harters landed, hotel prices already on their upward spiral and an increase in yellow number plate bikes on the roads... looks like its season time already. While the quite sussegado ambience of the previous couple of months were a pleasant respite from the tourist tamasha, there's no doubting that Goa is at its most vibrant through the winter. Come November, Goa is open for the season and we already have our plates full with a slew of events to keep busy with day and night. Sure there's that increase in traffic that we are already experiencing, but it's bearable when you consider how beautifully the state comes alive... whether in order to lure the curious tourist or simply because the weather is so accommodating. Parties galore, beach shacks in full swing and a variety of new and improved establishments to cater to your entertainment... this is the time of year to spread those social butterfly wings. Aside from the beach belt, the SEASON is also when the state's art galleries showcase some of their best exhibitions. A visit to Sunapranta in Altinho, Panaji or Gallery Gitanjali in Fontainhas may even have an interesting workshop that you could attend. On the music front, singing competitions, live band performances and festivals of both electronic and classical genres offer the avid fan a chance to see and hear some of Goa's, as well as the world's best artistes. Goa's wedding season is also in full swing and in this issue of Walk Through we put the spotlight on Indian bridal fashion. Goa rates among the top wedding destinations in the country but we went ahead to explore the other top 9 locales; and what they have to offer. We're getting ourselves ready for the month's various celebrations. Read about what's hot in Goa this month and join in the festivities.

he royal look is big this season. Everything from make-up to the clothes, one can stand out by sporting the royal look. Velvet plays a big role in getting this look and feel. Gold ensembles are also a good bet. If you are open to experimenting, gold and black look absolutely divine. One important thing to remember is that Indians tend to mix everything and the result is not flattering. If you have a mix of colours in your ensemble then blend it with diamond jewellery or plain kundans – basically no colourful jewels. If you’re going for a single tone outfit, then play it up with colourful gems in your jewellery. Colourful clothes alongwith colourful jewellery means neither of them will stand out.

Grooms can opt for ethnic sherwanis or sherwanis in indo-western form, like a short (a little above the knees) rich embroidered jacket with pants instead of churidaar; or can team it up with a dhoti salwar. For other occasions, the groom can opt for a jodhpuri suit and for the reception, go completely western with a tuxedo. He will then cover a wide variety and sport different looks throughout the functions.

Goa Goa is undoubtedly the most popular place for destination weddings in India. People flock to Goa's beaches to tie the knot. There are a couple of ways of arranging a wedding there -- either through a wedding planner, or through one of the luxury hotels. Beach weddings do require a permit, but the wedding planner will take care of that. Popular luxury hotels for weddings in Goa include The Leela, on secluded Morbor beach, and the Taj Exotica, on quiet Varca beach. Both are in south Goa. Alternatively, if you'd prefer an intimate garden wedding, try the gorgeous Turiya Villa & Spa near Palolem beach in south Goa. You'll have the assistance of the owner, who's a renowned architect and interior decorator.

Udaipur What makes Udaipur such a standout destination for a wedding in India? Foremost is the setting. Known as the city of lakes and palaces, Udaipur really is one of the most romantic and charming places in India. A lot of this charm comes from the city’s regal palace buildings -- and the best bit, you can get married in them! Contemporary wedding venues, these historical palaces are not. However, their uniqueness and fairy tale qualities make them very sought after. For those who still want to get married in an authentic palace, but in more contemporary style, there is Devi Gargh. Located around 45 minutes from Udaipur, this rambling 18th century fort-palace has been refurbished in modern minimalistic style.

Jaipur The “pink city” of Jaipur is a favorite destination for those getting married due to the sheer range and diversity of wedding venues available. The range from authentic ornate palaces -- such as the Raj Palace, Rambagh Palace, and Jai Mahal Palace -- to old mansions. Those looking for a less costly option for their wedding will find one of Jaipur’s old mansions to be the perfect venue. Alsisar Haveli andMandawa Haveli are popular choices. If you’d like a wedding in a heritage venue away from the city, Samode Palace could be the answer. It’s located around one hour from Jaipur, and is built into the Aravali Ranges. Its setting and the way it’s illuminated at night make it a wonderfully romantic venue for a wedding.

Jodhpur The extraordinary Umaid Bhawan palace hotel, with a hilltop location overlooking the “blue city” of Jodhpur, has played host to some very lavish weddings indeed. The palace is very much a modern day one. It was completed in 1944, after 15 years, making it one of the last great palaces to be built in India. The royal family of Jodhpur still occupies a section of the palace. If your budget doesn’t extend that far, two other popular heritage places for destination weddings in Jodhpur are Ranbanka Palace andAjitBhawan. Imposing Mehrangarh Fort, which towers over Jodhpur, is a sought after place for wedding receptions.

Kerala The attraction of Kerala as wedding destination is just being discovered. It holds much appeal for those who want a quiet and picturesque wedding in a tropical setting, along the banks of a lake or palm fringed canal, with food served on banana leaves. There are a number of resorts that cater to such weddings. The luxurious ZuriKumarakom, near Alleppey, is perhaps the most popular. After the wedding, head off on a honeymoon along the backwaters in a traditional style houseboat. It’s also possible to have a beach wedding in Kerala. Resorts such asTheLeela in Kovalam arrange beach weddings. Varkala is a particularly scenic spot for a beach wedding. Kerala is known for elephant themed weddings, where the groom rides on elephant back, too.

weird’
New entrepreneur on the block, Krésha Bajaj reveals to Sujata Reddy her passion for edgy designs, all things weird and moving away from a rich daddy’s shadow WALK Through | November | 2013

S
he came, she saw and she conquered. All of 25 years of age, Krésha Bajaj didn’t want to piggy back on her daddy’s success (the Badasaab group) and set out to launch her online store Koëcsh, a project which she believes is an extension of nothing but herself. Extremely shy and painstakingly soft spoken, Krésha describes her style, in fact, everything about her as “Weird. I think weird is the only term I can think of to describe myself! Even as a kid, I was drawn towards bugs, which definitely freaked out my close ones,” she reveals. “But today, people have come to learn that I cannot be predicted. They’re not surprised if I don the goth look or step out in a traditional anarkali,” she says as a matter-of-fact. Having a Richie Rich daddy didn’t make launching her website easy. If anything, she had a point to prove. “The past seven months, ever since I came back to India, have been about the site. I put my blood and sweat into launching it and all I got in return, from my parents was unconditional support,” she states. “They were like, ‘We’ve not experienced these kind of styles in India but if you truly believe in it, we’ll support you.’ They were just happy that I opened up during the little speech I gave at the launch because they know that I’m usually very shy when it comes to such things… but that’s about it.” The apparel on the site has been designed by Krésha and manufactured in-house. The shoes are by Jeffrey Campbell and Krésha has the exclusive rights to retail them in India. The vintage stuff is sourced from around the world. Think collectibles and rare pieces by Dior, Yves Saint Laurent and the like. Talking about her line, the first thing that strikes about it is that it’s in sharp contrast to the petite designer’s appearances. Krésha has a baby face and voice to match butthe designs are bold and edgy, as if they’re telling the audience a dark tale. Structured shirts, chained LBDs, sheer dresses, bustiers and quilted collars, they’re avant-garde to the core. A deliberate attempt to break free? “I definitely use clothes to express myself,” she says adding, “I think that because I have a soft voice and look younger than I am, I turned towards expressing myself with the way I dressed. It all began when I was in London during my growing up years. It was lovely to see the punk groups express through their clothes. They were very nice people… soft on the inside but projected a hard exterior. I started experimenting with my wardrobe after interacting with them and absolutely loved it.” Krésha makes it a point to state that on the site she has classic designs as well, but, yes, the essence is about staying true to herself.

KNOWING KRÉSHA: I am: NOT girly and typical. I Love: Watching documentaries. I’m a history fan and spend most of my time buried in documentaries. I’d choose them over blockbusters anyday! My poison: Black and all things vintage. Theme parties are: Fun. But one should stick to the theme only if they’re comfortable with it. At the end of the day one should wear what they want to, and not what someone thinks that should… Online versus physical store: Online! Simply because I don’t ever have to down the shutters.

FRESH TAKE From advertisements, to landing her first film - Issaq, Amyra Dastur, who has just turned 20, has come a long way. The lissome lass, is not just another pretty face on the block as critics have heaped accolades on her for her acting in the film. Rohan Swamy talks to her about the roller-coaster ride.
W
hen we caught up with Amyra Dastur at Tito’s in Goa, (a pretty smile playing on her face and a pink dress to compliment it), she was far removed from the traditional girl from Central India who she plays in her debut film. A few pleasant smiles later, Dastur candidly remarks, “I want to do commercial films as well as off-beat movies. Since I neither have a godfather, nor a backup plan, I hope to do great work and make everyone proud of me.” How was your journey so far? I didn’t have to struggle to land myself a role in a film. The only major problem I have faced, is my diction. Since we speak English and Gujarati at home, my Hindi is not very good so I had to work on that. I had been auditioning for two years and was also doing television commercials on the side, until I

bagged Issaq. I started modelling at the age of 16 and always aspired to be an actor. My father works in medicine and my brother is studying to be a chef. I was the only one in my family who was absolutely focused on acting since I was a kid. Are you pursuing your studies along with your acting? Yes I am. My parents are very strict about my studies. And my family only agreed to let me act on the condition that I would not let my studies be affected because of my work. How was your experience, working on your first film? Are you happy with the response? A film unit is like a family, you work with countless emotions on a film set, because you spend so much time there. I was very lucky to have such sweet co-stars and such as amazing director

of course. There were times when we used to get into arguments and fights also. I used to cry on the sets. This one time we had a tiff when the director and I disagreed over the way a particular scene was to be done. Now I laugh when I think of it. The whole experience was a lot of fun. As far as the response goes, yes we had hoped for more positive feedback... some of the criticisms were particularly brutal.

HIS FAVORITE MEAL That old adage is true: “The best way to a man’s heart may be through his belly,” says Dr. Dow. “Knowing what he likes to eat without having to ask him demonstrates how well you know him. And the couples I’ve treated who know small details about each other have the happiest marriages.” But maybe your husband likes everything you make! In that case, try breaking out the pumpkin pie. Research by Alan Hirsch, PhD, of the Smell & Taste Research Foundation in Chicago has shown that that sweet scent arouses men more than other aromas. 3 WEARING THAT DRESS HE LOVES YOU IN Dolling up sends the message that you still want to look good for him, no matter how long you’ve been together. “Men’s brains are wired to respond to visual cues more than women’s brains,” says Dr. Dow. “Seeing you in that sexy dress shows him you desire him.” And a scarlet number may work best. A study by researchers at the University of Rochester in New York found that ladies in red are an aphrodisiac to men. 4 TAKING CARE OF YOURSELF Shedding stress, eating right, exercising, quitting smoking and even pampering yourself may sound like treats for you, but they’re also ways to show you love him. “This communicates, ‘I want to have a long, wonderful life with you, and I’ll do whatever it takes to prevent you from experiencing the grief of losing someone,’” says Dr. Dow. What better motivation is there to get healthy?
“Asking for advice shows that you rely on him and that there’s a place for him in your life. Need, dependency and love go hand in hand.” 8 THANKING HIM FOR THE LITTLE THINGS Next time your husband drives the kids to school or takes out the trash, express your gratitude. “We’re rushing through life, we forget to notice the good deeds and guys forget to say what they need from you, but they have feelings, too. So say, ‘I really appreciate that,’” says licensed marriage and family therapist Carin Goldstein, creator of BetheSmartWife.com. Giving thanks will improve his attitude and infuse your relationship with a feel-good energy. 9 A QUICKIE. Making love for an hour is nice, but once in a while, have sex for just a few minutes, suggests Dr. Dow. Although women get that loving feeling with a rise in oxytocin (what you release during that post-coital cuddling session), men feel it with an increase in dopamine, the chemical they release during sex which stimulates the mental pleasure-and-reward center, explains Dr. Dow. “I hope that most of the time, your lovemaking is full of foreplay and romance. But other times, just have sex." 10 LETTING HIM VENT The latest office drama or family fight plays on his emotions more than he’d like to let on. So create a safe space for your guy to let his walls down. “Listen to his worries or problems without trying to fix them,” advises Dr. Brosh. “It shows him you don't deem him weak or inadequate and affords him a place in the relationship to share that part of his life. Moreover, it shows you care.” If he comes home from work in a bad mood, ask him if he wants to let it out. If not, that’s fine—but he may need a prod to open the floodgates.

Your husband will see hassle-free, worry-free, chorefree time as a loving reward. 7 ASKING HIS ADVICE Your man wants to feel like an important part of your world. On top of that, he’s a hard-wired problem-solver. Ask for his opinion on how to approach the boss for a raise, and you prove you trust and value his judgment. “When a man can fix something, he feels competent and useful,” says Dr. Brosh.

WT: How did Eco Treks Goa (ETG) start up? OA: A few of us (Aarti, Durgadas Parab, Alexyz, Skitter and Sean Faia among others), who went for a trek organised by another adventure group came up with the idea together. We wanted to start a community of nature loving people who would be interested in going on treks to the lesser known places in Goa. We wanted to get people interested and aware of their natural environment and maybe even help in conserving it. WT: On what basis do you choose trekking destinations? What is the general age group of participants? OA: We look for secluded areas, away from habitation and preferably close to
a water body. While a secluded place is good, we opt for areas near villages from where we can get food provided for. This way we also engage the locals of the community and help them earn a little extra. We celebrated our fifth year anniversary with a trek to Naguesh Love Forest in South Goa. Prior to that we have conducted trips to Raigad, Netravalli Falls, Dudhsagar and Chorla Ghats among other places. For the past couple of years we have also been organising an annual Himalayan Trip. The age group of our participants varies according to the difficulty of the trek. We have conducted easier treks for school and college kids and also walking trails which can be attended by older individuals.
WT: Unlike most other adventure groups that have started in Goa recently, ETG seems to have the lowest trek fees. How do you manage? OA: ETG is not a profit making group. Thats one of the first subjects we decided on when we started it. We charge participants based exactly on the expenditures that will be sustained on that trek. On some instances we even give back the excess money if possible. What small amount we manage to save and keep as a buffer, we use to give back to the environment and the locals there of. For example, the last time we went to Chorla, we found out about a farmer whose buffalo was killed by a tiger. We offered the farmer the little excess money we had from Eco Treks Goa towards buying another buffalo. WT: What are future plans for Eco Treks Goa? OA: We want to continue what we’ve been doing — exploring Goa and the areas around and communing with nature. We also want to expand out trips to include more states and maybe even trips abroad to Sri Lanka or Bhutan.

ueenstown-based Ultimate Hikes launches its 2013-14 season this week with the first guided walks on the Milford and Routeburn Tracks departing on Friday 1st November. This year’s season opening on the Milford Track is extra special as it also marks the 125th anniversary of the discovery of Mackinnon Pass, allowing land access from Te Anau to Milford Sound. Another highlight of the up-coming season is the re-opening of the Sutherland Falls Track, which leads to the 580m Sutherland Falls, believed to be the tallest waterfall in New Zealand. Following significant rock fall onto the access track in October 2012, extensive work on a new track to the falls means it now includes two new swing bridges, views along the river and an opportunity to enjoy the waterfall up close and personal. Ultimate Hikes operates guided walks on the Milford, Routeburn and Greenstone Tracks, traversing the Fiordland and Mt Aspiring National Parks and enabling guests to experience the magic and wonder of this World Heritage Area in comfort. The guided walks include stays in private lodges, offering hot showers, three course meals and warm beds, surrounded by some of the world’s most spectacular scenery. Ultimate Hikes General Manager Noel Saxon said the team is looking forward to a busy summer after months of preparation. “It’s shaping up to be a great season. Sutherland Falls track is once again open, enabling guests to view New Zealand’s largest waterfall- it’s a spectacular sight.” The falls were discovered by Donald Sutherland in 1880, and Quintin Mackinnon and Earnest Mitchell were instructed to find a way overland from Te Anau to meet the track he had cut from Milford Sound. The Pass was traversed by Mackinnon and Mitchell on 17 October 1888, and named after Quintin Mackinnon, who was also the first guide on the Milford Track. “We have upgraded the amenities over the years since we have been operating the guided walk, but the experience itself remains timeless - as it was 125 years ago,” Noel said. “It’s a unique wilderness experience that’s second to none.” Ultimate Hikes has earned an international reputation for providing excellent facilities including the quality of accommodation, exceptional guides and lodge hosts. Earlier this year the Milford Track was named the “Number One Walk In The World” by Lonely Planet Great Adventures author and travel writer Ben Fogle and is consistently voted one of the world’s best walks. From Nomverber 22 to 24, North Goa moves to a different beat. The THUMP!

enwned motorbike brand Royal Enfield hosts its annual biker event Rider Mania at Vagator’s Hilltop and with hundreds of motor bike lovers in attendance, there’s no shortage of adrenaline here. Hosted by the Brotherhood of Bulleteers Motorcycling Consortium (BOBMC) series of clubs, Rider Mania brings bikers (we’re talking Enfield owners) from across the country to the beach capital, Goa. Bangalore and Pune bring forth the highest number of registered participants, with riders from Mumbai, Hyderabad, Delhi, Shillong and other parts of the country in close persuit. These groups bikers make their way from their home cities in packs, riding their way to Goa fo the weekend celebration. Each year, Hilltop and the open land around is converted into a wonder-land for Royal Enfield owners and bike lovers in genral. The venue hosts exhibitions of beautifully modified Enfields with brilliant paintwork. A market section offers the chance to buy specially designed merchandise like riding gear, helmets and a host of other suvenirs. On the open ground, participants can be a part of the action through various competitions like the dirt track, figure or eight

and slow race. And thats just the riding part. Fun events like the cleanest bike, carry your bike contest, assembly wars, beer drinking and arm restling competitions are also held. A quirky addition to the events last year was the lemon and spoon race. Participants were expected to race across a small stretch holding a spoon in the mouth and a lemon placed on it. Albeit it was to be done while riding their Royal Enfield motorcycle. Using this race as an example, Rider Mania promises similar activities this year as well. Come sunset, riders let their guns cool and enjoy the party with perfomances by renowned musicians and DJs from across the country. Like one of the main organisers explained, “Unlike other bike brands, we dont promote the idea of riding ahead of everyone else. For Royal enfield, its about riding out together. he fourth edition of a relatively young Indian music festival, Bacardi NH7 Weekender, is just around corner. The festival that caters to the music audience for alternative and indie music, locally and globally sourced, attempts to mark India's musical landscape. With live music performances from a motley crew of over 200 bands, traversing multiple genres, this year's festival sets stage for a fascinating musical experience. Organised across four cities—Pune, Bangalore, Delhi and Kolkata—this travelling festival will be held over the next three months. A flagship event of Only Much Louder (OML), a firm that works in the area of music and alternative lifestyle cultures, the Bacardi NH7 Weekender was born out of the NH7 online music portal that
features Indian and global indie music artists, including the NH7 radio. wap the hippie jamborie for cool whites, glass panneling and... pretty much a whole new avatar. Thats what the new Shore Bar on Anjuna Beach is about. A strong break from the the shack that made the place famous, the new owners have redesigned the whole property, keeping only the famous name. Promoting the beach lounge concept on the shores of Anjuna, the enterprise, under Extreme Sports Bar managment, offers a cool upscale vibe to a beach stretch, that, for a long while has been known only for its trance-dance shacks. Clean lines and easy furniture are the first thing yo will notice at the new Shore Bar.... that’s if you can take your eyes away from the beautiful beachscape, ofcourse. The lower deck is perfect for day breakers who want to share their time between the waves and a relaxing session at the restaurant. However, it’s the upper deck that really draws us to the place. Offering an unobstructed view of the beach, the top floor is divided between an indoor seating area cum dance floor and the open air deck that is sure to be your preference for a sunset session. The decor and ambience may catch your eye, but it’s defintiely Shore Bar’s new and revised menu that will have you comming back again. Under the guidance of Chef Rehman, the kitchen dishes out a variety of Continental and Indian cuisine. We had the opportunity to enjoy a food tasting of over 40 various dishes. Biting into the spread of salads, its easy to take note of the chef ’s use of fresh quality ingredients... from the rocquet
leaves and mozzarella cheese to the crunchy celery. One of my favourites was the Insalata Caprese, made with tomatoes, mozzarella and basil, which was light and easy on the tongue. The French Riviera Salad, made with apples, celery and a dressing of balsmic vinegar, olive oil and other ingredients was another light starter, but could do with more of the celery to balance the sweetness of the apples. From their list of sea food dishes, Chef Rehman’s Singaporean Chilly Crab is a fingerlicking preparation. Compliment it with one of Shore Bar’s international wines like the Santa Rita 120 Sauvignon Blanc from Chile. While all the restauants and shacks along the Anjuna coast serve a range of Indian dishes, Shore Bar’s ‘on the mark’ flavouring, combined with fresh ingredients make it a suprise Indian food stop. Bharwan mushrooms (stuffed with panner), Sultani jhinga (prawns) and the chicken tikka are some of the restaurant’s hit Indian appetisers. To prove that they don’t fall short on the other Indian dishes, the dal tadka, tandoori pomfret and chicken biryani are all decidely well prepared. After a heavy binge session of all this, there was absolutely no space for desert. Guess we can keep that and the cocktail session for the next time. Final verdict: Anjuna’s latest change is a long awaited one and we’re looking forward to many more sunsets at Shore Bar.

Goa Tourism has added another feather in its cap by winning the award for ‘Best Honeymoon/Romantic Destination - Goa’ announced by International Tourism Conclave and Travel awards(ITCTA) in Jaipur, Rajasthan on October 18, 2013. Mr. Sanjay Pande, Addl Director Tourism, Rajasthan handed over the award to Goa Tourism Official in the second international award gala ceremony held in Jaipur, also known as Pink City (Gulabi Shehar) . Mr. Dilip Parulekar, Tourism Minister, Goa said, “Winning these awards helps create awareness about Goa’s potential and its rich heritage, culture, cuisine, landscapes and other tourist attractions. This kind of acknowledgement will help us in our efforts to attract tourists from India and abroad. The award is a testimony to the professional and aggressive marketing approach undertaken by Goa Tourism in the recent months which will continue in future”. Goa Tourism had introduced a progressive scheme named single window clearance scheme for major and minor tourism events like beach weddings and music festivals. Marriott & Salgaoncar Football Club: Spreading the Joy Goa Marriott Resort & Spa supported the Joy Of Giving Week, from 2, 2013, through a combination of fundraising and CSR activities. In October, players of the Salgaocar Football Club along with associates of Goa Marriott visited the ASRO*. On the 8th, they organised a interactive day of games at the Caritas home for children afflicted with HIV/AIDS, in Tivim. The event was an extremely heartwarming activity – past instances showed that the giddy smiles on the faces of the children were worth every minute spent with them. At the All-Goa Drawing and Painting Competition for mentally challenged kids organized by DISHA every October, Goa Marriott Resort & Spa contributed their bit by providing refreshments for around 600 kids who participated. In addition to the above, throughout the week, Goa Marriott associates undertook an active Donation Campaign within the resort premises. Guests of the hotel were oriented at the reception with the concept and cause of the week, with a request to donate as per their wish. Proceeds obtained from this week were channeled towards the ASRO project of Caritas-Goa.

Szechuan Chicken Cooking time: 15 minutes Serves 4 INGREDIENTS: • 2 teaspoons Szechuan peppercorns • 2 tablespoons soy sauce • 2 tablespoons Chinese cooking wine or sherry • 3 chicken breast fillets, trimmed and cut into thin strips • 2 tablespoons peanut oil • 2 teaspoons cornflour • 1 red capsicum, seeded and thinly sliced • 1 carrot, sliced diagonally • 2 teaspoons white vinegar • 2 teaspoons sugar • 1 tablespoon chilli sauce • 2 green onions, sliced diagonally

Heat a small frying pan over medium heat. Add the peppercorns and dry fry for 1 minute or until fragrant. Remove from heat and place in a mortar and pestle or spice grinder. Add a pinch of salt and grind until it forms the consistency of finely cracked black pepper. Set aside until needed. Place the soy sauce, Chinese cooking wine and chicken in a non-metallic bowl. Cover and refrigerate for 15 minutes to marinate. Heat half the peanut oil in a wok or large non-stick frying pan. Drain the chicken from the marinade and reserve the marinade. Cook chicken, in batches, for 3 minutes or until browned. Remove from heat and keep warm. Combine the cornflour and 2 tablespoons of water and whisk until it forms a smooth consistency. Set aside until needed. Heat the remaining peanut oil in the wok. Add the capsicum and carrot and cook for 3 minutes or until tender. Return the chicken and any cooking juices to the wok, along with the reserved marinade, cornflour mixture, vinegar, sugar, chilli sauce and ground peppercorns. Cook for another 3 minutes, then toss through the green onions. Serve immediately with rice or noodles.

Gobi Manchurian Cooking time: 45 minutes Serves 6
INGREDIENTS: • 1 medium. cauliflower clean and broken into big florettes. • 1 small bunch spring onoin finely chopped • 2 tsp. ginger finely chopped • 1 tsp. garlic finely chopped • 1/4 cup plain flour • 3 tbsp. cornflour • 1/4 tsp. red chilli powder • 2 red chillies, dry • 3 tbsp. oil • 1 1/2 cups water • 1 tbsp. milk
METHOD:

Boil the florettes for 3-4 minutes in plenty of water, to which a tbsp. of milk has been added. Drain and pat dry on a clean cloth.
Make thin batter out of flour and 2 tbsp.cornflour, adding 1/4 tsp. each of ginger and garlic and red chilli powder and salt to taste. Dip the florettes in the batter one by one and deep fry in hot oil. Keep aside. In the remaining oil, add remaining ginger, garlic and crushed red chilli and fry for a minute.

Stir fry for a minute. Add 1 1/2 cups water and bring to a boil.
Add 1 tbsp. cornflour to 1/4 cup water and dissolve well. Gradually add to the gravy and stir continuously till it resumes boiling. Boil till the gravy becomes transparent. Add florettes and soya sauce. Boil for two more minutes and remove.

200 gm Chopped Mushroom Heat the butter in a sauce pan. Put mushroom pieces into it. Saute 50 gm Chopped Onion for a while and remove from the pan. Put the onion and garlic in the 2 gm Crushed Garlic remaining butter and saute well. 2 gm Chopped Coriander leaves Boil the remaining mushroom pieces in water with coriander leaves 50 gm Butter and salt for 10 minutes. When it becomes cool, grind the contents. 30 gm Corn flour Mix the corn flour with milk. Add this to the mushroom solution. 250 ml Milk Place it in fire and boil for 500 ml. Goa’s To-Do list Everyone’s either heading to Goa or just got back from a sojourn there. Those who still have to get their tans and feni kicks, here is a concise list of some of the best bars and restaurants in the sunny state along with some great ways to spend those vacation days.

Zeebop by the Sea is probably one of south Goa’s best known beach side restaurants and has been a favourite among locals and tourists alike, many of who are guests at neighbouring Kennilworth Hotel and the Park Hyatt Hotel. Keeping with the laid back atmosphere of Utorda Beach, the establishment has an almost lazy look with sandy floors, open air dining and plastic furniture similar to what most shacks in Goa use. But then again, the patrons don’t really return for the decor but for the fresh seafood that makes up a major part of the menu. Those with a milder palate can try the butter garlic baby shark or stuffed crabs. With Goan masalas like recheado to assist, spice up you meal with masala fried calamari or stuffed bangda (sardines).

FUSION BISTRO Benaulim Beach, South Goa, 9890064833, 9420689441 Finding good fusion cuisine in Benaulim in South Goa was tough until Fusion Bistro decided to make the shift there from Majorda. With a spot right on the beach, owners Vaishali and Lokesh Sood brought the best of what their old restaurant was famous for and added to it. Start off the evening with a couple of quirkily named cocktails like the Vokum (Vodka and kokum) and the Gindo (Gin, ginger and soda). The food, like the name suggests is a blend of international flavours and local Goan ingredients. Try the roasted sardine, Jambalaya and beef

Then find out exactly why Venite is one of the most reliable places for good food in Panaji. The mix of Goan and Portuguese cuisine is of great standard though service may take a little while. Try the prawn balchao or cut into a tender steak served with deliciously creamy mashes potatoes. The tiny balconies are beautifully quaint and a good place to overlook the narrow lane below though fitting in the small area might be a tight squeeze.
BABA AU RHUM Off Arpora Rd, before Club Cabana; Leo Michaud: 9822078759 Started by self taught baker Leo Michaud and Dayini Feraud, Baba Au Rhum off Arpora Road is the answer to those seeking respite from the heavily commercial restaurants in the area. This French restaurant started in 2006 offers a range of sandwiches, salads, pizzas and homemade ice-creams that make use of quality ingredients and make for a wholesome meal. A great place to head out for a peaceful breakfast or lunch, try the sandwiches made with bread baked in the kitchen itself and stuffed to a bulge with meats, vegetables and cheeses while enjoying the constant global music in the background. Add to this a freshly made juice and end you meal with the apple cinnamon sorbet or a banana ice cream.

Greek food, spectacular beach view and staff who are knowledgeable and polite — Thalassa in Vagator is a gourmand’s delight. Nestled on a sea facing cliff, this open air restaurant has a resort feel to it, with curtains billowing in the evening breeze and international music playing in the background. We tried the highly recommended mix grilled platter and made it an absolute carnivore’s night with chicken, beef, mutton and pork served with sauteed vegetables and fries.

Don’t let Fellini’s flaky walls and half constructed top floors stop you from trying out some of the best pizzas to be found in the state. This eatery on the Arambol Beach road is almost always crowded with patrons willing to tackle narrow metal ladders, rickety tables and then wait 40 minutes to an hour for their pastas and pizzas cooked in wood fueled
ovens. Mostly frequented by tourists, the restaurant offers a variety of toppings from triple cheese and folded pizzas to dairy free ones, with the pepperoni pizza being the fastest selling. Lasagnas, spaghetti and various appetizers are also available, but the wait might be too long if you’re hungry.
BARS CAFE DEL MAR Palolem beach, South Goa 9823276520, 9823313981 Palolem’s favourite bar shack, Café Del Mar is a hot pick for tourists looking to enjoy happy hours by the beach while making friends with other travelers and locals. Owner Kennedy reflects the ambiance of the place, with his relaxed friendly swagger and is always up for spending an evening with his patrons. Pool, and foosball tables offer chances for friendly evening games over drinks. One could say that the television sets at Café Del Mar are permanently switched onto the sports channel with the place filling up with noisy fans on football game nights.

CAPE TOWN CAFE Baga, Titos Road 09923325638 If you happen to find yourself on Tito’s Lane and don’t want to hit the nightclub, settle down for the night at Cape Town Café. Owned by the David D’Souza (Co owner of Titos and Mambos), this bar has the nightclub atmosphere, music and crowd, without the hefty entry charge. Come early to snag a table or a place at the bar and spend the rest of the night watching football matches, dancing in the indoor dance area or simply trying out the range of spirits on offer. The staff are a bit finicky and hard to flag down but once you’ve got your drink, feel free to chat with those around and make new friends. Cape Town Café also has a private dining deck that requires reservation.

Live music on the weekends, jive sessions and a generous mix of young and old customers make Cavala’s a great place to grab a couple of drinks and maybe even shake those tail feathers. More or less like the inside of a Goan house, the bar and outdoor dining area is noisy with the lyrics
of Bon Jovi songs, happy guests and busy cutlery. A few cocktails into it don’t be surprised to find some ladies take to the bar top to show the crowd their own dance moves. Many actors, big and small stop by Cavala’s to enjoy a fuss free time and say hello to the Marius, the owner.

Down The Road or DTR as it is known by to regulars is Panaji’s answer to the casual pub experience. Popular more so with the locals, tourists need a little time to adjust to the singular party that is this place. Wednesdays are popular with amateur crooners who want to try

Saturday Night Market Arpora Every Saturday this hill in Arpora comes alive with lights, music and hoards of visitors looking to shop, eat, drink and enjoy some music performances. More than a hundred stalls set up along the face of the hill sell souvenirs, clothes, shoes, silver jewellery, music and more. Pick fine handmade gold plated earrings, fire juggling merchandise or vintage sunglasses before heading off to the food court for a chilled beer and a choice of Greek, Italian, Lebanese, Tibetan and German cuisine. Of all the museums in Goa, the Houses of Goa Museum is probably one of the most interesting structures. Resembling a ship, the building was built like a traffic island. Owner and known architect Gerard da Cunha has over the years tried to keep physical records of the amalgamation of Eastern and Western cultures that influenced architecture through the ages in Goa. Spread out over three storeys, the museum documents the
influences of the locals and colonizers on each others building designs as well as the interior details like doors, windows, furniture and various house nick knacks. Gerard, being a big fan of late cartoonist Mario Miranda has dedicated on wing of the museum to the Mario gallery which houses his cartoons, sketches and various books and collectibles that can be purchased.
