A Breath of Fresh Air The annual Shore Issue of Monmouth Health & Life focuses on life here at the Monmouth County shore, and as summer approaches, the unmistakable signs that the vaccines are rapidly and dramatically reducing risk for all and the lifting of some COVID-19 restrictions are fostering a renewed sense of optimism in our communities. Monmouth County’s beaches are a part of the backbone of our state’s economy and our home at Monmouth Medical Center, located just two blocks from the beautiful Long Branch beachfront. While some physical distancing and mask guidelines will remain in place, New Jersey has moved to reopen much of the state. For all of us, this brings hope that we are on a path that returns to wellness, and an undoubtedly sunny outlook on the upcoming summer season at the shore. The introduction of the vaccine marked a major milestone in our collective recovery from COVID-19, bringing us hope that our community can emerge from this pandemic, enjoying good health and the ability to gather and celebrate life as we have in summers prior to the quarantine. As we celebrate these victories in our fight against COVID-19, I am so incredibly thankful for the role our community has played in helping slow the spread of the virus by following public health guidelines to protect themselves and others. And as we embrace this semblance of normalcy, we are also mindful of those in our community who continue to suffer from long-lasting, lingering effects of the virus. To help survivors of COVID-19 who have experienced persistent weakness and respiratory symptoms, Monmouth Medical Center has introduced a post-COVID recovery program. On page 28, we introduce you to Matawan’s Pat Guadagno, who was one of the many COVID-19 patients who saw a rapid progression of respiratory failure that required hospitalization. Through our accredited pulmonary rehabilitation program, we are helping patients like Pat improve breathing and lung function to maximize complete recovery. As we welcome long days of abundant warmth and sunshine at the shore, I would like to wish all of you a safe and healthy summer.

We’ve all heard the phrase “a picture is worth a thousand words,” and it’s true. Photos provide a visual narrative; they grab our attention and help us process information. Great images can even prompt us to make certain decisions. Haven’t you wanted to visit a particular place or eat a specific food based on a stunning photo? That’s why we turned to you, our readers, when preparing the Outdoors Issue. We asked you to share compelling images of the places and things you’ve enjoyed
here in Monmouth County. For example, instead of telling you about the plethora of birds you can watch with awe, we provide a photo essay showing you our fine feathered friends. And because we process images in short snippets of time, as fast as 100 milliseconds, you can determine if a new pastime might be something you’d like to explore. After a year of canceled experiences, we thought it would be fun to consider getting reacquainted with our area post quarantine. So, turn to “Where the Birds Are” on page 40 and feast your eyes on the beauty that surrounds us—in the skies and in the trees. The locales spotlighted in that story are just a small sample of our counties’ best outdoor destinations. Mother Nature awaits in all corners, whether you want to feel grass beneath your feet, traverse unpaved trails, voyage across water and more. In “Adventure Awaits” on page 34, we again turn to you to showcase these picturesque places where hiking, boating, horseback riding and other activities are easily accessible. And we can’t talk about the season without mentioning grilling and the Fourth of July. We cover both summer traditions in Buzz, where we interview a product expert from New York City-based appliance retailer AJ Madison about setting up an outdoor kitchen. Also in Buzz, we offer a list of Independence Day events where you and your family can enjoy festivities—in person! If you haven’t ventured far from home over the past year, now is the perfect time to get out. Businesses, restaurants, sports arenas and more have reopened under the most up-to-date guidelines. But if you’re not quite ready for those, the great outdoors awaits your return.

5 RULES FOR YOUR OUTDOOR KITCHEN
HER BIZ IS GROWING During quarantine, some of us turned our attention to cultivating plants. Others have been green-thumbers for decades. Both groups might consider a trip to Kennedy & Vine, which recently opened in Atlantic Highlands. Turns out the pandemic was the driving force behind Jennifer Spina’s decision to open this store, having left a corporate job last summer to pursue her passion for plants. After taking courses on how to start a business and obtaining a loan, Spina set up her shop, which features more than 800 specimens of indoor plants in a lush, tropical space. As summer arrives and we ease back into in-person gatherings, backyard entertaining has never looked better. “Outdoor living has become an accepted normal, especially with the pandemic,” says Jessica Petrino, editorial director at AJ Madison, a New York-based kitchen and home appliance retailer. “People are realizing their next vacation is in their backyard, so they are taking more time and care with home improvement projects.” Petrino shared with Monmouth Health & Life a few recommendations homeowners should consider if they choose one of the hottest projects, an outdoor kitchen: • Keep it all outside. A good setup will reduce or eliminate the need to shuttle back and forth to your indoor kitchen. That means an area with cooking space, refrigeration, a cleanup station and cabinet storage. “We are seeing an uptick in people wanting cabinetry and islands,” Petrino says. “Everyone has separate outdoor cooking equipment and dishes, so why not store them outside? And a faucet is good for handling meats and comes in handy when gardening too. Everything should be centralized in the outdoor kitchen.” • Express yourself. Silver and black are classics, but there are many ways to customize your kitchen. “People are looking for ways to be original, and they’re adding pops of colors,” Petrino says. Brands like Hestan have grill lines in orange, yellow and emerald, while pizza ovens and hearths
can be customized as well. • Worry not about size. Let’s face it: Not all backyards are created equal. It’s easy to fit a grill, a pizza oven, a dishwasher and more when you have a sprawling backyard, but what if you don’t? Petrino says the basics call for 6 feet of grill area, counter space and refrigeration. “Prefabricated modular islands take the guesswork out of it,” she says, adding that models are built with ample counters and dedicated openings for different appliances. • Consider an expert. Though not strictly necessary, hiring professionals to help with your kitchen design can help. AJ Madison staff, for example, can help homeowners choose appliances that fit their lifestyle and entertaining needs, while plumbers can take care of water and gas lines. “People are more committed now to their largescale projects, so they want them to look nice, complement the architecture of the house and most of all be safe,” Petrino says. • Think winter. We’re certain you’re not contemplating snow in June. Well, Petrino suggests it should be in the back of your mind when you’re creating an outdoor kitchen. “It should be close enough so that one can get to the house quickly, and in places where the plow guys don’t pile snow and where snow won’t slide off slanted roofs,” she says. For our infamous winters, appliances made of marinegrade stainless steel are best as they are most resistant to rust.

LET’S GO FOURTH! A summer without proper Independence Day festivities—we’re never doing that again! Monmouth County municipalities are celebrating the nation’s birthday and the (slow) return to normal this year with in-person parties and fireworks shows. In these four towns, you can enjoy the revelry: • Manasquan. Start Independence Day weekend off right at the town’s celebration on July 2. A parade and concert begin at 3 p.m., followed by fireworks at dusk. • Bradley Beach. The borough’s Red, White and Blue Festival is set for July 3, with a full day of music and entertainment and an evening of fireworks and entertainment along the waterfront. • Holmdel. Take the family to Historic Longstreet Farm from noon to 3 p.m. on July 4 for a day of free music and games. • Long Branch. Though the daytime festival is cancelled this year, 4th of July Oceanfest returns with an evening fireworks show beginning at dusk on Independence Day.

GIRL WITH A GIFT FOR SEEING Some people just have a knack for taking great pictures. Take Wanamassa’s Sabrina Fisher, a 10-year-old shutterbug with autism. She started snapping nature photos with her phone last summer— the activity provides her a sense of calm and relaxation, says mom Tiffaney Fisher, who also has 6-year-old triplets, each on the autism spectrum. While the younger kids are still discovering their talents, Fisher is more fascinated with Sabrina’s work each day. Sabrina’s photos have been displayed at the Pickled Artist Center in Holmdel, and mom’s also set up a Facebook page to share her daughter’s work. “Sabrina takes photos mainly in a close-up perspective because that is how she sees beauty in the world,” says her mom. “When she takes a picture of a tree, you feel like a bird or a squirrel looking out from it. She says when she takes a picture close up, it’s prettier than when you take one from far back because you see more details. KUDOS Six Monmouth County residents were honored this spring with Russ Berrie “Making a Difference” Awards, prizes bestowed upon unsung heroes from across the Garden State whose outstanding service to others and heroic acts make a substantial impact on the lives of others. The following honorees from Monmouth County received a $7,500 prize for their selfless actions: • Lynn Regan, Farmingdale left). She founded the CFC (“Coming Full Circle”) Loud N Clear Foundation after witnessing a loved one’s struggle with addiction. Regan created a successful relapse prevention model that has helped thousands of young people achieve long-term sober living. • Kieran Foley, Joseph Dietrich, Drew Scalice, Ryan Day and Tyler Armagan, Middletown (right). Affectionally known as “the Rescuers,” the five teens created a human chain to save two small children whose sled entered an icy pond on a cold December day.
PUPPY LOVE Dog: Yogi, 16-month-old mini dachshund Owners: The Lunds of Rumson After years of wanting a puppy, the Lunds finally got their wish during quarantine. Stuck at home, mother Wendy and daughter Zoe researched different breeds and decided that a mini dachshund would be the best fit for their home—and they found the perfect one at an area breeder. “We looked at a video, and Yogi was the sweetest, cutest little pup,” Wendy recalls. They brought Yogi home at just 7 weeks old, and the pup slept through the night from day one. In fact, “he still loves his crate. It’s very natural and calming,” Mom reports. Turns out Yogi provided the peace that his family needed during the pandemic. “I think he was the reason we got through the quarantine,” Wendy says. “He was silly and playful and made us laugh and feel normal and lighthearted.” Today, he’s a lot calmer but continues to do puppy things: He steals socks (but never destroys them), plays fetch, engages his humans in games of tug-of-war and is rarely seen without his favorite toy alpaca. And he’s always up for a trip to Fins & Feathers in Red Bank, Starbucks and the beach, of course. Says Wendy: “He always loves to hang out with us. THE POWER OF PINK
The strength of the community supports Monmouth Medical Center’s oncology services and the hospital’s cancer patients.
The coronavirus put a hold on many events and social gatherings over the past year, but the power of pink has proven stronger than the pandemic. Monmouth Medical Center’s Leon Hess Cancer Center Council (LHCCC) in particular has shown its mettle, continuing its popular Pink fundraising events in both virtual and socially distant, in-person formats. “One of the many things we’ve learned over the last year as a community is that we are flexible and resilient, just like our incredible patients,” says Terry Ingram, who serves as Pink co-chair, LHCC council member and Monmouth Medical Center Foundation (MMCF) advisory board member. She is also the founder of the Swing Pink golf and tennis event. Pink returns on Sept. 20 with a full-day program featuring Swing Pink in the morning and the Power of Pink luncheon in the afternoon. All proceeds will benefit the cancer center and the Jacqueline M. Wilentz Comprehensive Breast Center at MMC. Over the past 20 years, the council has raised more than $6 million to advance the hospital’s oncology services. The financial support funded the purchase of state-of-the-art equipment and helps run programming for thousands of patients and families who face a cancer diagnosis. “These patients deserve the very best quality care as they fight for their lives and their futures,” says Claire Knopf, Pink co-chair, LHCC council member and chair of the MMCF board of trustees. Here, you’ll briefly meet three cancer patients, each of whom was successfully treated at MMC and has been profoundly impacted by Pink. Shawna Dempsey, breast cancer survivor “I was diagnosed in 2017 at the age of 31 years old with high-grade ductal carcinoma. The cancer journey doesn’t just stop when you have the mastectomy or when you stop your treatments, whether it’s radiation or chemo. It’s with you for the rest of your life. But to be able to rise above it and move on and your doctors and their team help you to do that is the most important part of the journey. Because of the cancer treatment that I received at The Leon Hess Cancer Center, I was still able to have children, and I have a baby girl who’s 20 months old today. “Pink is important to me because I think it represents unity and strength in numbers, and I think it’s a

force to be reckoned with. It’s not going anywhere.” Crystal Morgan, pancreatic and duodenal cancer survivor “When I received my initial diagnosis of pancreatic cancer, I felt like someone punched me in the stomach. Everything seemed muffled and almost surreal. I was grateful for the support I received from not only the doctors, but the nurses, specifically Tanya Hubbard, who wrapped her arms around my daughter when I couldn’t. I was so frozen in disbelief, and this nurse who came out of nowhere comforted my child—and that made all the difference in the world. From that moment on, I knew that I could fight. “Pink is important to me because it’s everything to patients like us—those who don’t know what tomorrow brings. Those donors help bring a level of comfort and peace and hope.”
Brad Smith, brain cancer survivor “I had recently turned 52 and had some memory loss problems where I couldn’t tell you my address or where my kids were going to school. It was very scary. I went to get an MRI, and this is where they talked to me about needing surgery. You’ve got a brain tumor, they said. And Dr. Jonathan Lustgarten (chief of MMC’s neurosurgery department) had a team ready to go to work on my brain, and it made me feel very confident. I went through surgery and came out in good condition. I’ve come back and have gone to work. I can go for walks, I can paddleboard on the river. My life is back on track. “Because of the care and support shown for the Leon Hess Cancer Center, the care I’ve received changed my life. I look forward to seeing everyone this year at Pink.”

SPINE SURGEONS HAVE YOUR BACK

The surgeon is able to view the procedure on a monitor, which provides real-time feedback. With this technology, the procedure is more accurate and less invasive than traditional surgery, according to Dr. Menkowitz. “We can be precise to the millimeter,” he says. “Once we navigate to where we want to be in the spine, the system locks us into the surgical pathway.” Patients benefit from this high-tech surgical system in several ways. Because the procedure is so precise and involves small incisions, there’s less blood loss, tissue damage and scar tissue. Patients recover more quickly and with less pain than with traditional spine surgery, says Dr. Menkowitz. As a result, hospital stays tend to decrease by about a day, on average. Another advantage: The patient is exposed to less radiation during the surgery because fewer X-rays need to be taken to guide the procedures. Since MMC introduced the ExcelsiusGPS in October 2019, the system has been used in more than 100 spine surgeries performed by Drs. Menkowitz and Paragioudakis—and they are seeing positive results. “This is the wave of the future,” says Dr. Paragioudakis. “I think all spine surgeries will be done this way eventually.”
Reaching 100 of anything is usually a significant milestone, but it is always an extraordinary achievement in medicine, particularly when it’s the number of patients who receive a lifechanging procedure. On May 17, two Monmouth Medical Center (MMC) spine surgeons, Marc Menkowitz, M.D., and Steve Paragioudakis, M.D., reached the century mark of patient cases that used the cutting-edge Globus Medical ExcelsiusGPS robot for minimally invasive spine surgery. MMC was the second hospital in New Jersey to use the technology, and while dozens of surgeons use the system, few can match Drs. Menkowitz and Paragioudakis’ expertise and experience with it. They perform the majority of their cases together, using the robot to treat patients who suffer from debilitating conditions like degenerative disc disease and spinal stenosis, as well as damaged discs, scoliosis and other back problems. The ExcelsiusGPS system combines a robotic arm with computer-assisted navigation. CT scan and X-ray images of the spine are taken prior to a procedure. These images are used to create a surgical plan, which helps the physician guide the robotic arm to a specific area of the spine.

Spa-like serenity is always a welcome retreat, yet perhaps nowhere is the calming power of design tested more than at a birthing center. Can a place where labor pains happen really have comfort at its essential spirit? That was the challenge put before Anna Maria Mannarino, owner of an eponymous Holmdel-based design firm, as she met with Clara Surowitz, M.D., ob/gyn, at Monmouth Medical Center’s cafeteria between deliveries back in 2019. The vision for the medical director’s own expected “new arrival”—Tr ū Birth Center in Lakewood—was clear that first day. “The design was meant to have the look and feel of a luxury boutique hotel or spa,” says Mannarino, with a “very specific color palette” of deep rose, Bordeaux and aubergine. Construction was completed this March with a sustainable design that stayed true to its mission, and already 31 babies have entered the world in this lap of luxury. A sense of serenity flows throughout the birth center from the reception desk, where a dogwood wallcovering basks in LED lighting, to the abstract-art-adorned family room/kitchen, where Dad and crew can unwind on a modern Italian sectional MONMOUTHHEALTHANDLIFE.COM

before a large-screen TV. The hallway conveys drama with shimmering, rose-gold architectural panels and remote-control candles set in the recessed niches. The trickling sound of the hallway’s wall-mounted, lotus-flower waterfall permeates into the birthing suites, each abounding with spa-like comfort. With an electric wall fireplace and luxe bed complete with a tufted, satin-like headboard (shhh! It’s easy-to-sterilize Scalamandré vinyl), both birthing rooms tastefully downplay their medical functionality, as intended. Each birthing room also has its own organicshaped tub with peony marble mosaic tile from Artistic Tile cut into espresso-gray-toned vinyl floors like a blanket of flowers, says Mannarino. Elegance extends to the Carrara-marble-effect bathroom in each suite with a threshold-less shower for safety. BIKING
It’s tough to beat a leisurely bike ride along the shore, and with cyclist friendly streets along boardwalks, there’s plenty of room to roll. But if you’d rather avoid the beach crowd, Monmouth has plenty of trails for all skill levels to enjoy. The Edgar Felix Bikeway (pick up entry points in Allenwood and Manasquan), for instance, is 5.2 miles of trails that takes riders through historic neighborhoods and deep into forests, ending at Allaire State Park. For a longer ride, the 22-mile Henry Hudson Trail (trail heads in Freehold and Highlands) is a scenic route that cuts into wetlands and passes many fields and streams. The Union Transportation Trail (access points in Freehold), meanwhile, follows the path of a former railroad and includes a stretch of gravel terrain for stronger riders.

The Manasquan Reservoir in Howell is a good place to catch largemouth bass as well as bullhead catfish, muskie, sunfish, bluegill and black crappie. Angling for bluefish, striped bass or summer flounder? Head to the Navesink River, which runs about 8 miles through Monmouth County. Don’t be surprised to find a largemouth bass on your line at Assunpink Lake, which sits between Allentown and Upper Freehold. Hybrid striped bass, catfish and bluegill are also plentiful here. Don’t forget that a New Jersey fishing license is required for anyone between the ages of 16 and 70. Fees are $22.50 for ages 16 to 64 and $12.50 for 65 to 69. Description: This 7-mile-long barrier beach peninsula jutting into the Atlantic Ocean and Sandy Hook Bay is part of the National Park Services’ Gateway National Recreation Area, which encompasses 26,000 acres of parklands in parts of New Jersey and New York. It features public beaches, salt marshes, a holly forest and numerous historical landmarks. Beach fees: FREE with vehicle parking. Beach parking: $15 daily, $75 for the season. POINT PLEASANT BEACH

WHERE THE BIRDS ARE Spotting nature’s airborne ambassadors has become a popular pastime, and our counties have great places for it.
Who could get excited about a hobby whose essence is waiting and watching? Birders, that’s who, and there are millions of them worldwide. Birding, or bird-watching, is a relaxing way to commune with nature, but it has thrilling moments too—such as when you identify one of the earth’s roughly 10,000 feathered species that’s new to you. Birds are evolutionary links to prehistory, and they’re also creatures of beauty, fascinating in their varied colors, sizes, shapes, movements and hunting and nesting practices. Birding has become so big that Instagram is packed with photos of cardinals and mourning doves, while live streams of trees, feeders and nests are watched by thousands on YouTube and Twitch. Whether you’re a casual watcher with a pair of binoculars or an ornithologist with spotting scopes and cameras, birding in Monmouth County is easy thanks to the area’s varied landscapes and its efforts to protect the land. “As I started to educate myself more on birds and wildlife in general, my eyes were opened to the anthropogenic perils that they face,” says Roberto Melendez, a nature photographer whose fascination with birds started when he watched David Attenborough’s BBC nature documentary, The Life of Birds. “Thus, my mission slowly shifted more toward promoting conservation,” he says. “Through my work, I hope to inspire others to engage in conservation efforts and to protect our natural world for future generations.” Where best to practice this hobby? Allaire State Park
Five marked trails take visitors through the 3,200-acre park in Wall and Howell, and they’re also frequented by an assortment of fine feathered friends all year long. From warblers and wrens to vultures and vireos, many make stops here during the migration seasons. As a result, nature enthusiasts often swing by and wait for the perfect photo op— Robert Doran (@disorientedchipmunk) captured the red-bellied woodpecker on the opposite page during a recent trip to the spot. For Toms River’s Nick Pullano (@nickyboy46), colorful hummingbirds and summer tanagers always catch his attention. “I love when the male flashes his ruby red colors,” he says.
Hartshorne Woods Park
This park covers roughly 736 acres in the Bayshore Region in Highlands. With plenty of woods and shoreline to explore, birders will likely see plenty of song and shore birds as well as birds of prey. Patience is key to photographing birds, especially swift-moving songbirds that are tougher to spot. Following sounds is helpful, says Gavin Shwahla of Point Pleasant Beach (@gavinwildvisuals). “I was exploring the trails of Hartshorne Woods Park when I heard the song of an American restart so loud it sounded like the bird was right in my ear,” he says. Shwahla recalls slowly following the bird through the woods before setting up to take this photo. “He stayed just long enough for me to rattle off a few shots. He then flew back deeper into the forest, leaving me with another moment captured and my heart a little fuller.”

Cheesequake State Park
With more than 1,600 acres of wooded area, camp grounds and more space dedicated to nature, one would never know that the Garden State Parkway cuts through the middle of this Matawan park. The birds probably don’t realize it either, as they have plenty of perches and green space to check out. Keep your eyes peeled for raptors like red-tailed hawks and ospreys, shorebirds like great blue herons and gulls and little songbirds like sparrows and catbirds. Cranford resident Cheryl Sabin (@njgirl100adventures) recently snapped this photo of an eastern towhee. “I love to go to Cheesequake Park during my free time to take pictures of birds and assorted wildlife,” she says. “Bird photography for me is challenging and brings much joy into my life!”
Shark River Park
Roughly 10 miles of trails make up this park in Neptune, Wall and Tinton Falls, but birders and photographers of all skill levels can catch a glimpse of wildlife up and down the river. Like the anglers who cast lines along the river banks, birds of prey including bald eagles and ospreys are also on the lookout for a fresh catch. Bird watcher Chris Fraley of Freehold (@chris.a.fraley) enjoys seeing web-footed varieties as well, such as the hooded merganser that he photographed this past winter. “Shark River is a beautiful place to see a wide variety of birds, especially waterfowl,” he says. “There are various access points as well as streets that run along parts of the river that enhance birding, photography or just getting out in nature.”

Sandy Hook Gateway National Recreation Area
Sandy Hook’s beaches are a popular destination for summer sun bathers, but the shore and adjacent woods are just as well-known for its birds. As many as 600 least terns and 60 piping plovers have nested here, as Sandy Hook is a major stop along the migration pathway for more than 340 species traveling the Atlantic Flyway. “There are so many birds to enjoy in Sandy Hook,” says Kim Smerdon (@smerkim), who shot the osprey at right. While birds of prey are great discoveries, so too are songbirds. “I like photographing birds at Sandy Hook because of the great variety that migrate there during different times of the year—some are just passing through, while others stay,” says Monmouth resident Kim Garrison (@kimhalligan1). “I came across this stunning male scarlet tanager (pictured above) perched on a tree during a recent visit to the park. It’s a beautiful national recreation area with beaches facing oceanside and bayside, a maritime holly forest, salt marshes, ponds and other habitats for wildlife.”

THE CHAIR THAT CARES
Thanks to a Red Bank entrepreneur, you can sit back and enjoy the shore in an oceansparing beach chair. By Laura Adams Stiansen
With summer arriving, we’re all looking forward to relaxing on the beach and splashing around in the ocean. But while you dip your toe into the Atlantic to test the temperature, it’s hard not to think about the 8 million tons of plastic that end up in our oceans each year. That’s equivalent to dumping the contents from a garbage truck into the ocean every minute of every day—if you figure the garbage is all non-biodegradable plastic. That’s a lot of trash. But there are ways to help. The National Oceanic and Atmospheric Administration of the U.S. Department of Commerce suggests that we all think about the MONMOUTHHEALTHANDLIFE.COM

plastic items we use every day and reduce our use, reuse, recycle and participate in a cleanup in our local communities. Red Bank resident Brenton Hutchinson has an idea too. He’s created LowTides Ocean Products, a company that uses “upcycled” high-density polyethylene (HDPE) pellets sourced from 100 percent ocean-bound plastic to make armrests and kickplates for stylish beach chairs. So now some of the plastic that once threatened the ocean can help you sit back and enjoy the ocean instead. It all started after Hutchinson, who spent his childhood summers in Sea Isle City, read a 2018 National Geographic article titled “Planet or Plastic.” There he learned about the amount of plastic waste in our oceans and how it affected our environment, from marine life to our shorelines. “It was disturbing to read about the impact that our waste has on the environment,” Hutchinson says. “How plastic breaks down and is ingested by animals mistaking it for food. This led me to start thinking about how we can reuse this plastic already in the environment rather than have it end up in the ocean, rivers, streams or landfills.” In 2019, Hutchinson launched a Kickstarter campaign introducing the “world’s most eco-friendly beach chair.” It met its $30,000 goal with 172 backers and sold out for its 2020 season. This season, LowTides Ocean Products has introduced updated designs and new patterns in its line, which includes the Sandbar Low Chair ($140– $150), the Dune Tall Chair ($110)

and the Gully Child Chair ($90–$95)—with some options already sold out. To date, LowTides Ocean Products has prevented more than 16,000 pounds of plastic from entering our oceans. “It feels great to tell people with certainty that by purchasing our chairs they are literally pulling plastic from the environment,” Hutchinson says. “However, we still have a lot of work to do. The goal is to educate the public—not just counting pounds pulled, but changing the mindset of the consumer—and to look for products like ours that help better the world.” LowTides Ocean Products works with industry leaders that source ocean-bound plastic and then recycles out the reusable material—HDPE pellets from single-use plastic containers—that is used to help create the beach chairs. The process, from collection to completion, takes about 16 weeks. “It’s great to have people like LowTides out there sharing the news and the importance of people understanding that a clean and healthy ocean isn’t a guarantee,” says Cindy Zipf, executive director of Clean Ocean Action, a coalition of 125 community and environmental groups seeking a solution to ocean pollution. “I have learned a lot through this experience,” Hutchinson says. “It is important for others now to educate themselves on the impact that material like plastic can have on the environment. If everyone starts by making small changes to their everyday lives for the better, the positive changes can add up. It will sustain our Jersey Shore way of life for generations to come.” MONMOUTHHEALTHANDLIFE.COM

CHILLED CUCUMBER SOUP Yields 10 servings
INGREDIENTS:
n 2 large cucumbers, 1¼ lb. each n 2 level tsp. Guérande sea salt (or kosher salt) n 1–1½ cups plain whole milk yogurt n 4 Roma tomatoes, 3½ oz. each (optional) n 6 scallions (optional) n 10 walnut halves (optional) n 3 Tbs. finely chopped fresh cilantro n 3 Tbs. finely chopped fresh mint
DIRECTIONS:
Wash and peel the cucumbers, leaving a few strips of skin. Cut the cucumbers in half lengthwise, scoop out the seeds with a spoon and slice thinly. Place the slices in a strainer set over a bowl to collect the juice. Sprinkle the cucumber with the salt, place a weight on top to press it down and let it sit for 15 minutes so the excess liquid in it drains out. Whisk the yogurt in a salad bowl until smooth and then stir in the cucumber juice. Rinse and drain the cucumber slices and mix them with the yogurt. Add more whisked yogurt if you’d like the soup to be thinner or, if you’ve used thick Greek yogurt, you may need to thin it with a little whole milk. Chill for 30 minutes. Meanwhile, peel the tomatoes (if using) with a tomato or vegetable peeler. Cut them in half, remove the seeds and dice finely. Rinse the scallions (if using) and slice thinly. Roughly chop the walnuts (if using). When ready to serve, stir the cilantro and mint into the chilled soup. Serve at once with the optional tomatoes, scallions and walnuts in separate bowls so guests may garnish their soup to taste.

ROASTED EGGPLANT WITH OREGANO AND BALSAMIC Yields 12 servings
INGREDIENTS:
n extra-virgin olive oil n 12 eggplants (or 6 large Sicilian eggplants) n 5 Tbs. dried oregano (or more to taste) n Scant 1 cup (balsamic vinegar n kosher salt and freshly ground pepper
DIRECTIONS:
Preheat the oven to the highest possible temperature on fan setting. Brush two rimmed baking sheets (or shallow roasting pans) with olive oil and sprinkle with a little kosher salt. Rinse and dry the eggplants and cut off the stems. Cut into⅔one-inch slices and place them on the baking sheets. Place one baking sheet in the center of each oven. Roast the eggplants for 10–15 minutes until golden and lightly browned. Roast the second batch. Arrange the slices in layers on serving dishes and sprinkle with the oregano. Season with freshly ground pepper and drizzle generously with ½ cup of the balsamic vinegar, followed by a drizzle of olive oil. Let rest for 2–3 hours at room temperature, adding more vinegar and oil as needed, if the eggplant has fully absorbed them. Just as the eggplant drinks up the vinegar, your guests will devour these golden-brown, melt-in-themouth eggplant slices.

BERRY ALMOND CRISP Yields 12 servings
INGREDIENTS:
n 1 lb. strawberries n 14 oz. red currants n 1½ lb. raspberries n generous 1 cup superfine sugar, divided n 2¾ cups all-purpose flour n 1 tsp. ground cinnamon n 2 sticks salted butter, diced and softened, plus more for greasing n generous 1 cup sliced almonds
DIRECTIONS:
Preheat the oven to 400°F and grease two 9½in. round porcelain baking dishes with melted butter. Wash and dry all the fruit, and then hull the strawberries and pull the red currants off their stalks. Put the berries and currants in a large bowl, sprinkle with a scant ½ cup of the sugar and stir to combine. Divide the fruit between the baking dishes, spreading it in a single layer. In a separate large bowl, combine the flour, cinnamon, remaining sugar, diced butter and ground almonds. Rub the ingredients lightly together with your fingertips until coarse crumbs form. Scatter a layer of the crumb mixture over the fruit in the baking dishes and bake for 40 minutes, until the topping is golden and crisp. Serve warm.

Crunch Time
Almost any occasion is right for the delicious, nutritious, slightly noisy peanut. Did you know that the peanut isn’t really a nut? Botanically speaking, it’s a legume, kin to beans and peas, because it grows in pods underground rather than in trees, where actual nuts develop. Known to science as Arachis hypogaea, peanuts originated in the Andes and were spread throughout Asia and Africa by Spanish and Portuguese explorers. In the 1700s they were brought to the North American continent; in ensuing centuries, with agriculture’s advance, they became a major commercial crop. More than 6 billion pounds of peanuts were produced in the U.S. last year, and China and India are even bigger producers. Peanuts are a ubiquitous snack and a versatile food ingredient, as well as the basis of peanut butter and peanut brittle. These bad boys are so prevalent, with four main varieties (Runners, Virginias, Spanish and Valencias) and a wealth of seasonings (from honey roasted to spicy Cajun), that their sheer profusion may drive you absolutely legumes. Peanuts, however, aren’t for everyone. Peanut allergies affect 1.2 percent of the U.S. population— and 2.5 percent of the kids. For them, consuming peanuts may produce an anaphylactic reaction that can be fatal. For the rest of us the peanut is an old reliable snack— traditional, accessible and more beneficial than you may realize.
contemplating your food’s former face, you can’t go wrong with peanuts. The USDA reports that just one ounce can account for 15 percent of your daily recommended protein intake. But you needn’t be a vegetarian to appreciate peanuts. Relatively low in carbohydrates, they have a low glycemic index, which means they’re better for your blood sugar than, say, white bread or corn flakes. Peanuts can actually cut down on the risk of cardiovascular disease by giving you a healthy dose of vitamin E. They’re also a good source of another heart protector, vitamin B3 (alias niacin), which may help boost brain function too. Peanuts are rich in minerals. One hundred grams—that’s about 3½ ounces—provide slightly more than half of your daily requirement of magnesium (good for muscle function, heart function and energy production) and just under half of your daily phosphorus (good for cell growth and the formation of teeth and bones). They’re fiber-intensive, and although they’re high in fat, it’s mostly a healthy monounsaturated fat that can help reduce the body’s levels of low-density lipoprotein (LDL), “bad” cholesterol. If you choose raw peanuts with skins attached, you’ll get the benefit of the skins’ antioxidants,

which can help prevent cellular damage from free radicals. Because they’re filling, peanuts can also be part of a weight-control regimen. But be aware that a handful of peanuts, 39 or so, has 170 calories, so if you munch heedlessly and the handfuls go on, calories can tally up fast. And if you’re someone who needs to watch your sodium intake—for instance, because of high blood pressure or known stroke risk—choose unsalted peanuts. An ounce of salted dry roasted peanuts contains about 280 milligrams of sodium, so that just a few ounces can rapidly approach the American Heart Association’s suggested daily maximum of 1,500 milligrams. Peanut butter has the benefits of peanuts, but is often manufactured with salt, sugar and hydrogenated fats for flavor and ease in spreading. You can cut down on these additives by choosing “natural” peanut butter. BUY/STORE/SERVE Peanuts can be consumed raw, boiled, roasted or incorporated in a number of prepared dishes. Any grocery store is apt to sell them in the shell and shelled, salted and unsalted (check the baking aisle if the snack section doesn’t have them unsalted and shelled), and they’re a popular cooking ingredient in a number of cuisines around the world, combining a pleasant taste with a satisfying crunch. The shelf life of peanuts depends on whether they’ve had their hard exterior removed. With the shell they can last about four months in the pantry, and without it they’ll last four weeks. Either way, if you put them in the fridge they can endure about a year—if it takes you that long to consume them. “Sometimes you feel like a nut,” a TV ad jingle once sang. So why be technical? Grab a handful of peanuts—even if they’re really NINOs (nuts in name only).

White Noise A fruity, flavorful boost will make this summertime classic the hit of your backyard celebration.
RASPBERRY PEACH WHITE SANGRIA Yields: 9 servings
INGREDIENTS
n 1 (750 ml) bottle Moscato, ideally Italian Moscato d’Asti n 1 (750 ml) bottle off-dry to dry Riesling n ½ cup brandy, optional n 1 medium apple, cored and diced n 2 peaches, peeled with pit removed and diced (or use 2 cups frozen) n 10 fresh raspberries n 1½ tsp. vanilla extract n plain or citrus flavored seltzer water, optional
DIRECTIONS
n In a large pitcher, combine brandy, apples and peaches, then use a wooden spoon to lightly muddle together. Add raspberries, vanilla and wine. Stir, then refrigerate at least 1 hour. n Serve chilled and topped with a splash of seltzer water if desired.

UNITED WAY OF MONMOUTH AND OCEAN COUNTIES Employees at Banana Republic of Sea Girt and Shrewsbury collected nearly 30 bags of items for the United Way’s Senior Comfort Bag project. The donations were handed out to seniors enrolled in programs at Toms River-based O.C.E.A.N. and the Interfaith Hospitality Network of Ocean County. 1 Banana Republic employees deliver their donations.
