Hello.
Here at Watsons Bay Boutique Hotel we live and breathe Summer, so we have designed this magazine to get your finger on the pulse with the ultimate schedule for summer in Sydney and to share our passion for bringing you the freshest cuisine, quality community entertainment and state of the art facilities. We are excited to be able to reflect on the incredible events that have taken place over the last year and to share our excitement for the Summer ahead. We are proud to have contributed to dozens of local film festivals and sporting associations, and to have raised over $8,500 for our local schools in the last 12 months. We plan to raise this bar higher for 2015 kicking off with our Carols by the Bay fundraiser this December. So we invite you to feel at home at Watsons Bay – swing by on your morning walk and enjoy a fresh juice or smoothie from our brand new Kiosk bar, or bring some friends over for a long, sundrenched lunch and trial our new Summer menu. Prefer to soak up the sun from your boat? Let us take care of the catering and deliver fresh produce straight to you with our new Boat Catering service. Bring the family down and check out our new renovations, grab a cocktail and watch the sun set on our new Top Deck, or invite the inlaws to stay in our beautiful rooms. Happiest of Summers and we hope to see you soon.

We promise there are plenty of things to do around the Bay that will make yours an unforgettable stay!
stand up paddle board Paddle Boarding along Watsons Bay is a must-do for paddlers of all experience levels! The calm currents and shallow waters of the bay are perfect conditions for beginners to get their balance, and for those wanting to explore the most of the stunning harbour (and get a great workout!) paddle over to the Heads and absorb the stunning views of the Pacific Ocean between Manly and Watsons Bay – keep your eyes peeled for dolphins, penguins and even whales at seasonal times! Starting from $35 contact our mates at WATSSUP and go for it! Check the website for more details: watssup.com.au
Picnic at Camp Cove One of Vaucluse’s hidden treasures Camp Cove is an elusive enclave just a short walk north from the hotel. The beach boasts pristine waters and forms the perfect setting for either a relaxed picnic with the family, or an adventurous snorkel. Ask the hotel reception for a map, slap on your sunscreen and get to it!
Lighthouse Walk A spectacular vista of the city skyline and unobstructed views of the vast Pacific Ocean – Watsons Bay boasts it all. Put on your walking shoes and climb the sandstone steps of The Gap for unsurpassed panoramic views. For the keen, you can walk all the way to Bondi following the coastline but most enjoy walking to the classic Hornby Lighthouse, chatting to the friendly locals and patting their adorable pups on the way. Whichever direction you take we promise remarkable views, lush greenery and fresh air. Make sure you share your snaps with us.

10 Ciders you need to know about this Summer Rochdale Made with passion, devotion and apples, Rochdale’s ciders are brewed using family recipes, refined and evolved over time to meet the unique needs of Kiwis, yet always produced the old-fashioned way, with natural ingredients and plenty of hands-on care and attention to detail.
Rekorderlig
Beautifully Swedish. From its humble Swedish roots, Rekorderlig has retained its dependable honesty to become a much-loved, fourth generation family-brewed cider. From Strawberry-Lime and Mango-Raspberry to simple Pear or classic Apple, which refreshing flavour will you choose?
Monteith’s Crushed Apple Cider A refreshing and easy drinking dry-style cider, made from 100% freshly crushed New Zealand apples. Serve over ice for the ultimate refreshment hit. Try with sweet French crepes, or a soft blue cheese and nutty Gouda with crackers.
Thatchers
Thatchers range of premium ciders are made from specially selected ingredients using the most refined blend of modern and traditional techniques. They each offer deep and characterful flavours that will surprise and delight serious cider lovers!
Frank’s Premium Tasmanian Cider
Frank’s Cider is made with real apples (and pears), made by a real cider maker, in Tasmania – The Centre of the Apple Universe (As Frank used to call it)!
Kirin Using traditional Japanese-inspired flavours, Kirin have created a range of premium ciders that are considered, balanced and perfected to deliver a range of truly unique flavour expressions. Available in Fuji Apple & Mikan, Fuji Apple , Ume & Ginger. Batlow
A combination of a precise climate, nutrient rich soil and careful growing methods make Batlow Apples second to none and “Australia’s Favourite Apples” since 1922. Batlow Cider think it makes perfect sense to turn “Australia’s Favourite Apples” into Australia’s favourite cider.
Sofi Spritz
Confession. Sofi is not a cider…but she managed to sneak in anyway! Sofi is a complex and all-natural Australian wine spritzer with a classic Mediterranean heritage. Fresh and subtle, with a dash of sparkling water, you can enjoy over ice with lime, with friends, and without regrets tomorrow.
Bilpin Bilpin Cider create pure, fresh apple and pear cider – no added sugar, artificial flavours or concentrates, using only the freshest fruit from Bilpin and surrounding region. Bilpin believe that nothing beats the natural taste and aroma of real mountain fruit. James Squire Orchard Crush Launched in 2011 to widespread acclaim, James Squire’s Orchard Crush is a refreshing traditional cloudy cider with a fragrant, fresh aroma, a broad clean palate and a crisp finish. The perfect accompaniment pork chops or crisp pork belly with apple sauce!
Somersby
Somersby has obtained a reputation of spreading joy and sunny togetherness where ever it is served and attracting curious and open-minded people from all over the world. Available in many different delicious variants…the most popular variety is Apple, Pear and Blackberry.

6 Tips for Christmas Entertaining By John Pye – Executive Chef at Watsons Bay Boutique Hotel, Sydney.
1. Keep it Simple
4. Styling is everything
Great flavours will always be great flavours. Just because there’s a special occasion doesn’t mean you need to throw every herb, spice and condiment into a pan and create a special sauce or puree. Remember to keep it simple and combine flavours that bring the best out of your dish.
…and I’m not talking about popping green and read alternate napkins on the place settings. Think about who you’re catering for and really make it special. At Watsons Bay Boutique Hotel we create and style each event to attract who we’re entertaining – it’s part of the experience and shouldn’t be forgotten.
2. F is for Fresh
5. Four Course Rule
Christmas lunch only happens once a year. As much as hitting the over-crowded seafood markets and shops can cause anxiety, blisters and an awkward sweaty lip, it’s worth investing a few hours of torture and purchasing some great fresh produce. It really does make a difference and your guests will appreciate your efforts.
Again, don’t over complicate your meal. Four courses are more than enough – we stick to this concept for any of our events. Appetisers and canapés on arrival, a starter, a main and a dessert... Don’t over-do it.
3. Pick a concept and nail it
6. Drink it up
Hot meats and veggies, cold meats and salads, seafood with fairy bread... whatever you choose to go with, commit to it and pay attention to the smaller details. It shows you’ve thought it through and want to put on a show.
You don’t need to be a sommelier to know that some beverages match better with some foods and flavours. Google it! Read the tasting notes on the back of the labels. Research and show your guests you’ve covered all bases and doing everything you can to create a wonderful experience.
If you implement these six simple rules, you’ll definitely be able to avoid washing up – your guests will be so impressed they’ll mop your floors too... If you’re still struggling for inspiration – just pop on down to Watsons Bay Boutique Hotel for Christmas Lunch.

HOW WELL DO YOU KNOW THE BAY?
One. The area of Watsons Bay has always been famed for its
natural picturesque beauty and is one of the oldest settlement areas in Australia
Two. As well as being one of the oldest sites, Watsons Bay was one of the most logistically significant areas in all of Australia in early settlement times as a port for all European vessels entering Sydney Three. 1854 saw the first ferry service to Watsons Bay and development began Four. Watsons Bay Boutique Hotel has a large water sub tank under the venue, that used to be the main water supply for the village which runs off the bore we still use. The sandstone cliffs also feed into this, so on wet days we need to watch the tank so that the pub does not flood from beneath. Five. Thousands of tourists visit Watsons Bay Boutique Hotel every month to enjoy the extraordinary physical beauty of the harbour, fresh seafood and seasonal produce which Watsons Bay was famed for in the very beginning
Six. Watsons Bay is home to one of Sydney’s only nude beaches, Lady Jane Beach
#PRAWN PORN “…UNSHELLING THE RECIPES OF THREE OF OUR IN-HOUSE FAVOURITES”
Australians have maintained a love affair with the Prawn for time immemorial and in reverence for this celebrated crustacean we will show you how to do more than just chuck it on the barbie by unshelling the recipes of three of in-house favourites.
1. BBQ SALT AND PEPPER KING PRAWNS
Mix a handful of roughly chopped coriander, with 1 tbs of dried chilli flakes, 1tbs of olive oil and a dash of lemon juice. Marinate the King Prawns in this bowl for 30 minutes before grilling on a BBQ for roughly 5 minutes on each side. Serve with freshly ground pepper and dashings of salt with fresh tartar sauce.
2. DELUXE SEAFOOD PLATTER
Chilled or grilled, we do them both! Fresh Tiger Prawns with Moreton Bay Bugs, Sydney Rock Oysters, Blue Swimmer Crab, Chilli flaked Calamari rings, served with lemon wedges, tartar sauce and smoked chilli mayo.
3. BUCKET OF TIGER PRAWNS Chilled and served with smoked chilli mayo and dark rye.

T he Bridal Files Top tips from leading Australian designers Steven Khalil & Lisa Gowing
On Sunday 12th October at our annual Bridal Showcase in partnership with David Jones, we had the pleasure of interviewing two leading Australian bridal designers – the much loved Lisa Gowing and hugely talented Steven Khalil. Our brides-to-be were treated to an intimate discussion with the designers and below we share with you the highlights.
Q. About their design process LG: Whether made to order or ready to wear, my process is very involved. The process can start with any type of inspiration and the collection builds from there, and incorporates all key themes that people know of Lisa Gowing – feminine, soft, delicate silhouettes using French lace and luxurious silks. SK: My couture gowns are extremely involved with a lot of detail and require months of work. Most women have a silhouette in mind, but we help them create their vision in a perfect dress. My ready-to-wear dresses possess all the qualities of the couture gown, but it’s a simplified version.
Q.Top tips for brides when searching for the perfect dress LG: Most brides know what suits their body type, however they have never tried on a wedding gown before and don’t realise the full extent of silhouettes that are available. Try on as many as possible and you could surprise yourself.
SK: Only ever take your most elite friends and family as everyone has a different opinion. Be comfortable in your own decisions.
Q. Tips for different styles and body shapes LG: What brides often don’t realise is that a wedding dress has so much more fit and cut and process than a normal dress – you can pull something off that you would not usually wear because it is so much more flattering and has been cut really well. SK: Definitely try a range of different styles, although I do suggest sticking to your personal style to some extent, so your wedding reflects you.
Q. Bridal trends for 2015 to look out for LG: Bridal is not overly trend driven like fashion, but in 2015 you’ll see softer silhouettes, matte finishes, feminine, vintage inspired, layered tulle and lace sleeves. SK: We’re starting to see fuller ball gowns, the fish tail and trumpet shape – all are worth a try.
Sunset Style Sessions
- By Lisa Kelly
