Temperature is key. Japanese teas are often brewed around 65oC, Chinese greens around 75oC, Whites and most Oolongs at 85oC, and oxidised blacks at 95oC. The ability to dispense water of different temperature, rapidly, is crucial to an effective tea programme.

ONE BOILER Necessitates addition of cool water to drop the temperature.
T WO BOILERS One set low and one higher. Temperatures in between can be mixed and merged.
THREE BOILERS PLUS Allows for more precision by staff, and more accurate infusions.
Tea can be brewed by cup or by pot. What is chosen is dependent on the setting. The method of brewing should be engaging for the customer, with the brew time being able to be controlled. At a said time, the tea leaves must be separated from the infusion. The tea can be decanted into another vessel, or an infuser containing the tea leaves removed.

Waterloo Tea sells in 250g sizes, ensuring freshness when compared to larger wholesale packs. The normal dose is 1g/100ml.
An ideal menu should aim to encompass each of the processing methods (Black, Green, White, oolong, Pu-erh, Rooibos and Infusions)
Sample teas should be made available, and delivered to tables during quiet times.Getting peoples pallets accustomed to the different flavour profiles is the first step. Tea menus can be created in many ways. Exceptional unadulterated teas from different regions, focus on specific processing methods, emphasis on blends and flavours etc.
Iced tea should also be considered. We suggest that something delicious is created for them, as opposed to something ready made in a bottle.
