In the science of pairing chocolate with wine and cheese, here’s my rule: there is no science. Like all great experimentations, some combinations work and some do not. Some pairings can be predicted, some surprise me. The act of pairing is part science, part art and a lot of fun. The applications are endless. Here are a few pairings that we have found to be exquisite and perfect for sharing at holiday gatherings.
