Brunches worthy of Mom

Generally speaking, mothers are pretty sharp—just heading out to the car at brunchtime on that special day, yours will guess you’ve got something special in mind. But why not make your destination special too? To find three Bergen brunch spots good enough for Mom, we consulted the experts—that is, you! These three restaurants were voted tops by readers last year in our Best in Bergen survey: The Ivy Inn (268 Terrace Ave., Hasbrouck Heights, 201.393.7699; ivyinn.com) features a two-course, prix-fixe Mother’s Day Brunch— along with a 12-and-under brunch menu that will delight the kids. Once a stagecoach inn and later a speakeasy, this charmingly restored 1870s-era building promises Mom an atmosphere of indulgence (and a chef who once worked at Sardi’s in New York). After all, ivy is a symbol of enduring love. With food equally tasty but a vibe a bit looser, Mason Jar (219 Ramapo Valley Rd., Mahwah, 201.529.2302; masonjar.com) offers a Sunday brunch menu with more than 80 food and dessert items served buffet-style, including brick-oven pizzas and barbecue specialties. Just 20 feet from the Hudson, this restaurant has outdoor waterfront seating with a breathtaking view of Manhattan. Room with a view— and great food too!

Fishing for something new Have you ever heard of tusk, European plaice, wolffish or blue ling? If you answered “no” you’re likely not alone. Each of these delectable fish can be found in Iceland’s cold waters—and in a little shop in Closter. Olafur and Maria Badrusson recently opened The Fish Dock in that town, selling fish that isn’t readily available in North Jersey. The couple grew up in a small village in Iceland, where they ate wild-caught fish daily; they decided to share their seafood secrets with North Jersey residents when they moved to Closter. The shop is stocked with fish from Iceland, except for shellfish, which is sourced in the U.S. All of its fish, which range from $12 to $21 per pound, are either wild-caught or bred in sustainable farms and are free of antibiotics or chemicals. Not keen on preparing your own fish dish? The shop also sells prepared meals such as fish burritos in a smoked tequila marinade or seared European plaice with fresh broccoli salad. The owners have also included some of their favorite easy-tofollow recipes on their website. So if you feel like branching out beyond familiar salmon and halibut, stop by The Fish Dock for some healthy protein like you’ve never tasted.

You’ll hit the culinary jackpot with a meal at Molos (1 Pershing Rd., Weehawken, 201.223.1200; molosrestaurant.com), a waterfront Greek seafood restaurant that features great food, great service and a great view. Owner Eliana Stefanitsis greets guests like they’re friends visiting for a home-cooked meal. In the dining room, floor-to-ceiling windows overlook the river. There’s a vast bar area in modern white with a black-and-white, basket-weave tile floor. Tables, too, are simple and stylish with crisp white linens. And what a meal! Of course, seafood is the star of this stylish eatery, where chef Gregory Zapantis, born on the Greek island of Kefalonia, presides. Before becoming executive chef at Molos a year and a half ago, he worked in several New York City eateries, including Thalassa, Trata and Estiatorio Milos. We feasted first on a perfectly prepared crab cake with just enough bread crumbs and an appetizer consisting of a cold salad of octopus, shrimp and squid. The medley was cooked to perfection with just the right blend of spices. I chose the Chilean Sea Bass Fricassée with Swiss chard, fingerling potatoes and lemon emulsion for my entree. My dining companion opted for the snapper filet, which was oven-roasted, then wrapped in parchment paper. The fish in both dishes was fresh, moist and very flavorful, though I admit to preferring mine. Molos has an extensive offering of Greek wines, and we opted for one suggested by our waiter. For dessert, we shared a trio of sweets: baklava, cheesecake and chocolate cake with ganache served with fresh fruit. They were all good, but we favored the nutty stickiness of the flaky Greek pastry. Molos is a perfect choice for a special night out or when you crave great fish. And you can’t beat the view! —Rita Guarna

The dogs are on the loose Hot dogs on wheels? We’re in! Daniel DeMiglio, owner of Callahan’s, has added a second food truck for his popular North Jersey hot dog establishment—and it’s headed south. Beginning later this month, the new truck—sporting a stainlesssteel kitchen fully equipped with two deep fryers and a Sub-Zero refrigerator—will begin its coastal journey in South Jersey and continue through Philadelphia and Washington, D.C. But fear not; the original Callahan’s truck will continue selling its oversized hot dogs and freshly cut fries Tuesdays through Sundays through October 31 at Van Saun Park in Paramus. But a study of nearly 3 million people found that PPI users were 16 percent more likely to have a heart attack and twice as likely to die from one than non-users. Every masterpiece begins with a clean slate, a canvas waiting for an artist’s touch. For Hillsdale-based interior designer Jennifer Pacca, the canvas was a newly constructed home in Saddle River and its 432 square feet of empty kitchen space. To start filling in the pieces for the floor plan, Pacca collaborated with Stephen Caruso of Kitchen Concepts in Norwood and the homeowners to determine their wants and expectations. “I consider the space, the clients’ lifestyle, how much they cook, who lives in the house, what appliances they want and the overall vision they have,” Pacca explains. Large marble counters were installed to give the chefs of the house plenty of food prep space, while the large island provides additional surface area for work. The 8-footlong island, which contains a second sink, a dishwasher and extra storage compartments, is the centerpiece of the kitchen—its custom design also provides ample room for family and guests to pull up a stool for a quick conversation, a bite to eat or nighttime homework for the kids, the designer notes. Two pendant lights combine with the recessed lighting to create a rich glow on the island’s surface. The homeowners chose pristine white cabinets to run along the perimeter of the kitchen, contrasting nicely with the dark hardwood floor. Specially designed doors were selected for the cabinets near the stove. Pacca says she and her collaborators saw the design of the doors in the Kitchen Concepts showroom. “We knew we had to use it as one of the focal points in the kitchen,” she says, “so placing them next to the stove made perfect sense.” The white-surface dishwasher and refrigerator match the gleaming cabinetry, while stainless steel was selected for the cooking appliances —two ovens and stove—as well as the conversation-starting range hood, which Pacca notes “we all just fell in love with.” “This is a very awesome kitchen to work in, prep in and congregate in,” she says. “There is plenty of counter space and room for everyone to move about.”

Ramsey’s residents aren’t the only ones taking advantage of this town’s appeal—hundreds of North Jersey natives visit its thriving downtown business district every weekend. It is known for the Ramsey Farmers’ Market, located at the Main Street train station just minutes from numerous shops and dining spots. The market, which was opened in 2010, draws about 40 vendors from all over the Garden State and the Hudson Valley and features everything from fresh fruits and vegetables to homemade pastas, breads and sauces.

Known for its small-town vibe, Ramse y was developed around its railroad station, which is now the state’s oldest operating train depot. That’s a plus for both convenience and charm. The northern Bergen County borough traces its origins to 1848, when the Ramapo and Paterson Railroad opened a line to connect Paterson with ferries crossing the Hudson to Manhattan. Landowner Peter J. Ramsey sold the land that became the site of the station. More than half a century later, in 1908, 5.6 square miles of rich, rural land were designated as a new borough and named for him. Refractive errors which include nearsightedness, farsightedness and astigmatism are the most common causes of blurred vision. Eye problems can put all that at risk, so it’s vital to protect those peepers with regular checkups. Eye exams should start early in life. “Toddlers as young as three should have their eyes checked for amblyopia, commonly known as ‘lazy eye,’” says Douglas Liva, M.D., of Liva Eye Center in Ridgewood. “Once children reach age five, it’s more difficult to correct that condition.” If you suspect that you or a family member has suffered an eye injury, remember that early evaluation is key. “I saw a college student once who got into a fight, was injured and waited four months to get his eyes checked,” says Dr. Liva. “That was unfortunate, because he suffered some permanent visual loss that could have been prevented with earlier treatment.” According to the World Health Organization, 80 percent of vision problems are avoidable and easily curable. While the years bring inevitable wear and tear on the eyes, seeing an ophthalmologist regularly, getting prompt treatment for any problems and avoiding certain dangerous conditions can help keep your eyesight strong for decades. Beware these four eye maladies: Cataracts What is it: Dr. Liva describes this condition as the clouding of the human lens. “Think of your camera,” he says. “No matter how much you focus, if the lens is cloudy, you won’t be able to see clearly through it.” Risk factors include age, a family history of the condition, uncontrolled diabetes and dehydration. Should you worry? People with diabetes as well as those over age 60 should be checked regularly for cataract. The good news? “Modern cataract surgery can not only remove cataracts, but also reduce refractive errors,” Dr. Liva says. These errors include myopia (nearsightedness), hyperopia (farsightedness), presbyopia (an age-related condition in which diminished flexibility in the lens can cause symptoms similar to farsightedness) and astigmatism (an irregularity in the eye’s curvature that can produce blurry vision). Dry Eye What is it: Dryness that commonly occurs when there’s a shortage of oil in tears. “Your tears are made up of oil, water and

mucus,” Dr. Liva explains. “When people don’t secrete the proper amount of oil due to a dysfunction in their meibomian glands [located at the rims of the eyelids], that causes tears to evaporate quickly, leading to dry eyes.” Should you worry? Because of hormonal factors, women are more susceptible to this condition. Luckily, it’s easily detectable and there are treatments such as over-the-counter drops to help soothe the pain. Dr. Liva’s advice? “Dry eyes can be minimized by omega-3 fatty acids.” Try the supplement or stock up on oily fish such as salmon.

Glaucoma What is it: A disease of the optic nerve for which the numberone risk factor is an elevated intraocular pressure—fluid pressure in the eye. This pressure varies through the day and can be influenced by drug or alcohol use, caffeine, some exercises—even playing some wind instruments. (Check your habits with your eye doctor.) The increased pressure damages the optic nerve, which sends images to the brain. “Think of a tire,” says Dr. Liva. “Putting too much pressure on it is no good.” The result? Slow loss of peripheral (side) vision at a slow speed. Other risk factors include being over 60, being African-American or Hispanic, or having a family history of the condition. Should you worry? Glaucoma at its worst can lead to loss of vision, and symptoms don’t usually present themselves until the condition is advanced. eat mindfully Do you munch on the run? For better health, a dietitian says, slow down and let all five senses savor your food.

Sixty people with their eyes closed consumed a single almond each. Then a berry. Then a piece of chocolate. “Free your mind,” said the speaker. “Feel the food on your tongue. Smell it. Taste it. Notice the sounds when you bite down and chew.” The event was a recent presentation at Ramapo College by dietitian Jacqueline Ehlert, a research fellow at the college. The assembled group ranged from teens to seniors, and she was taking them through simple exercises to “waken the senses.” The goal was to acquaint them with a strategy called conscious eating. “This is how we should be eating all the time,” she said. And if you’re someone who grabs breakfast in the car on the way to work—or gobbles a salad at your desk for lunch while staring at a screen, or punctuates dinner with smartphone check-ins to see who’s texted what—it just may be that your senses could use some waking too. Ours is a society on the go, says Ehlert, and daily distractions such as work, television and social media frequently pull us away from what’s most important—our health. Slowing down to practice conscious eating, says Ehlert, is much better for us, particularly because unconscious eating typically becomes overeating. Our hasty, hurried gobbling can turn into a cycle that works like sugar addiction, the dietitian explains. (And in many cases, of course, it is sugar addiction.) While not fully paying attention we rapidly consume large amounts, and that causes our blood-sugar levels to spike. Then, in perhaps an hour, those levels crash, producing sensations of lethargy,

hunger and a new craving for more of the same food. “We begin to think things like ‘All I have to do to be happy is to eat ice cream,’” says Ehlert. “It can be a strong loop, easy to get caught up in. To break it, you need to be a conscious eater. If you’re eating chocolate, stop yourself after two or three pieces, then breathe and feel what’s happening inside your body. If you slow down and take a deep breath, you’ll be more conscious of what you’re doing and make better choices.” Audience member Stan Richmond, a member of Ramapo Foundation’s board of governors, took Ehlert’s words to heart. “If you sit at the table and concentrate on eating—without a sound, without reading emails—you can really enjoy your meal,” he says. “A lot of us have to make a concerted effort to do that. It’s a whole new experience for me. Instead of having a whole cup of walnuts or almonds each night, I’m going to start eating them individually—and consciously.” Full-sensory eating leads to more awareness and attention to the foods we consume, says Ehlert. It’s not meant to “guilt” us to limit our eating, but rather to make us conscious of how we feel so that every bite can truly be a choice. And there’s one more thing conscious eating does: It creates good and bad “food memories.” “Research shows that our experience of foods can actually modify cell biology,” Ehlert reports. “Our brains form strong connections to these memories of food.” And our bodies will thank us when we practice conscious eating.

6 tips for conscious eating

n Always sit at a table to eat. Put electronic devices away so there are no distractions. n If you’re not used to eating in silence, consider playing soft, relaxing music. n Plate food attractively and pay attention to portion size. n Be conscious of the food you eat and how it is affecting your body. n Eat slowly. This will make it easier for your stomach to let you know when you’ve had enough. n Savor every mouthful and chew your food well.

Robert Cho Executive Chef Kimchi Smoke, Bergenfield His flavors are “out of this world,” but Cho likes to buy his ingredients locally. Favorite sources include Sun Noodle in Teterboro for ramen noodles and Central Bakery in Hackensack for marble rye. For donuts, Cho’s go-to spot is Glaze Artisan Donuts in New Milford, where they cook in small batches with only natural ingredients. What does he use it for? His infamous creation, the Chonut: smoked brisket, smoked kimchi, Fat Boy Bourbon Chipotle Sauce, cheese, bacon and scallions—on a glazed donut. What a time to be alive. Thomas Ciszak Executive Chef Chakra, Paramus “For produce, I usually shop at the Asian markets,” this chef says. “I like H Mart in Hackensack and New K F Supermarket on Kinderkamack in River Edge. There I can buy greens I don’t find in American brand supermarkets.” You’ll find choice veggies such as young garlic chives, Japanese eggplants, parsley root and Chinese broccoli (gai lan) on Chakra’s menu. His favorite? Snow pea shoot leaves, which he uses to make his jumbo lump-crusted crab cakes and horseradish-crusted crab cakes. Chris D’Eletto Executive Chef Jack’s Café, Westwood D’Eletto is a fan of Trader Joe’s. “It’s a great place to get organic items,” he says. “Sometimes I go there to shop for stuff for home and end up with some ideas for Jack’s.” Looking for a good dry-aged steak? D’Eletto recommends B&M Meat Market in Park Ridge. For kitchen equipment, he goes to Bergen Restaurant Supply just over the border in Pearl River, N.Y. “They have everything I need—or they can order it for me,” says the chef. Michael Latour Chef/Owner Latour, Ridgewood In the summertime you can find Latour at the Ramsey Farmers’ Market sifting through their fresh produce. His favorite find at the market? Wild mushrooms. Specifically, the maitake or hen-of-thewoods mushroom. “It’s a great addition to our potato dumpling forestierre appetizer or any wild mushroom dish,” says Latour.

Christine Nunn Executive Chef Picnic on the Square, Ridgewood This former journalist knows the scoop. Trust her when she reports, “Nicholas Markets Foodtown in North Haledon makes the best sausage in-house. It’s tiny, but it has very knowledgeable, CIAtrained butchers.” Nunn also raves about the market’s pastry department and recommends all of its homemade breads. For smoked ham and bacon, Nunn travels to the Swiss Pork Store in Fair Lawn. And for kitchen tools? “Like most chefs in the area, I go to Chef Central.”

Jack Zaorski Chef/Owner Ivy Inn, Hasbrouck Heights Charged with preparing food for a romantic restaurant that has inspired many a proposal, Zaorski obviously knows a thing or two about putting a little love in the shopping cart. To sweeten things up, Zaorski goes to the Savory Spice Shop (locations in Westfield and Princeton) and gets natural cocoa powder for his chocolate desserts. Another favorite? Indonesian cinnamon for desserts such as apple pie, rice pudding and carrot cake—all baked on the premises.

Janice Tinari Chef/Owner Just Janice, Ho-Ho-Kus Nothing can keep Janice Tinari down. Not even a car crashing into her restaurant, as happened last August. After closing up shop for four months of reconstruction, Tinari is back in business. She favors Demarest Farms in Hillsdale and Abma’s Farm in Wyckoff for fruits and veggies. “I just love Demarest’s peaches,” says Tinari. “For kitchen tools and gadgets, I actually like to go to Home Depot.” Michael Ventura Executive Chef The Plum and The Pear, Wyckoff As a person with diabetes, Ventura knows healthy cooking. For freerange poultry (no steroids, antibiotics or animal by-products allowed), he visits Goffle Road Poultry Farm in Wyckoff, where chickens, ducks and turkey are home-grown and naturally processed. For inspiration, Ventura likes to visit Abma’s Farm. “Sometimes I go in there without knowing what to prepare, and I get inspired just by seeing the different colors,” Ventura says.

Pappardelle & Silly Sauce with Tiger Shrimp Serves 2

By Chef Joel Scheinzeit of Grange in Westwood INGREDIENTS:

DIRECTIONS:

n 8 oz. fresh pappardelle n 10 tiger shrimp (peeled and deveined) n 1 Tb. shallots, chopped n ½ Tb. garlic, minced n 1 cup portobello mushrooms, sliced n ½ cup grape tomatoes, diced n 1 red pepper, small dice n 1 carrot, small dice n 1 green zucchini, small dice n 8 oz. tomato sauce n 6 oz. heavy cream n 2 Tbs. unsalted butter n 1 Tb. olive oil n 1 cup Parmesan cheese, grated n Chiffonade fresh basil n Big ol’ splash of Grand Marnier n Salt and pepper to taste

Make the silly sauce n Melt 1 Tb. butter in a saucepan over medium-high flame. Add the shallots, mushrooms and tomatoes and sauté for 2 to 3 minutes, or until vegetables are tender. Season with salt and pepper. Remove from heat and add a big ol’ splash of Grand Marnier. Return to heat and carefully flambé. Add tomato sauce, heavy cream and Parmesan cheese. Simmer over medium heat for several minutes, allowing the flavors to meld. Make the shrimp and veggies n Melt 1 Tb. butter and 1 Tb. olive oil in a small saucepan over medium-high heat. Add the diced red pepper, carrot and green zucchini and sauté for 3 to 4 minutes or until the vegetables are tender and slightly browned. Turn heat slightly higher and add the tiger shrimp to the pan. (You may dredge these in egg and flour, but it’s not necessary). Sauté for another 2 to 5 minutes until the shrimp are firm and have a crisp browned coating. n Combine the cooked pappardelle and silly sauce. Coil around a serving fork and then neatly place in middle of a bowl. Spoon the sautéed vegetables into the center of the pasta. Place the tiger shrimp evenly spaced around the edge of the bowl. Garnish with the fresh basil.

Spring ‘Caesar’ Salad with White Frisée, Snow and Snap Peas, Parmigiano-Reggiano-Lemon Dressing Serves 4 By Chef Marc Forgione of American Cut in Englewood DIRECTIONS:

INGREDIENTS: For the Caesar dressing: n 2 large eggs n 2 Tbs. Dijon mustard n 2 garlic cloves n 1 cup extra-virgin olive oil n ¾ cup finely grated Parmigiano Reggiano n ¼ cup fresh lemon juice n Kosher salt n Freshly ground black pepper For the croutons: n 2 garlic cloves, halved lengthwise n 4 (1-inch-thick) slices country bread, such as filone n Extra-virgin olive oil n Kosher salt n Freshly ground black pepper

For the salad: n 2 cups (about 7 oz.) snow peas n 2 cups (about 8 oz.) sugar snap peas n 4 cups white frisée, stems and green parts, trimmed n 3 Tbs. chiffonade of fresh mint n Kosher salt n Freshly ground black pepper n 1 lemon, halved n Extra-virgin olive oil n 1 cup finely grated Parmigiano Reggiano n Red pepper flakes

Make the Caesar dressing n In a 2-quart pot, bring 3 cups of water to a boil over high heat. Reduce the heat to medium-low until the water is simmering and gently lower the eggs into the pot. Cook the eggs in the simmering water for 6 minutes. Immediately transfer the eggs to an ice bath and allow them to cool for 4 minutes. Crack and peel the eggs and transfer to a food processor fitted with a blade. Add the mustard and garlic, and pulse a few times until the ingredients are just combined. With the motor running, slowly drizzle in the oil until emulsified. Add the cheese and lemon juice and pulse a couple of times to combine. Taste for seasoning and add salt and pepper as needed. Transfer the dressing to a bowl, cover and refrigerate until ready to use. Make the croutons n Light a grill or preheat a grill pan over medium-high heat. Rub the garlic halves all over the bread slices. Drizzle the bread with olive oil and season with salt and pepper. n Grill the bread for 3 to 4 minutes, turning once, until charred. Alternatively, broil the bread on high for 1 minute or until slightly charred. It should still have some softness inside, but the outside should be crisped. Let the toasted bread cool for a few minutes before cutting it into bite-size pieces. Set aside. Make the salad n Bring a pot of salted water to a boil. Trim both types of peas and remove the inedible stringy spine. Blanch the snow peas in the boiling water for 1 minute; remove them with a slotted spoon and transfer to an ice bath. Repeat the blanching process with sugar snap peas. Julienne the cooled snow peas and slice the sugar snap peas into bite-size pieces. n In a large salad bowl, toss together the peas, frisée and mint. Drizzle with the Caesar dressing, season with salt and pepper, and toss to combine. n Divide the salad among 4 chilled plates. Scatter croutons all around. Add a squeeze of lemon and drizzle olive oil onto each plate. Sprinkle each plate with Parmigiano-Reggiano and a pinch of red pepper flakes before serving.

Tools of the trade Want to cook like a pro? Here’s some of what you’ll need, as local chefs explain. They say a poor workman blames his tools, but no good cook would credit success

to a kitchen device. Still, there’s much to be said for having just the right trusty gadget—the one that not only does its job elegantly and dependably but also reassures you with its authoritative feel and gets your whole culinary rhythm going. Below are some of the tools we heard about when we asked local chefs: “Which one would you be lost without?”

THE KNIFE

Where would kitchen magic be without chopping, slicing, dicing, carving and puncturing? “Every chef will tell you the knife is the one indispensable tool,” says Thomas Ciszak, executive chef at Chakra in Paramus. Indeed, Michael Ventura of Wyckoff’s The Plum and The Pear seconds that emotion, singing the praises of his “really comfortable” 10-inch model from Wüsthof. Adds Ciszak: “My latest was handmade in Germany by a specialist smith who took six months to make it. It is a beauty, and sharp like few others. Give me a knife and a fire, and I’ll be able to cook a great meal!”

THE MIXER

“My KitchenAid mixer is an essential instrument,” says chef/owner Jack Zaorski of Ivy Inn in Hasbrouck Heights. “It’s a great value, very reliable and very versatile. I’m replacing mine after 10 years, and I’m not even sad because it has more than paid for itself.” “If you’re a serious chef,” agrees Michael Latour, chef/owner of Latour in Ridgewood, “you have to have a mixer.” (Another Michael—The Plum and The Pear’s Ventura—swears by his Robot Coupe brand mixer.)

Even if you’ve never heard of this handy tool, its parentage is apparent, just like that of the spork. “Its curved head lets me scrape into every nook and cranny, which helps prevent waste,” raves Jamie Knott, chef/ owner of the Saddle River Inn in Saddle River. “And when you own a restaurant, there’s no room for waste.”

Steamed and Raw Radish Salad with Kimchi and Sesame Serves 4 to 6 as a side INGREDIENTS:

DIRECTIONS:

n ¾ pound daikon radishes (each no thicker than 1½ inches), peeled, topped, tailed and cut into 1-inch irregularly shaped pieces n 1 lb. mixed small radishes (some with pert greens left on), halved lengthwise if larger than 1 inch in diameter n 2 Tbs. plus 1 tsp. sesame seeds n Maldon or another flaky sea salt n 4 Tbs. neutral oil, such as safflower or grapeseed n ¾ cup roughly chopped drained kimchi (preferably homemade), plus 2 Tbs. of the kimchi liquid n 1 tsp. toasted sesame oil n 1 head Little Gem lettuce, root end at floppy outer leaves discarded, leaves separated

n Put a steamer insert (or a colander, so long as the pot’s lid can still close) in a large pot with a lid. Add about a half inch of water to the pot, pop on the lid and bring to a boil over high heat. Add the daikon radishes to the insert, cover again, and let them steam until they’re fully tender, but not mushy, 12 to 15 minutes. Remove the daikon and let it cool. Put the steamed and raw radishes in the fridge to chill for about 15 minutes. n Meanwhile, put the sesame seeds in a small skillet. Set it over medium heat and toast, stirring and tossing frequently, until they’re a few shades darker, 3 to 5 minutes. Transfer them into a bowl to cool. Set 1 tsp. of the seeds aside and pour the rest into a mortar, along with a pinch of salt. Thoroughly pound the seeds, add 1 Tb. of the neutral oil, and stir until smooth. n Pulse half of the drained kimchi in a small food processor until you have a coarse puree. Transfer it into a bowl and mix in the rest of the kimchi, the kimchi liquid, the sesame oil, the remaining 3 Tbs. of the neutral oil and 1 tsp. of salt. n Combine the kimchi mixture, steamed radishes, raw radishes and Little Gem leaves in a large bowl and toss well. Season to taste with salt and transfer the vegetables to a plate in a heap. Drizzle the sesame paste mixture over the vegetables, then sprinkle on the remaining sesame seeds.

Greek Salad Serves 4 to 6 as a side INGREDIENTS:

DIRECTIONS:

n ¾ lb. crunchy cucumbers without big seeds (preferably a few varieties), peeled and cut into irregular ¾-inch pieces n 1 lb. mixed heirloom tomatoes, halved, cored, trimmed of any pale bits and cut into irregular 1-inch pieces n ¼ lb. cherry tomatoes (about ¾ cup), halved through the stem end if large n 2 slender spring onions, green tops and root ends trimmed, bulbs cut into ¼-inch-thick rounds and separated into rings (about ½ cup) n 2 Tbs. Banyuls vinegar (available at specialty shops and online) n 4 Tbs. extra-virgin olive oil n Maldon or another flaky salt n 1 Tb. lemon juice n 20 or so Nicoise olives, firmly pressed with the flat of a knife and pitted n A 5-finger pinch of mint leaves n 5 oz. creamy feta cheese (preferably goat feta)

n Put the cucumbers and tomatoes in separate bowls and pop them into the fridge just until they’re cold, about 30 minutes. n Meanwhile, add the onions to a small bowl. Add the vinegar, 2 Tbs. of oil and a healthy pinch of salt, and mix well with your hands. Let the onions sit just until they get pickly, a few minutes. n In a separate bowl, stir together the remaining 2 Tbs. of oil, the lemon juice and a good pinch of salt until the mixture looks creamy. Combine the tomatoes and cucumber in one bowl, pour the lemon dressing and toss gently but well. n Grab a large platter (or 4 or 6 plates) and make a pretty layer of cucumbers and tomatoes, so the colors and types of vegetables are well divvied up. Give the onions one more toss, then use your hands to add them (reserving their pickly liquid) here and there over the cucumbers and tomatoes. Scatter on the olives and mint. Use your hands to crumble the feta into pieces of large, medium and small as you scatter it on top. Finally, drizzle on the liquid remaining in the onion bowl. Eat straightaway.

Roasted and Raw Fennel Salad with Blood Orange and Bottarga Serves 4 to 6 as a side INGREDIENTS:

DIRECTIONS:

n 4 large fennel bulbs, stalks and outermost layer discarded, tender fronds reserved, root ends trimmed of brown bits n 2 medium garlic cloves, finely chopped n ½ tsp. fennel seeds, coarsely crushed in a mortar n 3 dried pequin chiles, crumbled, or pinches of red pepper flakes n ¼ cup plus 2 Tbs. extra-virgin olive oil n 1½ tsp. Maldon or another flaky sea salt n 4 blood oranges n 1 Tb. lemon juice n Several turns of freshly ground black pepper n A handful of delicate peppery arugula n ¼ cup unsalted roasted pistachios, very coarsely crushed n 1 tsp. fennel pollen n 1 oz. bottarga di muggine (salted mullet roe), finely grated on a raspstyle grater

Position a rack in the center of the oven and preheat to 450°F. n Halve two of the fennel bulbs through the root end, then cut them through the root nub (so each wedge stays intact) into approximately 1-inch-thick wedges. Combine the wedges in a mixing bowl with the garlic, fennel seeds, chiles, ¼ cup of the oil, ½ tsp. of the salt and ¼ cup of water, and toss well. Spread the mixture in a heavy enameled baking dish (large enough to hold the fennel in a single layer with a little room to spare) and cover tightly with foil. Roast the fennel until it is tender (it should meet with almost no resistance when poked with a knife) and golden brown on the bottom, 25 to 30 minutes. Remove the foil and roast just until the golden brown color gets a shade or so darker, 3 to 5 minutes more. Let the fennel cool to room temperature. n Meanwhile, halve one of the oranges and squeeze 3 Tbs. of juice into a small bowl. Use a sharp knife to cut off just enough of the top and bottom of the remaining oranges to expose a full circle of the flesh on either side. Stand them on a flat end, and cut along the border where the flesh meets the pith, following the curve of the fruit to remove the pith and peel. Repeat the process until all you have left are nice round, naked fruits. If you’ve missed any white pith, trim it off. Slice the fruit crosswise into ¼- to 3/8-inchthick rounds. Flick out any seeds. n To the blood orange juice in the bowl, whisk in the lemon juice, the pepper, the remaining 2 Tbs. of oil and 1 tsp. of salt. n Slice the remaining two fennel bulbs crosswise into ¼-inch-thick slices (only to remove the core if it’s very tough) and separate the layers with your fingers. Toss the raw fennel, roasted fennel (and any oil and browned bits left in the pan) and dressing in a large mixing bowl. Use your hands to give it a gentle scrunch—just to help the flavors come together. n Very coarsely chop enough of the reserved fennel fronds to give you a handful. Add the fronds, arugula and pistachios to the bowl, and toss again. n Spoon some of the fennel mixture onto a platter, arrange some blood orange slices here and there, then add another layer of fennel and oranges. Sprinkle on the fennel pollen, bottarga and, if you’d like, a healthy pinch of salt. Serve straightaway.

asparagus Loaded with nutrients, these spirited spears are a tasty veggie you mustn’t miss.

ARE YOU ONE OF THOSE PEOPLE who overlook asparagus in favor of broccoli and other veggies? If so, you’re missing a bet. This springtime green vegetable is tender, tasty, easy to prepare and packed with nutritional benefits. A natural diuretic, asparagus is also thought to help retard aging and improve cognitive function. So maybe it’s time to make these succulent stalks a menu regular.

POWER UP Asparagus is good for the heart at least three ways: It’s rich in fiber, which can help lower the risk of cardiovascular disease, and B vitamins, which help regulate the amino acid homocysteine, high levels of which can also be a danger. And it’s full of inflammation-fighting antioxidants—including glutathione, which neutralizes free radicals and works to prevent cell damage. One half-cup serving of this powerhouse vegetable provides 57 percent of your daily requirement of vitamin K (which helps blood clotting and strengthens bones) and 34 percent of your folate (needed to produce DNA and help the body’s cells divide properly). Asparagus contains inulin, a “prebiotic” that aids digestion by supporting the colon’s probiotic bacteria. And you get all that—and distinctive taste too—for only 20 calories!

Barbados beckons!

You’ll find adventure and beachy bliss in the land of cou-cou. It’s the birthplace of the singer Rihanna. And the rich and famous—Elton John, Gwyneth Paltrow, Tiger Woods—have been jetting here for decades. But despite the glitz, Barbados is the perfect laid-back getaway for those looking for an authentic island holiday. A coral island located where the Atlantic Ocean meets the Caribbean Sea, it was discovered by the Spanish and was a British colony until 1966. Today the commonwealth is divided into 11 parishes, all but two hugging the coastline. Not surprisingly, the island’s claim to fame is its beaches; there are 60, all open to the public. On the western shore, known as the Platinum Coast, you’ll find calm waters perfect for snorkeling and kayaking. In stark contrast, the east coast features a rugged coastline with crashing waves, a surfer’s paradise. Our home-away-from-home was the newly renovated Colony Club, an AAA Four-Diamond resort with a wellness focus situated within seven acres of lush tropical gardens. There are complimentary daily yoga, Pilates or Zumba classes, and the resort also provides in-room yoga mats, cooking demos and a complimentary breakfast daily. On arriving, we were treated to a “Cumila,” a refreshing mocktail made of cucumber, mint, agave, lemon and sparkling water. We were promised it would aid digestion. I can’t confirm that, but I can promise it’s good! The resort has its own organic vegetable garden, which guests can tour, and much of the food offered is garden-

to-plate. There is also a “bait-to-plate” program in which a resort chef takes guests out on the water for a fishing excursion, then prepares the day’s fresh catch. The Laguna Restaurant on the property offers international fare plus local favorites. Seafood is big here: Mahi-mahi, kingfish, snapper and flying fish are prepared in every way imaginable. (Flying fish served with cou-cou, a mixture of cornmeal and okra topped with creole sauce, is the national dish.) For those who need time to unwind, there’s no better place than the resort’s beach. Sunscreen is provided lest you burn, and cold towels and cucumber slices are offered to keep you cool. Staffers like Annette, who works in guest activities, and Michelle, the food and beverage guru, check on you through the day and offer canapés of tomato, mozzarella and pesto or frozen grapes on a skewer. It would be easy to veg here for days on end, but the island beckons. Indeed, you’ll be enchanted by its undeniable charm once you’re beyond the cacophony of auto dealerships, dingy gas stations and low-slung commercial buildings that front the main highway. Live large by living like a Bajan—that is, a Barbados resident. Hop on a bus to go nearly anywhere for less than a dollar. Spend Friday night dining beachside in the fishing town of Oistins, where you’ll gorge on fresh-grilled fish, cold Banks beer and lobsters as big as your arm. The atmosphere is like a huge block party with eating, drinking, singing and dancing. Be sure to wander down to the bandstand where you’ll find old-timers, couples and kids jiving to good ol’ calypso tunes. Feel the need to shop? Bridgetown, Barbados’ capital city, offers everything from tiny boutiques to luxe jewelry stores. There are also local vendors selling fruit, veggies, meats and local spices, plus crafts. Pelican Village on the outskirts of town is a great spot for batik, rum cakes and pottery. If you’re more of an off-the-beaten-path traveler, consider a Jeep safari tour, which will take you to spots accessible only in 4x4 vehicles. You’ll zoom along gullies, traverse forests, climb hills and look out over cliffs at some stunning scenery. Entertaining guides will regale you with local lore and island history and make frequent stops for photo opps alongside sugar plantations, remote beaches and lookout points. Our Island Safari guide even stopped at a local food stand to purchase pudding and souse, a dish of pickled pork with spiced sweet potato, so we could all sample it. Of course, for a truly authentic experience you’ll have to wash it down with a rum punch. Speaking of rum, tour at least one of the island’s three rum distilleries, then stick around for free samples and some terrific rum punch. Rum has been distilled on Barbados for 300 years. It’s the Caribbean’s lifeblood, and there’s no sign that will end any time soon. There are hundreds of rum shops, where Bajans gather to play dominoes and catch up on gossip. Ready to party? The Golden Anchor in Holetown is a great spot. Here you’ll find locals and tourists alike listening to everything from reggae to jazz. You’ll be blown away by the local musical talent on the island. Who knows? Maybe you’ll discover the next Rihanna. In any case, you’ll be glad you discovered the joys of beautiful Barbados.
