GRATITUDE MARKS OUR REACTION TO THE NEWS THAT Saint Barnabas Medical Center has received its 14th consecutive “A” rating from the Leapfrog Group, placing it among fewer than 50 hospitals nationwide to achieve this designation. We are grateful not only to the Leapfrog Group for its rigorous study of truly meaningful quality measures, but also to our staff and the community that supports us. Many people’s efforts have contributed to this honor, which we accept as a spur to keep improving, providing ever more effective care and an ever more satisfactory experience for patients and their families. We are fortunate to have at Saint Barnabas Medical Center some physicians and surgeons with international reputations. But they would be the first to acknowledge that the key individual in the patient’s experience is often not the doctor, but the nurse. So we are especially pleased to have been named a Magnet Hospital by the American Academy of Nursing. Magnet Hospital designation helps to create a “virtuous cycle” of high-quality, compassionate care at the bedside: As you will read on page 50, by honoring the superlative efforts of our current nurses, it also makes it easier for us to keep on recruiting the profession’s finest. Of course, optimal 21st-century medical care requires optimal tools too. Thus we take pride, not in technology for its own sake, but in the way it enables us to deliver the most up-to-date care. One timely example is the Ingenia Elition 3.0T wide-bore, high-definition magnetic resonance imaging (MRI) system from Philips Healthcare, now located at the Imaging Center in our Ambulatory Care Center. Saint Barnabas Medical Center is one of the first imaging sites in the country to debut this latest generation in MRI systems. Quieter and more comfortable than previous models, it provides simultaneous three-dimensional imaging capability and cuts scan times in half. Accolades from outside organizations are important, but even more important to us are satisfied patients—people who have been restored to health at Saint Barnabas Medical Center and value it as a community resource. YOU DON’T HAVE TO BE immensely pregnant to have the urge to nest. There’s something about the leaves changing color and the temperature turning chilly that makes many of us retreat to the comfort of home. For me, autumn is when I crave cozy, and so our Home Issue is perfectly timed. What does nesting mean to you? It can be anything—big or small—that turns your living space into a place of comfort. For Lisa and Brian Woolhouse, getting truly comfortable in their colonial didn’t happen until their three children became teenagers. That’s when Denvillebased designer Michaeline Fernandez turned the family’s basement into “entertainment central,” the new go-to room with a kitchenette/bar, gameroom/ poolroom, guest room and TV area. Turn to “Getting Their Game On” beginning on page 54 to see this transformation. Of course, comfort in and out of the home can come on a small scale too: a crackling fire in the fireplace, soft chandelier lights, extra pillows here, a warm fleece throw there. In this month’s Home Front, we present a series of outdoor fire pits that will keep you and your friends toasty as you enjoy the brisk autumn air. See these hot centerpieces on page 26. Although there’s no place like home, traveling around the globe broadens you. Turn to “Foreign Finds” on page 60 for a selection of world-class decor inspired by four exotic destinations. You’ll surely want one or more of those items when guests gather at your home this fall, whether you’re hosting a casual dinner or cheering for the home team on a Sunday afternoon. If you’re doing the latter, consider the treats in “Sweet Sensations” (page 70) for a spin on classic Middle Eastern desserts—because sometimes the camaraderie and fellowship with others is better than the game itself! NURSES EXCEL AT SAINT BARNABAS MEDICAL CENTER, AS ITS NEW MAGNET HOSPITAL DESIGNATION SHOWS. A MAGNET IS A POTENT METAPHOR— ask anyone who’s ever seen iron filings scurry into position. In health care that metaphor describes a special kind of attraction: the way fine hospitals gather fine nurses and help them to be their best. This year, Saint Barnabas Medical Center has been honored by the American Academy of Nursing (AAN) as one of the 8 percent of institutions given a Magnet Hospital designation for the quality of their nursing. In 1990, the AAN formed the American Nurses Credentialing Center (ANCC) and created the Magnet Hospital Recognition Program for

Excellence in Nursing Services. The exacting standards required to earn Magnet recognition mean fewer than 10 percent of all hospitals in the nation are so honored each year. “This is the gold standard for nursing excellence,” says Jennifer O’Neill, DNP, APN, NEA-BC, chief nursing officer (CNO) at Saint Barnabas Medical Center. The ANCC is looking for organizations that demonstrate nursing excellence “by empowering front-line staff in decision making, having highperforming, transformational leadership teams and having outstanding quality outcomes, including nurse-sensitive indicators, such as falls, pressure

injuries, central line infections and catheter urinary tract infections—things associated with day-to-day nursing care,” she says. The center also measures how long patients must wait to be seen in the emergency room—“We were rated ‘exemplary’ for emergency department measures,” O’Neill says—and a healthy, positive work environment for the nursing staff. It considers the infrastructure of the nursing department and communication among staff, physicians and administration. The ANCC hopes to see that nurses are part of important committees and involved in decision making. It looks at community outreach efforts and for an environment that fosters professional development with perks such as tuition reimbursement and bonuses for specialty certification or for the professional development program Saint Barnabas Medical Center calls the “clinical ladder.” All of this goes into making an institution a Magnet. “If we advance professionalism and education, it enhances the work environment, reduces turnover and improves patient outcomes,” says O’Neill. The award is “a validation of the great nursing care that is delivered here,” says Gregory Rokosz, D.O., J.D., chief medical officer. “It is a very metric-driven recognition, one that is very difficult to
achieve.” As the physician leader, he and the other doctors know how valuable nursing care is. “Health care is a team sport,” he says. “To reduce medical errors, we need great communication between the doctors and nurses. That translates to better and safer patient care.” The medical center decided to strive for the honor in 2015, a year after O’Neill was named CNO, and tapped Deanna Paxos, MSN, RN-BC, CNL, director of Clinical Excellence and Innovation, to spearhead the effort. “A significant amount of work goes into this,” O’Neill says. By 2017 they were ready to tackle the more than 2,000-page application. “We wrote the application in four months, which is unheard of,” she says. “It took a real team effort at all levels to write and edit the document, meet its requirements, and also to collect the data and show we were adhering to evidence-based practices.” The physicians and the entire staff were fully invested in the process. “I was always asking Jennifer, ‘How are we doing?’ ‘What do you need?’” Dr. Rokosz says. “At one point she told me, ‘I think you want this more than we do!’ We were very engaged in this process.” So were those at the very top of the organization. “It is a true interdisciplinary approach to patient care and our strong
nursing leadership that reinforce the medical center’s culture of excellence,” says CEO Stephen P. Zieniewicz, FACHE. “A special ‘thank you’ to Jennifer and Deanna for their leadership and unwavering dedication in our mission of providing compassionate care. This recognition gives our community the ultimate benchmark in patient care.” That care is enhanced when hospitals can establish and maintain a solid nursing staff, and the Magnet award has already made a difference in that effort, which is critical given the nationwide shortage of qualified nurses. “It significantly helps with recruitment and retention of nurses,” O’Neill says. “They want to work in Magnet organizations. In the month since we received the honor we have already seen an increase in applications.” Patients can also feel confident that their nurses are continually increasing their knowledge and expertise through professional development and continuing education requirements, she says. “As CNO, I am really proud of the work our nurses do, day in and day out,” she says. “They create an environment that truly provides compassionate care, which is why we all go into nursing in the first place. That’s a huge legacy to leave behind.” The Breast Center at Barnabas Health Ambulatory Care Center provides comprehensive screening, evaluation and treatment. early detection and diagnosis of breast cancer and other breast diseases. AN ESTIMATED 1 MILLION AMERICANS have multiple sclerosis (MS), an autoimmune disease in which the immune system causes inflammation that damages nerve fibers and myelin, the fatty substance that surrounds and insulates those nerves. That damage can produce a variety of symptoms, including problems with walking, vision, and bladder and bowel control, chronic pain and fatigue and psychological problems, such as mood swings and depression. But treatment for MS and its troubling symptoms has taken a great leap forward. More than a decade ago, RWJBarnabas Health, then known as the Saint Barnabas Health Care System, created a special program to care for patients with MS. Over the past year or so, the system has greatly expanded this program, investing in new physicians and state-of-the-art technology embracing a new philosophy that addresses the special needs of patients with this disease. One of these needs is simply the time it takes to treat them optimally. In September 2017, Andrew Sylvester, M.D., was recruited from a large MS practice in New York City to become the medical director of the Multiple Sclerosis Comprehensive Care Center. “I was very happy in New York and never thought I’d leave, but RWJBarnabas gave me the means to develop the center here with the vision we had there,” he says. “The goal was to bring this MS center to an elite level. I brought with me the principles of care that were successful at my previous job.” The primary principle of care, he says, is spending enough time with patients. His team allots up to two hours for an initial visit, covering everything from medical history and symptoms to personal beliefs and concerns. “We want to know their kids, their passions, what makes them tick,” Dr. Sylvester says. “We spend enough time to make sure all their needs are met.” They then evaluate the state of their disease with appropriate testing, which typically includes magnetic resonance imaging (MRI) and blood tests. “We want to get a sense of whether their MS is being controlled and what the severity or stage of the disease is so we can devise a proper strategy to treat it,” he says. Then
they meet with the patient again—for another 45 to 60 minutes—to review the test results, talk about the state of their disease and cover all the treatment options that may be appropriate for them. That means focusing on the symptoms as well as the disease. Many other MS centers focus on the disease “but rarely delve into treating the symptoms,” Dr. Sylvester says. “Here we consider symptom management as important as disease management. Symptoms are what affect patients in their daily lives, so they are key.” His team follows each patient closely to fine-tune treatments until symptoms are under control. “For most issues,

SYMPTOMS ARE WHAT AFFECT PATIENTS IN THEIR DAILY LIVES, SO THEY ARE KEY.” —ANDREW SYLVESTER, M.D. there are many treatment options,” he says. “We can usually find something that works with no side effects or with insignificant ones.” A host of recently developed medications now offer MS patients more and better options for both disease control and symptom management. The first wave of MS medications was effective but needed to be injected by
the patient, which was difficult for many, says Matthew Tremblay, M.D., Ph.D., an MS specialist who joined Dr. Sylvester’s team earlier this year. (Both doctors are members of Barnabas Health Medical Group.) In the early 2000s, oral medications came on the scene, but they treated only the relapsing form of MS. “Until about 2017, there were still no treatments for primary progressive MS, which is less common and has a later age of onset,” Dr. Tremblay says. The most recent MS medication was approved for treating both types of MS, with the added benefit of needing to be administered only twice a year. “That has been a game changer,” he says. The next wave of medicines over the coming few years will address repairing neurons in the early stages of the disease, he predicts. By then, people with earlystage MS “may have the opportunity to have normal, active lives until retirement age,” he says. On the physical therapy front, new computer-aided devices use electrical stimulation to help with walking. “For each phase of your gait, they can determine whether your leg and foot are in correct alignment for that part of the stride, and help prevent tripping and normalize walking without the need for braces,” says the doctor. There are also new medications that increase walking endurance and speed, as well as others to help with bladder function, fatigue, insomnia and other symptoms. The center has been completely renovated, and new nursing staff has been hired along with Dr. Tremblay. Saint Barnabas Medical Center also invested in a new MRI machine, right downstairs from the MS center. “It is the most modern machine that is commercially available,” Dr. Sylvester says. “Its powerful technology cuts imaging time in half.” The Multiple Sclerosis Comprehensive Care Center offers the services of other specialists needed to care for MS, including urologists, ophthalmologists, sleep specialists, mental health experts and social workers. “We offer one-stop shopping for MS care,” Dr. Sylvester says. “You can see your doctor, go down for an MRI, go to PT, maybe see a sleep specialist, all under one roof. We put patients first and ensure that they are satisfied with their care.”

A FAMILY OF POOL AFICIONADOS FOUND themselves behind the eight ball with their DIY basement, but it was nothing that a designer couldn’t fix. After moving to a Clinton colonial 10 years ago, Lisa Woolhouse and her husband, Brian, needed a kid-friendly basement and tackled the job themselves. Their strategy? Utilize every bit of the 1,500 square feet. The problem? They aren’t as good at decorating as they are at pool. Still their effort worked—that is until their three children hit their teens. “As the kids grew, we needed a more grown-up room for a lot of different activities,” Lisa says, describing her dream basement as “entertainment central,” where pool tournaments, family game night, sleepovers and more all had a place. They finally realized their go-to room when, in 2011, they invited Michaeline Fernandez, of Denville-based CYS Design, to work her magic with flooring of wood-plank vinyl and textured carpet, recessed LED lighting “to keep the space bright” and a color scheme of gray, white and warm brown with a pop of sunny yellow. “It was very plain, nothing fancy, no character whatsoever,” Fernandez says. “We changed everything, took a wall down and made it an open concept with a separate guest room.” It’s open, yes, but Fernandez recognized that a big space needs definition, so she split it up into a kitchenette/bar, gameroom/poolroom, guest room and TV area. “She created very distinct spaces all the while keeping it open,” says Lisa, who marveled at how Fernandez envisioned two pony walls to give the TV room its own identity. They struck a winning combo there by teaming up the existing camel sofa with custom pillows, recycled fruit wood for the media console and coffee table and film reels on the walls (lest anyone forget they’re in the TV room). “It has a depth of grain, which is what we like about it,” Fernandez says of the fruit wood. Fernandez went beyond plain in the kitchenette by using high-quality material one might be surprised to discover in a basement. (We’re talking Carrara quartz for the counters!) Adding a bar was kind of a natural, but she also repurposed space to build a wine cabinet—and the couple never missed its predecessor, a small window next to sliders that already let the sun shine in. Stained and painted maple for the cabinets added design interest. “She has that vision,” Lisa says. “She was able to look at the space and bring a new dimension.” For the cherry-wood custom pool table that sees a lot of action, Fernandez discovered a “cool” fixture: brushed nickel track lighting that doesn’t hang as low as typical pool

lights, as this tall family appreciates. The cherrywood game table is also custom made with four geometric-patterned upholstered chairs on casters (because living should be easy). There was no guest room for visiting in-laws before Fernandez transformed the basement. But she was able to bring dead space to life with French doors that gave the entrance a touch of class. And with yellow as a burst of color in pillows and bedding, the guest room can’t help but be light and bright—a necessary component since there’s just a small window there. Grays and whites provide a unifying thread with the main space, and custom-framed fabric “brings it all together,” with gray carpeting for texture, says Fernandez. The remodel also transformed a small bathroom from what Lisa called “builder’s special” into one of Brian’s favorite spots in the house.
No longer bare-bones, white in color, with a tiny vanity and tub, Fernandez describes the new bathroom as “very natural with sand, cream and gray.” But the most dramatic feature for Lisa was how tiles give the rich look of real stone. “The tile behind the (shower) glass is what really popped; it almost looked like a spa water feature,” she says. Look deeper than the beauty of this makeover, and you’ll find sensible materials designed to fit an active lifestyle. “I didn’t want to treat it like a museum,” says Fernandez, who chose Teflontreated fabrics, vinyl flooring and spill-proof carpet that are “good for living.” “We wanted to make sure it was family friendly,” she adds. Mission accomplished: The family can get their game on without tip-toeing around the décor and whether they score big in a pool tournament or not, they come away winners.

Was baseball your life growing up? I remember having a great time in Little League and having a lot of fun playing in town. We had two games a week, and with each day that passed I would think: “It’s just one day closer to game night.” I had such a great Little League experience, and Chester was an amazing town to grow up in. Everyone paid attention to our games, making it competitive and fun. That’s where my passion for baseball came from.
What was your biggest catch? It was a bass that, back then, I thought weighed at least 10 pounds. But thinking back, it was probably just 2 or 3 pounds.
What were your old stomping grounds? We’d hang out in Chester but some of my fondest memories took place in the summer, when my mom would take me and my brother Jake to a pond in Linden. He and I would spend all day there catching bass. We also had a friend in high school who had a house on Lake Hopatcong, so we went over there a lot to fish.
But that changed when you started playing at Seton Hall Prep. Sports are a cultural thing in New Jersey because everyone is involved: kids, coaches and parents. So I think I got a lot of attention at Seton Hall Prep. There were tons of articles being written about us, and plenty of scouts were coming to our games. It was a lot of fun, and the spotlight
Were you always a pitcher? I mostly played shortstop and some first base and outfield. But, yes, I did pitch. I threw hard and knew I was good at baseball, but I wasn’t thinking about making a future out of it. PHOTO COURTESY OF THE BOSTON RED SOX
RICK PORCELLO IS PREPARED TO MOVE around the country—that’s the life of a professional baseball player. The Chester native has bounced from New Jersey to Detroit to Boston, where he just posted a stellar 17-win season. But despite traveling from one big city to the next and enjoying a career filled with personal accolades (he won the 2016 American League Cy Young Award as the league’s top pitcher as well as the 2007 Gatorade National Player of the Year honor as the best high school player in the country), the 29-year-old remains grounded and humble. How does he do it? In an exclusive interview with Morris/ Essex Health & Life, Porcello talks about growing up in Morris County, playing high school sports under the media spotlight and who he, as a Mets fan and future Boston Red Sox pitcher, secretly idolized. was definitely on Prep. I didn’t pay too much attention to what the newspapers were writing, but my mom had every article and cut each one out and saved them. The best part was that we were a good team and everyone had fun winning. With all the pro scouts at your games, did you feel extra pressure? I didn’t feel it personally, the pressure was on the team to win. But we all worked very hard. As long as we won, it didn’t matter what was going on with me. Did you play other sports? I played baseball and football growing up, but I focused on baseball at Seton Hall Prep. When summer ended, I played fall baseball but wouldn’t pitch too much—I was at first base and shortstop. My parents knew I was passionate about the sport but they wouldn’t let me get burnt out. Do you think it’s OK for kids to play a sport year-round? My dad would take me to baseball camps during the off-season, but I also had breaks so I wasn’t getting worn down by one sport. Don’t get me wrong, I definitely put in the work. But I believe it’s important for anyone, but particularly for a teenager who’s developing as a person, to try and experience different things. Too much of one thing is not always a good recipe. Think back to draft day, 2007. What were your feelings? I definitely had a lot of anxiety, but I knew I’d be comfortable going to college (University of North Carolina was on standby) if the draft didn’t work out. Getting a college education was big for me because my parents were adamant about being smart and having a game plan for life. But Detroit came along and picked me with the 27th
selection. It was such a weight lifted off of my shoulders, and to top it off, I was going to a class organization—Detroit had just won the World Series. Do you remember your first start? It was a surreal moment when I found out I made the team in spring 2009. Manager Jimmy Leyland called me into his office and said, “You had a great spring, but we’re sending you down to the minors.” After the initial shock, Leyland pointed out that it was April Fools’ Day. “You’re coming to Toronto with us!” It was such an emotional moment—I ran out and called my parents. I couldn’t process what was going on during my first game; I just focused on throwing strikes. My first pitch was a strike to Marco Scutaro; my first strikeout was Michael Barrett. And, um, I gave up my first home run to Aaron Hill. Your career is 10 years in. When you finally hang ’em up, how do you want to be remembered? I want to be remembered as someone who played the game hard and the right way and was a great teammate. I want to be known as someone who was a great representative for every organization and city I was in. This is a game that’s important to the people watching, so I hope to have had a positive impact on them, even those who rooted against us. You’ve had plenty of personal success. How does that compare to team success? Ultimately, you have to put things in perspective and know why you’re playing. If you’re not here playing for a championship, you might as well turn around and do something else. I’m not a fan of taking the field for personal accolades because you only share that with yourself. When you win a championship, you’re sharing it with your
teammates, the organization and the city. Obviously you’re a Red Sox guy now, but who did you root for when you were younger? I was a Mets fan so, of course I wouldn’t admit it at the time that Derek Jeter was my favorite player. You always saw him on TV. My mom loved the Yankees, and we used to go to a lot of Yankees games. The Indians also have a special place in my heart: My grandfather played for them and was on their American League championship team in 1954. Who is the toughest batter you’ve faced? I’ve pitched to a lot of good hitters, but Michael Young always gave me headaches when he played for Texas. Robinson Cano, Jacoby Ellsbury and Hideki Matsui were also tough outs. Is there an active pitcher who makes you stop everything and watch? Right now, it’s Aaron Nola in Philadelphia. He has great command and has the focus and demeanor on the mound that reminds you of Roy Halladay. Who do you sit with in the dugout when you’re not pitching? There’s sort of a special bond between starting pitchers, so I’ll always be near [David] Price, [Chris] Sale, [Nathan] Eovaldi. We have a lot of fun on the bench when we’re not pitching. What’s one piece of advice that has always stuck with you? Once I got to the big leagues, I always try to remember that, even if I have a stinker on the mound, I’m at this level for a reason—because I’m good. Everyone goes through some degree of failure, and it could be hard to regain focus and confidence. But you always have to trust your stuff. No matter how much I have struggled, I know I have talent, and the talent always comes back out.

LAYERED CUSTARD AND NUT CRUMBLE (KSHTALEIA) Yields: 12 servings INGREDIENTS FOR THE PUDDING n 2 quarts milk n 2 Tbs. rose water n 2 Tbs. orange blossom water n 1 cup confectioners’ sugar or honey n 1 tsp. vanilla extract n 1 tsp. mastic (optional) n 1 cup rice flour FOR THE CRUST n 1 cup panko breadcrumbs n 1 cup unseasoned standard breadcrumbs n 1 cup walnuts, chopped n 1 cup almonds, chopped n 1½ cups (3 sticks) unsalted butter, melted n 1 Tbs. vanilla extract n ½ tsp. ground cinnamon FINISHING TOUCHES n 1 cup jam of your choice n 1 cup blossom-scented simple syrup
DIRECTIONS Preheat the oven to 300°F. Grease a 9-by-13-inch baking pan with butter. TO MAKE THE PUDDING: In a large saucepan, bring the milk to a simmer over medium heat. Add the rose water, orange blossom, confectioners’ sugar, vanilla and mastic, if using. Slowly add the rice flour, stirring all the while. Cook until the pudding begins to thicken and a whisk leaves tracks in the mixture. Spread evenly on a baking sheet to cool. TO MAKE THE CRUST: In a large bowl, combine the panko breadcrumbs, walnuts and almonds. Add the melted butter, vanilla and cinnamon, working the mixture with your hands. Spread half of the breadcrumb mixture over the bottom of the prepared pan. Using a spatula, pack it down evenly and firmly. Spread the pudding mixture over the top, then spread the jam over the pudding. Sprinkle the remaining bread mixture on top of the jam and press it down. Bake until the crust is golden brown. Pour the simple syrup over the top and let it cool for a few minutes. To serve, cut into squares. The kshtaleia can be served cold too. To store, cover the pan with plastic wrap and place in the refrigerator, where it will keep for up to 1 week.

BUTTER COOKIE SANDWICHES (GRAYBEH) Yields: 36 cookies
INGREDIENTS

n 1 lbs. (4 sticks) unsalted butter,
Put the butter in the bowl of a stand mixer and gradually beat from low to high speed for 3 minutes until light and fluffy and continue to beat until the mixture is foamy. Beat in the vanilla seeds. Add the flour a little at a time and beat until the dough holds together when pressed between your fingers. Divide the dough in half and pat each half into a disc. Wrap in plastic wrap and refrigerate until firm, about 1 hour.

Preheat oven to 350°F. Grease two large baking sheets or line with parchment paper. On a slightly floured surface, roll one disc of dough to a thickness of ¼ inch. Cut out circles using a 2-inch round cookie cutter. Gather the scraps, roll out, cut and repeat until you’ve used all of the dough. Transfer to one of the prepared baking sheets and place in the refrigerator to chill for 30 minutes. Repeat the rolling and cutting process with the remaining disc of dough. Then use a smaller (no bigger than 1 inch) cookie cutter or the wide end of a piping tip to make a cutout in the center of each circle. (Discard the small cutout pieces.) Transfer the circles to the second prepared baking sheet and place in the refrigerator to chill for 30 minutes. Place both baking sheets in the oven and bake for 8 to 10 minutes, until the edges of the cookies are just beginning to brown. Let the cookies cool for 5 minutes on the sheets, then roll in ground pistachios if desired and transfer to a wire rack to cool completely. To make the sandwiches, turn the cookies without the holes flat side up, and gently spread each with 1 tsp. of jam. Top with the cutout cookies, flat side down. Store in airtight containers for up to 1 week.

TRIPLE ALMOND CAKE Yields: 12 servings INGREDIENTS n butter and all-purpose flour, for the pan n 20 oz. almond paste (see below) or store bought n 2½ sticks unsalted butter, at room temperature n 6 large eggs n 3 Tbs. rose water n 2 cups almond flour n 2½ Tbs. baking powder n 1 cup granulated sugar n pinch of sea salt n zest of 1 lemon n sliced almonds and confectioners’ sugar, for serving FOR THE ALMOND PASTE n 20 oz. blanched slivered or whole raw almonds n 6 Tbs. honey n 2 Tbs. vanilla extract n 1 Tbs. Amaretto liqueur (optional) n 1 Tbs. Frangelico liqueur (optional)
DIRECTIONS TO MAKE THE ALMOND PASTE: In a food processor, process the almonds until ground and clumpy. Add the honey and vanilla as well as the Amaretto and Frangelico, if using. Process until the mixture is the consistency of dough. You can make the almond paste in advance; it will keep, covered in the refrigerator, for up to 1 week. TO MAKE THE ALMOND CAKE: Preheat the oven to 300°F. Grease a Bundt pan and dust lightly with flour, shaking out any excess. Place half of the almond paste in the bowl of a stand mixer fitted with the whisk attachment. Add the butter and mix for 3 minutes or until it becomes foamy. Carefully add the eggs one at a time as you mix. Add the rose water and beat until fluffy, about 3 to 5 minutes. In another bowl, whisk together the almond flour, baking powder, granulated sugar, salt and lemon zest. Gradually add these dry ingredients to the butter mixture and mix for 5 minutes. Pour half of the batter into the prepared pan. Evenly top with the remaining half of the almond paste by breaking off bits and scattering them over the batter (they will sink into the batter). Top with the rest of the batter. Bake for about 1 hour, until the cake springs back when pressed. Remove the cake from the oven and let it cool in the pan for a few minutes. Run a thin knife around the edge of the cake to make sure it has released from the pan, then flip it onto a plate. Let the cake cool completely. Serve at room temperature, sprinkled with sliced almonds and dusted with confectioners’ sugar.

Grilled Chicken & Bruschetta Sandwich with fresh Mozzarella and Basil FOR THE
Bruschetta:
INGREDIENTS • 4 large ripe tomatoes, diced • 2 cloved garlic, finely chopped • ½ small red onion, chopped • 4 leaves basil, finely torn • Olive oil, salt, and pepper, to taste. INSTRUCTIONS • Combine ingredients, season to taste, and let stand for one hour.

INGREDIENTS • 6 chicken breasts, butterflied and gently pounded flat. • 1 Lb fresh mozzarella, cut into thin slices • ½ sheet fresh focaccia bread, cut into 6 and sliced for sandwiches • Olive oil, Basil Leaves, and Balsamic vinegar for garnish
SERVES: 6 PREP TIME: 20 MIN, PLUS 1 HR STANDING. COOKING TIME: 5-10 MIN
INSTRUCTIONS • Grill or broil the chicken breasts, about 3 minutes per side depending on thickness. When finished, top with sliced mozzarella, and cover until melted. Set Aside. • Brush inside faces of focaccia with olive oil. Toast or grill. • Arrange lower side of focaccia on plate. Place 2 pc chicken with melted cheese on top. Top with about 2 oz. Bruschetta, and garnish with basil, oil, and balsamic. Top with other half focaccia.

DON’T CALL BLACKSTRAP MOLASSES THE NEW APPLE CIDER VINEGAR—PEOPLE HAVE BEEN SINGING THE PRAISES OF THIS HEALTHFUL SYRUP FOR DECADES. “Blackstrap molasses and the wheat germ bread/Makes you live so long you wish you were dead.” Actor and comedian Danny Kaye sang these lyrics with Groucho Marx, Jane Wyman and Jimmy Durante on a 1951 record. More than 60 years later, we acknowledge that although exaggerated, the song’s sentiment might not be far off from the truth. Molasses is made through the sugar production process: The juice from sugarcane plants is boiled to create crystals that are then processed and sold as refined white sugar. The liquid, which at that stage has become cane syrup, is boiled two more times, resulting in a dark, viscous syrup called blackstrap molasses. POWER UP Blackstrap molasses is relatively low in calories (about 60 per tablespoon) and sugar content (about 12 grams) when compared with other sugary superfoods like honey. Because of this, its taste is more smoky than sweet. Perhaps more remarkable is its high levels of vitamins and minerals, including blood-building iron (2 mg, or 12 percent of the daily recommended value), bone-building calcium (150 mg; 12 percent DV) and potassium (380 mg; 8 percent DV), which helps regulate blood pressure,

among other benefits. It’s also a source of vitamin B6, which promotes blood health and prevents anemia. Its mineral-rich nutritional content, especially iron, may make it beneficial as a pre-natal supplement: A tablespoon of blackstrap molasses in hot water is often referred to as “pregnancy tea.” (Talk to your doctor first.) Blackstrap molasses also was highlighted in an article about plant-based foods that may prevent cancer. The study, published in the Journal of Carcinogenesis, noted evidence that “cancer was very rare among sugarcane plantation workers who were regularly consuming the raw brown sugar,” citing the syrup’s high levels of minerals and vitamin B as a potential explanation. Some holistic practitioners also claim it can ease symptoms of premenstrual syndrome and enhance skin and hair health, thanks to its antioxidant-rich content.
BUY/STORE/SERVE Available at most health food stores, blackstrap molasses is sold as both unsulphured and sulphured options. Unsulphured molasses is made from a more mature sugarcane crop and is preferred. Because of its intense, thick flavor, blackstrap molasses should not be used in recipes that call simply for “molasses,” which is the result of the second boil of the sugar-production process and isn’t as dark or thick. But the unique flavor of blackstrap molasses can be used to give a smoky boost to meats and some spicy sweet foods, like pumpkin pie and gingerbread cookies. Finally, it can be incorporated as an ingredient for dark breads or, for home brewers, in stouts and porters.

TARRAGON GIN AND TONIC INGREDIENTS TARRAGON SYRUP: (makes about ¾ cup or 12 drinks) n 1 bunch tarragon leaves (1 cup lightly packed) n ½ cup organic granulated sugar n ½ cup water n juice of 1 large lime, strained PER COCKTAIL: n ½ ounce tarragon syrup n 2 oz. chilled The Botanist Gin n 2 oz. good tonic water, chilled n 3–4 drops celery bitters n 4 oz. sparkling water n ice n squeeze of lime
DIRECTIONS TO MAKE THE SYRUP: Make an ice water bath in a large bowl. Combine the sugar and water in a small saucepan and bring to a boil, stirring until the sugar is dissolved. Pour into a metal bowl and place in the ice water bath, stirring until chilled. Reserve the ice water bath. Meanwhile, bring a small pot of water to a boil. Add the tarragon leaves and cook for 5 seconds, until bright green. Drain the tarragon well and immediately place in the ice water bath. When cold, drain the tarragon and discard the ice, squeezing the excess water out of the leaves. Place the leaves in a blender and add half of the chilled simple syrup. Blend on medium until smooth, about 30 seconds, then blend in the remaining syrup and the lime juice. Strain through a fine mesh sieve and chill until needed. TO MAKE THE COCKTAILS: Combine the tarragon syrup, gin and tonic water in a small pitcher. Fill a tumbler or highball glass with ice and add the cocktail mixture. Top with a squeeze of lime, bitters and sparkling water. Add more lime, syrup or tonic water if desired.

BOTTLE HILL TAVERN THERE’S A LOT OF PRIDE BEHIND BOTTLE Hill Tavern—the name and the establishment. Though the Madison business has changed ownership and location a handful of times since its founding around 1812, it has been the spot to enjoy pub-style fare—for locals and those passing through the area. The latest iteration opened this summer, after a quartet of new owners took over the former Poor Herbie’s (the tavern had been operating under this moniker since 1992) last December, renovated the interior and brought the familiar name back to town. If you can score a table (or wait about 20 minutes for one), you’ll immediately get swept up by the rustic décor and the lively vibe. Depending on the night, moving from the front door to the dining room can be a tight squeeze as small groups gather and mingle in every available space. But there are a limited number of tables, so the bar is a clear option to sit for a meal, which is what my friend and I (as well as two other couples) did during a busy Saturday. Save for the high noise level, it was a

pleasure sitting at the bar and being served by our bartender, Becky, who gave us full attention while still pouring drinks for other customers. Our beverage order was easy: a glass of red wine for my friend and a Spaten Oktoberfest brew for me. Both drinks paired nicely with our appetizers, two crab cakes and a plate of fried okra. The crab cakes only shot par: Each was fried evenly, but the carb-to-crab ratio was somewhat off the mark, as the cake was seemingly filled with extra breading—or lacked an appropriate amount of crabmeat. The okra came out on top, each morsel a refreshing blast of the hot and chewy veggie. A zesty Rémoulade added just the right amount of extra flavor to the app. Bottle Hill’s entrée selection features typical pub grub, from specialty and build-your-own burgers to pulled pork sandwiches and cheesesteaks; however, our taste buds craved something other than bar food. My friend sought a healthier plate, opting for the Power Salad—a full-size dish filled with romaine, kale, quinoa, dried cranberries, walnuts, apples, crumbled goat cheese and an overly generous portion of grilled chicken (which she added). The colorful presentation and the mesh of fresh flavors, particularly the creamy goat cheese, earned two thumbs up. While my friend wanted a hearthealthy meal, I had one thing on my mind: Thanksgiving. I called for the fresh roast turkey dinner, a platter topped with a heaping pile of juicy breast and thigh meat covered with savory gravy and cranberry sauce on the side. I can only wish that my next holiday bird is as tender and moist as this meat. Spoiler alert: While getting through about half of my plate, we (my friend couldn’t resist taking a
few forkfuls of turkey) uncovered mounds of homemade stuffing that had been hidden beneath the meat. Not listed on the menu as an accompaniment, the stuffing was a pleasant—and delicious—surprise. Though this dinner comes with two sides (I had selected roasted Brussels sprouts and mac ‘n cheese), the stuffing was more than enough. Filled to the brim with carbs and meat, we regretfully passed on dessert. That was an unfortunate revelation because sweets—a banana pudding jar, carrot cake and homemade apple pie with ice cream, among others—were each moderately priced at $5. Next time, we vowed.
