February and March are American Heart Month and National Colorectal Awareness Month, respectively, which emphasize the prevention of heart disease and colorectal cancer. March is also National Nutrition Month, so let this serve as your reminder to take care of yourself by eating healthfully, exercising regularly, and of course, keeping up with appointments with both your primary care physician and any specialists to whom you have been referred. Saint Barnabas Medical Center (SBMC) continues to stress the importance of continuing your health and routine screenings. We are going above and beyond and taking all safety precautions to keep both our staff and our patients safe. Late last year, the Medical Center introduced the Post-COVID CARE Program, an outpatient program at our Livingston campus that helps patients who are still experiencing lingering symptoms from coronavirus. Symptoms range from respiratory to pulmonary to cognitive, and our team of experts, led by RWJBarnabas Health Medical Group internal medicine physician and Post-COVID CARE medical director Vanessa Trespalacios, M.D., brings unique, individualized treatment to aid patients in their recovery. Learn more about what this program has to offer on page 14. Another exciting new initiative here at SBMC is the Pancreatic Cyst Surveillance Program, the first of its kind in the United States that uses technology to evaluate a pancreatic cyst. These cysts carry the potential to increase a patient’s risk of pancreatic cancer, and though in many cases they are benign, screening and surveillance is nonetheless essential. Russell Langan, M.D., chief of surgical oncology, shares more about the program on page 16. Finally, this issue of Morris/Essex Health & Life introduces the newest member of our Board of Trustees on page 18. Neuroradiologist Rahul V. We All Need Ways To Cope Stress by itself isn’t a bad thing. Our bodies signal a fight-or-flight response when we face any acute threat, be it serious or superficial, and the adrenaline boost we get can help us protect ourselves. But what about more sustained stress—the type we’ve been facing as we close in on a year of living during a pandemic? When stress is chronic, the body never gets the message that it’s OK to return to normal. That can have dangerous longterm effects. That’s why this year’s Health and Fitness Issue highlights managing stress—including in unexpected ways. Exercise has long been recognized as a stress buster, but going to a gym isn’t the first thing on people’s minds with the coronavirus still a threat. So in “Think Outside the Boxing” on page 24, we introduce you to smart boxing, an at-home workout that helps participants release stress, work out any aggression and get ripped liked a world-class prizefighter. The best part is that it’s safe: no rings, no opponents, no COVID threat. Equally safe—and gentler—is a soothing soak. But before you fill your tub, remember that not all baths are created equal. Turn to “Bathe Better” on page 26 to learn five ways to make your bath meet your needs, from relieving stress to flushing toxins from your body. Sometimes the best medicine comes in the form of a furry friend. Pets show us unconditional love, which many of us have been craving while sitting at home during periods of quarantine or semi-quarantine. And a recent study of college students—published in AERA Open, a journal from the American Educational Research Association—found that interacting with cats and dogs significantly reduced the subjects’ level of cortisol, a major stress hormone. No wonder so many Morris and Essex residents have adopted a cat or dog in the past year. You’ll meet some of them and hear from the shelters in “Pet Adoption Gets Frisky” on page 20. Though healthcare workers continue administering the COVID vaccines, there’s no telling when we’ll fully return to normal. Still, the proverbial light is visible at the end of the tunnel, and it seems to be getting brighter. Meanwhile, we hope all of the articles in this issue provide useful information and a much-needed lift for the spirit.

One local restaurant that’s changing things up is Restaurant Lorena’s, which used COVID-19 dining restrictions as a good excuse to relocate into a new spot down the street with more space. The new Lorena’s features a larger dining area to better abide by social-distancing regulations, as well as a chef’s table, at which chef Humberto Campos Jr. plans to hold chef’s tasting events in the future, COVID permitting. A SKATE ESCAPE Rand Park in Montclair is about to get a major upgrade, thanks to professional skateboarder Alexis Sablone. The seven-time X Games champion and Tokyo Olympics hopeful visited Montclair in January, and she has signed on to redesign the skate park (now that the Olympics are postponed). Much as she did for a skate park in Sweden, Sablone will be combining her experience in the male-dominated sport with her background in art and architecture to create mobile skate “sculptures” that are open to the public. The new skate park has been a great refuge for Montclair kids who have been attending school virtually through the pandemic, and it’ll only get better with Sablone at the helm. The town was given a $10,000 grant for the project, which is still in the early stages. Stay tuned!

…Or just eat hearty It’s baaack! Many Fatty’s fans have been hankering for a fat sandwich since the eatery closed in December due to redevelopment on Morris Street in Morristown. But the fastcasual spot isn’t gone for good; it just relocated (and rebranded) to become Weenie’s in Madison. This location will now feature a new-and-improved hot dog menu boasting new flavors and toppings, as well as a menu for those deliciously satisfying fat sandwiches that don’t exactly work with your New Year’s resolutions, but are totally worth the cheat meal. • Weenie’s, 145 Main St., Madison, 973.845.2564; weenieshotdogs.com
A smile from a crush did the trick in middle school, but boosting your heart rate may take a little more work these days— especially in winter. You know exercise promotes heart health; it’s just harder to arrange when it’s cold out. In February—American Heart Month—here are four ways to get your blood pumping: • Skiing at South Mountain Reservation, West Orange. This warm-weather hotspot has plenty to see and do in the wintertime too, with 19 miles of skiable roads and trails. • Ice skating at Central Park of Morris County, Parsippany. You and your group can lace up and take the ice at this flooded, in-line skating rink that’s open to the public. Just be sure to practice your social distancing, as you would anywhere these days. • Cycling at Dickerson Mine Preserve, Mine Hill Township. All 12 miles of this park’s biking trails are paved every winter. Each path has a different level of difficulty. • Walking at Traction Line Recreational Trail, Morristown. Every winter this trail is cleared of snow and ice to ensure visitors’ safety and, due to its location parallel to Fairleigh Dickinson University and along the Convent Station stop on New Jersey Transit, it’s frequented by lots of students and commuters. The 2.7-mile trail is ideal for walking or jogging, as it features a dozen cardio and strength training stations installed throughout.
Dan Quinn is one of Morris County’s most notable names in sports, but let’s be honest—everything’s bigger in Texas. Now he’s signed on to be the new defensive coordinator for the Dallas Cowboys. This will be his third stint with an NFL team, as he’s been the head coach for the Atlanta Falcons and a defensive coordinator for the Seattle Seahawks. The mighty Quinn grew up in Morris Township and played center and linebacker on the Morristown High School football team before graduating in 1989.
ALL-STAR ATHLETE Sandra Guerrero is paving the way for female collegiate-level wrestlers in the Garden State. Early in 2020, the West Orange native became the sport’s state and regional champion. Now she’s making history as part of the first-ever college women’s wrestling program in the state at New Jersey City University (NJCU). Guerrero and her teammates are having an abridged debut season due to the pandemic, but the inaugural program no doubt has many successful and exciting seasons ahead!
PUPPY LOVE Dog: Ivy, 1-year-old American pit bull terrier Owner: Cherril Crandahl of Rockaway Crandahl is a special kind of “dog mom,” the kind who adopts pups in bad situations. She had already rescued three pit bulls when she learned about Ivy, a deaf puppy who, like her brother from her litter, was given to New York Bully Crew, an animal rescue organization, because their breeder couldn’t sell them. Ivy is a “special needs” dog; besides being deaf, she is autistic and has behavioral issues. That just proved that she was meant for the Crandahl family; Cherril teaches sign language to dogs who are hard of hearing. Playful Ivy is a talker who uses her bark to communicate her wants and needs. She loves playing with tennis balls and her other doggy pals and is her human sisters’ biggest fan when she watches them play goalie at their soccer games. “Yes, it is a lot of work and patience,” says her proud owner, “but I wanted to give this girl a chance to experience life!” MSXHEALTHANDLIFE.COM

COVID CARE FOR THE LONG HAUL
The new Post-COVID CARE Program at Saint Barnabas Medical Center offers individualized care for those experiencing lingering coronavirus symptoms.
COVID-19 is a novel and complex virus, so we are just learning about its long-term ramifications. Many of those who have been diagnosed make a full recovery, but others, known as COVID-19 “long-haulers,� suffer from lingering side effects that can impact their heart, their lungs and/or their minds and behaviors. So, Saint Barnabas Medical Center has developed the Post-COVID Comprehensive Assessment, Recovery and Evaluation (CARE) Program as a way to assist those who are still suffering weeks or months after their diagnosis. Vanessa Trespalacios, M.D., an RWJBarnabas Health Medical Group internal medicine physician and Post-COVID CARE medical director, along with her nurse navigator, Christina Davis, R.N., work with a multidisciplinary team of doctors at the program to bring unique, individualized treatment to aid patients in their recovery and help them get to the bottom of their symptoms. Here, Dr. Trespalacios and Davis reveal more about the program, the common symptoms their patients are presenting with and what else you need to know. MSXHEALTHANDLIFE.COM

{ IN GOOD HEALTH } Are these symptoms still lingering from COVID, or did they return and come back? VT: For most patients it’s lingering symptoms: the symptoms started with COVID and may have improved but have not completely resolved. A couple have had symptoms that have gone away and come back and they tested negative [for COVID]. But most frequently, symptoms are whatever they had with their diagnosis that continued to persist to some degree, despite now being COVID negative.
When and how did the Post-COVID CARE Program come about? VT: In August, Stephen P. Zieniewicz, FACHE, president and CEO of the Medical Center, wanted to create a treatment option for people with residual symptoms post COVID-19. He spoke with leadership in the RWJBarnabas Health Medical Group, who then reached out to me to lead the program. From there, I developed a clinical model, which is what was presented to the leadership panel. Where are your physical offices located? VT: Because it was a pilot program and we needed to have proof of concept, we started it out of my practice in the Barnabas Ambulatory Care Center (ACC), which some might consider a mini hospital. We don’t have overnight stays but we have subspecialists, physical therapy, radiology, a same-day surgical center, a pharmacy: This is a one-stop shop. We are in the process of identifying a space within the ACC so we can continue to expand the program.
What comes next after a patient’s initial visit at the Post-COVID CARE Program? CD: After they are screened and come in for their initial visit, depending on their exam and their complaints, we either start the diagnostic process and see what we can refer them for, or we set them up for a consultation with the appropriate subspecialist. These are doctors who have been seeing COVID patients since the beginning, both in the hospital and in their offices, and they are well-versed and familiar [with the symptoms]. We also have our Behavioral Health pathway, through which we can refer patients to talk to a counselor within two weeks. Every patient in the program goes through me, and we as a team individualize a plan of care for each patient.
What are the most common lingering symptoms you’re seeing in patients who come to the Post-COVID CARE Program? VT: The number one lingering symptom is shortness of breath. Ninety percent of patients have some degree of shortness of breath, even if it’s not their main complaint. Second is cognitive, meaning memory loss, feeling like they are slower to react, having trouble finding the right words. I’ve had some patients with difficulty doing math that were proficient at it before. Patients have been calling it “brain fog.”
How do you work in tandem with a patient’s primary care physician (PCP)? CD: We are not replacing their PCPs. Each patient has an initial visit with our internal medicine specialists and another in three, six and 12 months. After a doctor orders bloodwork and we have our notes, I forward that info to their PCP so they’re aware of everything that’s going on with their patients.

NEW YEAR, NEW BOARD MEMBER An attending physician at Saint Barnabas Medical Center goes full circle by joining the Board of Trustees at his “hometown hospital.” Saint Barnabas Medical Center (SBMC) is in Rahul V. Pawar’s blood. He grew up around the corner in West Orange, and SBMC was his hometown hospital—it’s where he went after breaking his bones as a kid, it’s where he volunteered in high school and it’s where he has friends and family on staff. Now, Dr. Pawar, diagnostic neuroradiologist at SBMC and partner and secretary at Imaging Consultants of Essex, is coming full circle as not only an attending physician at the Medical Center, a role he has held since completing his fellowship in 2011, but also its newest member of the Board of Trustees. “I live and breathe Saint Barnabas Medical Center,” says Dr. Pawar. “A lot of physicians on staff grew up around here, but I’m one of the few that has been a part of this institution in some capacity since I was a child. In fact, in the late 1980s, I definitely trampled the property quite a few times on my BMX bike! As far as the past, present and future are concerned, my connection with the medical center runs deep.” And Dr. Pawar is thrilled to take on this exciting new role. “I am honored, I am excited and I am humbled to a be a part of such an important Board that governs a Medical Center that serves a broad community in such a specialized manner,” he says. Especially in the midst of a pandemic and after such a trying year, Dr. Pawar believes his role has even more of an impact and gravitas now than ever before. “I have known Dr. Pawar for many years. His clinical expertise, active community involvement, passion and leadership will be an asset to our board,” states Bruce Schonbraun, chairman of the Board of Trustees at SBMC. “His deep understanding of healthcare and long-relationship with SBMC brings an important perspective to our Board as we navigate through these unprecedented times.” At age 40, Dr. Pawar is also on the younger end of the age spectrum on the Board, and thinks that
will be of benefit in his new leadership position. “I like to consider myself in touch with the community and my colleagues, and being elected at a young age is a milestone because it transcends practicing medicine on a grassroots level,” he says. “I hope to bring a certain youthful, energetic vibe to the Board.” Dr. Pawar is firmly rooted in the local sports community. He is an avid tennis player himself— a former high school All-Area, All-Conference champ and USTA-ranked player. He is one of the only actively practicing physicians nationwide to have earned coaching certification through the Professional Tennis Registry. The core values he’s learned from years on the court, he says, will hopefully benefit him as a member of the Board of Trustees. “Through sport, I’ve developed a solid work ethic, teamwork, discipline, humility and the ability to problem solve. I strongly believe sport in general strengthens the community by providing an outlet for exercise, a means to stay healthy and the ability to connect with like-minded people. My passion for tennis and my profession are one in the same.” Certainly, Dr. Pawar’s numerous professional and personal accomplishments have led him to the Board of Trustees, but he also credits his wife, Kimmerle Pawar, M.D., an Emergency Department physician at SBMC, for helping him get here. Both Drs. Kimmerle and Rahul Pawar fortuitously landed staff positions at SBMC almost 10 years ago after completing their training at New York University Medical Center (NYU). “We have a short but significant history of nearly a decade at Saint Barnabas Medical Center together,” he says. “Collectively, my wife and I have a good feel for the community, the hospital’s footprint and impact at large.” The Pawars live in Essex Fells.

PET ADOPTION GETS FRISKY
AS THE CORONAVIRUS KEEPS FOLKS AT HOME AND LIMITS CONTACT WITH FRIENDS, MORE OF US ARE SEEKING OUT COMPANIONS OF THE MASKLESS, FOUR-LEGGED KIND. By Haley Longman
Choosing a pet has always been a ticklish proposition—guessing in advance how a needy creature will fit into your family’s routine and just what treasured items it may decide to chew on while it captures your heart. But since the pandemic began, there’s been a newly important facet of this animal adventure: competition. Pets up for adoption are in high demand. National media report that pet adoptions have soared as the pandemic has raged on, and our counties seem to be no exception. For instance, Shelter Animals Count, a nonprofit that helps share data on shelter animals, found that from January to June of 2020, the pet adoption rate was 73 percent, up from 63 percent in 2019. Chalk it up to a craving for companionship in this lonely, stay-at-home era—and maybe a simple desire to smile and feel good. “Many people found they would finally have time to adopt since they’re working remotely,” says Carole Michales, director of Pound Animal Welfare Society (PAWS) Montclair. “And yes, some are seeking joy, for sure!”

{ ANIMAL TALES } More time at home, of course, means more time to get an animal trained and acclimated to its new living situation, so that some families who may long have considered pet ownership now find it more practical. Young couples and families are often on the hunt for new feline and canine companions in any era; in this one, professionals temporarily freed from the hassle of a daily commute and college kids home from school are seeking out animals too. “We’re seeing a nice mix of people wanting both dogs and cats, but small dogs that weigh less than 25 pounds are always the most popular,” says Elizabeth Morgan, director of Montclair Township Animal Shelter. Older dogs are finding new homes these days as well, notes Michales, who says that PAWS typically rescues senior dogs requiring medical care, and that, thankfully, many of them have found their forever homes due to more humans being at home. One shelter cites a local cause, but agrees that adoptions are on the rise. “We noticed an increase in the number of adoptions post-COVID, most likely due to our Foster-to-Adopt program, which allows potential adopters to foster animals before committing,” says Erika Barkman, animal control officer of Randolph Regional Animal Shelter. “This tends to ease the transition and take the pressure off.” Still, other pressures have increased. These days, in fact, the effort to acquire a pet can feel like the struggle to get one’s child into an exclusive preschool. “We are first-time dog owners and our applications to the shelters kept getting denied,” says Emily Plaskow of Verona. “I am not sure if it was COVID or just us, but it was discouraging.” After months with no results, Plaskow connected with Ramapo-Bergen Animal Refuge Inc. (RBARI) in Bergen County and was matched with one-and-a-half-year-old Cooper, an “energetic, goofy and sweet” whippet hound mix. “Even without COVID, 2020 was a trying year for us. My 13-year-old son and I thought adding a member to our family would be a comfort to us both, and Cooper has been just that.” Another pro? Pets that may have once been overlooked are finding their forever homes too. “People have had more time to spend with the animals that needed extra attention while they acclimate to their new home,” Barkman says. “For instance, one of our long-term dogs that needed a special home finally got the chance and is thriving.” That dog’s special home is that of Shari Castelli of Mendham, who volunteered at the Randolph Shelter on Sundays before the pandemic. Quarantine found her working from home and “dogless” after losing her two dogs within nine months, so she knew the pandemic was a good time to bring a new furry friend home. “I didn’t know how to function without a dog,” she says. “I was walking outside to get some stress relief and space, and it felt wrong to walk without a dog!” She also knew she wanted an adult canine, and was OK getting one that wasn’t as “adoptable” as some of the others. “From my experience at the shelter, I knew that even dogs with ‘baggage’ could become great pets with proper training, structure and lots of love,” Castelli says. After undergoing his training at the shelter (which Castelli was not permitted to attend due to the pandemic), she ended up adopting the “mellow” Sire, a 7-year-old pit bull terrier mix, who hadn’t been in a permanent home for six years. “If there hadn’t been a shortage of adoptable dogs, I would never have had the opportunity to have Sire, and he would still have been in the shelter,” Castelli says. “He is a great, loving dog who deserves to have a home, and I am so happy to have him!” The boom in pet adoptions doesn’t mean COVID MSXHEALTHANDLIFE.COM
hasn’t brought its challenges, in pet adoption as in everything else. Montclair Township Animal Shelter reports that their average number of monthly pet adoptions has actually decreased—not because of lack of interest, but because they have only been able to rescue about half their usual amount of animals; 20 to their typical 40 or so per month. “We’re not taking as many animals from our shelter partners,” says Morgan. “The humans have had restrictions about quarantine and crossing state lines, so getting animals here is much more difficult.” The adoption process itself has presented new hoops to jump through as well. For instance, many adoption events have either been cancelled entirely, made less frequent or moved outdoors because of social-distancing requirements. Montclair Township Animal Shelter has had to limit admittance at its building and conduct meet-and-greets with potential pet “parents”—via Zoom for cats and in their outside courtyard for dogs. Randolph still conducts in-person meetings when possible, but they’re via appointment only; they utilize FaceTime for meet-and-greets too. The process has been relatively status quo for PAWS Montclair, however, which posts its adoptable animals on PetFinder.com and gets in touch with potential owners through the site to see who might be a match. However, a new PAWS protocol requires potential adopters to submit home videos of where the animals will be living while they’re being fostered. RBARI has had to shift its business model as well, says Megan Brinster, the shelter’s executive director, as it’s now using social media, its website and e-newsletters to showcase its animals that are looking for forever homes. All applications are now completed online, families are vetted virtually and dog and cat meetups are by appointment only. For some pet owners, after all, life changes have worked counter to the trend. RBARI is seeing a trend of animals ending up in overcrowded facilities, being surrendered at higher rates and requiring urgent medical care, Brinster adds. However, the folks running these rescues and shelters are optimistic that even when we all return to normal—and return to the office—the good will outweigh the bad and pet lovers will still want to adopt. Says Morgan simply: “Animals are great companions.” And pet lovers know that won’t ever change, no matter what.

THINK OUTSIDE THE BOXING With “smart” technology, you needn’t be Rocky to develop a home workout routine that packs a punch. By Haley Longman

Americans have been doing many things at home these days, including exercise. But Tuesday has begun to look an awful lot like Wednesday. If your exercise habit has been KO’d by boredom, remember what used to be called “the gentleman’s sport” (popular with ladies too since the early 1990s). Boxing can pack a wallop as a fitness booster, and you don’t have to climb into an actual ring—or even have an opponent. The advantages of boxing with gloves are plentiful: It’s a two-for-one cardio and strength workout, and the punching, jumping and fancy footwork are calorie blasters. “Benefits include improved endurance, cardiovascular conditioning, core and upper body strengthening, agility and self confidence,” says Ian Bate, owner of Upper Montclair Boxing Club. The routine can also sculpt muscles, improve hand-eye coordination and boost one’s mood. (Think about it: Could anything release more stress than hammering all of your aggressions into a punching bag?) Models such as Gigi Hadid and Ashley Graham are modern-day fans, and actors Denzel Washington and Sylvester Stallone brought the sport bigscreen attention decades ago in The Hurricane and the Rocky series, respectively. But this is 2021, folks. Now the hot pugilistic trend for both men and women is “smart” boxing, in which technology is used to track each strike, to measure every punch. And yes, many of these exercises can be done in your living room—all that’s required is the equipment. Fightcamp is one of the newest smart home boxing workouts; subscribers get a free-standing punching bag, gloves and hand wraps and—here comes the technological part—little sensors placed inside the wraps that measure punch count and speed. Classes can be viewed via the app on a TV screen, an iPhone or an iPad, and each is divvied up into rounds, the goal being to try and top your punch count with each one. It’s a onetime fee of $1,200 for all the equipment, but just $40 a month for access to more than 200 classes. Even newer to the market is Liteboxer, a fitness startup that MSXHEALTHANDLIFE.COM

debuted in July 2020 as a personal, in-home boxing instructor. Liteboxer is to boxing what Peloton is to biking; its goal is to replicate in your living room a full-body boxing workout that you’d otherwise only get with a trainer in a gym. It’s a compact, 55-inches-tall piece of tech that doesn’t require a bag suspended from the ceiling that must be grounded with water or sand. Instead, the device provides a guided workout with a lighting system (think of the Simon game of yesteryear) and a voiceover and pump-up music via its accompanying app, which can be connected via phone or tablet. Users can choose to do a beginner’s “training camp” workout, take a class taught by boxing trainer Leyon Azubuike, kickboxer Eliza Shirazi or fitness trainer Emily Collins, or jab to the beat of a song using a patented “rhythm technology.” Liteboxer also offers an option to compete against other subscribers, with your results shown side-byside so that you can always be on top of your game. The $1,495 price tag covers the Liteboxer, gloves and doorstep delivery, and there’s an additional $29 per month for the subscription. If you just want to engage in casual cardio boxing rather than train to become the next Mike Tyson, there is also British-based Corner—punch trackers that slide into your hand wraps or the provided wristbands. The cost is more modest at $140 for two trackers, two wristbands, a charger and the free app, which displays your stats. (If you go this route, hanging a punching bag is up to you.) Like any new workout routine, though, the proper technique likely won’t be learned by watching your screen. Yes, the technology enables you to get instant feedback on the speed and strength of your punches—such feedback that “cannot be achieved by working with a trainer alone,” says Bate— but unlike a real life trainer, the app won’t correct your form. “The finer points of preparing a fighter are still the domain of a skilled and seasoned coach and crew,” he concludes. No matter how often you do the routine or which smart technology you choose, if it’s right for you, this workout can be a champ.

Just add these five natural ingredients to your bath for immediate benefits to mind, body and spirit. Three of the baths use essential oil. Remember, oil and water don’t mix. First, you’ll need to dilute the essential oil with a carrier oil such as coconut oil rather than pouring it directly into the tub. Simply combine one tablespoon of the carrier oil with about six drops of the essential oil. Then pour the mixture into the bath after you’ve filled the tub. Adding oils while the faucet is still running will cause the oils to evaporate. And to get maximum benefits—and avoid skin irritation—use the highest quality ingredients. TO FLUSH TOXINS Add Epsom salts
They’re known for relaxing tired muscles, but the sulfates in these crystals also release pollutants from pores and help draw out toxins. Plus, a good soak helps restore magnesium levels, which most of us don’t get enough of. According to the National Institutes of Health, magnesium helps regulate “muscle and nerve function, blood sugar levels and blood pressure,” among other things. Simply dissolve 1 cup in bathwater.

According to studies, including one study in Molecules, the lactic acid in milk makes it a natural exfoliator. And honey is a humectant, meaning it locks in moisture. Additionally, they both have antimicrobial properties that clean your skin. Unlike oils, you can pour the mixture—¼ cup each of whole milk and honey–into hot running water.
TO COMBAT FUNGAL INFECTIONS Add lavender oil
Many of us know that this pretty, purple plant’s scent helps you sleep by easing stress. But the herb has been effective in fighting fungus infections. A study published in the Journal of Medical Microbiology found that the Lavandula genus of the lavender plant was lethal to certain strains of fungus by destroying the membranes of the fungal cells.
TO RELIEVE STRESS Add rose oil
A study in Chemical Senses found that rose oil decreases levels of cortisol, the stress hormone. Once reduced, symptoms such as rapid heart rate and elevated blood pressure are alleviated. The oil has also been found to stimulate the mesolimbic, or reward, pathway in the brain, where neurons release dopamine, the feel-good neurotransmitter.

BEEF WELLINGTON Yields 6 servings
INGREDIENTS:
n 1 (2 lb.) center-cut beef tenderloin, trimmed n kosher salt n freshly ground black pepper n olive oil, for greasing n 2 tbsp. Dijon mustard n 1 1/2 lb. mixed mushrooms, roughly chopped n 1 shallot, roughly chopped n leaves from 1 thyme sprig n 2 Tbsp. unsalted butter n prosciutto, thinly sliced n 12 TK Flour, for dusting n 14 oz. frozen puff pastry, thawed n 1 large egg, beaten n flaky salt, for sprinkling
DIRECTIONS:
Using kitchen twine, tie tenderloin in four places. Season generously with salt and pepper. Over high heat, coat bottom of a heavy skillet with olive oil. Once pan is nearly smoking, sear tenderloin until well-browned on all sides, including the ends, about 2 minutes per side (12 minutes total). Transfer to a plate. When cool enough to handle, snip off twine and coat all sides with mustard. Let cool in fridge. Meanwhile, make duxelles: In a food processor, pulse mushrooms, shallots and thyme until finely chopped. To skillet, add butter and melt over medium heat. Add mushroom mixture and cook until liquid has evaporated, about 25 minutes. Season with salt and pepper, then let cool in fridge. Place plastic wrap down on a work surface, overlapping so that it’s twice the length and width of the tenderloin. Shingle the prosciutto on the plastic wrap into a rectangle that’s big enough to cover the whole tenderloin. Spread the duxelles evenly and thinly over the prosciutto. Season the tenderloin, then place it at the bottom of the prosciutto. Roll meat into prosciuttomushroom mixture, using plastic wrap to roll tightly. Tuck ends of prosciutto as you roll, then twist ends of plastic wrap tightly into a log and transfer to fridge to chill (this helps it maintain its shape). Heat oven to 425°F. Lightly flour your work surface, then spread out puff pastry and roll it into a rectangle that will cover the tenderloin (just a little bigger than the prosciutto rectangle you just made). Remove tenderloin from plastic wrap and place on bottom of puff pastry. Brush the other three edges of the pastry with egg wash, then tightly roll beef into pastry. Once the log is fully covered in puff pastry, trim any extra pastry, then crimp edges with a fork to seal well. Wrap roll in plastic wrap to get a really tight cylinder, then chill for 20 minutes. Remove plastic wrap, then transfer roll to a foil-lined baking sheet. Brush with egg wash and sprinkle with flaky salt. Bake until pastry is golden and the center registers 120°F for mediumrare, about 40 to 45 minutes. Let rest 10 minutes before carving and serving.

INGREDIENTS: n n n n n n n n n n n n n n n
1 ½ lb. ground meat ½ package onion soup mix ½ cup onions, diced 1 tsp. Italian seasoning 2 tsp. minced garlic 3 Tbs. Worcestershire sauce 1 egg, slightly beaten salt and pepper bread crumbs fresh mushrooms, sliced 3 Tbs. butter or margarine 1 Tbs. oil 1 can beef broth 1/8 cup flour 1 cup water
DIRECTIONS:
In a large bowl, mix together first nine ingredients. Form into patties and place on plate to refrigerate. In large deep skillet. put two tablespoons of butter and fresh sliced mushrooms and sauté until done. Place on plate and set aside. Add one tablespoon of butter and oil into the skillet and place patties. Cook until done, then place on plate ad set aside. While patties are cooking, whisk together water and flour in the skillet with meat drippings. Add beef broth and flour water mixture. Stir until desired thickness, add mushrooms and patties and let simmer for about 10 minutes. Serve with vegetables and scalloped potatoes.
Make sure that your ground beef is an 80/20 mix—80 percent lean and 20 percent fat. This way, the meat won’t dry out. BEEF POT PIE Yields 6 servings
INGREDIENTS:
For the dough: n 1¾ cups all-purpose flour, plus more for dusting n ¾ tsp. fine salt n 1 stick cold unsalted butter, cut into ½-inch pieces n ¾ cup grated Irish cheddar cheese (about 3 oz.) n 6 to 7 Tbs. stout beer n 1 large egg, lightly beaten For the filling: n 2¼ pounds beef chuck roast, trimmed of excess fat, cut into 1-inch pieces n ¼ cup all-purpose flour n kosher salt and freshly ground pepper n 3 Tbs. unsalted butter n 1/3 cup stout beer n 3 medium leeks, white and light green parts only, halved lengthwise and cut into 1-inch pieces n 1 lb. carrots, cut into 1-inch pieces n 2 stalks celery, cut into 1-inch pieces
DIRECTIONS:
First, make the dough: Pulse the flour and fine salt in a food processor to combine. Add the butter and cheese and pulse until the mixture looks like coarse meal with some pea-size bits of butter. Drizzle in six tablespoons beer and pulse to combine. Squeeze the dough between your fingers; if it does not hold its shape, pulse in up to one more tablespoon of beer. Pat the dough into a disk, wrap in plastic wrap and refrigerate until firm, at least one hour or overnight. Meanwhile, make the filling: Preheat the oven to 325°F. Toss the beef, flour, 1 ¼ teaspoons kosher salt and pepper to taste in a large bowl. Melt the butter in a Dutch oven or large ovenproof pot over medium-high heat. Add the beef and cook, stirring occasionally, until browned all over, about seven minutes. Add the beer and two cups water, scraping up any browned bits from the bottom of the pot. Bring to a simmer, then cover, transfer to the oven and braise, about 30 minutes. Add the leeks, carrots and celery to the pot and continue braising for one more hour. Meanwhile, put six 10-oz. ramekins on a parchment-lined baking sheet. Roll out the dough between two lightly floured sheets of parchment into a 10-by-15-inch rectangle; cut into six 5-inch squares. Make a few slits in the middle of each square to let steam escape. Remove the filling from the oven and increase the temperature to 375°F. Season the filling with salt and pepper and divide among the ramekins (there may be some filling left over). Top each with a square of dough, pressing the edges into the ramekin. Brush with the beaten egg. Bake until the crust is crisp and golden brown, 35 to 40 minutes. Let rest about 10 minutes before serving.

Is Bitter Better?
To wake up your salads and shake up your veggie crisper drawer, consider Belgian endive, a mildly acerbic member of the chicory family. In the grocery store, a couple argues over how to pronounce “endive.” “Onn-DEEV!” insists the wife, scorning Americanisms, while her hubby, rejecting pretension, retorts: “EN-dive!” “Stop!” you call out, playing peacemaker. “You’re both right!” It’s maddening but true: In the food world, the same item can have different names, while one name (sometimes even differently pronounced) can refer to different foods. Endives tick both of these boxes of confusion. The word “endive” (pronounced EN-dive) refers to the leafy portion of varied bitter-flavored plants in the chicory family, the genus Cichorium. Two main types, bushy-shaped plants that grow in nature and are often used in salads, were originally cultivated in Asia Minor (Turkey) centuries ago. They are curly endive (alias frisée) and the somewhat less bitter broadleafed endive (also known as escarole). Now, take a breath. From here on, our subject is a third type, Belgian endive (that’s onn-DEEV), for which nature needs a bit of help. It’s carefully “forced” in a multi-step process. Seeds are planted to develop roots, which are then placed in a cold, dark room for one to several months, then moved to trays of water in a warmer room—also dark. For these gullible plants, the water’s warmth becomes an ersatz springtime, and before too long you get the pale, crisp, torpedo-shaped and slightly bitter leafy head we know as Belgian endive. (Not enough names for you? Belgian endive is also sometimes called witloof chicory—and radicchio is a red relative in the chicory tribe.) Don’t let Belgian endive’s mildly bitter taste discourage you; in conversation with other flavors it makes a salad more vivacious, and its cool crispness enlivens texture. After all, banning all foods that can be bitter would mean a life without chocolate or coffee, and let’s be serious!
Want to ease up on the guilt of game-day munching and still enjoy those decadent dips? Belgian endive leaves eaten raw are a healthy, crunchy alternative to chips or crackers. Isn’t that a tasty touchdown? POWER UP While you’re busy and on the move, Belgian endive helps keep your digestive system up and running. Its high fiber content aids in cleansing the body of free radicals and balances the metabolism. B.E. packs in vitamin A, as well as several B vitamins with aliases, including B1 (thiamine), B3 (niacin) and B9 (folic acid). (Remember: Along with regulating digestion, vitamin A promotes eye and skin health, and B vitamins can be good for brain health and may lower the risk of developing dementia or Alzheimer’s disease.) As for minerals, Belgian endive offers magnesium, calcium and iron. The low-calorie plant has also been linked to a reduction in gallstones, incidents of stroke and urinary tract infections. BUY/STORE/SERVE Belgian endive is available year-round in grocery stores, and depending on storage can last up to two weeks. Look for a plant with crisp, tight, tender white leaves with yellow or red leaf edges and a solid head. While wrapping them in a damp paper towel inside a plastic bag in the refrigerator can keep them fresh for three to five days, these feisty superstars can last much longer when kept out of light in the safety of your refrigerator crisper drawer. Peel away any outer leaves that have become brown or soft when pressed to reveal the inner leaves ready for use. For serving Belgian endive there are numerous possibilities. You can julienne the plant into thin strips for your salad. You can roast it, sautée it, braise it, stir-fry it or pop it on the grill with an olive-oil paint job. Make a soup from it, or simply drop a leaf or two into your favorite soup. Bon appétit! (Now that you can pronounce it for sure.) —Ariana Puzzo

1 HALOS FOR ANGELS The Morris County Sheriff’s Office: Bureau of Corrections PBA Local #298 made its final donation from the funds earned from the “No Shave November/December” event to1 Halos for Angels.
