Dinner Menu

The Beer

Real Beer. Real like the beer that the barman drew in days gone by, with more flavor, aroma and natural goodness than any of the big national brands. Draft beer that is fresher than any import, that never travels more than a dozen feet from our serving tanks to our antique tap towers. Beer that is as fresh as beer gets. We brew in small batches from our own recipes, using only the finest and fresh raw materials.

Belgian specialty chocolate and black patent malts, Munich malt and crystal malts with Yakima Valley, Mount Hood, Czech and Willamette hops. Select strain of brewer’s yeast complement each beer with crisp or fruity, dry or sweet flavors. Ellicottville Brewing Company’s beer never contains preservatives, additives or artificial ingredients of any kind. Following the Old World Tradition, our beer is never subjected to pasteurization.

The Brewery

Our 10 Barrel, whole grain brewery reflects the accumulated tradition of centuries of craft brewing. It enables us, as brewers, to exercise and enjoy something unusual in brewing: creativity. In an industrial brewery we would be compelled to brew the same beer day in and day out, a thousand times a year. Here in our craft brewery, as the season changes and upon our customers requests we brew a variety of ales and lagers. For us, brewing remains an art!

Our brews begin with select malted barley. The malt is crushed in our MALT MILL and infused with hot water to form a thick porridge in the insulated MASH TUN. Each brew has its own critical strike temperature, where the malt starch is naturally converted to just the right balance of fermentable sugars and malty dextrins. The sweet wort is then drawn off and run directly into the BREW KETTLE. The protein rich brewers grains are drained and shoveled out as feed for our local bison at the Ellicottville Buffalo Ranch.

In the KETTLE, hops are added to the boiling wort in a specific sequence that creates a balance of bitterness and aroma. The brewer judges the wort break, clarity, density, flavor and aroma. When the moment is deemed just right, final addition of aromatic hops is made and the wort is struck from the kettle.

The very hot wort is run through the heat exchanger to lower it to a fermentable temperature and then off to the fermenter. Brewer’s yeast is pitched into the wort to ferment the sugars. Ales ferment under frothy head of yeast for seven days, then another several days of aging. Lagers ferment colder and slower, so they will mellow and age, four to six weeks, sometimes even longer. From the fermenters we filter our beer to produce crisp clear beer. The beer that we served from our brass towers is tapped directly to our serving tanks. We hope that you will enjoy savoring our beer as much as we enjoy brewing it. Brewery tours are given upon request or may be arranged in advance for larger groups.

This generous, made to order Caesar. Endless variations are in vogue, but the original is still the finest. GRILLED ROMAINE

Our new house favorite. Split hearts of romaine, lightly brushed with garlic olive oil, grilled for a unique flavor, topped with light creamy garlic and lemon dressing, diced tomato, crumbly bleu cheese and BBQ bacon. 12.99 Grilled breast of chicken add 2.99 Canadian smoked salmon add 5.99

FALAFEL PLATTER

Homemade falafel croquettes of garbanzo beans, garlic, onion, coriander, cilantro, parsley and cumin; served with white bean hummus, a tomato relish and warm Naan bread. 13.99

A crisp, fresh 1/4 head of iceberg lettuce topped with cherry tomatoes, crumbled gorgonzola cheese, bacon crumbles and creamy bleu cheese dressing served with a Scotch egg garnish. 10.99

ALBUQUERQUE STYLE CHOP SALAD

Brewery BBQ We smoke our meats in a Friedrick Rotisserie Smoker. The Smoker is one of the finest that delivers a delicious authentic smoke flavor and extreme juicy tenderness. Includes cole slaw, corn bread and your choice of potato salad or fries. Choice of sauce: Classic or Hot ‘n Spicy BBQ.

THE TEXAS BRISKET

A half pound of our slow smoked Texas beef brisket. Dry rubbed with our signature seasonings and sliced thick. 18.99

KANSAS CITY CHICKEN

Half chicken, rubbed with a zesty blend of herbs and spices then slow smoked on Mesquite wood to a juicy perfection. 15.99

BBQ PULLED PORK SANDWICH

The Brewery’s own six hour slow apple-wood smoked BBQ pulled pork. Stacked high with shredded cabbage and sweet ‘n tangy BBQ and beer sauce. Served with a side of seasoned fries. 12.99

BABY BACK PORK RIBS

One and half pound rack expertly trimmed, seasoned, dry rubbed then slow smoked to a juicy tenderness. Full 22.99 Half Rack 16.99

Our twist on an American classic tender shaved ribeye on a crusty Costanzo sub roll with peppers, onions, and our own cheese sauce. 14.99

Charbroiled portabella mushroom drizzled with a Tuscan olive oil marinade topped with roasted red peppers and goat cheese and crispy fried onions over Texas toast. Served with roasted garlic potato wedges. 12.99

Thick cut Texas toast with a secret recipe buttery crust filled with tomatoes, bacon, cheddar, gouda and American cheeses. 12.99

Sauteed red and green bell peppers, sweet onion, jalapenos, tomato, chipotle pesto, jack and cheddar cheeses sandwiched between a jalapeno and cheddar tortilla. Plain 9.99 Chicken 12.99

12 OZ NEW YORK STRIP STEAK

Hand selected center cut Black Angus New York strip steak seasoned and grilled. 24.99

PETITE SIRLOIN

New to our menu, an 8 oz cut named coulotte. Butcher’s term used for the top sirloin. Incredibly tender and flavorful. Lightly seasoned with our fresh herb citrus sea salt rub, grilled to your liking. 18.99 May we suggest an addition to your steak. Add crumbled Danish bleu cheese or sautéed button mushrooms.

GRILLED MARINATED FLANK STEAK

We marinate this steak in 11 different herbs and spices, dry sherry and soy sauce then grill and slice it to make one phenomenal steak. 19.99

MAPLE GLAZED GRILLED SALMON Fresh North Atlantic salmon glazed with a Sprague’s maple syrup and Dijon mustard sauce served over wild rice and hazelnut infused brussel sprouts. 21.99

Brewery Comforts & Seafood BREWERS SHEPHERD’S PIE

Buttered puff pastry stuffed with sautéed veal, mashed potatoes, onion, Monterey Jack and cheddar cheeses. This dish lands to rest with our Black Jack Dry Stout demi glace and fresh vegetables, truly one of the Brewery’s favorites. 16.99

EBC FISH N’ CHIPS

#1 superior grade white haddock coated in Two Brother’s Pale Ale beer batter, Japanese bread crumbs and deep fried golden brown. Served with EBC crispy fries, cole slaw and lemon. 16.99

COCONUT COD

Sautéed golden coconut encrusted cod fillet, coconut jasmine rice served with light velvety vanilla amaretto cream sauce and asparagus. 19.99

ALE BRAISED LAMB

Tender bone in lamb fore shank slow cooked in a blend of our amazing beers served atop a rosemary/ white bean ragout. It’s soul warming creation for our winter enthusiasts. 21.99

WILD MUSRHOOM RISOTTO

Fresh sauteed wild mushrooms folded in to a creamy parmesan and herb risotto so hearty you will almost forget its vegetarian. 18.99 Grilled breast of chicken add 2.99 Shrimp add 5.99

SHRIMP SCAMPI WITH LINGUINE

This shrimp scampi is the perfect union of shrimp and pasta of savory and tangy, a delightful change of pace. Jumbo shrimp delicately sauteed in a white wine and garlic herb sauce tossed in a bed of linguini. 19.99

SOUTHERN FRIED CHICKEN & BISCUITS Fresh chicken tenderloins on flaky buttermilk biscuits smothered with a smooth creole sausage gravy. 16.99

Burgers

Upgrade any regular burger to a Kobe burger add 4.99

EBC burgers are ground fresh chuck, never frozen. Grilled to your liking based on the guide below. Served with lettuce, tomato and onion on a brioche bun, with choice of fries or side salad. Unless otherwise noted.

KOBE TRUFFLE BURGER

Renowned for its flavor, tenderness and marbled texture, this Kobe burger is topped with classic California white truffle tremor cheese. The flavor of truffle meets the velvety perfection of ripened goat’s milk cheese. Earthy and elegant, it’s sure to make even the most distinguished taste buds shake! Served with a side of fries tossed with parmesan, parsley and drizzled with black truffle oil. 18.99

THE OPEN FACED TNT PRIME RIB BURGER

Renowned Kinnealey meats of Boston, Massachusetts, has created for us a most delectable burger of choice ground prime rib. Charbroiled, resting on thick cut Texas toast, topped with our house BBQ beef brisket, tomato, roasted sweet corn, red bell pepper and crispy fried onions. Served with fresh garlic potato wedges. 15.99

ENGLISH PUB BURGER

Charbroiled Black Angus topped with caramelized onions, bacon, English cheddar cheese and served with a horseradish bleu cheese sauce. Delicious! 12.99

SMOKE YARD BURGER

A chargrilled 8 oz patty stacked high with smoked mild cherry peppers, bacon, smoked gouda cheese and smoked tomato aioli served on a classic brioche style roll. 12.99

THE INCREDIBLE LAMB BURGER

House made patties of ground lamb and chuck grilled to your liking and topped with a signature American award winning Wisconsin farmstead cheese: Petite Frere, an earthly, fruity flavor with velvety creamy texture. Champagne and shallot vinaigrette, arugula on a warm brioche bun. Something incredible happens here! 15.99

The Brewery’s soup has been called the “glory of the kitchen.”

CLASSIC FRENCH ONION

Crock of caramelized onions in a rich beef stock infused with thyme and a bay leaf. Smothered with swiss and provolone cheese and baked until golden brown. 5.99

SPICY AFRICAN PEANUT SOUP

Our famous “Taste of Ellicottville” soup finally made it on the menu! A hearty creamy soup of chicken, peanut roux, cayenne and tomato with a mildly spicy finish. 4.99

TOMATO BISQUE & GRILLED CHEESE CROUTONS

Hand breaded calamari, fried and tossed in our sweet, yet mildly spicy sauce of ginger, Worcestershire, pineapple juice and other house ingredients. Served with a roasted garlic and lime dip. 9.99 Double Order 14.99

Our house slow smoked BBQ pulled pork over seasoned crispy fries topped with melted Monterey jack and cheddar cheese, scallions and BBQ sauce. 9.99
