With an estimated 1.5 million* isolated Australians, someone out there is in need of a ‘beautiful yarn’ right now. Grand Central is proud to partner with the Australian Red Cross TeleCHAT program to search for and sponsor new volunteers to socially connect with the isolated by providing friendship and support through
regular phone calls. Each week, volunteers chat to someone lacking a social connection, with participants matched to each caller based on their individual interests, hobbies and availability. Our goal is to inspire conversation and connectivity in our community and searching for TeleCHAT volunteers is one step towards that goal. COLETTE HAYMAN We chat to Australian accessories entrepreneur Colette Hayman about winter must-haves and wearing baubles to bed. What’s the biggest trend in jewellery for autumn/winter? “Elaborate statement pieces, glass stones in jewel tones and unusual colour combinations.” Should your accessories change with the season? “Most definitely, if not with every outfit. Your mood changes with the weather and accessorising is the final touch. A pop of bright colour on a winter’s day is a must. Fabrication of bags can also be seasonal – try beautiful canvas beach bags for summer and heavier cross-bodies for winter layered over your coat.” Are we allowed to mix metals? “Yes! Mixing metals is a hot trend this season. Layer silver, rose gold, gunmetal, gold – there are no rules.” Is it true you should put on all your jewellery then take off one piece before you leave the house? “At Colette by Colette Hayman, we put on all our jewellery, then add one more piece!” Can one handbag work for multiple occasions? “You certainly could use the same tote you use for work to go shopping on the weekend, but it depends how many things you carry around with you
on a day-to-day basis. If you keep your items to a minimum, a beautiful shoulder bag with gold hardware can easily be worn day to night.” If you were to buy one statement piece, what would it be? “A necklace in gold or silver (or both) which can be worn to complement a number of outfits: adding that wow factor to your LBD or taking those boyfriend jeans and white tee from fine to fabulous.” Any tips especially for Queenslanders? “For me, Queensland means long holidays, balmy nights and friendly, laidback people. Choose bright colour to go with the tropical vibe.” Do you wear jewellery to bed? “Yes – diamond earrings and rings.” What’s the one piece you would never be without? “A statement necklace. METHOD Preheat the oven to 180°C/ 350°F/gas 4. Quarter the tomatoes and place them in a large baking dish or roasting tray (roughly 25cm x 30cm). Peel the onions and cut into large wedges. Deseed and roughly chop the peppers. Add all these to the tray along with the chicken thighs. Squash the unpeeled garlic cloves with the back of your knife and add to the tray, then pick over the thyme leaves and sprinkle over the paprika. Add the oil, balsamic and a good pinch of salt and pepper. Toss everything together really well to coat, then spread across the tray, making sure the chicken isn’t covered by the vegetables. Roast for around 1 hour; or until the chicken is golden and cooked through, turning and basting it a couple of times during cooking with juices from the tray. Serve the tray-bake with a lovely green salad on the side. You could also buddy it up with a little rice, polenta or a loaf of crusty bread to mop up the juices.
