Huevos Rancheros

SERVES 6

INGREDIENTS

24 soft corn tortillas

3 cups (750 mL) chunky salsa 1 - 540 mL can black beans, drained and rinsed

3 cups (750 mL) Tex-Mex style shredded cheese blend

6 large eggs ¼ cup (60 mL) chopped cilantro 2 green onions, sliced 2 avocados, cubed

1. Preheat the oven to 400°F (205°C). Grease a 9x13 inch (22x33 cm) baking dish. 2. Layer 8 tortillas on the bottom of the baking dish and spread one cup of salsa on top. 3. Sprinkle half the black beans evenly over the salsa layer and 1/3 of the cheese. 4. Repeat a second layer using 8 tortillas, 1 cup of salsa, remaining beans and 1/3 of the cheese. 5. Repeat a third layer using 8 tortillas, 1 cup of salsa and remaining cheese. 6. Using the back of a wooden spoon, create 6 shallow wells and crack one egg into each well. 7. Bake for 25 – 30 minutes or until eggs are cooked through.

Allow to cool for 5 minutes.

Top with cilantro, green onions and avocado and serve.

Blueberry White Chocolate Scones

INGREDIENTS

3 cups (720 mL) all-purpose flour ¼ cup (60 mL) white sugar 1 Tbsp (15 mL) baking powder ½ tsp (2.5 mL) salt ½ cup (125 mL) cold unsalted butter, cut into small pieces or grated ¾ cup (180 mL) milk plus 2 Tbsp (30 mL), divided 2 large eggs, beaten 1 Tbsp (15 mL) lemon zest 1 cup (250 mL) blueberries 1 cup (250 mL) white chocolate chips

MAKES 16 SCONES

1. Preheat oven to 375˚F (190˚C). Line a baking tray with parchment paper. 2. In a large bowl, combine flour, ¼ cup sugar, baking powder and salt. Cut in butter with a pastry blender or using a fork until the mixture resembles coarse crumbs.

Add ¾ cup milk, eggs and lemon zest. Stir just until mixture forms a dough. Gently fold in blueberries and white chocolate chips. 3. Divide dough in half. On a lightly floured surface, pat each half into 7-inch rounds. Cut each round into eight wedges.

Place each scone on the prepared baking sheet. Brush with 2 Tbsp reserved milk. 4. Bake for 25 minutes or until golden brown. Serve warm or at room temperature.
