The place we call home is a melting pot of cultures, and with that comes different traditions. That’s why we thought it’d be fun to take a look at some of those customs in our annual Celebrations issue. While it’s fascinating to learn about the different ways to say “I do” or “happy birthday,” it is gratifying to know that we all share the same emotion: joy. The hoopla associated with these events, no matter the origin, is proof positive that commemorating the milestones in our lives connects us to each other and helps us remember important occasions for years to come. For example, the Indian wedding featured in “Eastern Promises,” describes the Baraat, or groom’s procession, where he arrives on a horse. Read how Sanket Patel made the tradition his own on page 50, while learning more about other customs like the Kanya Aagaman, or the bride’s arrival, and the Jai Mala, or exchange of garlands. In “A Wedding Worth Saluting” beginning on page 42, the traditions are of a different type. A Waldwick-based party planner considered many conventions (as well as the location) of the U.S. Military Academy, where groom Michael Fitzgerald graduated, to help organize the West Point wedding for him and his bride, Pamela Downes of Woodcliff Lake. It was a ceremony filled with plenty of pomp and circumstance as well as romance. Then there is young Pax Cho of Englewood, whose mother hired a pro to throw a traditional Doljanchi for his first birthday party. In Korean culture, this celebration includes a blessing for good fortune and a chance for the youngster to “choose” his future profession. Find out what Pax’s career path is in “A Whale of a Time” on page 48. Of course, no matter what Pax selected, I know he’ll do his mom proud! Speaking of moms, meet Natalie Pasquarella, co-anchor of NBC 4 New York, who is celebrating her first Mother’s Day. In this exclusive interview, the Northern Valley resident talks about life on- and off-air, including her favorite Bergen hangouts and a sport she will travel many lengths to watch (page 56). In “Catchin’ the Bus” on page 60, moms Belinda Greenfield and Allegra Schorr of Tenafly and Creskill, respectively, tell how they’ve been combatting an epidemic by brainstorming during their morning commute. And four Bergenites report on the memorable trips they took with mom (“Mom Knows Best,” page 64). Perhaps one of them will serve as inspiration for you. Bergen offers many opportunities to honor our armed forces on May 28: parades, wreath layings and commemorative ceremonies. Here are a few local events: ENGLEWOOD 10 a.m. The Memorial Day Parade begins at Soldiers’ Monument and ends at Veteran’s Memorial Park. FAIR LAWN 10:30 a.m. The Memorial Day Parade begins at Pollitt Drive and concludes with a ceremony at the Avenue of Heroes circle. HACKENSACK, BRIGADIER GEN. ENOCH POOR MONUMENT 10 a.m. A wreath-laying ceremony takes place at General Poor’s grave at the First Dutch Reformed Church. HACKENSACK, VETERANS PARK 10 a.m. A memorial service includes wreathlaying ceremony and guest speakers. WOOD-RIDGE 10 a.m. Services begin at the Senior Center with a parade at 11:30 a.m. Free refreshments and entertainment will follow at Veteran’s Park.

Franklin Lakes threw a parade in honor of resident Jack Wallace, an Indian Hills graduate and member of the U.S. sled hockey team. This winter, he helped lead the United States to the gold medal with a victory over Canada in the PyeongChang Paralympics. C-O-N-G-R-A-T-S to Tai Nakamura, a sixth grader at Emerson’s Patrick M. Villano Elementary School, who recently won the North Jersey spelling bee. After four hours competition, he won the event by correctly spelling “Promethean.” Tai heads to Washington, D.C. this month to compete in the Scripps National Spelling Bee.

Despite Hold My Knots’ comfort food selections— mozzarella sticks, corn fritters, curly fries—there’s a kicker to its menu: All of the restaurant’s sandwiches are served on large chewy garlic knots instead of buns! During your visit to the new Hillsdale eatery (there’s also the flagship location in NYC), try “The Big Daddy” sandwich, which is made with breaded chicken and broccoli rabe, or indulge in the aptly named “Hillsdale,” with breaded eggplant, mozzarella and marinara sauce. “The knots themselves were probably the best I’ve ever had, let alone as sliders,” says Fort Lee resident Andy Lee, who visited the joint on its first open day. CURRYING FAVOR Mahwah’s newest eatery, Peshawri Grill, is dishing up traditional Indian cuisine for lunch and dinner, seven days a week. At just 2 years old, Frida has had quite the extraordinary life. The black-haired beauty was rescued from Puerto Rico by her mom, Wendy, and now spends her time helping others as a certified therapy dog with Bright & Beautiful. The sweet pup loves making visits to Pascack Valley High School, Jewish Home Assisted Living and the Read to a Dog program at the Paramus Library, her owner reports. Despite being a gentle soul, Frida has a ton of energy and loves to roughhouse with her doggy friends and play catch. Her daily routine consists of a long walk collecting sticks from around the neighborhood, then gobbling down her favorite meal of arugula, steak and chicken soup at home. WHAT YOU SHOULD KNOW While not curable, asthma can be carefully managed to let children breathe easier. Spring flowers can take your breath away. And not just because their beauty is such a welcome break from winter landscapes. For children with asthma, the high pollen counts that come with spring can spell breathing trouble. During an asthma attack, the airways swell, produce excess mucus and narrow, limiting the amount of air that gets into the lungs. Asthma is a chronic condition, and attacks can vary from mild to severe. Mild asthma is treated as needed by the individual, but severe asthma requires regular medication, sometimes even immediate medical attention. Pediatric asthma is a leading cause of emergency room visits and absences from school, according to the Centers for Disease Control and Prevention. Allergic reactions to environmental triggers, such as pollen or pet dander, can cause asthma attacks, says Leonard Silverstein, M.D., Allergy & Asthma Specialists, of Saddle River. In the Garden State, pollen from grasses, trees, flowers and ragweed can wreak havoc on allergy and asthma sufferers. Exposure to smoke and cold air also can trigger attacks, as can physical expressions of emotion (crying, laughing or yelling, for example).

Many children with asthma experience symptoms when they’re physically active, a condition called exercise-induced bronchospasm. Your child’s doctor can help devise an action plan that makes participating in sports safe. “Most patients can play a sport using a bronchodilator (aka an inhaler) 30 minutes prior to exercise,” says Dr. Silverstein, adding that a prescription medicine like Singulair can bring benefits as well. Once asthma is under control, exercise can actually strengthen airway muscles, improving their function. The exact cause of pediatric asthma is unknown, but research suggests interplay between the immune system and early exposure to environmental irritants. Genetics also may play a role. Although there’s no known cure for asthma, most serious effects are avoidable with proper treatment. Your child’s doctor can help you identify and avoid triggers, and develop an action plan to share with school personnel. Medications can help prevent asthma attacks by reducing inflammation in the airways—specifically, inhalers can be used to relax the muscles around the airways during an attack. In some children with environmental allergies, immunotherapy (allergy shots) can help reduce asthma symptoms, making it easier for children and parents alike to relax BERGENMAG.COM

A WEDDING WORTH SALUTING A couple calls in the big guns to iron out logistics for their wedding at West Point. By Donna Rolando Photography by POPography The easiest decision Pamela Downes and Michael Fitzgerald made about their nuptials was the venue. “I’m a graduate of West Point so I have a great fondness for the academy,” says Michael, a U.S. Army captain. Both he and his future bride, Pamela, a Woodcliff Lake native, had many treasured memories of West Point. Like Cinderella, Pamela had gone to the ball (more than once, as well as dinners) with her “Prince,” when he was a cadet there and she attended nearby Marist College. (The pair had known each other since age 15 after working together as day-camp lifeguards, but the sparks didn’t start flying seriously until their college years when they bumped into each other at a party closer to home.) While the decision was easy, the same could not be said for carrying it out. After six months of trying to plan things on Newlyweds Pamela and Michael Fitzgerald pause for a kiss under the Arch of Sabers outside Most Holy Trinity Catholic Chapel at West Point.

her own, Pamela realized it was time for the big guns—and in November, she followed a friend’s recommendation and called on Christine Figliuolo, founder of Waldwick-based Creations by Christine Events, to plan the June 10 ceremony. “It’s not your typical wedding venue so we needed someone to make it come together seamlessly,” recalls 28-year-old Pamela. That included getting invitations out extra early for the background checks required on all 330 guests, as well as bus drivers, photographers and others hired for the big day. The military academy, established by President Thomas Jefferson along the Hudson River in Orange County, N.Y., has strict security measures, even for a wedding. And while holding a wedding reception in the majestic Eisenhower Hall is something graduates consider an honor, the huge room lacked the romance Pamela yearned for. “It’s a grand ballroom overlooking the river,” says Pamela. But because the room serves mainly cadet functions, it looks like an Army hall, not a wedding hall. “Once I saw the space, I knew I had to make it cozier because it’s huge—it holds up to 600 people,” Christine says. She got the bride on board by showing her a computer-generated floor plan that used drapery as a room divider and depicted a lounge and bar area just beyond the drapes. “The draperies were gold in color and very lush,” recalls Christine. And you’ve heard of BYOB, but here they brought their own bars! While it may sound extreme to create a lounge area just for the day, Christine works BERGENMAG.COM

with Lounge It Up, a Fairfield company that does exactly that, and also provides décor and lighting. Of course, it couldn’t look like a typical bar area, so Christine gave it a softer touch by adding gold and off-white hues and creating various seating areas with couches and chairs. Together, she and Pamela continued the look on the hall’s dining tables with floral arrangements that included peach roses and Queen Anne’s Lace, as well as candles, lacy tablecloths and gold ballroom chairs. To further soften the ambience, Christine played with the lighting. “Chandeliers, which the hall already had, can throw off a harsh light,” she says. But the amber up-lighting she installed for the big day delivered a golden glow. Wireless—this lighting could be introduced wherever needed, and the magic of the look intensified as night fell. Elite Rhythms Entertainment of Fair Lawn provided the dancing music, while the academy’s own Janine Roszkowski catered the meal: salmon in white wine sauce, prime rib and stuffed chicken, along with mixed green salad and side dishes. The feast was followed, of course, by a wedding cake—five tiers of sweet happiness decked with edible roses and created by Carlo’s Bakery of Ridgewood—and everyone went home with French macarons by Mimi’s Cookies of Waldwick. While the hall needed a major makeover for the wedding, the Most Holy Trinity Catholic Chapel at West Point was already picture perfect. The Gothic Revival architecture and stained glass in West Point’s oldest continually-used chapel made for great photos, but also provided a connection to the couple’s faith, and Father Larry Anderson, a friend of the family, was able to preside. “We’re both Catholic, and it meant a lot to have it in a church,” says Michael, also 28, who looked regal in his navy and gold uniform as he stood before the altar with Pamela in a flowing sequined gown from Kleinfeld Bridal in NYC. In true pomp and circumstance style, the couple exited to the soulful sound of bagpipes courtesy of Bergen County Pipes & Drums. Some of West Point’s own formed the Arch of Sabers for the newlyweds to pass under. The day flowed with military precision thanks in part to Christine’s insistence on practice drills. For example, she requested that the bus company, Royal Coachman of Denville, practice their route to the church, where they’d have to take the guests staying at nearby hotels; the 54-passenger bus that was the company’s first choice couldn’t make it up the steep hill to the church. Thankfully, a smaller bus fit perfectly. Still, with the almost 10 buses and shuttles needed to get everyone in his/her place, Christine arranged for a bus company supervisor to be on site for the big day. “We just couldn’t wing it that day,” Christine explains. There were a lot of people involved to make it a seamless event. “When duty calls, you do what you’re trained to do, and it all works out,” Christine teases. The couple agrees. “It was a salute-worthy event because our friends and family made our day an occasion we’ll never forget,” says Pamela. BERGENMAG.COM

A WHALE OF A TIME!

An Englewood family combines fun and games with age-old customs to celebrate their son’s first birthday. By Alena Woods Photography by Story by Mia

Mapping a career path isn’t something toddlers do, but Pax Cho presumably figured out his future already—and he just celebrated his first birthday. For many Korean families, like the Chos of Englewood, commemorating a child’s first birthday means more than throwing a party with sweets and streamers. “Centuries ago, it was harder for babies to make it past their first year,” explains Monica Sunwoo, Pax’s mother. “So when a child did meet that milestone, it was a big deal, and Korean families would celebrate with a Doljanchi (a blessing for good fortune on a child’s first birthday). Times have certainly changed since then, and the tradition has evolved into something more light-hearted.” Having previously organized a Doljanchi for her first child, Celine, Sunwoo wanted to work with a professional planner for her son’s celebration. So she presented a couple of his beloved possessions—a plush whale and nautical-themed blanket—to Hannah Choi, owner of Little Confetti Events, for inspiration. Choi, who specializes in Korean first birthday parties, went right

to work. “The whole process took about six months—from booking the venue and entertainment to prepping the decorations,” she explains. “It’s kind of like planning a wedding, because most families invite 80 to 100 guests. You have to find a venue that can accommodate so many people, and they usually book quickly.” The family selected the spacious Fleming’s Steakhouse in Edgewater, where, according to Sunwoo, “everyone had so much fun, we didn’t want to leave!” Keeping typical Doljanchi traditions in mind, Choi arranged Pax’s party to revolve around two focal points. The first was the main table, which held most of the nautical-themed decorations and desserts. (Choi displayed whale-shaped place cards and served cakes with blue “ocean wave” frosting, for instance.) The second part of the event was the Doljabi, a fortune-telling ceremony where a selection of meaningful items was laid out in front of Pax. According to Korean culture, whichever item the child “chooses” first predicts his or her future. The traditional items have

changed over the years—strands of rope, which represent a long life, have been substituted with more modern choices like stethoscopes and dollar bills to predict the baby’s career path. Choi took the celebration a step further, creating a raffle for the adults. The names of each guest were placed into jars that correspond with each item. After Pax chose his item, a guest’s name was pulled from the corresponding jar. The winner received a special prize, provided by Pax’s mom and dad. “I’ve seen everything from $25 Amazon gift cards to Tiffany & Co. jewelry and iPads given out to the winners!” Choi says. “No matter the prize, everyone enjoys taking part in the festivities.” So what is Pax’s fortune? Clad in a turquoise traditional Korean robe, he chose a bowl of rice (representing abundance) and a pencil (intelligence), over other items such as a microphone and $20 bill. But on that day, Pax was unconcerned about the future. Instead, he enjoyed a frosted cookie from the long table of goodies and the shower of hugs from friends and family.

When an Indian dating site brought together a North Jersey couple, their very first date almost got off to a rocky start because of a Kit Kat bar, Dina Raval’s favorite candy. Raval feared that her date might have ditched her, but Sanket Patel had disappeared for just a minute to retrieve the Kit Kat he had forgotten. (He knew she loved them and wanted to surprise her!) Fast forward several years: Inside the beautiful box Patel had made as a gift for—you guessed it—their wedding was a Kit Kat bar. From such a thoughtful couple, you’d expect a memorable wedding, and last May’s ceremony at the Sheraton Mahwah didn’t disappoint. Though many Indian weddings are steeped in ritual and tradition—outdoor ceremonies with sacred fires; parties decked out in bold red attire; brides adorned with elaborate henna Newlyweds Dina Raval and Sanket Patel dance the night away at the Sheraton Mahwah. Raval specifically selected her reception dress for the color—purple is one of her favorite hues.

art—Raval and Patel wanted their special day to have their own personal touches. For instance, Raval followed Indian custom by having her mother’s brother escort her down the aisle—but she also had her twin brother, Dev, on her other arm. “Every major step my brother and I have taken, we’ve taken together,” she explains, “so I really wanted him to walk me in too.” And while Patel arrived at the ceremony on horseback, another cultural tradition, his walk down the aisle was all his own— Nadja, his trusted dog, was at his side. “He and Nadja are inseparable, so I wanted her included,” says Raval. “We had a little dress made for her, so she was part of the bridal party. I couldn’t imagine him walking in with anyone other than her.” The entire day, which was planned by Meghna Trivedi of Rutherford-based Bells N Rings Events, started with the wedding ceremony in the morning followed by a luncheon, then a cocktail reception and dinner and dancing in the evening. Everything was supposed to take place outdoors (as is the case with many Indian weddings), but Mother Nature had other plans—a nor’easter blew through the area. “But everything turned out so great,” Raval BERGENMAG.COM

recalls. “When they opened the doors to the Sheraton and I saw everything, I was just like, ‘Wow!’ It was even better than I expected.” The venue was decorated with turquoise and yellow, Raval’s favorite colors. She also wanted to incorporate purple, which she did by wearing a purple dress to the reception. “I’m shocked I was able to get all the colors I wanted, and they worked so well together,” she says. Another personal touch was the liquidnitrogen-chilled ice cream served at the reception. “We both like to have fun, and I love ice cream,” explains Raval. “It was something different that I’d never seen before at a wedding.” They offered guests a choice between Baileys coffee with toffee bites and a peach sorbet. “Everything went seamlessly, and it was beautiful,” says Trivedi of the 15-hour day. “Dina said afterward that she had heard that with everything going on, she wouldn’t be able to eat her wedding cake that day. “But she told me, ‘We had the cake, and we ate it too!’” BERGENMAG.COM

A chat with Natalie Pasquarella, NBC 4 New York’s co-anchor and Bergen County resident. By Rita Guarna

When the BERGEN team showed up at Natalie Pasquarella’s house for a Mother’s Day photo shoot, we were expecting a quick session so she could nurse her 8-month-old baby and get ready for work. Instead we were introduced to her husband, Jamin Pastore, dogs—a 13-year-old pit bull and 15-year-old English bull dog—given a tour of the house and cajoled into feasting on bagels (“Wait, I have to warm them up!”), muffins and coffee (“Iced or hot?”)! Then after the shoot, amid hugs, she pushed several bags filled with the goodies into our arms, insisting we take them home. (We brought them back to the office.) Such is the personality of the serious—albeit exuberant— journalist, who has garnered an Emmy Award as part of the NBC 4 New York’s team coverage of the 2016 Dallas Police attacks. With the arrival of Baby J, it gives us more room to spread out. Also, as a journalist who has covered stories throughout our community, the more time I spent here, the more I loved it. It really was such an easy decision to make, and we are thrilled to be here.

What surprised you most about becoming a mom? I knew I would love being a mom but wow, it surpassed every expectation. You hope you’ll be able to step up to the plate and know what to do, and it’s pretty amazing when that motherly instinct does turn on. I’ve loved every second of it. I will say, though, that I didn’t believe people when they said, “You’ll be tired!” I am a pretty high-energy person but there have been days when the coffee takes a little longer to kick in.

Tell us an insider secret about the show. I sit on a cushion on set and stand on a wooden box in studio because my co-anchors and friends Chuck Scarborough and Stefan Holt are both about a foot taller than I. What can’t you live without? Espresso and my NBC 4 New York app (a shameless plug, I know).

Tell us about an on-air glitch and how you dealt with it. When my water broke on air. I giggled, smiled and finished the newscast. Lucky for me, there was less than a minute left in the newscast, and well, the rest is history! What’s your recipe for combining a happy family with a demanding, high-profile job? That recipe has so many ingredients! I couldn’t do it without a supportive family and teamwork. My husband also has a demanding career so we do a lot of juggling, and we help each other when the other needs a break. He always seems to know when I need a nap! I work the night shift, 2:30 p.m.–11:30 p.m., so no matter how late I get home, I always want to be up early to spend my mornings with the baby. And as soon as noon hits, I go into work mode and prepare to head into 30 Rock for the afternoon/evening. Because I often work on investigative stories during my breaks between newscasts, it’s critically important to manage my time. (Editor’s note: She co-anchors the 4 p.m., 6 p.m. and 11 p.m. newscasts.) On weekends—Saturday and Sunday— that’s our time. We are super protective of it. As for that happy family recipe...laughter is

What made you fall in love with your husband? He has a heart of gold. He’s always thinking of others. He’s a family man, and that is so important to me. His sense of humor reeled me in too; it’s important to laugh together!

When was the last time you cried? My son’s baptism. It was such a beautiful day, and my whole family traveled here for the service so that made it extra special. What do you hope for your son? That we can raise him to be a good person who enjoys helping others. That’s why we’re all here after all. Tell us something that people would be surprised to learn about you. I am a boxing and mixed martial arts (MMA) fan. My husband and I have been to Las Vegas for a few big matches. Have you ever wanted to go back and alter something in your life? No. I’m a big believer in no regrets. Tell us about the prep involved when you interviewed then President Barack Obama. Were you nervous? I found out about the interview just a few days before it would take place in March 2011. My station at the time, in Charlotte, N.C., was one of three TV stations allowed sit-down access ahead of a trip the President was taking to Latin America. I knew I would have seven minutes for the interview so I sat down with our special projects producer and focused on local issues. We talked jobs and the President’s upcoming trip to Charlotte for the Democratic National Convention in 2012. It was my first time interviewing a President so I had a bit of nervous energy heading into the White House. That faded pretty quickly because before you know it, the President is sitting in front of you, and the clock is ticking.

Tell about your favorite Bergen hangouts. I love Closter Plaza...so many new spots opening up there. Shops at Riverside. Wally’s Bagels. I went to Van Saun Park for the first time last summer with friends while I was pregnant. We went on the carousel and the train. I can’t wait to take our son this summer; he is going to love it! You’ve said that your mom is your role model. Can you tell us why? She’s the most positive person I know. She taught my three siblings and me to live each day to the fullest and be kind to others. She always used to tell us, “What you say affects every cell in your body.” Be good and do good, and you’ll feel good. She also worked two jobs most of our lives so I always tried to follow her example. This is your first Mother’s Day. Any special plans? It will be a special day but no set plans as of now. It really doesn’t matter as long as I get to hang out with my boy. It would also be nice to sleep in! You love to travel. What special place do you hope to share with your son? We love the beach, and we’ve already flown with the little guy to South Florida to visit family. I’ve been to Europe once for my honeymoon in Italy. That would be a fun adventure once Jamin James is a little older. Your son is named after your husband. Will he have a nickname to tell them apart? He and my husband have different middle names. We’ve thrown around a couple of nicknames but we’re sticking with his full name for now. Finish this sentence: It’s never okay to ______. Give up. As the oldest in a close-knit Italian family, what traditions do you hope to continue with your family? We all love sitting around the dinner table and eating and laughing...and eating some more. Sunday family dinners will be a must in our house. Also, growing up in my small town of Steubenville, Ohio, not far from Pittsburgh, Penn., my Dad was a big Pirates baseball fan. He and my mom would load us into the minivan and take us to games all summer long. I can’t wait to take our son to see the Mets and Yankees, and even a few of our local minor league games.

CATCHIN’ THE BUS

While some of us are reading or snoozing on the daily commute to and from the city, two Bergen County mothers are brainstorming ways to combat opioid addiction. By Rita Guarna

What mother doesn’t want a better future for her kids? Allegra Schorr of Cresskill and Belinda Greenfield of Tenafly want that—and more. They’re working to find solutions for dealing with the opioid-addiction crisis. The women—Schorr, president of the Coalition of Medications-Assisted Treatment Providers and Advocates (COMPA), and Greenfield, bureau director of New York State Office of Alcoholism and Substance Abuse Services (OASAS) and president of the NY State Opioid Treatment Authority—organized an event, the largest ever, of policy makers and experts to discuss solutions to the epidemic that claims the lives of more than 100 Americans per day. { ACTION PLAN } How did you meet? Tell us about your bus connection. Greenfield: Our bus connection began in 2015 when Allegra became president of COMPA. (We’d been working together since 2006.) Once we realized that we lived in the same county and were only one town from each other, the bus ride was ideal for catching up and coordinating our collective work efforts. You both work for organizations—either government or non-profit—involved in fighting addiction. How did you get involved in this type of work? Schorr: I grew up in a family that was immersed in this field. My father ran a substance abuse treatment clinic in New York City, and my cousins, my sister and I are still running it. So, at an early age, I saw people getting help.

My kids—Zach, 22, and Maria, 19—are in college and both spent their spring break volunteering at the American Association for the Treatment of Opioid Dependence (AATOD) conference. (Editor’s note: This is the event the women co-hosted.) As mothers, what’s the most important thing you want to communicate to your kids about work? S: When my children were in middle school, they learned about opioid addiction from some of my patients who were willing to share their stories. Through that experience, my kids learned the danger and the risk of misusing medications. They also learned that addiction is treatable. G: We need to be proud of the work we do, derive satisfaction and always try to

What makes life special here? S: I feel that I have a slice of country living, and at the same time easy access to NYC. We moved here—I was born and lived in Brooklyn until moving here in 2010— because of the excellent school system. G: The benefits of being able to work in NYC and yet have the comforts of a suburban life are immeasurable. Balance is extremely important to me.

“We’re suckers for a happy ending, and recovery is a lifelong happy ending.” G: I have been working for the State of New York since 1998 and in the addiction field for more than 30 years. My background is rehabilitation counseling— working with people who have a disability—and I decided to specialize in behavioral health, that is psychiatric and substance abuse. Is there a profile for the “typical” person who becomes addicted? G: No there isn’t. People from affluent backgrounds can become addicted; people from good families, who are educated, and who have access to health care can become addicted. The work Allegra and I do is to help ensure people have access to quality medication-assisted treatment services (i.e., methadone and buprenorphine), as this is the most efficacious way to treat opioid addiction. S: Regardless of their background, many people and their families coping with addiction share a sense of shame. But addiction is a treatable disease that requires medical intervention, not moral judgment. How do your families feel about your work? G: My family is very supportive. They often say that my work makes sure that people get the help they need. S: The work is definitely a family affair. My husband, Dr. Frederick Kahn, is a board-

do our best. I want to know that at the end of the day, when I lay my head down to sleep, that I have done the best job I could possibly do. That is my advice to my daughter about how she should view work. What would readers be surprised to learn about you? G: I am a Dance Mom! I am definitely not crazy and twisted the way the TV show Dance Moms depicts, but I am passionate and truly happy when cheering for my daughter Charlotte, 16, and her fellow dancers when they compete! She has been dancing at Broadway Bound Dance Center in Dumont for the past 14 years. For me, learning about dance and seeing these young dancers perform is extremely gratifying. S: Shirley Jones taught me to drive a stick shift. I started as an actress and got my Equity card in summer stock on Cape Cod. As a summer intern, I was responsible for dressing the actors, which included taking care of the wardrobe and dressing room for the stars who appeared in the touring shows. I was asked to pick up Ms. Jones from her hotel and drive her across the street to her dressing room. The Town Car was unavailable, and I picked up Shirley Jones and her costumes in an old, beat-up manual shift Firebird that I was still learning to drive. After stalling twice before we left the parking lot, she talked me through easing up on the clutch. She

Tell us about the places you love in the county. G: The Tenafly Nature Center for one. And I love the great restaurants, such as Axia, Simply Vietnamese, Veggie Heaven, Amarone and Vitales. S: I love to hike with my children on the Palisades. I go to Energy Gym and love Crushed Garage, Monsoon Gifts and Farmhouse Café in Cresskill. I love going to farm stands, Metropolitan Farm on Hickory Lane and all the shops and entertainment at the new Closter Plaza. When our families visit, they always enjoy Van Saun Park. What do you do to unwind? S: I like to cook and have friends over. A friend gave me a sour-dough starter, and I’ve been experimenting with baking bread. And my husband and I like to grow tomatoes and other vegetables. We feed a lot of Bergen’s deer and rabbits every summer. G: Spending time with family and friends; laughing is a great way to de-stress. I also love horror movies, and my favorite TV shows are Criminal Minds and Law & Order: SVU. Any final thoughts? S: We’re suckers for a happy ending, and recovery is a lifelong happy ending. Belinda and I agree that the best recovery stories share the courageous first step of getting help.

English journalist Guy Beringer described the tried-andtrue Sunday tradition as a way to “sweep away the worries and cobwebs of the week,” as noted in The Art of Entertaining (Rizzoli New York). But if you’re playing host instead of dining out, it can feel anything but worry-free. Luckily, the book’s author Jessica Kerwin Jenkins and BERGEN compiled a few recipes and tricks to make your next brunch—as Beringer would say—the “cheerful, inticing and sociable” occasion it’s meant to be. So sit back, relax and get brunching!

SHRIMP AND GRITS Yields: 4 servings

INGREDIENTS

FOR THE PARMESAN SAUCE n 2 large onions, sliced n 4 garlic cloves, minced n 2 to 3 Tbs. vegetable oil n 3 cups dry white wine n 4 cups heavy cream n 1 cup grated Parmesan cheese n kosher salt and freshly ground pepper n grated zest of one orange FOR THE GRITS n 1 cup vegetable stock n 2 cups whole milk n ½ large onion, finely diced n 2 garlic cloves, minced n 2 to 3 Tbs. vegetable oil n 1 cup grits n kosher salt FOR THE SHRIMP n ½ cup red onion, finely diced n 1 cup mixed red, yellow and green bell peppers, diced n 2 to 3 Tbs. vegetable oil n 8 slices bacon, cooked and chopped n 1 cup cooked andouille sausage, diced n ½ cup heavy cream n 24 large shrimp, peeled and deveined with tails removed n ¼ cup chopped fresh parsley FOR THE GARNISH n ½ cup finely diced tomato n 8 scallions, thinly sliced n ½ cup grated Parmesan cheese

DIRECTIONS

For the Parmesan sauce: In a saucepan over medium heat, sweat the onions and garlic in the vegetable oil until soft and translucent but not browned. Add the white wine, turn the heat to high and cook until reduced by half. Add the cream and Parmesan and continue to cook until reduced to 4 cups. Puree the sauce in a blender or food processor, working in batches if necessary. (Do not fill the blender or food processor more than halfway, and be sure the lid is firmly in place to prevent hot liquid from erupting.) Pass the sauce through a fine sieve, adjust the seasoning with salt and pepper, and stir in the orange zest. Keep warm until ready to serve; or chill, then gently rewarm before serving.

For the grits: Bring the stock and milk to a simmer in a saucepan over medium heat. In a large heavy-bottomed pot (a Dutch oven works well), sweat the onions and garlic in the vegetable oil over medium heat until soft but not browned. Add 2⁄3 of the hot milk mixture, then whisk in the grits. Lower the heat slightly and cook until the grits are tender (time can vary widely, from 5 minutes for “quick” grits to 40 minutes for stone-ground). If the grits begin to get too thick while cooking, add some of the remaining milk mixture as necessary. Season with salt and keep warm. For the shrimp: In a saucepan over medium heat, sweat the red onion and bell peppers in the vegetable oil until soft. Add the chopped bacon, andouille, cream and 3 cups of the Parmesan sauce. Add the shrimp, reduce the heat and cook just until the shrimp turn pink, about 3 minutes. Stir in the chopped parsley. To plate: Divide the grits among 4 serving bowls. Spoon the shrimp and bacon cream sauce over the grits, making sure each bowl gets 6 shrimp. Top with the remaining 1 cup Parmesan sauce. Garnish with diced tomato, scallions and grated Parmesan. Serve immediately.

I recommend using white linen tablecloths, since they can easily be repurposed, and tea light candles, which are inexpensive and help set the mood. You can add some color with well-placed bowls of fruit and flower arrangements.”

Mad About Mangoes

This sweet fruit is packed with plenty of nutrients that benefit your body and mind— it’s no wonder Buddhist monks shared it with the world. As a beloved Chinese proverb reminds us: “A journey of a thousand miles begins with a single step.” For the mighty mango, its worldwide journey began with the single step of a Buddhist monk, way back in 5th century B.C. Despite being native to eastern India, mangoes found their way to Asia when monks took them along on their voyages out of the country. In a case of “divine intervention,” the fruit and its seeds traveled from country to country, until finally arriving in America during the early 19th century. The rest, as they say, is history! Although mangoes grow in both Florida and California, apparently, we can’t get enough of the sweet fruit. The United States is the world’s biggest importer of mangoes—in 2010, we brought in more 300,000 tons of them. (While it seems like a lot, that same year, the U.S. imported more than 4 million tons of bananas.) POWER UP Mangoes are packed with so many vitamins, minerals, antioxidants and nutrients, they rank up there as a superfood, credited with everything from curing acne to helping those with diabetes by normalizing insulin levels, and guarding against certain cancers. Remember the severity of the recent flu season? Well, a cup of mango goes a long way toward meeting our daily requirements of vitamin C, vitamin A and 25 different varieties of carotenoid, which together make a powerful team for fighting off colds and the like with a stronger immune system. Mangoes also have what it takes to promote good vision (vitamin A), improve digestion (certain enzymes), lower bad cholesterol

(fiber, pectin and vitamin C) and act as a natural aphrodisiac. With summer approaching, many want to shed some pounds—well, here again the mango is a friend. One cup of mango is 105 calories and packed with probiotic fiber, which helps to make the body feel full. This means you’re likely to eat less and look great in that swimsuit— need we say more! BUY, STORE & SERVE Don’t judge a book (or mango) by its cover. Though color is the first feature that might attract you, it’s not the best indication of this fruit’s ripeness. If your mango is ripe, it will give off a sweet scent at its end and will have a slight squish to it when gently squeezed. You can pick up a few unripe mangoes at the store and let them sit in a bowl on the counter for a few days until they’re to your liking. The fruit ripens much like an avocado does, and if you won’t be eating them right away, feel free to store them in the fridge.

Once you have a ripe mango, get creative. This is one versatile fruit—certainly, you can eat it raw, but you can experience mangoes in so many other ways—mixing it up in a salsa, serving it in a smoothie or giving the kids a healthy alternative to potato chips: mango chips. It also stands out as a marinade to keep your fish or meat tender. Although there are close to 1,000 varieties of mangoes grown around the world, you’ll only find about six in the United States. Pour all the ingredients except the tonic water into a shaker and shake well. Strain into a collins or highball glass full of ice cubes, then top with the tonic water. Garnish with a mint sprig and fresh blueberries.

What is unique about your practice? The practice is set up to accommodate a variety of dental needs ranging from preventative and family dentistry to more comprehensive cosmetic dentistry. Many of our patients are looking for high-end restorative dentistry, and find it comforting to be in a warm, patient focused atmosphere. Being that we are a general practice, patients that receive the more complex, cosmetic dentistry, are able to continue routine dental care with us. What do you consider your greatest success? I started this practice from scratch and each year it continues to grow. Now ten years later, I was chosen from amongst a long list of wellrespected dental groups to carry on the legacy of an established 50-year practice. Why do you perform fat grafting in your face lifts? Volume is an essential component to a youthful appearing face. As we age, particularly if we are trying to stay fit, the volume in our face diminishes leaving hollows and voids which accelerates aging. Taking fat from other areas, processing it, and re-injecting small amounts into key areas of the face (lid cheek junction, temples, nasolabial folds, lips, jawline, and marionette (puppet) lines, help tremendously in reversing the aged appearance. It is a permanent solution.

What do you mean by “SMAS Composite”? When performing a face and neck lift I separate out the skin from the underlying (deeper) fatty/ muscle/ fascia layer. I elevate the underlying deeper layers and redistribute this facial and neck tissue layer as a “composite” to reduce/eliminate jowls and create youthful shape to the face. This allows me to position the top layers (skin) slightly differently in the face and the neck and avoid applying excess tension on the surface of the face. I restructure the neck musculature returning it back to a taught state while at the same time I eliminate the surface laxity and lines of the neck. Together, with fat grafting (and my blepharoplasty technique) I’ve had great success in turning back the clock for my patients. Preserving who they are, and maximizing their outcomes and maintaining their original image identities, are key to delivering the ideal natural face.

What is recovery like? I perform these combination procedures in a hospital based setting and give patients the option to stay in the hospital overnight. Together with my nursing staff we see our facial rejuvenation surgery patients several times a week for the first couple of weeks. This aids in a more rapid recover and allows patients to resume the normal lifestyle in less than a month.

What is breast augmentation? DR. COZZONE: Breast augmentation is a surgery that increases or restores the size of the breasts or significantly alters their shape. RESTAURANT REVIEW:

Sedona Taphouse A frequent traveler to the Grand Canyon State—where I visit my recently retired parents—I now have certain expectations when seeking the flavors of America’s West. So when headed to Sedona Taphouse in Cliffside Park, which stretches an image of iconic Antelope Canyon across the front of its menu, I envisioned something Southwestern or Tex Mex. Not quite so: Taphouse boasts New American cuisine, pulling inspiration from American steakhouses, Italian bistros and Mexican taquerias. Off the bat, Taphouse has several pluses going for it. The eatery is part of the Towne Centre, a brand spanking new high-rise complex (it’s a mixed-use, residential and commercial, facility) in the middle of the downtown’s resurgent restaurant row. Second, visitors don’t have to search for metered street parking, as there are plenty of free spots in the garage beneath the complex. Repeat: free garage parking. As for the restaurant itself, inside you’ll find several big-screen televisions mounted over an L-shaped bar with an astonishing number of beers on tap (I lost count at 33, but there are plenty more), and even dozens more bottles stashed away in nearby refrigerators. For nonbeer drinkers, the racks of wine and list of artisan cocktails are just as impressive. Surrounding the bar are booths and tables for families, friends and the after-work crowd. My guest and I visited on a busy Friday night and were seated at the last available table—right next to the open kitchen. Though not the best location, our server Desiree made up for it with her attentiveness and knowledge of the menu. I started with the roasted stuffed mushrooms, three bite-size button caps filled with lump crabmeat. I imagine the app’s crab comes from the same batch used to mold the restaurant’s popular crab cakes that I glimpsed on the entrée menu—the meat is that good. My friend opted for Australian Kobe beef sliders, a pair of mini burgers (you can also get it as an order of three) topped with Vermont cheddar and caramelized onions and served with fresh blue potato chips. With respect to the sliders found at Hackensack’s White Manna—recently named by Thrillist as one of the 31 Best Burger Joints in America—Taphouse’s version might come in a close second. Now, on to the mains! Though some options are given “western” names (Red Rock Shrimp, Devil’s Pass Pasta, Chuckawalla Chicken), rest assured they are all New American cuisine. A sucker for red meat, I ordered the Filet Fontina Marsala, a 7-ounce filet mignon covered with a thin layer of melted fontina cheese, house-made Marsala sauce and portabella mushrooms. This time around, I’ll admit, that it was the fontina, not the Angus beef, that drew me in. The rich aroma of the cheese amplified the flavor of the tender meat, which was cooked to a perfect medium, while the Marsala had a curious but satisfying peppery kick that put the plate over the top. My friend’s mahi mahi, from the daily specials, wasn’t a catch like my dish, but she still happily filled her tummy. The meat was firm, not as flaky as other mahis I’ve tried (I took a few forkfuls off my friend’s plate), but it still BERGENMAG.COM

had the rich flavor one expects from this fish. Her sides, meanwhile, might’ve stolen the show: A light squash couscous and savory bacon succotash, she notes, were a pleasant surprise. With just four choices on the menu and one on the specials, dessert clearly isn’t Taphouse’s concentration. My friend’s dish, chocolate decadence, was a flourless cake brimming with, well, chocolate as well as a tangy Grand Marnier and raspberry sauce. I kept my afterdinner treat tame, opting for the warm apple tart with vanilla ice cream from the evening specials list. With the name Taphouse, it’s no wonder that craft beers and cocktails are the star. But don’t overlook the menu—it’s chock full of surprises and new takes on some old favorites.
