And we have recently added a new member to the TIVOL team – Emma Tivol. Emma is a Cavalier King Charles tri-color that will be 6 months old in November. I miss Lucy so much, but I’m already in love with Emma. She became a fixture at the store when I started bringing her to work at 9 weeks. She resides mostly at the Plaza, but she also likes running around our Hawthorne store. Please come by the store and give Emma a warm welcome and hug.

The Harlans
The Harlan story began in 1987, when Kevin was a broadcaster at the Big Eight tournament. After a game, he visited the Country Club Plaza and met Ann for the first time. They were married on December 26, 1987. Kevin made a career in broadcasting for radio and television and was voted this year by his peers “The National Sportscaster of the Year.” Of course, Ann surprised him with a new watch to commemorate the award. TIVOL has been there for nearly every special milestone in their lives for the past three decades.

The Harlans have four children, two sons-in-law, and are expecting their first grandchild this fall. They look forward to many more of life’s celebrations and honoring them with special mementos to pass down to their children and grandchildren. They truly feel like part of the family when they walk through the doors at TIVOL. Kevin loves to say, “If ever an angel walked the earth, it is my wife.” No matter how far away he is or how busy life gets, Kevin always wants Ann to know that she is the most important thing in his world.

ALWAYS IN STYLE, THESE CLASSIC JEWELS ADD A TOUCH OF SIMPLE, LUSTROUS ELEGANCE. By Rita Guarna Whatever oyster first dreamed of pearls had no idea the gems would shine for millennia. Pearls pop up in the Bible and the Koran; were prized by the ancient cultures of Egypt, India and China; and were a big reason—so the historian Suetonius tells us—that Julius Caesar invaded Britain. The costly gem symbolized purity, but also wealth, as usually only royalty or nobility could afford pearls. With the advent of cultured pearls in the early 1900s, that changed. Since famous French fashion designer Coco Chanel incorporated them into mainstream fashion almost a century ago, pearls have become the accessory that makes a look—and never gets old. Today, a new generation of celebrities and tastemakers is appropriating this timeless gem, giving pearls modern meaning and edge. Far from Park Avenue, fashionable women of all ages
are throwing on strands of pearls with everything from black lace cocktail dresses to blue jeans and white T-shirts. From the concert stage to the red carpet, British singer Rita Ora has used a smattering of differentsized pearls to create youthful yet ethereal hair accessories. Singer-songwriter Rihanna rocks pearls with sexy multi-strand collars and layers upon layers of matinee-length strands. Actresses Emma Stone and Lupita Nyong’o have added luster beyond their accessories, wearing pearlcovered gowns for black-tie events. Actress Jessica Alba has been photographed many times wearing pearl earrings. From decidedly modern black pearl-drop earrings to a pair of hanging gold chains punctuated with small luminescent pearls to front-and-back bauble pearl studs, Alba proves that pearl earrings
transition seamlessly from day to night. Whether you prefer the iconic five-strand pearl necklace Audrey Hepburn wore in Breakfast at Tiffany’s or Kate Middleton’s funky white pearl lariat, there are many trendy ways to wear pearls now. For a preppy look, headbands, clips and other hair accessories are getting the spotlight. For a more avant-garde approach, pearls are being used as accents in art-inspired sculptural earrings. The unique shapes and textures of baroque pearls make the perfect accessories for a free-spirited boho style. For traditionalists looking for a twist on a classic, the Gucci loafer received an update with pearl-studded heels. But perhaps the final word on pearls came, with fitting simplicity, a half-century ago from Jacqueline Kennedy Onassis. “Pearls,” she said, “are always appropriate.”

Long known as “the queen of gems” because of their popularity with royalty (among the few who could afford them), pearls have gone mainstream without losing their elegance. Today’s celebrities are making sophisticated and sexy fashion statements with them. From Scarlett Johansson’s luxurious multi-strand, layered look to Jennifer Lawrence’s chic front-and-back black pearl-stud earrings, young fashionistas are donning this classic gem with bold, modern style.

David Yurman’s men’s bands range from classic to extremely expressive, executed in both precious and innovative metals, including black titanium, forged carbon, colored diamonds and rubber. aybe it’s my accounting background, or perhaps it’s my male DNA and how my brain is wired, but for as long as I can remember, I have been interested in how things work and how they are put together. This curiosity has propelled my interest into the fine watch world of our industry, and for several years now I have been a big watch nerd. Of course, as far as fine timepieces go, the two pillars of the industry are Rolex and Patek Philippe. For a long time these brands have wanted us to create boutique-style branded shopping experiences in our store, and recently the opportunity presented itself to move forward with the endeavor. A few years ago the Country Club Plaza was purchased by a Macerich and Taubman
partnership (two of the largest retail landlords in their industry). They both serve high-end luxury retail shopping centers all over the country, and when they purchased the Plaza, they were very excited at this opportunity to bring more attention to the center. Fast forward two years and as of this writing, we are currently under construction! Similar to our Rolex corner at our Hawthorne Plaza location, our two new showrooms will cover over 500 square feet of space and allow us to display more of the finest watches in the world. At a time in the industry when the scarcity of these fine timepieces is coupled with a demand we have never seen, as well as fewer points of distribution, we are beyond fortunate to be partners with Rolex and Patek Philippe. We were wondering about the future of watchmaking and how a company dared promise to fix any of its watches. So we caught up with David Bonilla, Patek Philippe’s technical training manager, for a chat. How did your watchmaking career begin? In 2005 I attended a WOSTEP (Watchmakers of Switzerland Training and Educational Program) in Secaucus, N.J. I graduated in 2007 and promptly found a job at Swatch Group’s New Jersey after-sales facility. I soon moved to the new Omega Boutique on Fifth Avenue, servicing products and interacting with clients. In 2010 came an opportunity

year from those seeking watchmaking jobs, but finding the right talent is challenging, not just for Patek Philippe but for the industry worldwide. We realized several years ago that to maintain our watches and to ensure a strong follow-up support structure, we needed to start training and teaching in-house. So in 2013 we created the first Patek Philippe Institute in Shanghai. This program differs from other two-year watchmaking schools in two ways. First, toward the end each student is taught to service Patek Philippe quartz and mechanical calibers. Second, after finishing the program, students must go to Geneva to complete a four-week training. If they pass, they are certified to work on Patek Philippe watches. Is it true that you will service and repair all Patek watches ever made? Yes. Even watches that date back to 1839. It’s our commitment to our clients. How is that possible? In Geneva we have a separate center dedicated to restoration. There we still maintain many of the original pieces of equipment with which these early watches were made. We pride ourselves on our ability to recreate individual parts if necessary. The time frame may be longer than with a normal repair, but the watch will be returned to the client

to work with Patek Philippe at its main office in Rockefeller Center. After five years there working as a watchmaker, I was offered the chance to manage the service center. Your watch repair professionals are known for their exceptional skills. How many do you have and how do you find and train them? At The Henri Stern Watch Agency in New York City, we have 39 highly qualified individuals who handle each step of the repair process; 31 are watchmakers who do the repair, restoration and regulation of the mechanical movements of our clients’ watches. Case repairs are undertaken by four highly trained polishers, who restore cases and bracelets to their original luster. Two watchmakers are reserved for quick service work, so that clients who visit our New York office can have a strap changed, a bracelet adjusted or a battery replaced on the spot. We also have two individuals who perform quality control on all the work done on each watch. Admittedly, we have a difficult time finding qualified and capable people to work at this high level of watchmaking. We get many resumes throughout the

just as beautiful as the day it came out of the showroom. How long does the average repair take? It varies depending on several factors, including the rarity and complexity of the watch and whether it’s a restoration or service to a modern piece. Have you ever had watches that you couldn’t fix? Here, yes. We’ve received timepieces that were crushed or were so fused together by rust that we were unable to fix them locally. We usually refer these especially difficult cases to the factory where they have the machinery and knowledge to complete the repairs. What qualities do you look for when you hire? The No. 1 trait is commitment. Of course, all candidates are given a practical exam and are thoroughly interviewed, but we’re looking for highly skilled individuals who will be committed to the company, not just for years of service, but with genuine passion for their work. It’s a lot to ask for, but I believe that if we don’t search for individuals with such commitment, we’ll never deliver on our promise to produce the finest watch money can buy. Are there enough young people these days who want to be watchmakers? Yes, I would say there’s more interest today in watchmaking among young people than there used to be. I attribute that to social media and various horological societies that keep alive the passion for our craft. So I think the burden is now on the watchmaking industry to nurture and develop this interest among young people. We learned lessons from the quartz crisis of the 1970s and early ’80’s, when the industry lost a lot of talent and risked losing mechanical know-how. We’re on steadier footing now, but we need to better promote the craft of watchmaking in order to pass the baton to a future generation. What is the most rewarding part of your job? Helping to provide the highest level of service for all our clients. I firmly believe in strong commitment to service; nothing is more rewarding than restoring our timepieces for our clients’ wearing pleasure. The toughest or most stressful part? Managing each aspect of the repair process. When a watch comes in for service, each department must work perfectly in sync with the others. If there’s even a small mismatch, it can cause issues for the whole repair process. Bottom line, what would you say distinguishes a Patek Philippe watch from the competition? Passion and commitment. In everything we create there’s a high level of passion, even in the smallest unseen details found in our mechanical watches. We back up that passion with a strong commitment to service and the knowledge to ensure that our watches will perform perfectly for many years to come.

You’ve undoubtedly seen the headlines of late: “Paul Newman’s Rolex fetches $17.8 million at auction” or “Elvis Presley’s Omega sells for a record $1.8 million.” While these results are not exactly commonplace, they do open the debate on what makes a watch valuable. Some say that provenance (who owned it and the stories behind it) and condition/originality are key. As we see it, there are three major watch auction houses at the moment: Phillips, Christie’s and Sotheby’s. Keep in mind that the auction scene is a microcosm of a much larger industry. Over the last three years, we’ve noticed two distinct pillars emerge within the watch industry: highly desirable modern references (the Rolex Daytona, Patek Philippe Nautilus and more) followed by vintage pieces. The vintage market has positively exploded, forcing even the most novice of collectors to look again at that watch his grandfather gave him. In some (rare) cases, he’ll find a diamond in the rough, and it can be worth a considerable deal of money.
What does this all mean for collectors? Well, sadly, the price you’ll pay for your next vintage watch will assuredly be higher. Bolstered by auction houses and vintage dealers, we’ve seen prices rise over 300 percent in some cases. But fear not: Deals are still out there; you just need to know where to look. Form a relationship with your retailer and get to know the person who curates the store’s vintage watch selection. He or she can help you find something you love within your budget. If raising your paddle in a room full of strangers isn’t your scene, there’s no shame in sticking to modern timepieces. There have been some incredible watches produced over the last few years. Have a look at the Tudor Black Bay GMT, Patek Philippe Calatrava and the Rolex Explorer, all of which should be available at your local authorized retailer and are likely to retain or gain value as time goes on. Drivers who experience the joy of racing in a sporty Mercedes-Benz AMG SL65 convertible owe a nod of gratitude to a couple of speed-obsessed Germans. In the 1960s, Hans Werner Aufrecht and Erhard Melcher were young engineers working on the 300 SE racing engine at Daimler-Benz when the company discontinued all motorsports activities. But the pair had an unrelenting passion for speed and a vision for modeling road vehicles after racing cars. In 1967, they left Daimler-Benz to found Aufrecht Melcher Großaspach, or AMG. The two tirelessly tinkered with valves and pistons as an independent engineering firm specializing in performance improvements for Mercedes-Benz vehicles. After a successful arrangement by which AMG upgrades were available and serviceable through selected Mercedes-Benz dealers worldwide, in 1993, the two firms unveiled the C36 AMG, their first jointly developed vehicle. Today the engineering firm is owned by the German automaker and more than 50 Mercedes–AMG performance models have hit the streets. In 2018, the AMG SL65 extends the blissful union between AMG’s muscular engineering and Mercedes-Benz’s lavish design. One of the most powerful in its class, this roadster packs a punch with a 6.0-liter AMG V-12 biturbo engine that pumps out 621 horsepower. Able to go 0–60 in just 3.9 seconds, this model reaches its top speed of 186 mph in what seems like the blink of an eye. Launched in 1945, the Rolex Datejust was the first self-winding waterproof chronometer wristwatch to display the date in a window at 3 o’clock on the dial, consolidating all the major innovations that Rolex had contributed to modern watchmaking until that point. Its style has spanned eras while still retaining the enduring codes that make it one of the most recognizable watches of today. In 2018 Rolex introduced a new generation of the Oyster Perpetual Datejust 31, with redesigned case sides and lugs. Rolesor, the combination of gold and steel on a Rolex watch, has been a signature feature of the brand since 1933, when the name was registered. It is an auspicious meeting of two metals: one noble and precious, attractive for its lustre and stability, the other highly resistant, known for its strength and reliability. Want to roam the Incan ruins of Machu Picchu? Dive from a cliff in Moab, Utah? Battle gladiators in Rome’s Colosseum? Oh, and you say you’d rather not leave your rec room? VR may be for you. VR, of course, is virtual reality, the technology that can take you almost anywhere—in sensory terms—and into almost any situation. It’s big for games, sure, but it’s also beginning to poke a disconcerting elbow into the world of work, where, as one website says, people can do “daily computing tasks while fully immersed in a 3D space.” You put on a headset, and suddenly you’re in a different environment—yet one that responds to your real-world commands. One of the VR devices drawing buzz in 2018 is the Samsung HMD (that stands for “headmounted displays”) Odyssey Windows “Mixed Reality” headset with motion controllers. The Odyssey operates on the Microsoft Windows Mixed Reality platform, which was introduced in October 2017. (Mixed reality is a type of VR in which computer-generated content and realworld content can react to each other in real time.) With the Odyssey headset you can explore exotic locales and settings. And a next-level social media network, vTime, connects users from around the world—or around the block—in engaging virtual environments such as cozy campfires, mountain cliffs and glacier tops. While those snowy mountains may be virtual, you can get fit for real. There are several available routines for people looking to buff up using a VR platform, including BOXVR virtual gym, the Bitslap HIIT (high-intensity interval training) app and the MoveStudio dance and cardio app. (If you decide to sweat with VR, use caution. The Odyssey does not prevent you from walking into walls.) The Odyssey brings users into the next phase of entertainment. Mixed reality allows users to drop into the middle of a documentary about Syria, sail the America’s Cup with a real race team or watch the latest episode of This is Us in a virtual theater. The built-in headset has 360-degree sound, giving virtual voices and ambient noises depth and distance. The Odyssey and the Windows Mixed Reality platform can be installed in compatible devices in minutes. Known as the “Money Isles” since the 2nd century, the Maldives (officially the Republic of Maldives) is a jet-set destination synonymous with exotic luxury. Prince William and Kate Middleton had a sexy getaway here because the string of luminescent islands is so secluded. Celebrities such as Madonna, Naomie Harris and Michael Phelps flock to this island nation because of the azure waters and sugar-white sand beaches. Located in the Indian Ocean southwest of India, the Maldives strikes a balance between relaxation and adventure while providing visitors with a sense that they are uncovering one of nature’s hidden gems without sacrificing modern comfort. The 26 atolls comprise 1,192 small islands, of which 202 are inhabited, and 90 resort islands offer unspoiled nature and unrivaled privacy. water, this archipelago is home to a spectacular array of marine life. Many resorts offer sunrise and sunset yoga, wellness retreats and Ayurveda-influenced spa treatments. After the sun goes down, Maldives has stunning views of the night sky. Because it’s located just above the Equator, both the Northern and Southern Hemispheres’ stars are visible. While a blanket on the beach can make for cozy stargazing, visitors can see the stars up close with a powerful telescope located at Anantara Kihavah’s open-air observatory and cocktail bar. Set on the private island of Vommuli, it has 77 palatial villas spread across 23 acres dense with palms and pandani. At the island’s center, a fitness and recreation complex employs a naturopathic doctor who administers acupuncture. And before it’s time to enjoy dinner at Alba, the property’s Mediterranean restaurant, guests can clean up with a manicure and blow-dry at the on-site salon. CATHY’S RECIPE
braised short ribs ADAPTED FROM THE FOOD NETWORK’S “SECRETS OF A RESTAURANT CHEF” Total time: 3 hrs., 55 mins. Prep: 25 mins. Cook: 3 hrs., 30 mins. Yield: 6 servings
INGREDIENTS: 6 bone-in short ribs (about 5-¾ pounds) Kosher salt Extra-virgin olive oil 1 large Spanish onion, cut into ½-inch pieces 2 ribs celery, cut into ½-inch pieces 2 carrots, peeled, cut in ½ lengthwise, then cut into ½-inch pieces
DIRECTIONS: Preheat the oven to 375 degrees F. Season each short rib generously with salt. Coat a pot large enough to accommodate all the meat and vegetables with olive oil and bring to a high heat. Add the short ribs to the pan and brown very well, about 2 to 3 minutes per side. Do not overcrowd the pan. Cook in batches, if necessary. While the short ribs are browning, puree all the vegetables and garlic in the food processor until it forms a coarse paste. When the short ribs are very brown on all sides, remove them from the pan. Drain the fat, coat the bottom of the same pan with fresh oil and add the pureed vegetables. Season the vegetables generously with salt and brown until they are very dark and a crust has formed on the bottom of the pan, approximately 5 to 7 minutes. Scrape the crust and let it cook. Scrape the crust again and add the tomato paste. Brown the tomato paste for 4 to 5 minutes. Add the wine and scrape the bottom of the pan. Lower the heat if things start to burn. Reduce the mixture by half.

Return the short ribs to the pan and add water, 2 cups or until the meat is just about covered. Add the thyme bundle and bay leaves. Cover the pan and place in the preheated oven for 3 hours. Check periodically during the cooking process and add more water if needed. Turn the ribs over halfway through the cooking time. Remove the lid during the last 20 minutes of cooking, allowing the meat to brown and sauce to reduce. When done, the meat should be very tender but not falling apart.

TIRED OF THE SAME-OLD, SAME-OLD? WAKE UP YOUR TASTE BUDS WITH NUTRITIOUS, FLAVORFUL DISHES FROM THE WESTERN PART OF THIS SURPRISING CONTINENT. By Donna Rolando Savvy chefs like to keep up with food trends, and one thing that’s “on trend” this year is the cuisine of West Africa. If you haven’t yet taken a gustatory jaunt to that corner of the planet, sampling the stews, rice dishes and desserts for which it’s known, there’s no time like now. West African food is flavorful, but not too spicy, and—in the style of good home cooking—a healthy choice. In fact, when it comes to quality, the West African diet fared better than its U.S. counterpart in a study published in The Lancet Global Health. It’s the reliance on veggies, legumes, staple starches and lean meats—not processed foods—that makes West African dishes a bounty of good nutrition. This cuisine is on the menu in many big U.S. cities these days—in eateries run by African transplants and in other restaurants whose chefs are bold enough to embrace what’s novel—so no ocean-crossing will be required to treat your taste buds to something excitingly new. Check out these menu highlights:
SENEGALESE CHICKEN YASSA From the Casamance region in the south of Senegal comes chicken yassa (or yassa poulet), a spicy stew served up in households throughout Africa. It’s also available at Senegalese restaurants around the globe, so if this is your first time with West African cooking, consider chicken yassa a good introduction. Well, that’s if you like onions. This is a dish that gets much of its flavor from caramelized onions! The chicken, beef, lamb or fish (all are right for making yassa) is marinated with oil, lemon and a dash of mustard, usually overnight. (In Africa this marinating is often necessary to soften tough meat; here in the U.S. it can make it melt in your mouth.) JOLLOF RICE This one-pot classic rice dish draws its flavor from fried and stewed tomatoes and is so engrained in African life that it’s often considered the thread that unites families. No pot of jollof is ever quite the same as another, so diverse are the ingredients that can go into the broth along with spices, onions and tomatoes. Out of chicken? Don’t worry: Pork, fish and veggies all work great in an authentic jollof. And for a real Nigerian feel, cook it over a live fire for a smoky
version known as Party Rice. The crust that forms on the bottom of the rice means you did it right! Since jollof is such a West African staple, it’s not surprising to learn that this dish knows no boundaries: Serve it at an everyday meal or dress it up with seafood for a celebration. And if you are celebrating at an African restaurant near you, consider sampling jollof. It’s often served with fried plantains and coleslaw. CAAKRI We saved the best for last—dessert! Leave the chocolate-covered cheesecake for another time; to get the full African experience, try Caakri, a dish made from fermented milk and grain and sweetened to taste. You might liken it to rice pudding, but the texture is different and the taste slightly tangy. (It contains sour cream.) The name Caakri (aka Tiakri, Chakery and several others) refers to the grain used to make this popular dessert or snack. While tradition called for common African grains like maize, black-eyed peas or millet, today’s pudding typically uses couscous prepared from wheat semolina. This pudding wasn’t always on the dessert menu. In fact, Caakri is related to a dish once served as the main meal, but that all changed with the availability of sweeteners. Today, you can sweeten your Caakri or not, depending on preference. Serve without sugar for a yogurt taste, reflecting one of its key ingredients; or with sweetener, raisins or pineapple, for a true dessert. Serve chilled for best results. So, if you are ready to take your palate-pleasing to new levels, try a taste of West Africa!

PEANUT SOUP This staple of the West African diet brings together a very unlikely combo from an American standpoint— tomatoes and peanuts (or ground nuts)—for a sweet and spicy sensation you’ll wish you had discovered sooner. Although there are many variations of this soup or stew, at its core are simple, familiar ingredients: nuts and sometimes meat and veggies. Ginger, herbs, garlic, Tabasco hot sauce and sweet potatoes are all used to enhance this African favorite— a sure way to provide comfort, as well as nourishment, on a rainy day. The perfect accompaniment for peanut soup is rice, plantains, potatoes and vegetables,
but in Ghana, you might bring on the fufu. Yes, that’s fufu—the name for any hot starch cooked over heat and formed into a rich paste. There’s nothing like this pounded starch, often made from fermented cassava, to make sure we get every last drop of our peanut soup. Most Africans eat fufu every day, from infancy through their senior years, and it comes in many varieties.
