From the Foodie By definition a chef is a trained professional cook and tradesman who is proficient in all aspects of food preparation, often focusing on a particular cuisine. The word "chef" is derived from the term chef de cuisine, the director or head of a kitchen. What is missing is that a chef is an artist, a scientist if you wish. This person has the capability of pairing different ingredients and blending them to create a perfect dish. That's art! In this issue, we gathered a few artists of the kitchen to give their take on what they do to entice our pallets. Whether it is in a restaurant or by a private chef, we feast on visuals on the plate, and in the restaurant space, we listen to the sound of the plates and people moving in and out of the kitchen. Ultimately, we entrust our tastebuds to the chef as he is responsible for what we feel, which is the comfort that comes from the finished product. We smell the sweet perfume of the perfectly prepared meals before our dish has even left the kitchen. Then we taste. We taste the sour against the sweet, the salt against the fat, and we savor it....thank you Chef... As you venture into this issue we like to encourage you to experience the full spectrum on your desktop. Born and raised in Mobile, Alabama, Chef JRob brings a Cajun kick to the Atlanta culinary scene. He is an alumnus of Auburn University, with a Bachelor of Science in Biomedical Sciences and of Mercer University, with a Masters of Public Health. His vibrant dishes, energetic cooking performance and southern hospitality will certainly change your outlook on the art of cooking. In 2017, Chef JRob participated in Food Network’s Iron Chef Showdown and hosted a segment on healthy eating during the holidays on WTVM News.

What moment in your life made you say, “Yes! I’m going to be that chef!” I began cooking in my dorm my freshman year of undergrad and slowly but surely I began to perfect my craft. It wasn't until I moved to Atlanta for graduate school that I realize how much of a gift I had in the kitchen and how it could impact other's lives and health. Through my studies in Public Health, I realized I could mend both an educational tool and my culinary endeavors into a career, performing cooking demonstrations on healthy eating to public crowds and local schools; meal prepping for multiple clients to help them achieve their fitness goals, or simply just changing lives one taste bud at a time.

Becoming Steve Harvey's Personal chef. If you could share, no secrets, but a technique that would help the “you bring paper goods to the cookout” person what would it be? Don't overthink it. Grab your favorite meat And use it as a topping for some fresh bruschetta with a queso drizzle! EASY and it's flavorful. What are your 5 must-haves for being a great chef? Time Management, "A Great Eye", Cook Technique, A passion for what you do, Charisma Has Covid helped or hindered you and how so? It has helped bring more awareness to my brand and the ways I've navigated around COVID. Initially, Covid took a finical hit on my business but I was able to figure out ways to make it back. What was the last milestone in your career and what is the next goal? The last milestone was finishing and publishing my cookbook. My next goal is to successfully release my Master Academy Cooking series.

What moment in your life made you say, “Yes! I’m going to be that chef!”

Taking over the food program for C&C Social House in Atlanta's historic Auburn Ave has been major for me along with increasing my personal chef clientele. I look to continue to build upon its success, making it a staple in the Atlanta community. It is also a 2021 goal to continue to grow the Chef Todd Brand into a household name, so look out for products, merchandise and collaborations all 2021

It was back in 2015 while I was in culinary school (2nd Harvest Culinary Program), I was barely getting sleep because I was working an overnight security job and doing events on the weekends. I knew then that "Yes! I'm going to be That Chef"

because I was willing to sacrifice and do whatever it took to manifest that vision forward.

"Be creative but don't be afraid of researching recipes, be a sponge and open to learning." CHEF TODD What is the most memorable dish you served and why? To be honest my most memorable dish was one I created with one of my closest friends (Otis Heard) before I even went to culinary school, "The Shrimp & Grits Martini". We started serving it at our Friday Night events and the response we received let me know I was going in the right direction with my creative culinary. Has Covid-19 helped or hindered you and how so? Covid was rough in the beginning, it somewhat hindered my business as I'm sure it did for most people. On the positive side, I was able to help open a Members Only Lounge & Restaurant "C&C Social House". This time has helped me focus on building my brand, which has increased my clientele as well as bring more business to the social house. What event or what person you catered to/for that made you know for sure that you were “that” chef? It was my 1st NBA personal chef-client and his family, Jerian Grant (Orlando Magic). Cooking for him and his amazing family on a daily basis gave me the confidence as a chef that I knew I could take it to the next level. I made life long connections with him, his family and friends that I am forever grateful for.

This particular night it was extremely cold, and when I passed him, he had a sign up that read, “ please help feed a starving Army Vet." I went home and prepared him a

What was the last milestone in your career and what is the next goal? The last milestone was building a credible cater service that’s known for delicious food and client satisfaction. The next milestone is writing a cookbook and purchasing a food truck.

If you could share, no secrets, but a technique that would help the “you bring paper goods to the cookout” person what would it be? Always use real butter. Margarine is not butter. Using real butter when you cook makes a difference. Margarine is cheaper for a reason. Also, plastic cutting boards for meats (cooked and raw). Wooden cutting boards for fruits and veggies. No glass cutting boards they kill knives. And DO NOT put knives or cutting boards in the dishwasher. Just use hot, soapy (bleach or baking soda) water to clean and sanitize. Then dry with a towel. The heat and steam in a dishwasher warps cutting boards and dulls the blades of knives.

What is the most memorable dish you served and why? My most memorable order was actually when I prepared lunch for the radio station morning team. I’d gotten in contact with the station, and said I wanted to make them a meal - on me. I listened to them every morning taking my sons to school and loved their energy. I prepared everything I could think of lol!! And it was well received! Has Covid-19 helped or hindered you and how so? COVID has done a little of both. I’ve gotten orders for those who don’t want to go out to eat. I offer contactless delivery and pick up services. But I’ve also cut back on on-site private chef jobs. Just to reduce my own exposure to large groups. What was the last milestone in your career and what is the next goal? My last milestone was my youngest son graduating from college. It might not seem career-related, but I’ve put both my sons through college on an entrepreneur’s income (with the assistance of scholarships, financial aid and our village). They both basically graduated (in four years each) debt free. My next goal is to offer mail order items. I’m working on it!
