What would the holidays be like if we didn't have that perfect dessert? Grandma's favorite sweet potato pie or your favorite coconut cake or that peach cobbler recipe handed down from generation to generation. I know for me I would feel jipped! During this time a well placed chocolate cake placed in the middle of the table right after the main course was swept away always brought a smile to my face. Not only that it was the reward given to us after we promised to eat all of our food. In this issue Regina and I have listed several blackowned restaurants in Atlanta. Your homework is to check if they make your "must have list". From cakes, ice cream, cookies and pies to your vegan bakeries, you will not be disappointed. Again, if you’re reading this on a smartphone, I encourage you to experience the full spectrum on your desktop. Some time ago I came across her page on IG page and at the time she was creating specialty items for little girls. I quickly sent her a message asking how much then proceeded to repost her items on my timeline.

I quickly found out that she was

the wife of a past client of mine her in Atlanta and although I never had the opportunity to support her by purchasing an item I continued to follow her, especially when she changed from designing to baking. A foodies Dream right?? My blessing came when she hit me up and said, "Hey sis thank you so much. I'd love to gift you some cupcakes." As a foodie, a true foodie, your only response is, "When do you want to meet", however, I composed myself with a, "thank you". Not only can this sista bake, she is just as beautiful on the inside as she is on the outside. So when we decided to put together our second Foodie Guide that featured black owned dessert shops in Atlanta, guess who I called; Erica Hunter, owner and baker of Sweet Lois Confections. I had the pleasure of picking the brain of Erica to find out what drives her to do what she does and also sneak in an order for a specialty cake.

WHAT/WHO INSPIRED YOU TO BECOME A FULL TIME BAKER? My interest and love for baking came by watching my grandmother bake for church every Saturday. Over the years I would bake and cook for family & friends, and for every holiday, but had never really decorated a cake. I hosted a vision board party and decided to make and decorate a cake, my friends enjoyed it and pushed me to seriously give it a shot. My friend asked me to make her daughters birthday cake and hesitantly I obliged. I was soooo afraid. I made it and it was a hit. I began buying supplies and teaching myself how to decorate cakes, practicing recipes, and giving it 100% dedication. The time came when I had to create an actual business, so while thinking of a name, I decided to go with Sweet Lois, to honor my late grandmother, who started my love for baking. Her name was Delores, but she was affectionately called “Lois” by my entire family and she was the sweetest, most kind woman ever. She’s in Heaven and I’m hoping I’ve made her proud.

"PERFECT FOR THE HOLIDAYS"

INGRIDENTS 2 cups sugar 4 ounces unsweetened chocolate 1 stick unsalted butter, plus more for greasing the pan 2 cups all-purpose flour, plus more for dusting the pan 2 teaspoons baking soda 1 teaspoon baking powder 1 teaspoon salt 1 cup milk 1 teaspoon cider vinegar

PREPARATION Preheat the oven to 375 degrees and place a baking sheet on the lowest rack to catch any drips as the cake bakes on the middle rack. In a 2- to 3-quart pot, mix together the sugar, unsweetened chocolate, butter and 1 cup of water. Place over medium heat and stir occasionally until all of the ingredients are melted and blended. Remove from the heat and let cool slightly.

½ cups Nestle's semisweet-chocolate chips 1 ½ cups sour cream, at room temperature 1

Meanwhile, sift together the flour, baking soda, baking powder and salt. In a small bowl, stir together the milk and vinegar. Grease and flour a 9-inch tube pan (Tip: Be meticulous, and really work the butter and flour into the crevices of the pan. This is a moist cake, so it really needs a well-prepared pan to keep it from sticking). When the chocolate in the pot has cooled a bit, whisk in the milk mixture and eggs. In several additions, and without overmixing, whisk in the dry ingredients. When the mixture is smooth, add the vanilla and whisk once or twice to blend. Pour the batter into the tube pan and bake on the middle rack until a skewer inserted in the center comes out clean, about 30 to 35 minutes. Let the cake cool for 10 minutes, then remove from the pan and cool on a rack. (This can be tricky -- if someone is around to help, enlist him.) Let cool completely. Meanwhile, melt the chocolate chips in a double boiler, then let cool to room temperature. Stir in the sour cream, 1/4 cup at a time, until the mixture is smooth.

Cake: 1.25 cups all purpose flour 3/4 cup sugar 1 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 1 tsp cinnamon 1/2 tsp nutmeg 1/2 cup sweet potato, mashed - about 1 potato, roasted 2/3 cup unsweetened cashew milk, or nondairy milk of choice 1/3 cup canola oil 1 tsp vanilla extract Frosting: 1/2 cup margarine 3 cups powdered sugar 1 tsp vanilla extract 1 tbsp + 1 tsp nondairy milk

1. Preheat oven to 350 degrees. Grease a 9 inch square baking dish. Line the bottom with parchment paper. Grease again. 2. In a medium bowl, combine flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside. 3. In a large bowl, combine mashed sweet potato, cashew milk, oil and vanilla extract. Fold dry ingredients into wet and mix until most lumps are eliminated. 4. Spread into prepared pan. 5. Bake for 28-30 minutes or until a toothpick inserted in the center comes out clean. Allow pan to cool on wire rack. 6. Once cool, turn out of pan. Cut the square into two rectangles, right in half. Then split each half into horizontal layers so you have four thin rectangles of similar size. Frosting : Beat margarine. Add powdered sugar, beat. Add vanilla extract, beat. Add milk one tsp at a time until frosting forms. Assembly: Spread sliced rectangles with frosting, stacking layers as you go. When serving, slice cake vertically.
