But a look at the pictures starting on page 58 will reveal why this “home issue” has me especially excited about one feature of a home: the backyard pool. yes, it’s a bit early to use one. Still, those lovely pool images have me psyched for a swim. We hope this issue of Bergen Health & Life gives you similar inspiration— indoors and out. on page 48, read how the redo of a north Jersey home by just the right designers reflects the style and personality of the homeowners. See the ways a staircase can provide grandeur and drama on page 40. and on page 34, intriguing items for the home prove that black and white—far from being tepid inferiors to color—can be a lively duo indeed. (one piece may make you wonder: is it a chair, a picture of a chair, or both?) Even our travel article has something to say about design. on page 98, visit a storied Beaux-arts Manhattan hotel that’s a showplace once again, as it was 112 years ago, thanks to a meticulous architectural restoration. it’s a great “staycation” spot. there’s more, of course: three delicious gluten-free recipes (page 78), an introduction to jackfruit (page 84), a colorful cocktail made with hibiscus tea (page 86), a fresh look at paramus (page 36) and, on page 32, a tinkerer’s daydream come true: luxurious watches you can actually watch. Reading can take you to faraway places—and also very near ones! These recently published volumes feature locations in the county or boast other Bergen ties: If you live on Sicomac Road in Wyckoff, you’ll get a kick out of Amy Stewart’s 2015 Girl Waits With Gun. The New York Times best-selling author places the fictional story of Constance Kopp—a real Bergen County deputy sheriff in 1914 and 1915—in and around Hackensack, Paterson and that Wyckoff road.

Ridgewood resident and New York Times best-selling author Harlan Coben, a master of plot twists and turns, isn’t shy about throwing his favorite North Jersey landmarks into his thrillers. Baumgart’s Café in Ridgewood is Coben’s go-to restaurant in real life—no wonder it appears in several of his novels, including his latest, Fool Me Once. In other books, Coben’s characters have dined at Ridgewood’s Best of Everything and Janice Bistro (now Just Janice) in Ho-Ho-Kus. (Want to become a part of Coben’s next book? A chef to watch Imagine going from startup to stardom in just 12 months. That’s what’s happening to Joseph Cuccia, executive chef at 17 Summer Restaurant, who was just named a semifinalist for the James Beard Foundation’s Rising Star Chef of the Year award. This honor from the nonprofit culinary arts organization recognizes “a chef age 30 or younger who displays an impressive talent and who is likely to make a significant impact on the industry.” Joseph and his sister Jenna opened the modern American restaurant last March and became famous among locals for their rustic cuisine and family recipes. He became a bigger name when he appeared on CNBC’s Restaurant Startup, a reality show that spotlights aspiring restaurateurs. Dog: Remy, 1 year old, merle cockapoo Owners: Julie and Yoni Mintz of Washington Township Remy arrived in New Jersey via a Kentucky breeder last year, and he’s been a bundle of energy ever since—he plays ball on the deck with his “dad,” enjoys car rides and is always eager to romp outdoors. “He tests his boundaries with his mom and dad, bringing sticks into the house,” Julie reports. Remy is also fond of his other family members: He regularly sees his “grandmother,” Connie Oshinsky of Woodcliff Lake, and loves a trip to the playground and a ride down the slide with his “Aunt Lisa” (pictured). Opera’s new face

HERE’S a zip code that le ads THE NATION IN retail sales (with more than $5 billion a year) even though its stores stay closed on Sunday. But don’t think of this borough of almost 27,000 residents as only a shopping hub. In 1922, when Paramus broke away from Rochelle Park to become its own borough, it was a truck-farming area with 1,600 residents. (A few years later, its Arcola Amusement Park beckoned visitors—till fire destroyed it in 1929.) But this community, located where routes 17 and 4 cross, was too handily located to remain rural for long. The ’50s

brought an explosion of growth, as the population nearly quadrupled and the Bergen Mall (now The Outlets at Bergen Town Center) and Garden State Plaza (now a Westfield property) were built. Today the borough is home to Paramus Park and the Fashion Center as well. But Paramus also boasts the Bergen County Zoo, Bergen Community College and its popular Ciccone Theatre, quiet residential neighborhoods and acres of family-friendly parks—there are nearly 20 of them scattered throughout the borough’s 10.5 square miles.

Time to treat those

feet?

If you’re ignoring one of these five foot problems, you’re missing a chance to feel better all over. By timothy Kelley FEE T AREN’T MOST PEOPLE’S FAVORITE FE ATURE. BUT BY the time you reach age 50 these ingeniously complex machines— with more than 100 tendons and one-fourth of your body’s bones—will have carried you the equivalent of three times around the world. It pays to guard the health of your feet, because foot problems can affect your balance, energy, mobility and overall well-being. “With feet, people too often treat the symptoms and ignore the cause,” says Richard T. Braver, D.P.M., a Fair Lawn-based podiatrist. That cause can be poor running or walking form or poorly chosen shoes. And heredity plays its part. For example, people born with flat feet tend to “toe out” too much, increasing the tension on the ligaments on the bottom of the foot and risking a painful condition called plantar fasciitis. Here’s the lowdown on five foot problems:

ACHILLES TENDINITIS What it is: Pain along the back of the leg near the heel. It’s painful inflammation of the Achilles tendon, the body’s largest tendon, which connects the calf muscles to the heel bone. What causes it: Repetitive stress on the tendon. It can be worsened by faulty stretching or a change in exercise habits. Who gets it: Flat feet, tight tendons or arthritis are risk factors, says the American Podiatric Medical Association (APMA). How it’s diagnosed: The doctor looks for thickening of the —Richard T. Braver, D.P.M. tendon, possible bone spurs and limited foot-flexing ability. An X-ray may identify spots of calcification, or hardening. How it’s treated: Try rest, ice packs and non-steroidal anti-inflammatory medications such as ibuprofen or naproxen first. Shoes that are softer at the back of the heel may reduce pain. Calf stretch exercises can cut stress on the tendon. The American Academy of Orthopaedic Surgeons says surgery should be considered only if pain doesn’t improve after six months of trying other treatments.

BUNIONS What they are: Bony bumps on the joint at the big toe’s base. Often that toe slants toward the others; sometimes the skin is red and sore. What causes them: Bunions develop when weight presses unevenly on the foot’s joints and tendons. Pressure on the toes can cause them, and inherited structural defects or a condition such as arthritis can make them more likely. Who gets them: People who wear tight, narrow shoes, including high heels, are at high risk. How they’re diagnosed: A bunion is plainly visible, but an X-ray may also be used to determine the deformity’s extent. In an exam, you’ll move your big toe up and down to test range of motion. How they’re treated: A change of shoes may help, and taping, padding and splinting are options. Icing after

you’ve been on your feet too long can relieve pain, as can antiinflammatory medications. Choose surgery only if there’s significant pain or if the condition limits your ability to wear appropriate shoes.

MORTON’S NEUROMA What it is: Burning pain or numbness in a nerve under the ligament between toes, usually between the third and the fourth. It can feel as if you’re walking on a marble, and may get worse as the day wears on. What causes it: A thickening of the nerve in the ball of your foot, produced by pressure, irritation or injury to the affected area. One of the most common offenders is wearing shoes that have a tapered toe box, or high-heeled shoes that cause the toes to be forced into the toe box, according to the American College of Foot and Ankle Surgeons. Who gets it: It affects women eight to 10 times more often than men. How it’s diagnosed: The doctor feels for a mass or a “click” between the bones. Range-of-motion tests rule out arthritis or joint inflammations, and X-rays can make sure there’s no stress fracture. How it’s treated: Often patients are switched to roomier orthotic shoes and pads to lift and separate bones. Injections of corticosteroid medications to reduce swelling and inflammation sometimes help—studies have shown success with such injections guided by ultrasound. If other treatments fail, a surgical procedure called neurectomy can remove the affected bit of nerve tissue, or one called neurolysis can free up tight tissue around the nerve.

A doctor may recommend wearing a splint during the night that stretches your calf and arch, and may also teach you to apply athletic taping to support the bottom of your foot. Orthotic heel cups or custom-fitted arch supports may also be suggested. If these treatments bring no relief, a single steroid injection may relieve pain (multiple shots aren’t recommended). Extracorporeal shock wave therapy—the use of sound waves aimed at the area to trigger healing—can also be tried. Dr. Braver of Fair Lawn treats chronic plantar fasciitis—or Achilles tendinitis—using a method introduced in Europe. “With an injection in the heel bottom, we advance a needle to irritate several spots so that the body sends inflammatory cells to the area, releasing growth factor—protein—that prompts healing,” he says. Then he fills a test tube with the patient’s blood, spins it in a centrifuge to extract “platelet-rich plasma” and injects that into the problem zone. “By stimulating more inflammation, we can make a chronically painful area feel much better,” he says. The success rate is about 70 percent.

TOENAIL FUNGUS

What it is: It starts as a white or yellow spot under the nail’s tip and may cause discoloration, thickening and crumbling of the nail. What causes it: Microorganisms can invade your skin through tiny cuts, especially in places like swimming pools, locker rooms and showers. Toenails are susceptible because fungi thrive where it’s dark, warm and moist. In this alternative medicine treatment, your foot becomes a guide to the rest of you. A therapist applies pressure with the fingers to different areas of the foot believed to correspond to the body’s different organs and systems. “It promotes relaxation, and when you relax, your body restores itself,” says certified reflexologist Catherine Bello, owner of Sole Revival Reflexology Spa in River Edge, who reports that many patients get relief from headaches or stomachaches within 15 minutes. “But it’s not for chronic conditions or foot conditions like plantar fasciitis,” she adds. Studies have shown that reflexology can promote a relaxation effect (not just as reported by patients, but by EEG recording of alpha and theta waves), improved kidney function and increased blood flow to the kidneys, reduced anxiety and enhanced sleep. National Cancer Institute research suggests that the treatments can improve cancer patients’ quality of life. And according to the University of Minnesota, some 27 studies have indicated that reflexology can reduce pain. The bottom line? Never substitute reflexology for needed treatment for a medical condition, doctors warn. But if you’re open-minded and looking for a refreshing experience, go for it. bergen he alth & Life

The bones were there: beautiful architectural details, a dining room table, comfy living room chairs, a fourposter bed and area rugs too. But a young family in Northern New Jersey needed some professional help to take their classic center hall colonial across the finish line. “We used as many of their pieces as we could,” says Jon Martinez of Beautiful & Gracious Home Interiors, who, with partner James MacDonald, relocated and reupholstered furniture. In addition, the duo selected wallpaper, fabricated custom window treatments and rugs, and shopped for additional furniture, lighting and accessories. “It was very rewarding,” says Martinez. Baked Eggs in Avocado Cups This is a breakfast high in protein and great fats to energize you as you begin your day. It’s wise to choose eggs that are on the small side, as their flavor is more concentrated and they’ll fit better in the avocado cups. For an extra kick and added protein, serve with salsa and a sprinkling of chopped bacon. Serves 2–4

n 2 ripe avocados n 4 small farm-fresh eggs n 1 Tb. ghee or unsalted butter, melted

n Sea salt to taste

n Preheat the oven to 400°F. n Cut the avocados in half lengthwise and remove the pits. Using a tablespoon, scoop out 1 to 2 tablespoons of avocado flesh from each half to create 4 cups, each large enough to hold one of your eggs. (This is a delicate process that can produce ideal results if the eggs are small.)

n Crack an egg into each avocado “cup,” yolks first, followed by whites if space allows. Drizzle each with the melted ghee and sprinkle with sea salt.

n Arrange the avocado cups in a small baking pan to fit them as close and snug as possible. Bake for 10 to 12 minutes, until the egg whites look cooked through. Serve immediately. TIP: If you have left-over avocado you can rub the flesh lightly with a few drops of lemon and olive oil and cover tightly with plastic wrap to keep the freshness and make the color last longer. Best if eaten within a day or two.

Caesar Salad with Roasted Chickpeas This version of classic Caesar dressing is great as a dip for cold chicken, with raw veggies, on sandwiches or—of course—on salads. Consider making it in bigger batches and stashing it in the fridge so it will be at the ready for snacking. Serves 4–6

For the Classic Caesar dressing 2 large soft-boiled eggs ¼ cup fresh lemon juice 3 cloves garlic, minced ¾ Tb. anchovy paste 1 tsp. Worcestershire sauce (check label to make sure it is gluten-free)

n ½ tsp. Dijon mustard n ½ cup shredded Pecorino Romano cheese

n 1 cup extra-virgin olive oil For the salad

n 3 heads romaine hearts, torn into bite-sized pieces

n ¼ cup roasted chickpeas

n First make the dressing: Put all of the ingredients except the olive oil in a food processor and blend for 30 to 60 seconds. With the food processor running, slowly drizzle the olive oil down the chute to emulsify the dressing into a creamy consistency.

n Put the romaine and roasted chickpeas in a salad bowl. Add the dressing and toss to coat. TIP: Feel free to get creative with your Caesar, perhaps adding crumbled bacon, soft-boiled egg, roasted tomatoes—or all three. Also, anchovy is a strong flavor. You may wish to start with less, then taste before your final mixing to see if you want to add the full amount.

Pan-Seared Fish with Crispy Skin Choose a fish that is available wild or sustainably farmed in our area. You can serve these crisp-skinned fillets on top of salads, as a main dish acccompanied by a vegetable serving, or with your favorite style of eggs. The acidity of lemon or lime can add some piquant flavor. Serves 4–6

n 4 to 6 fish fillets, about

n Use a sharp knife to score the skin

5 ounces each, skin on and bones out (salmon, bass, trout or snapper)

side of each fillet with shallow incisions, not piercing the flesh. This will help prevent the skin from curling up.

n 2 Tbs. unsalted

n Heat a large cast-iron skillet or sauté

butter, ghee, coconut oil or extra-virgin olive oil

pan to medium to high heat. Add the fat to the pan (preferably ghee) and salt both sides of the fish just before searing it.

n Sea salt to taste n 1 lemon, sliced, for serving

n Add the fish to the hot pan, skin side down, and let the skin crisp up and the flesh cook about two-thirds of the way through, 3 to 5 minutes, depending on the thickness. You can baste the fish with the fat as it is cooking, but do not move it until it is ready to be flipped. (Coax it with a spatula to see if it is ready.)

n Once the fish is cooked most of the way through and the skin is brown and crispy, flip the fish using a spatula. Cook flesh side down until just cooked through. This should only take a minute or two.

n Serve immediately with lemon slices to garnish. TIP: Keep an eye on the fish as you cook it, as overcooked fish loses its delicate flavor and can become more dry and “fishy”tasting.

if not, maybe it’s time to meet this exotic nutritional powerhouse. IT’S SPIKY AND STRANGE-LOOKING, AND it can grow to the size of a large household pet. Jackfruit is a member of the mulberry and fig family that is thought to have originated in India but has become Bangladesh’s national fruit. Capable of growing up to 100 pounds, it’s also the largest tree fruit in the world. And, depending on its ripeness, jackfruit can be enjoyed in both savory and sweet dishes.

One cup of jackfruit provides 37 percent of your daily value of vitamin C and 25 percent of B6. It’s also a good source of potassium (21 percent), magnesium (12 percent) and fiber (10 percent). Its seeds, which are edible and can be roasted or boiled like chestnuts, are high in protein and low in fat. Added bonus: A cup of the sweet-tasting fruit contains just 150 calories, making it an ideal snack for waist watchers.

Jackfruit is available in many Asian markets, usually in a can. (For sweet dishes, look for the ripe variety preserved in syrup; for savory ones, opt for the young green variety preserved in brine.) It’s also sold dried or frozen, and you may be able to score a fresh fruit. (Try H Mart, which has locations in Englewood, Fort Lee, Leonia, Little Ferry and Ridgefield.) To prepare fresh jackfruit, cover your work surface with newspapers to catch the natural latex that will ooze out of the fruit when you cut it. (It’s extremely sticky!) Next, coat your hands and knife blade with cooking oil to prevent the hard-to-remove sap from sticking. Cut the fruit in half and remove the flesh, which will be clumped together in bulbs. Use a paring knife to extract the remaining pulp strands from the bulbs and to slice open the bulbs and take out the large seeds. Try not to be dissuaded by the musky, onionlike smell— as you get deeper into the fruit, a sweet tropical aroma will take its place. In Indian and Thai cuisine, jackfruit has long been used in curries or soups. The savory kind is favored by vegetarians as a meat substitute because of its fibrous texture. Border Grill chef Susan Feniger, for example, famously served BBQ “pulled pork” jackfruit on boa buns. The sweet variety, which has a tropical fruity flavor, can be eaten fresh, juiced, turned into jam or whipped up into a dessert such as ice cream.

The scholarship aid was funded in part by the Institute for Mexicans Abroad, founded by Mexico in 2005, and BCC was the first New Jersey college to receive it. With matching funds from BCC’s foundation, the scholarships will benefit up to 86 qualifying students.

elegant encore A storied Manhattan hotel enters a second golden age, thanks to a meticulous restoration by architect David Rockwell. by rita guarna sometimes the greatest adventures are those enjoyed close to home. If a Manhattan “staycation� sounds tempting, spend a sojourn in the swank Carlton Hotel at Madison and 29th Street in the city’s re-energized NoMad neighborhood. The Beaux-Arts beauty is brimming with ultramodern amenities, while boasting an enchanting history fit for an Edith Wharton novel. Designed by renowned architect Harry Allen Jacobs, The Carlton originally opened as the Seville Hotel in 1904. Built of red brick with white terra-cotta trim on a rusticated limestone base, it featured such sculptural ornaments as rounded copper bays, cartouches and panels with foliage and lion heads. A stunning Tiffany-style glass skylight was also a focal point (later painted over to guard against World War II air raids).

Several years ago, architect David Rockwell completed a multimillion-dollar renovation that returned the hotel (renamed The Carlton in 1987) to its former grandeur. A fleur-de-lis on the original hotel’s second floor so captivated Rockwell that he made it a design motif. He salvaged an existing antique revolving door and put in herringbone-patterned wood floors, oiled-bronze handrails, distressed paneling and antique mirrors. The skylight made a comeback, all 317 rooms were tastefully transformed and a cascading two-story waterfall was installed in the lobby. If you stay, you’ll find Herald Square and all of Midtown’s thrills just a few blocks to the north and the three-story Limelight Marketplace just to the south and west. And after you’ve dined a time or two at the hotel’s own eatery, Millesime, take in a casual-yet-elegant meal at nearby Madison & Vine wine bar or DB Bistro Moderne, a Parisian-style bistro run by famed chef Daniel Boulud that serves contemporary FrenchAmerican fare. All rooms offer complimentary wireless Internet access, 42-inch LCD TVs, iPod docking stations and electronic safes. Not keen on leaving your pooch behind?
