IN AN INFORMAL POLL, certainly not scientific by any measure, I asked friends and colleagues about favorite childhood memories, and the majority of those shared centered around fun times during the summer months. My own memories bear out these “results”: long days spent lazing at the beach, cooling off under sprinklers, games at the boardwalk. With that in mind, we at Monmouth Health & Life again planned our annual Summer Issue because even the most housebound souls among us step out to catch a breeze, savor the sunshine and forget all about their “Things to Do” list this season in beautiful Monmouth County. The outdoors begins, of course, with your backyard. Now is the time to enjoy it, and we have a few ideas for backyard parties. All you really need are a few friends, some food and drink, and cooperation from the weather. While the company is always way more important than the accouterments, we asked our local experts—planners, caterers, photographers, florists and more—for advice and creative ways to ensure that your bash is brilliant. Read “Party Smart!” on page 42, and let the partying begin. Rather get out and explore beyond the comfort of home? Our county is packed with places that appeal to anyone who enjoys fresh air and Mother Nature. Turn to “Get Out” on page 36 to find the best spots for birdwatching, biking, boating and fishing, among other activities. And before the dog days of August arrive, be sure you enjoy a nice summer evening on the town. Time for a Check-up W

ELCOME to the latest edition of fiscal fitness! Every June, I have been diligent about scheduling my annual Wellness visit. Why should my approach to finances be any different? I need to know now if I am on track towards my personal goals. Have I saved enough for my son’s college tuition? Should I adjust my insurance coverage? What happens if something happens to me? How am I doing toward my own retirement goals? Am I prepared for the changes in the tax code? Let’s take a look at a few ideas we should be thinking about as we plan for the rest of the year. PRE OR POST-TAX CONTRIBUTIONS? If your employersponsored 401(k) or 403(b) plan offers pre-tax Roth, and /or non-Roth after-tax contributions, which should you choose? Pre-tax for those who want to lower taxes now, Roth for those who prefer tax-free income later. Some plans allow for additional, non-Roth after-tax contributions. This is great for those who want to make contributions exceeding the annual total limit. Confusing? You bet! Regardless of what you choose, be sure to contribute at least enough to receive any employer match. ITEMIZED DEDUCTIONSTHE GOOD AND THE BAD The Tax Cuts and Jobs Act substantially increased the standard deduction amounts and made significant changes to itemized deductions. Because of this, fewer taxpayers are expected to itemize. Remember, for 2018, no deduction is allowed for interest on home equity loans or lines of credit unless the debt is used to buy, build or substantially improve a principal residence or a second home. If the loan is used to purchase a car, pay for college or consolidate other loans, the interest is no longer deductible. Be aware of any refinancing or cash-out feature, as this could be treated as home equity

indebtedness. Bottom line: speak to your tax advisor to review your current situation. IT’S TIME FOR BABY BOOMER RMDS In 2016, the first wave of baby boomers turned 70 ½. That’s the age when you must begin taking required minimum distributions(RMD) from certain tax-deferred retirement accounts. Failure to take your RMD can trigger a 50% penalty on the amount that should have been withdrawn – ouch! For those of you who are taking RMDS from your IRA, why not make a qualified charitable distribution (QCD) directly to your favorite charity (not to exceed 100k). Not only will you satisfy your RMD, the amount is excluded from your income. It’s a win-win for both you and the charity. PICK YOUR PLASTIC: Debit or Credit? According to a Federal Reserve study, Americans use debit cards more often than credit cards. Knowing the fundamental differences between the two is important. Due to the higher limits of fraud protection, a credit card may be safer in higher-risk situations, such as on-line shopping or when your card will leave your sight in a restaurant. Remember, a debit card has no effect on your credit, so using a credit card responsibly could help you build a positive credit history. MMC SURGEONS COLLABORATE ON AN ADVANCED SURGICAL PROCEDURE TO TREAT RARE INTESTINAL CANCER. PATRICIA FERDINAND IS A RETIRED PERSONAL chef who is described by her surgeon as a “young 72.” Indeed the active Manalapan resident was devoted to her personal training sessions and had just celebrated her five-year milestone as a breast cancer survivor when she began to experience symptoms typical of gallstones. The health setback turned out to be truly fortuitous, as a routine presurgical workup led to the serendipitous discovery of a rare, early stage cancerous tumor of her small intestine. “This was a very interesting case because a diagnostic ultrasound showed gallstones, as well as a dilation of her bile duct, which is very common with gallbladder disease, but can also be due to the existence of a tumor,” says Stephen A. Chagares, M.D., a board-certified general surgeon at Monmouth Medical Center. “Her gastroenterologist, Dr. Amy Tilara, decided to do additional testing, and following an endoscopic ultrasound, discovered a mass not related to the gallbladder. A special CT scan subsequently showed a tumor of the small intestine that was separate and distinct from the issues with her gallbladder.” On April 5, Dr. Chagares teamed up with Michael Jaronczyk, M.D., a board-certified surgeon who recently joined the staff at Monmouth Medical Center and Monmouth Medical Center, Southern Campus, to remove her gallbladder and a golf-ball size tumor as well as a small section of her intestine. Like Dr. Chagares, Dr. Jaronczyk trained in general surgery at Monmouth Medical Center. He went on to fellowship training in advanced gastrointestinal, minimally invasive and bariatric surgery at Saint Francis Hospital and Medical Center in Connecticut.

“I decided to work with Dr. Jaronczyk to do the bowel resection at the same time that I performed the gallbladder removal,” Dr. Chagares says. “The patient was thrilled because the entire procedure was done laparoscopically, with both of us working through the same four very small incisions.” Afterward, Patricia spent one night in the hospital and following her discharge was referred to an oncologist for surveillance of the cancer, which should require no further treatment. Within a few short weeks, she had recovered completely and was back to the gym and her active lifestyle. Dr. Chagares notes that Patricia’s intestinal cancer is not usually found at an early stage, as it doesn’t produce symptoms until it is advanced, but fortunately for her it was found during the unrelated scan of her gallbladder. “I felt very good after the surgery,” says Patricia, who along with her husband, Jeffrey, has two children and three grandchildren. “I stayed just one night in the hospital and immediately felt 100 times better thanks to Dr. Chagares and Dr. Jaronczyk. They took great care of me.” “Monmouth Medical Center has been at the forefront of advanced laparoscopy for many years,” Dr. Jaronczyk says. “It is commonplace to have surgeons with different specialties in different practices work in collaboration with the goal of outstanding patient outcomes such as this. Lung cancer symptoms often do not appear until advanced stages. Tobacco is associated with 87 percent of all cases of cancer of the lung, trachea and bronchus. PEACE OF MIND CANCER PATIENTS AT MMC BENEFIT FROM THE HEALING POWER OF REIKI THERAPY.

VOLUNTEERS AT MONMOUTH MEDICAL Center’s Leon Hess Cancer Center are providing patients the opportunity to experience Reiki, a gentle therapy for stress reduction and relaxation that promotes your own natural healing. Ocean Township resident Diane Lampinen, a Reiki master teacher and coordinator of The Reiki Program at Monmouth Medical Center, was recently honored by the hospital’s Leon Hess Cancer Center for her volunteer service that brings Reiki therapy, free of charge, to patients receiving cancer treatment. “The Japanese word ‘Reiki’ translates as universal energy,” says Lampinen, who notes Reiki therapy promotes stress reduction and relaxation, which brings this life energy into balance. She explains that Reiki treats the whole person on physical, emotional and intellectual levels. “It is a gentle therapy developed in Japan in the early 20th century that is complementary to all other forms of healing or medicine,” she says. As the owner and founder of Bella Luce Reiki, Lampinen specializes in Reiki therapy, Reiki certification training and Reiki shares. Since April 2015, she has been a volunteer Reiki practitioner with Mary’s Place by the Sea in Ocean Grove. Mary’s Place provides a place for women with cancer to heal: body, mind and soul. “The process of establishing The Reiki Program began in August of 2015, and the program officially started the following March, when patients received the first Reiki sessions at the hospital’s outpatient infusion center,” Lampinen says. “Reiki

therapy has been well received by infusion patients and the Cancer Center’s medical staff.” She notes that it has been very rewarding for her to be part of a program to integrate Reiki therapy in a medical setting. Medical Oncologist David Sharon, M.D., the medical director of the Leon Hess Cancer Center at Monmouth, notes that studies have shown that Reiki can help patients tolerate chemotherapy better. Diane’s mother, Helen Bertuzzi, who is undergoing treatment for cancer, is a longtime patient of Dr. Sharon. “Reiki promotes relaxation and reduces stress and treats the whole person— physically, emotionally and mentally,” says Dr. Sharon, who notes that the Leon Hess Cancer Center is dedicated to meeting the medical, physical and psychological needs of patients before, during and after treatment. “My personal experience with Reiki has been great,” Bertuzzi says. “It makes me feel relaxed and peaceful, and puts me in a good frame of mind.” Lampinen says that each Reiki session lasts about 20 minutes. The Reiki practitioner holds his or her hands slightly

above your body and follows a series of hand positions from your head to your feet. The patients may feel relaxed and peaceful during and after a Reiki treatment, she says, adding that it is each patient’s choice whether or not to receive Reiki therapy. “Reiki therapy has many benefits; it may help improve mood, sleep and digestion and has no known side effects or contraindications,” says Lampinen. She notes that The Reiki Program at Monmouth Medical Center is seeking additional Reiki practitioners to help expand to other areas of the hospital. MONMOUTH MEDICAL CENTER IS THE FIRST HOSPITAL IN NEW Jersey to offer women the advanced option of breast cancer surgery with little to no visible reminder of the surgery or their cancer. Monmouth Medical Center breast surgeon Manpreet Kohli, M.D., FACS, has been recognized as a Hidden Scar Trained surgeon, making MMC New Jersey’s first certified Hidden Scar center. This advanced approach to breast cancer surgery allows surgeons to hide scars, minimizing the patient’s emotional reminder of a breast cancer diagnosis. Dr. Kohli says this new technique allows her to expand treatment options to her patients with a procedure that effectively treats the cancer while optimizing cosmetic results. “With a Hidden Scar approach to breast cancer surgery, we are able to place the incision in a location that is hard to see, so that the scar is not easily visible when the incision heals,” says Dr. Kohli, a fellowship-trained, board-certified breast surgeon with Barnabas Health Medical Health Group and Monmouth Medical Center. “As a result, you have a very natural result with very subtle surgical scars that sometimes cannot be found unless you know where to look.” Each year, approximately 253,000 women are diagnosed with breast cancer that requires surgery. Dr. Kohli notes that many of these women are unaware of all the surgical options available, including advanced approaches like Nipple Sparing Mastectomy. This procedure can help maintain their self-image, eliminate stages of reconstructive surgery that typically involve nipple and areolar reconstruction, and allow them to begin the emotional healing process much sooner. “Thanks to all of the advances in care, the five-year survival rates

for breast cancer today are high,” Dr. Kohli says. “As such, survivorship is becoming increasingly important. Scars have a significant impact on survivors’ body image, intimacy, confidence and mental health.” Hidden Scar breast cancer surgery allows Dr. Kohli to work with the plastic and reconstructive surgeons at Monmouth Medical Center; with them, women are able to undergo an oncologic surgery, while preserving all of the skin of the breast, maintaining a natural contour, and receiving a tailor-made reconstruction that suits them. Several options for reconstruction exist, including implants placed at the time of the initial surgery rather than tissue expanders, or using one’s own tissue to reconstruct the breasts. She notes that patients who undergo these approaches experience optimal clinical and cosmetic outcomes, and are at no higher risk of recurrence than patients who undergo any other surgical technique. Gregory Greco, D.O., chief of plastic and reconstructive surgery at Monmouth Medical Center, notes that the technology provided by Invuity improves surgeons’ visibility during these procedures, enabling them to perform complex, in-demand surgeries with ease. He notes that performing breast cancer surgery through a smaller incision as in Hidden Scar surgery requires consistent illumination throughout the surgical cavity, so surgeons can clearly see and effectively remove the tumor. “A breast cancer diagnosis is difficult enough,” Dr. Greco says. “At Monmouth Medical Center, we are committed to giving more women access to transformative options in breast cancer surgery.”

BIRD-WATCHING From hawks and herons to eagles and egrets, you can spot many a winged species. Just grab your binoculars and camera then head to one of these great places. Assunpink Wildlife Management Area, 1 Eldrige Rd., Allentown, features three lakes that are popular resting spots for migratory waterfowl. Big Brook Park Region Grasslands, 521 County Rd. 520, Marlboro, boasts a mixture of habitats including scrub-shrub areas that support species like the vesper sparrows. Manasquan River Watershed, provides refuge for migrating landbirds and wintering waterfowl. Navesink and Shrewsbury Rivers, breeding grounds for the bald eagle, listed as endangered in the state, and the osprey, listed as threatened. North Shore Coastal Ponds Complex, where piping plovers and least terns, among many other species, breed and forage.

Raritan Bay and Southern Shore, host to many state-listed species during breeding season including black skimmers. Sandy Hook, where as many as 600 least terns and 60 piping plovers have nested. A major stop along the migration pathway for more than 340 species traveling the Atlantic flyway. Turkey Swamp Wildlife Management Area, 200 Georgia Rd., Freehold, is home to several forest-breeding species and a critical stopover habitat for songbirds during spring and fall migration. Upper Freehold Grasslands, an exceptional site for the northern bobwhite, field sparrow, eastern wood-pewee and American kestrel.

Hook a record-breaking catch in one of Monmouth’s many waterways, lakes and reservoirs. The Manasquan Reservoir in Howell is a good place to catch largemouth bass as well as bullhead catfish, muskie, sunfish, bluegill and black crappie. Angling for bluefish, striped bass or summer flounder? Head to the Navesink River, which runs about eight miles through Monmouth County. Don’t be surprised to find a largemouth bass on your line at Assunpink Lake, which sits between Allentown and Upper Freehold. Hybrid striped bass, catfish and bluegill are also plentiful here. WHETHER YOU’RE PLANNING A FOURTH of July get-together or a weekend barbecue, you’ve got to face it: Successful outdoor parties don’t just happen; they take planning. With that in mind, Monmouth Health & Life roamed the county pumping the experts for advice on summertime hosting that delights guests—and makes it look easy. Their 18 tips follow. In Chinese folklore, the number 18 is considered lucky because its pronunciation resembles that of the word meaning “definitely get rich.” We can’t promise that our smartparty counsel will bring you a pot of gold. 1 DRESS FOR COMFORT.

Guys typically have an easy time choosing what to wear for an outdoor party, but women may be in danger of overthinking. Bring on the sundresses and rompers! “A fit-and-flare dress is always a great option, but it might be best to opt for a cute romper if you’ll be moving around and bending down a lot,” says Angela Secul, owner of Tula the Boutique in Shrewsbury. “When it comes to which shoes you should wear outside, wedges are better than heels—they tend to sink into the grass. A pretty pair of flat gold sandals works too!”

Save face. Ladies, don’t make beauty a hassle. “Summer can be a great time to lighten up your makeup routine,” says Dana Marie Skinner, owner of Andover-based Makeup by Dana Marie. “Skip the foundation and try using a BB cream or just a loose powder to absorb excess oil. And if it’s a particularly hot day, switch to waterproof mascara. Companies like Revlon and Maybelline make them in a range of colors, so you can have fun with your look!”

Start side dishes early. The best barbecue and picnic side dishes are those you can prepare ahead of time. “I like to make salads the day before because they achieve a better flavor profile—the ingredients have time to marry, and the dish has time to really chill,” says Patty Sisselman, owner of Shore Catering in Brick. Pasta and grain salads tend to hold up well, she says, as do veggie salads made with tomatoes and cabbage instead of leafy greens.

Think of a theme. Just enjoying guests’ company is fine, but the occasion can be more special if you give it a motif. 1980s attire? Stars and stripes? Think of something fun yet practical, perhaps an idea that you can incorporate into every facet of the event. Luaus work well for summer parties because you can easily turn your backyard into a tropical oasis with artificial floral leis, tiki torches and umbrella covers. Menus and attire can reflect the theme as well.

Keep things cool. If you keep dishes like pasta and potato salads cold as long as possible, they’ll stay appetizing—and be more refreshing on a hot afternoon. “Rather than fill a large bowl with ice to chill your dish, you can use something fun like a blow-up raft, inner tube or toy boat,” recommends Sisselman. “You can add the ice, put your salad bowl on top and keep it chilled—all while dressing up your table with some fun centerpieces.”

Make sure flowers fit the mood. If your event is a traditional one—a garden party or an afternoon tea, for instance—tropical flowers may not feel right. In that case, consider using local sunflowers or gladiolus—which give great height to any arrangement. “These flowers are both eye-popping and heat-resistant,” says Susan Whytlaw, owner of Gig Morris Florist in Belmar. “You might be tempted to use flowers that grow in New Jersey gardens, like hydrangeas, peonies or ranunculus, but they wilt quickly when left out in the sun.”

Pick powerful petals. Everyone loves a colorful floral centerpiece, but no cut flowers will survive in heat for too long. Floral expert Whytlaw recommends arrangements of heat-resistant flowers such as tropicals. Protea, cymbidium orchids, birds of paradise and anthurium are all great varieties, and add a pop of bright color to any floral grouping. “Tropicals are used to warm climates, since that’s where they typically grow, so they are perfect in the summer heat,” she says.

Brief the guests. It’s a drag to show up for an event unprepared or overdressed, so spare your partygoers that feeling. “When hosting something outdoors like a pool party, you need to let guests know more than for an indoor event,” says Christine Figliuolo at Creations by Christine Events. “On your invitations, include whether you’ll be outside, around the pool or on the grass, so they know what to wear. Also mention if you’ll be providing towels, sunscreen and bug spray so they can come prepared.” MONMOUTH HE ALTH & LIFE

15 BE A SMART

COOKIE ABOUT DESSERT.

Pre-order a platter of themed sugar cookies to lay out for dessert—they’re an interesting talking point and a treat to eat! Jersey Cookie Girl in Jackson offers custom cookies for many occasions: For your high school graduate’s party, why not custom order cookies with the logo of his or future college? The cookies can come pre-wrapped in plastic bags, so they make for mess-free and delicious party favors as well!

Think natural. Insect repellent containing DEET is fine for your next jungle hike, but for an outdoor bash—near the food—you may wish to consider natural alternatives. Lemon verbena is an excellent substitute for chemical-laden bug spray, and it can be purchased at garden centers like Brock Farms in Freehold or Colonial Nursery in Lincroft. Have your guests rub a few of the leaves on their skin instead of using spray.

Let your guests do DJ duty. Want to add some vintage charm to your party? Pick up a stack of inexpensive vinyls from a local record store (Lofidelic Records in Manasquan or Hold Fast in Asbury Park, for example) and set them up—along with a portable record player— for everyone to browse through and enjoy.

Book rentals in advance. When it comes to renting tables and tents, beat the summer rush and book as far in advance as possible. Says John Nagle, owner of Where’s the Party At? in Spring Lake: “It’s important that people plan ahead to make sure they have enough seating for their guests and that our products will be available when they need them. We have party planners who help our clients identify areas of need they might not have even considered.”

Play that funky music Save your personal playlists for the gym or commute and put together a string of classic tracks that your guests can sing and dance to. (Hint: The oldies are “goodies” for a reason!) “When my band does outdoor gigs, we play songs that are familiar to the crowd,” says Carolyn Greenberg of Mary’s Basement, a local rock band. “We tend to do a lot of favorites from the ’60s and ’70s, like ‘Sweet Caroline’ and ‘Rock This Town.’ And in New Jersey, you can never go wrong with a little Bruce Springsteen!”

Please with a freeze. Who doesn’t love a slushy? If you’re planning a party, reunion or cookout where both adults and kids will be in attendance, you can’t go wrong with a frozen drink machine. “Frozen beverage machines are a very popular item at our store for rent,” says Nagle, whose company rents the machines. “They allow children to make slushies while grownups get to enjoy a margarita or daiquiri—they’re total crowd pleasers.”

Be imaginative with photos. Take lighting into consideration when photographing your big event outdoors. Local photographer Gina Palermo recommends attaching a lens flare to your DSLR camera and using the bright sun to your advantage. “I also like to reflect natural light off a prism for a rainbow effect,” she says. “It adds a unique touch.”

Prepare to be surprised. Hosts and hostesses aren’t the only ones who can be creative—guests can too! Anne Sauri, owner of the gift boutique White Bliss in Manasquan, tells partygoers that bringing a thoughtful hostess gift is sometimes more fun than the traditional dessert or bottle of wine. “I’ve been recommending the Michel Design Works hostess napkins and hand soap sets to my customers,” she says. “It’s a useful gift, comes in a cute and handy metal holder, and the Lemon Basil soap scent is very popular for summer.” So don’t be thrown if a guest’s clever gift helps make your occasion even more fun. Remember: It’s also nice to receive.

Choose cocktails that hydrate. Alcohol can cause dehydration, but that doesn’t mean you and your guests can’t enjoy a drink on a summer day. If you decide to serve alcoholic beverages at your outdoor soirée, opt for a cocktail that’s tasty and hydrating (water and juices from fruits and vegetables will do the trick). Local restaurant manager Colleen Hobaugh recommends a batch of “Pineapple Sangria.” It’s made with 2 cups of cut pineapple, 1 orange (sliced), 1 mango (sliced), 1 lime (sliced), 2 cups of pineapple juice, ½ cup of coconut rum, 1 bottle of white wine and 2 cups of Sprite. Combine ingredients in a large drink dispenser with ice, mix and leave out on the table for guests to enjoy.

Because parties can continue when the sun goes down, your outdoor space needs ample and safe lighting. A portable fire pit provides light and warmth, and it’s perfect for making s’mores. Another option is solar garden lights, which Nicole Rice, of Coastal Décor and Interior Design in Fair Haven, says come on spikes and are easy to add into flowerpots or stick along walkways. “You can also use string lights on pergolas and umbrellas, or battery-operated candles, which now come with remotes and timers so they can be set for certain time increments—in case you forget to turn them off,” she says, adding that they are safer than wax candles and help you to avoid a drippy mess. SAN DIEGO’S PETCO PARK

The Padres’ performance hasn’t lived up to the awesomeness of its stadium, sadly, but that’s beside the point. Opened in 2004, this park features spectacular views of the San Diego skyline and excellent local food and drink options. You also can’t beat the San Diego weather, so everyone will enjoy a stroll along the nearby San Diego Bay before and after the ball game.

CHICAGO’S WRIGLEY FIELD

Home of the Cubbies, Wrigley is known for its ivy-covered brick outfield wall and the iconic red marquee over the main entrance. This 104-year-old ballpark retains its nostalgic appeal even after an extensive renovation that followed the 2014 season. New concession stands in an improved concourse have opened this year.

PITTSBURGH’S PNC PARK

The Pirates’ home has an intimate feel, with the highest seat in the stadium only 88 feet from the field. And every seat (except in the bleachers) features spectacular views of downtown and the riverfront. Opened in 2001 and built in the style of classic stadiums, PNC Park features archways, steel trusswork and a natural grass playing field that pleases purists, but also the latest amenities like a wide range of food options for all fans.

APPLE BUTTER BBQ RIBS INGREDIENTS n 2 full slabs of baby back ribs n 2 Tbs. brown sugar n 1 Tbs. paprika n 1 tsp. cayenne powder n ½ Tbs. salt n ½ tsp. black pepper n 1 tsp. ground ginger n 1 tsp. dried thyme n applewood chunks FOR THE APPLE BUTTER BARBECUE SAUCE n 1 cup apple butter n ½ cup ketchup n ½ cup brown sugar n 1 Tbs. apple cider vinegar n 1 Tbs. yellow mustard n 1 tsp. Worcestershire sauce n salt and pepper, to taste

DIRECTIONS Preheat your grill for indirect: Place an aluminum foil pan filled with water under the grill grate and toss a chimney of hot coals alongside. With a butter knife and some paper towels, remove the membrane under each slab of ribs by inserting the knife between the membrane and one of the bones. Pull the membrane with a paper towel to remove it completely. Mix the brown sugar, paprika, cayenne powder, salt, black pepper, ground ginger and dried thyme in a small bowl then apply the rub on both sides of the ribs with your hands so it penetrates the meat. Place the ribs on the grill grate in indirect heat and toss a few applewood chunks onto the hot coals. Close the lid and cook for 2 hours at 300ºF. Add all the Apple Butter BBQ Sauce ingredients into a saucepan and simmer for 10 minutes. After 2 hours of cooking, wrap the ribs in aluminum foil with 1 cup of the Apple Butter BBQ Sauce on top of each. Cook for another hour at 300ºF. The ribs are done when the meat has shrunk about 1 inch from the bones. Once fully cooked, remove from foil and sear over direct heat for 30 seconds per side to caramelize the BBQ sauce.

SMOKED CHICKEN LOLLIPOPS WITH COLA BBQ SAUCE Yields: 24 lollipops INGREDIENTS n 24 chicken legs n 1 cup hickory wood chips FOR THE WET RUB n 5 Tbs. cayenne hot sauce n 5 Tbs. olive oil n ½ cup brown sugar n ¼ cup garlic powder n 4 tsp. black pepper n 3 Tbs. oregano n 2 tsp. salt

FOR THE COLA BBQ SAUCE n 1 cup cola n 1 cup ketchup n ¼ cup Worcestershire sauce n 3 Tbs. steak sauce n 1 tsp. onion powder n ½ tsp. black pepper

DIRECTIONS Preheat the smoker at 250ºF. Using a sharp chef’s knife, cut and remove the skin that covers the bone of each chicken leg to shape them like a lollipop. Mix all of the wet rub ingredients in a bowl, then dip each chicken leg into the mixture to give them an even coating. Place the chicken lollipops in your smoker and add about 1 cup of hickory wood chips for smoking. Smoke until internal temperature of the chicken reaches 165ºF. Mix all of the Cola BBQ Sauce ingredients in a saucepan and simmer for 10 minutes. Serve the chicken lollipops with Cola BBQ Sauce.

Corn, Revisited HOW WELL DO YOU REALLY KNOW THIS TASTY, YELLOW SUMMERTIME STAPLE? BARBECUE SEASON IN NEW JERSEY IS PRIME TIME TO ENJOY ONE OF THE STATE’S MOST plentiful vegetables: plump, juicy sweet corn. Garden State farmers harvest more than 50 million pounds of sweet corn each year, mostly from July through late September. And don’t be worried about genetic modification. True, that’s often used in producing field corn for feed and industrial purposes. But sweet corn—the kind you buy on the cob—is rarely grown using genetically modified organisms. And if you want to be super-sure, organic produce is always GMO-free. With all the health benefits this low-fat, high-fiber, gluten-free food provides, it’s simply too good to pass up. POWER UP A typical cup of raw sweet corn has 177 calories, 2.1 grams of fat and 5.2 grams of sugar. It also provides 4.6 grams of fiber (18 percent of the daily recommended value) and 5.4 grams of protein, not to mention an assortment of vital vitamins and minerals. For instance, that same one cup yields 17 percent of the daily recommended value of immune-boosting vitamin C (levels of this vitamin decrease when the corn is cooked) and a plethora of energy-building B-complex vitamins. Sweet corn is rich in antioxidants, including lutein and zeaxanthin, both of which can help protect eye health and prevent cataracts. A Cornell University study found that sweet corn has even higher levels of antioxidants after being cooked. The cooking process releases a compound called ferulic acid, which has cancerfighting benefits, the researchers say. The rumor about humans not being able to digest corn is partly well-founded: It’s true that the casing of the kernel shell is made of cellulose, a fiber that the human digestive system can’t break down. But when corn is chewed properly, the body is able to benefit from the good stuff inside the kernel. BUY/STORE/SERVE Corn’s sugars turn into starch as it ages, so it’s essential that you buy corn fresh and eat it soon after bringing it home. Fortunately, many New Jersey farms and produce stands offer newly harvested corn that can be enjoyed at the height of its sweetness. If you don’t plan to eat the corn the day you purchase it, keep it tightly wrapped in plastic in the refrigerator to retain its flavor. While shopping, resist the urge to peel back the husk. Instead, look for stalks that are green, firm to the touch and tightly wrapped. You should be able to feel plump kernels through the husk. Grill or boil the corn on the cob until its color deepens and the kernels become tender. Traditional American cookout chefs may insist on serving the corn simply with butter, but consider other options for dressing. For instance, adding herbs to the butter (or better yet, using extra-virgin olive oil) will give it a lighter taste, or you can infuse the corn with a Southwestern kick by drizzling it with Mexican crema, a dash of chili powder or smoked paprika, and a squeeze of lime. When shaved off the cob, corn also pairs well with most other vegetables in salads and salsas. Mix it with avocado and cilantro or Jersey tomatoes and basil for a refreshing side dish. And save the leftovers: Corn kernels work remarkably well as a pizza topping and in soups. —Liz Donovan

LANGOSTA LOUNGE THERE’S SOMETHING ABOUT THE smell of the sea on the breeze while strolling on the boardwalk at Asbury Park that whets one’s appetite. But what to do if you have a four-legged friend along with you? The answer: Head over to the pet-friendly Langosta Lounge’s outdoor seating area. After shooting the cover for this magazine, my group and I (including my chocolate lab, Bella) dropped in for lunch. Our server, Judy, could not have been more gracious while seating us, and we settled in to enjoy the view. If you’ve never been, the Asbury boardwalk makes for great people watching. We browsed through the appetizer menu that boasted tempting plates like calamari, lobster rolls and Langosta’s take on poutine, but we opted to start with the Oh Hi Wings and the Thai lettuce wraps. The wings were perfectly charred but juicy, and the glaze was delicious. The habañero in the sauce brought a delightful heat while the sweetness of the agave cooled everything down. The lettuce wraps were excellent as well with the ground chicken, scallion and cilantro mixture floating in the bibb lettuce wrap perfectly accompanied by the spiced rice noodles. I happen to love spicy food, but if you’re unsure, I recommend an ice-cold Kona Island lager or a delicious cocktail to keep things comfortable. The apps being on the lighter side, I wrestled with the idea of ordering pulled pork or a personal pizza before deciding

to tuck into a Gilligan burger for my meal. I was in for a treat. It’s not hard to make a good burger, but an exceptional burger is difficult to find. This one was certainly the latter. Think gourmet Big Mac and you’re close. Two perfectly grilled beef patties topped with gooey American cheese, shredded lettuce and delightfully sour pickles (I removed my tomatoes) set the stage for the remarkable house-made Thousand Island dressing. The sriracha ketchup accompanying the crispy fries put the whole thing over the top. Across the table, one of my lunchmates raved about the tuna poke bowl with arugula, which she ordered from the selection of specials. The bowl, she noted, was a perfect blend of sweet and spicy flavors. We were all stuffed after our meals so we decided to share the island rice pudding for dessert. The dish—a wonderfully creamy blend of rice, coconut milk, pineapple and shaved almonds with a hint of ginger—was so good we almost managed to finish it off. If you happen to find yourself wandering around Asbury Park with your best friend and wondering where you might grab a bite, you can’t do much better than the Langosta Lounge. Carbonara I N GRE DI E N T S • 3 tablespoons olive oil • 1/2 pound prosciutto, pancetta, or bacon medium dice • 1 spanish onion medium dice • 1 pound fettuccine • 1 cup grated pecorino romano • 2 egg yolks • 1 tablespoon coarse black pepper

SERVES 4

IN S T R U CTIONS • cook pancetta, onions, black pepper, and olive oil over medium heat until onions become translucent and pancetta is crispy • cook pasta in salted water until al dente reserve 1/4 cup of pasta water before you strain • add pasta water to pancetta and onions toss in pasta and heat for 2 minutes • remove from heat and fold in yolks and 3/4 grated cheese until creamy • plate and top with remaining grated cheese

‘A MOST UNUSUAL EVENT’ THE STONE PONY, ASBURY PARK The Boys & Girls Clubs of Monmouth County (BGC Monmouth) celebrated 80 years of service with a party titled “A Most Unusual Event” at The Stone Pony. The event’s theme was ’80s, and attendees were dressed for the occasion while enjoying music from the band Rubix Kube. BGC Monmouth exceeded its fundraising goals and received afterschool programming sponsorship for 86 local children in less than two minutes.

EARTH DAY CELEBRATION HABITAT FOR HUMANITY OF MONMOUTH COUNTY MONMOUTH RACETRACK, OCEANPORT Habitat for Humanity held an Earth Day Yoga Event at the Monmouth Racetrack. The class featured local yoga instructors Chrisanne Milko, DonnaLyn Giegerich and Vanessa Van Noy. After the 60-minute yoga session, attendees enjoyed a wine tasting hosted by Holmdel Buy-Rite and a trunk show by Athleta of Shrewsbury.

ANNUAL GALA UNITED WAY OF MONMOUTH AND OCEAN COUNTIES EAGLE OAKS GOLF & COUNTRY CLUB, FARMINGDALE United Way recently hosted its 50th anniversary gala at the Eagle Oaks Golf & Country Club. The event honored Enterprise Rent-A-Center, David and Sarah Fischell and Fulfill for their dedication and service to the community. Guests enjoyed an evening of dinner, dancing, boardwalk games and an open bar, as well as a gift auction. It also was announced that all new and increased donations will be matched dollar for dollar by the Jay and Linda Grunin Foundation.
