And then there’s the all-important frosting. “Chocolate mousse, peppermint, caramel frosting with salted caramel drizzle, or lemon curd and cream cheese, or even with a dash of gin … and would you prefer a crisp fondant, a butter cream, or a nude cake with differently flavoured cream between each layer, with a dusting of icing sugar.” Things to think about include the number of guests, whether the cake is dessert or a post-dessert nibble to mop up alcohol, and how you want the cake to be decorated. You might choose simple criss-crossing blue ribbons, or roses and lavender with doves, all of which can be eaten. Elaborate stencilled designs matching the colours of the bridesmaid’s dresses or the invitations? Or something that represents you as a couple, maybe even Lego people, or your names in chocolate, on top?

Today, no longer confined to fruit and white fondant cakes, make your cake meaningful to you both.
