Preheat the oven to 220 degrees celsius. On a large rimmed baking sheet, toss carrots and potato with garlic cloves in 2 tbsp olive oil, ½ tsp salt, chilli flakes and cumin. Roast for 45 minutes or until caramelised and tender.
In a large pot, add roasted vegetables, Fennel and water. Bring to a boil.

Stir in the toothpick swirls of Thyme, add to taste.
Puree in a blender or with an immersion blender.
Stir in orange juice and remaining ½ tsp salt.
