From the Foodie
Summertime in Atlanta is best known for its extreme heat, the popular nightlife, the outdoor activities, and its food! And if you have been to any of the outdoor events you will most likely find yourself in front of the many food trucks staggered along the road. The best treat for a foodie, wouldn't you say? Your favorite dishes all in one stop - from sandwiches to tacos to oxtails n' grits all in their unique truck. In fact, the promise of a really good dish can be enough of a draw in spite of the event. In the past few weeks, we had a pleasure meeting up with various food truck vendors in Atlanta; one, in particular, was 7 Suns 2 Moons. After touching base with this unique family-owned vegan meal prep vendor I had to make it a point to let our readers aware of this spot. it would be selfish of me not to share this hidden Atlanta gem, especially for our plant-based readers! Although I'm not vegan or a vegetarian I was surprised to find a few dishes that I added to my "must-have" list and I'm sure once you venture out to their spot you will also pick up some favorites. BUT THAT'S NOT ALL! As we were inspired to try a few vegan dishes we decided to share a few delicacies from a few world-renowned vegan chefs to inspire you to try a few as well .... you're welcome. As you venture into this issue we like to encourage you to experience the full spectrum on your desktop. However, if you haven’t tried it on your handheld, you can visit us from the browser on an iPhone or tablet. Atlanta is the capital of Southern cooking. Some of the best chefs are found in this region and that would include the new generation of culinary talent. With new talent comes new experiences and various means to serve the public. From private chefs, food prep services, and food trucks, chefs are able to make a name for themselves which in turn makes Atlanta livelier and diverse with variety. With that being said the Atlanta vegan and vegetarian scene has never been better. Our pallets have been invited to the "new" traditional plant-based meals inspired by soul food. For those wanting to experience or shift to a more plant-based lifestyle or include a meatless meal into their weekly schedule, it has become most satisfying for the up & coming vegan and vegetarian restaurants and food truck owners. One being familyowned and operated 7Suns2Moons. On most weekends you will find 7Suns 2Moons pleasing the palettes and ultimately selling out of their vegan comfort dishes at the Atlanta Food Truck Park on Howell Mill Road in Atlanta. Items like Thanksvegan eggrolls, "shrimp" poboy, better than Popeyes - "chicken" sandwich, jerk mushroom bowl, or my favorite, Baja "fish" tacos are a few items that are found on their menu. 06

let's talk... Q. What were some of the practical steps to get started out? Make sure you research about the industry do's and dont's. For marketing such as social media and serve safe certification
Q. Has covid helped or hindered you and how so? I don't think covid hindered us it actually made us think outside of the box. We honed in on our specialty which is meal prep and added more pickup locations to target a wider area. We also went hard on social media to get our service out there.
Q. What are your expectations for the future? Did you set any goals? We plan on getting a food truck in the near future. Our goal is to eventually own a fleet of food trucks and open a community center to provide healthy options to our community and resources.
Q. What is your specialty dish and what has been your inspiration for your specialty dish? Traveling abroad has influenced my love for vegan comfort food. I love to incorporate all cultures into it. I guess my specialty dish is seitan and mac n cheese. I love how versatile seitan is.
Q. Can you give me a bit of background on the truck, how you started it? We actually don't have a truck yet we do pop-ups meal prep and catering events.
Q. Would you say that you've noticed the food truck industry evolving lately, with the expansion it's been experiencing? Definitely more and more restaurant owners are switching because of the freedom and shorter hours. LOVE OF FOOD - FOOD TRUCK EDITION

BBQ Beyond Meatloaf By Chef Charity Morgan

Ingredients Two 16-ounce packs Beyond Beef (plant-based ground) or 3 packs of Beyond Meat Burgers 1.5 cup dried oats 1 tablespoon egg replacer with ¼ cup water (can also use a flax “egg”) 1 bell pepper 3 celery stalks 1 onion, diced small 3-5 cloves garlic, minced 1 teaspoon dried thyme 2 teaspoons Cajun seasoning 2 tablespoons vegan Worcestershire sauce 1 tablespoon tomato paste 3 tablespoons gluten-free flour 1 pinch of salt 1 pinch of black pepper BBQ Meatloaf Topping 1/3 cup ketchup 2 tablespoons brown sugar 1 tablespoon Dijon mustard 1/4 teaspoon black pepper
Preheat oven to 375*F In a bowl, add ketchup, brown sugar, Dijon mustard, and pepper. Mix well and set aside. Mix egg replacer and water and set aside. In a hot pan, sauté onion, celery, and bell pepper until slightly browned. Add garlic to veggies and sauté for additional 30 seconds. Set aside veggies and let cool. In a large bowl, mix Beyond Burger patties, dried oats, cajun seasoning, flour, tomato paste, vegan Worcestershire sauce, egg replacer mixture, and cooled veggies. Sprinkle a pinch of salt and pepper – mix well until all ingredients are well incorporated. Place in a loaf pan and spread evenly into the form of a loaf. Spread meatloaf BBQ sauce evenly on top of the loaf. Place into oven and bake for 35-45 minutes until browned. Cool for 10-15 minutes. Slice and serve. LOVE OF FOOD - FOOD TRUCK EDITION

MARINATED TEMPEH TACOS BY JENNÉ CLAIBORNE
Ingredients Tempeh Marinade: 1 package tempeh, diced into large crumble sized pieces ¼ cup soy sauce ¼ cup balsamic vinegar 2 tablespoons maple syrup or agave 1 tbsp chipotle chili powder Guacamole 2 ripe avocados, cubed ¼ cup red onion, minced ½ cup cilantro, finely chopped ½-1 whole jalapeño pepper, minced juice of 2 limes ½ tsp sea salt Tacos ¼ red cabbage, shredded 3 carrots, shredded 1 tbsp extra virgin olive oil 1 lime 8-12 small corn tortillas

instructions Tempeh
1. Place the diced tempeh into the bowl or container you'd like to marinate it in. 2. Mix the marinade in a small bowl, then pour it over the tempeh. Allow it to sit for at least 15 minutes or overnight. 3. To cook the tempeh: transfer it to a skillet and cook until it is hot, golden, and the marinade has cooked off. 4. Or you can bake the tempeh by transferring it to a baking dish, with the liquid, and bake at 350° for 20 minutes. Guacamole 1. Place the guacamole ingredients in a mortar and pestle and mash until your desired texture is reached. I like mine with some chunks in it. 2. Season to taste with more salt and lime. Set aside. Assemble the tacos 1. Combine the shredded red cabbage and carrots in a bowl, and toss with olive oil and lime. Season to taste with a little salt if you'd like. 2. Warm the tortillas over a flame or in a toaster oven at 350° for 2 minutes. To keep them warm, if you are heating over a flame, wrap them in a clean kitchen towel. 3. Assemble the tacos by layering the marinated tempeh, cabbage slaw, and guacamole into the warm tortillas. 4. Garnish with more cilantro and a squeeze of lime and/or hot sauce.

Q. What are the most satisfying aspects of your job? Our customers!!! To see them happy and loving our food is truly gratifying.
Q. You have very limited space to work with. Do you think having a specialty truck gives you more opportunity in terms of getting spots or a better flow of clients? Absolutely! We plan on acquiring a few corporate accounts as well as traveling the East Coast.
Q. What advice would you give someone who is interested in starting their own food truck business? Again do the research and see what is going to best fit your needs as far as equipment storage and your staff. 18
