs – the grass-roots organization formed in all of the Peach State’s 159 counties – and as the nation’s premier trail-blazing sports information director. It was Magill who largely held Georgia together during the dark times of the 1950s and early ‘60s. With the exception of the 1959 SEC Championship season on the gridiron, there was very little to cheer about following the glory days of the 1940s (three SEC titles, a share of two national championships and appearances in four major bowls) and the arrival of Vince Dooley as the Bulldogs head coach in 1964. His skills as an SID were unparalleled (matched only, like in tennis by his successor). Georgia’s statistical records dating back to his first season at the position in 1949 are still the most accurate of the day, and other schools often call on the Bulldogs office when doing their own research. At the “coronation party” for the 1959 SEC champions, Magill had a phone hookup from the gala sent to every Bulldog club, where Georgia alumni gathered to listen and join the celebration over intercoms. It was the largest phone hookup at the time by “the American Telephone and Telegraph Company.” One of the traits that has made Magill so otherworldly is that a man of such greatness has always been about helping others and setting the table for Georgia.
Nowhere is this more evident than with the incredible success of his family and former players. And when it comes to passing the torch, he pulled a double “Dimaggio to Mantle,” the greatest succession of icons in professional sports history. Manuel Diaz, star All-American from the 1970’s, took over the tennis program as Georgia’s coach in 1989 and has established himself as the country’s best coach, while keeping the family together and stronger than ever. Two head coaches in nearly 60 years! Unheard of. From 1985-2008, Georgia appeared in 13 NCAA finals, winning six national championships while capturing more than double the number of SEC titles than the rest of the schools in the league combined. His successor as Sports Information Director is Hall of Famer Claude Felton, the best and most respected in the business. Magill has authored three books plus several collections of his most memorable columns. He could have been a national sensation as a columnist and commentator. Magill could have been for football and tennis what the great Dan Jenkins has been to football and golf. Like Jenkins, he has the wit, amazing writing ability and brilliance. But Georgia, his family, his players, his co-workers and his legion of admirers got Magill – and we still have him. I can’t wait until the party on Friday night, and then the one 10 years from now when we celebrate Number 100! There’s never been anyone like him and there never will be. Like so many, I love him very much. Dan Magill, the greatest Georgia Bulldog ever and a true national treasure.
Snow Day (s) in Athens rock
Chelsea Swanhart If you’ve ever been a student at UGA, you know that there is no better feeling than seeing an “Official UGA Announcement” email in your inbox when the weather is bad. So, on Sunday night, the night before our first day of the new spring semester, students all over the Classic City were jumping for joy. The email actually said “The University of Georgia main campus at Athens will be closed on Monday, January 10. Classes will not be held and offices will be closed.” But University students read, “Snow day! Do I have enough Ramen noodles to last me? What can I use for a sled? I wonder if that hill on East Broad Street is steep enough.” Personally, I found it tough to fall asleep on Sunday night anticipating the 6 inches of snow promised to us overnight. Needless to say on Monday morning the weatherman did not disappoint.
Athens was entirely covered with snow and looked completely impossible for travel, well at least to class that is. It’s funny how students manage to find ways to get around Athens through the snow and ice when it’s for friends, food, drinks and makeshift sleds. The streets were quickly crowded with girls in matching rain boots from various downtown shops and boys in ridiculous snow caps all with a common goal: not to waste a second of our very rare snow day. My roommates and I trekked to our friend’s house down the road for our snow day. We had a few snow ball fights on the way, stopped to test out a mattress our neighbors had transformed into a sled, and even saw a husky pulling a boy through the snow. Once we reached our destination, our friends taught us how to ride their 4-wheelers. Who says snow days aren’t for learning?
For the following 2 days, we continued to play in the snow, watched movies and enjoyed our time off with each other. Downtown was packed every single night. We joked that it was the best first three days of school ever. But all good things must come to an end. The snow eventually melted and classes ultimately resumed. The missed days will be made up and “syllabus week,” as the students like to call it, was nonexistent; but the snow days were worth it. It wasn’t about the snow or the 3 days of cancelled classes because Athenians love this town whether it’s covered in snow or not. It was about enjoying time with friends and soaking in all that Athens has to offer, which is exactly what the bulldawg nation has always been about. Here’s to a new semester!

Night one is usually an early night for them but at 2:30 a.m. we were still rocking, and that wasn’t the latest night. The Truckers mopped the 40 Watt Club’s floor with Rock last week. you like hard, loud and screamy. It's the AC's last show. 2/10 Bloodkin @ 40 Watt Club (www.40Watt.com) Their 2009 album titled 'Baby They Told Us We Would Rise Again' couldn't have a more true name. They sing songs about being at rock bottom written while they were actually there, also about art, nature, broccoli and Georgia is written all over them. Some songs are dusty, whiskey-driven, dirt road-takin' songs, some are about love, history, heritage and heartache. Daniel Hutchins and Eric Carter have been playing together since they were children. They moved to Athens over 23 years ago and formed Bloodkin. They have been tearing it up ever since. Daniel is a word slinger, he throws them at you like a whip, over and over again. Every song is a novel. Widespread panic has been playing their song, 'Can't Get High' for decades. They've been raising hell for years. Hutchins starts the new album with 'Everything they say about me is true." What more do you need to know? Oh, Widespread Panic is playing earlier that night around the corner. 2/10 & 2/11 Widespread Panic @ the Classic Center. Both of these shows sold out in seconds so if you want to see some great photos you've got to get me a ticket. Miracle me please. Come to Athens for the football and sports but stay for the Rock’N’Roll. The games rarely go past 11:PM and that’s when the live music usually starts. Gym dawgs Clark’s girls return to form with high scoring home win By Ryan Scates After going through some growing pains in 2010, this year’s Georgia Gymnastics is looking to return to championship form. Led by second year Head Coach Jay Clark, the Gym Dogs have risen to a #5 national ranking and have posted the second-highest score in the country this season to date, a 196.725 that came in Athens against West Virginia. Coming off of a snow-day-extended winter break, The Gym Dogs just wrapped up a three game home stand that was crammed into a seven day period. The Gym Dogs opened the 2011 home season against rival No. 3 Utah, who was coming off a dual-meet victory over defending national champion UCLA. In that contest, Georgia saw it’s 34-straight regular season home winning streak vanish as the Utes pulled out a razor-thin victory by one-tenth of a point. However, two days later the Gym Dogs hosted West Virginia at historic Stegeman Coliseum and improved their score by nearly a full point. The Dawgs routed West Virginia 196.725-192.125 in a meet that saw saw seven scores of 9.9 or above, three of which belonged to senior Cassidy McComb who won the all-around with a 39.525. The Las Vegas native spent time after the meet to talk about the mental side of working as a team in a sport that relies so much on individual effort. “We had little mistakes here and there, but the positive thing was that we didn’t react to them. The next person had the next person’s back, and it was a team effort collectively.” McComb explained, “Today was about finishing what we started…When we all have our heads on together it really is magical what happens.” The Gym Dogs wrapped up their early season homestand against Auburn the following Saturday. Watkinsville native and UGA early enrollee freshman Lindsey Cheek shined in her first ever allaround competition, tying the nation’s highest score to date at 39.550. In addition to winning the all-around, “sweet-cheeks”, as her teammates call her, scored at 9.9 or above on vault and bars and won three of the four event titles. “She’s surprising even me to some degree,” said Jay Clark regarding the Watkinsville wonder. “We knew we were getting a competitor, and I knew when we got her she was going to be a star at some point…She’s getting cleaner. She’s a competitor, and I’m just glad she’s on our team. Tonight she really stepped up.” Cheek’s performance can be seen in its entirety when the Auburn meet is aired on ESPNU on Jan. 27 at 2:30 p.m. Georgia posted the third highest score in the nation to date against Auburn, and only Florida has posted a higher score than the Gym Dogs in 2011. Next the gymnastics team meets Kentucky on January 28th before traveling to Arkansas and then returning to Athens for a showdown with traditional rival and top-ranked Florida on February 12. photos by Ryan Scates

Spring collections help get rid of the winter doldrums By Alana Carithers As Athenians look to leave snowy January behind, we can finally see the promise of something I personally love- spring fashions. Chelsea’s player profile - Porsha Phillips By Chelsea Lipocky The Lady Bulldawgs are back in the rankings. With two SEC wins last week against ranked teams, the Lady Dawgs are extending their winning streak and making their way to the top. One big reason for their success this season is Porsha Phillips. I caught up with the senior from Stone Mountain before they made their road trip to Alabama. Aside from basketball, what would your ideal job be? My major is early childhood and family development, so probably a daycare, but I love modeling and fashion, so I would try and get into modeling too. You guys play a lot of games and travel many days during the season. How do you keep up with school and playing a collegiate sport? Well, on away trips we have tutoring sessions, so it’s not that hard to really focus on school because we take our books with us when we travel. So you came here from LSU. What would you say is the biggest difference between playing there versus playing here at UGA? I feel like I have a lot more support here at UGA. At LSU, my parents were eight hours away, so they could hardly be there. I think I have more support from the fans and my family
members here as well. They all encourage me to do well on the court and motivate me as well.

So was it difficult transferring here and being the new girl? It was an easy transition. I knew some of girls already, so it wasn’t that hard.
It is your senior year. Does that make you more nervous or excited? I don’t really think of it as, ‘Oh this is my last year, so I have to do this or that,’ I just go with the flow and try to do my best every game.
It is great that you get to be closer to your family here. UGA tried to recruit both of your brothers for baseball, but they decided to go into the professional league after high school. It sounds like your whole family is pretty athletic. What was it like growing up? My parents were very dedicated to sports. We used to practice every single day, non-stop. It developed a really great work ethic in us, and I think it made a big difference in us now. So did your parents play sports in college
What is your favorite sport to watch, other than basketball? Probably baseball, because my brothers played. What is your biggest pet peeve? My biggest pet peeve is…dirty nails. I hate dirty nails, and I love to get my nails done all the time. They aren’t pretty right now….but I usually have them done with different colors and stuff.

Hoop Dawgs Mark Fox proves that if you win they will come By Ryan Scates When UGA unveiled the new plans for renovating historic Stegeman Coliseum in 2008, it created plenty of buzz around campus. The soaring glass panels, larger than life graphics, expanded concessions and multi-million dollar price tag had everyone excited to check out what had become one of the more antiquated venues in SEC Sports. But even the excitement surrounding an eight-figure renovation has fallen to the wayside this season as Mark Fox and the Men’s Basketball team sits at 144, riding a wave of momentum heading into a crucial SEC stretch. Coming into the season, Georgia’s biggest hurdle to earning an NCAA bid was clear: the team had to learn to win on the road in the SEC. While the Dawgs’ dropped a tough game to Vanderbilt in Nashville 66-73 that cost them their #24 ranking, Georgia rebounded later that week in Oxford. Against Ole Miss, all five Georgia starters scored in the double digits for their first time in eight seasons en route to a 98-76 win. 98 points was the most points scored by a Georgia team since 1995, and the 22 point margin of victory was Georgia’s largest since 2007. The Hoop Dawgs have put on a scoring clinic in 2011, scoring 80 or more points on six different occasions this season. Coach Fox explained after the Mississippi State game, “I think we are a pretty efficient offensive team. I think everyone on our starting five has had at least 20 points or more at some point this season. One of the things that was important to us is to have balance. [Trey] Thompkins and [Jeremy] Price needed to make some shots to start league play because they have been so surrounded…January has opened up some three point shooting and fortunately for us, those kids have made some.” Thanks to some suspect officiating in the closing moments of the Tennessee game, the Hoop Dawgs claim a 3-2 conference record. The Dawgs are one-half game behind division leader Florida heading into a two week stretch where Georgia hosts Florida on Tuesday, January 25th before heading on the road for contests with Kentucky and Arkansas on January 29th and February 5th, respectively. The basketball team returns to Athens to host Auburn and Xavier the week of February 5th. Florida is the preseason media favorite to win the 2010-2011 SEC Title. While Georgia is still very much in the thick of the SEC race, taking a loss to division-rival Tennessee at home carried a sting that will not soon be forgotten in Athens. According to UGA, Tennessee now leads the all-time series between the SEC rivals by a 91-52 count, but Georgia still holds a 34-33 edge at home. The Dawgs bounced back from the Tennessee loss with an 86-64 trouncing of Mississippi State where Georgia never trailed. Walking out of the arena on Saturday after the win over Miss. State, I couldn’t help but laugh overhearing some undergrads recapping the game. “Did they paint the halls in here or something?” one student asked. I can’t remember,” replied another, “but did you see that guy with the Mark Fox-head poster?!” While the renovated Stegeman Coliseum is a feature in and of itself, Mark Fox is showing that the most effective way to create a buzz in Athens can be summed up in one word: Win.

David Richt and friends record their first CD By Chelsea Lipocky When you think of the name Richt, â&#x20AC;&#x2DC;singer-songwriterâ&#x20AC;&#x2122; might not be the first thing that comes to mind, unless you are thinking about David Richt. David is a sophomore at Prince Avenue. It is there he connected with Daniel Howell, David Stiles, Peyton Howell, Alec Parrish and Annabeth Pruett in their schoolâ&#x20AC;&#x2122;s praise band. What started out as a Christmas gift for Coach Richt evolved into a unique project for these six kids. I was able to talk to half the group about recording their first CD, writing their own song and why they think it is important. Where did this whole thing come from?
Daniel Howell: Well, we all were in the praise band at school, and Mrs. Katharyn (Richt) had the idea to make a Christmas gift for Coach Richt. Making a CD is pretty cool, so I wasnâ&#x20AC;&#x2122;t going to turn that down. How long have you been playing/singing? David Richt: Iâ&#x20AC;&#x2122;ve played the piano since I was in 4th grade, and I have been in the praise band and the praise team at church for a few years. My greatgrandmaâ&#x20AC;&#x2122;s piano is at our house. I started playing on it and then my mom got me lessons. David Stiles: I started playing piano when I was about five, but Iâ&#x20AC;&#x2122;ve been playing the guitar for four years now. DH: Iâ&#x20AC;&#x2122;ve been playing guitar since 5th grade. David Richt wrote one of the songs, â&#x20AC;&#x153;Thinking About You,â&#x20AC;? on the CD. David, have you written anything else? DR: I have, but I never think they are good
enough, so I throw a lot of them away. When I was in 4th grade I wrote one, but it is way too high for me now, so Iâ&#x20AC;&#x2122;ll have to give it to someone else to sing. Writing is a lot of fun. So what was the inspiration for the song? DR: I want to show everybody that God is number one in my life, and thatâ&#x20AC;&#x2122;s how it is with all of us playing. Most of all we did it for my dad. Weâ&#x20AC;&#x2122;ll probably do a lot more, but next time I want a lot more original songs on there. What would be the best thing to happen with this project? DR: To pay for royalties and to get all of these songs on the air. DH: It would be cool to make more CDs and do some bigger things in the future. More gigs! Is this something you want to pursue in your future? DR: Yes, my dream job would be a recording artist at a contemporary Christian label. DS: I want to be a worship minister, to be able to worship for other people. I am looking forward to seeing the other doors God opens up for me. David Richt and the rest of the group are excited to see what happens next, but for right now, they are just enjoying playing music for worship. Several well-known figures in the Athens community have joined forces with Project Safe to fight for a cause. These well-known faces have been assigned dance instructors who have done their best to turn these doctors, entrepreneurs, politicians and business professionals into true dancing superstars. I was a gymnast for 20 years and had a ton of dance training built in over the years of gymnastics. Also I actu-
ally danced with the UGA Youth Choreographers group while in school here as well as performed with Dr. Mark Wheeler in a Jazz performance piece for the UGA dance company and took many dance major level ballet classes while training and competing gymnastics for UGA. Do you have a favorite type of dance you have learned? I enjoyed all of my ballet training, however I am a huge disco fan/nerd! Love to watch great contemporary and hip/hop. Do you watch Dancing with the Stars? My favorite dance show is So You Think You Can Dance! Other than the fact that I am a Jazzercise addict, my dance experience is limited. My husband and I took ballroom dance from UGA Continuing Ed and had mixed results. (He was better than me!) A few years later, we enrolled in a shag class at Continuing Ed, which did not go well. On a lighter note, I did one year of ballet when I was five years old. I don’t remember it well, but guess that my mother did not see a need to continue. Do you have a favorite type of dance you have learned so far? We have only learned one dance, but I have learned it quite well, I think. Do you have a celebrity crush you would pick to dance with? Aged pecorino with raw sprouts, celery & prosciutto From one of Lisa’s favorite cookbooks by Skye Gyngell ‘My Favourite Ingredients’ This salad is all about combining ingredients with good compatible textiles and flavours. It has a lovely clean taste. Serve on its own as a starter or with some peasant-style bread for a lunch. Serves 4 6 Brussels sprouts 4-6 ounces Parmesan 2-3 celery sticks, washed 20 shelled hazelnuts ½ lemon sea salt and fresh ground black pepper ¼ cup extra virgin olive oil 8-12 slices of prosciutto, Lisa uses prosciutto as her protein instead of speck in Gyngell’s recipe small handful of parsley (leaves only) from Lisa’s garden, very finely chopped Lisa added arugula to the recipe from outside growing in her garden as well
Wash the Brussels sprouts and pat dry. Using a small sharp knife, slice them as finely as you possibly can and place in a bowl. Slice the Parmesan into fine shards, varying the thickness slightly to add interest. Add to the Brussels sprouts. Peel the celery lightly with a swivel vegetable peeler to remove any stringy bits, then cut into shorter lengths and add to the bowl. Scatter the hazelnuts on a baking tray and warm in the oven for 10 minutes until the nuts are lightly coloured and release their flavour. Let cool slightly, then rub in a cloth to remove the skins. Chop the nuts roughly and set aside. Squeeze the lemon juice over the salad, season with salt and pepper to taste and drizzle over three-quarters of the extra virgin olive oil. Toss together lightly with your fingers. Place a slice of prosciutto on each plate and arrange half of the salad over it. Drape another slice of prosciutto on top, then arrange the rest of the salad on the top, finishing with a couple of slices of celery and a final slice of Parmesan. Lisa chopped her prosciutto and celery which I prefer and it looked wonderful. Drizzle with the rest of the olive oil and scatter over the hazelnuts. Finish with a sprinkling of chopped parsley.
