Editor’s Letter FEBRUARY 2014 After taking the last month off from the magazine to do some regrouping, I welcome February with a warm embrace in 2014. I am looking forward to what I expect to be a wonderful year for Wayne Magazine and hopefully for the community as well. February seems to notoriously be known as the month where resolutions fall by the wayside and we slide back into the same routines we had grown so accustomed to prior to the New Year. So maybe this is the month to evaluate the things you want to stick with versus the things you don’t want to hold onto as you continue to move into 2014. With Valentine’s Day approaching, I think it is a good idea to think about ways that you not only can show your love for the ones closest to you, but also within yourself. I for one find it difficult to maintain the feeling of pure love for myself on a continual basis. A couple of ways I am trying to make a more concerted effort is through meditation and yoga classes to help align thoughts of appreciation and love for myself more regularly. Maybe if we all put a little more time into working on how to love ourselves, the love we have for others would shine through more brightly and beautifully. Let’s try to give it a shot and see how we all feel by the end of this month. As always, please email me your thoughts, ideas and/or suggestions as we move into the spring months. I have many ideas that I’m looking forward to incorporating in future issues thanks to many amazing people I have met in Wayne that have been incredibly resourceful. However, I am continually looking for more suggestions from all of you as this magazine is for Wayne and the supportive community that you all reside in. Enjoy the issue! DOG OF THE MONTH by Nathaniel Clark
This month we welcome Chester, a Blue Merle Shetland Sheepdog. Named after either Chester Copperpot, the original Goonie explorer, or our 21st President Chester A. Arthur no one knows. Shetland Sheepdogs, also known as Shelties or sometimes Miniature Collies are a breed of herding dogs. Since there aren’t any sheep where he lives, Chester instead herds soccer balls back with his snout when they’re kicked to him–an instinctive skill that he was never formally taught. Chester came to live with Cindi Kammer when her son rescued him as a 4 month old pup from an abusive home. Since her son lived in an apartment building that didn’t allow dogs, Cindi said that Chester could come stay with her temporarily. That was eight years ago. Chester has since become quite the mama’s boy! He follows Cindi most everywhere she goes, helping her work in community gardens or taking strolls around the neighborhood. Chester is a loyal and loving companion. He is also a great travel dog and loves riding in the car. Whether a quick trip to the grocery store or a 10 hour drive to the Midwest accompanying the family to holiday gatherings and family reunions,
Chester’s just happy to be along for the ride. Recently, Cindi and Chester joined PAWS for People which provides pet-assisted visitation volunteer services. After attending training sessions to prepare the “team” (Cindi and Chester), they received their certificate and Chester was given a new tag for his collar that says PAWS Therapy Companion on one side and PLEASE PET ME on the other. Through a subsidiary program called PAWS for Reading, Cindi and Chester visit libraries and schools where young children practice their reading skills by reading to Chester. He helps children with their self-confidence by being a good listener and he never correcting them if they make a mistake. Each child also receives a small card with Chester’s picture on it that says, “I read to Chester today!” PAWS for People is a non-profit organization committed to providing therapeutic visits to any person in the community who would benefit from interaction with a well-trained, loving pet. There currently is a Paws for Reading/Children with Special Needs program at Radnor Middle School. If you have a pet that would like to be a therapy companion like Chester, visit PAWSforPeople.org. Farnan Jewelers A Tradition of Excellence by Laurie Wightman
There are so many elements that go into finding the right jeweler that sometimes it could be compared to finding the perfect mate. Firstly, there is a huge trust factor that needs to be established in order for you to feel comfortable about deciding on a sparkling new purchase, or even an appraisal on your treasured pieces you hold dear to your heart. Secondly, the chemistry must jive between personalities so there is an ease and familiarity to working more closely with one another. Lastly, you need to equally love the jewelry and experience alike so you will want to keep coming back for more. Farnan Jewelers has certainly become the one-stop-shop for so many of their customers. They are a full service jewelry store offering custom designs, appraisals, onsite repairs, jewelry restoration, redesigning, remounting, corporate gifts and much more. Starting in downtown Philadelphia in 1915, Edward A. Farnan was a young entrepreneur who opened his jewelry store during the First World War and the Great Depression. Two of his sons, Edward and John, advanced Farnan Jewelers through the Second World War and beyond. Today, John’s daughter Claire carries on the legacy in downtown Wayne alongside her business partner Jeremy Pavlow. Together they offer over 50 years of experience and knowledge
from both their upbringings in the jewelry industry. “This business has been passed down from generation to generation. It is what we love to do and it is in our blood,” says Jeremy. He worked in his family’s business ,David Jay Jewelers, from the time he was a young man, learning the trade and custom design of jewelry on the back end of the business. Both Claire and Jeremy have now established a seamless partnership at Farnan Jewelers where Claire specializes in insurance replacement appraisals and importing Belgian diamonds from Antwerp, while Jeremy focuses on the setting and designs of jewelry, as well as repairs. A unique factor that separates Farnan Jewelers from many larger jewelers are the visits to Antwerp, Belgium each year. Claire heads straight to the Belgian cutters and sorts through their reservoir of diamonds to hand select those that exhibit superior cut quality, yet are of excellent value. Each October, they invite their customers to special order their ideal diamonds from Antwerp where Claire will then personally sort through thousands of stones to find the ultimate diamonds for their customers. “Those who have purchased a Belgian diamond from Farnan Jewelers continually rave about its infinite sparkle,” says Claire. themselves with their warm and welcoming approach to each and every customer. Having superior expertise is only one facet to their successful business. Chic & Simple Resale Where Frugal is the New Chic by Elizabeth Woodworth From the moment you walk into Chic & Simple Resale your eyes will widen with excitement at the endless treasures that fill every inch of this store located right down the road in Berwyn. From furniture and apparel to jewelry and accessories there is always a special find for each individual that shops at this hidden gem. Owner Diane Wulk, opened up Chic & Simple Resale a little over three years ago. Having grown up with a mother who owned resale shops, Diane had dabbled in the business through the years. “I guess you could say it’s in my blood. I have fun with what I do, and it never feels like a job,” says Diane. She had originally planned on this being her retirement business, a way to keep busy while still enjoying herself. But soon enough she discovered this was a flourishing
enterprise that had massive growth in a very short period of time. Today, Chic & Simple Resale has become such a staple on the main line that Diane is working on an expansion plan for the store. “We are bursting at the seams here. French Crepes with Bananas & Nutella Ingredients • • • •
1 Cup All-Purpose Flour 1 tsp. White Sugar ¼ tsp. Salt 3 Eggs
• • • •
2 Cups Milk 2 Tbsp. Butter, Melted Nutella Hazelnut Spread 5 Bananas
1. Sift together flour, sugar and salt; set aside. 2. In a large bowl, beat eggs and milk together with an electric mixer. Beat in flour mixture until smooth; stir in melted butter. 3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 2 tablespoons for each crepe. Tip and rotate pan to spread batter as thinly as possible. Brown on both sides. 4. Fill inside of crepe with an even layer of Nutella Chocolate and chopped up bananas. 5. Fold crepe like a blanket and drizzle the outside layer with a fine line of Nutella chocolate.

Flourless Chocolate Torte Ingredients
• Unsweetened Cocoa Powder • 15 oz. Bittersweet Chocolate, finely chopped • 18 Tbsp. Unsalted Butter, cut into small pieces • 7 Egg Yolks • 9 Tbsp. Granulated Sugar
• 1 ½ Tbsp. of Dark Rum or Brewed Espresso (optional) • 1 ½ of tsp. of Vanilla Extract • Pinch of Salt • 5 Egg Whites, room temperature • 3 Cups Raspberries • Confectioners’ Sugar, for dusting
1. Preheat an oven to 300ºF. Grease a heart cake pan and dust with cocoa powder. 2. In a double boiler, combine chocolate and butter. Set top pan over but not touching barely simmering water in the bottom pan and melt, then whisk until well blended. Set aside to cool slightly. 3. Beat together egg yolks, 6 Tbs. of granulated sugar, dark rum, vanilla and salt on medium-high speed until pale and very thick, 3 to 5 minutes. Gradually pour in chocolate mixture and continue beating until well blended. 4. In a deep, clean bowl, using a mixer fitted with a whisk attachment, beat egg whites on medium-high speed until foamy, about 1 minute. Gradually add the remaining 3 Tbs. granulated sugar and continue to beat until medium-firm peaks form, about 2 minutes. Scoop half of the egg whites onto the chocolate mixture and fold them in gently. Fold in the remaining whites just until no streaks remain. 5. Pour batter into pan and spread evenly. Bake until torte puffs slightly, about 40 minutes. Transfer pan to a wire rack and let cool for 30 minutes. 6. Remove pan sides and let the torte cool completely. Cover and refrigerate until very cold, 4 hours up to overnight. Garnish torte with the raspberries and dust with confectioners’ sugar. Wayne Magazine | February 2014

Opting for Organic 3 Reasons Why Buying Organic Produce is Important by Emi Kirschner Perplexed, standing in the produce aisle which do you choose, conventional or organic? Which is better? Is there really a difference? Yes. The health benefits of organic foods are innumerable. Besides carrying a lower pesticide load, produce that is grown organically tend to be far more nutrient dense. It’s all those nutrients that keep our bodies disease free and feeling awesome. Buying organic can be a bit more expensive, but the offset of not spending money and time at the doctor’s office or taking expensive prescriptions equals everything out.
Chemicals, Chemicals, Chemicals The Environmental Working Group (EWG) publishes a list every year of the produce with the most pesticides on it. Look for the “Dirty Dozen/Clean Fifteen.” What is most important to know about these lists and conventionally grown produce in general is that we aren’t referring to one pesticide being used excessively on a fruit or vegetable. Conventionally grown produce can have up to 60 different chemicals applied to them. I’m pretty sure that no one is checking to see how all those chemicals react together or in us. And the last time I checked there haven’t been any studies on what an appropriate toxicity exposure level is/should be for our
kids whose systems aren’t fully developed and are far more sensitive. The bottom line is that most of the chemicals used are known neurotoxins. Neurotoxins cause our central nervous system to malfunction and there are many studies linking them to Fibromyalgia, Parkinson’s disease, depression and many more. Washing Isn’t Enough Washing or peeling produce does slightly help lower chemical ingestion. However, fruit like strawberries, which don’t have a peel-able skin and are sprayed with a chemical that is related to Agent Orange, the chemicals permeate the flesh. In addition, the ground of conventionally grown produce is also sprayed, absorbed into the soil, and then absorbed by the roots of the plants. That is why choosing organic root vegetables (carrots, sweet potatoes etc.) are important too even though the part you eat isn’t directly sprayed.
Healthy Soil = Healthy Humans Overall the produce we eat contains less of the nutrients we need to stay healthy. The Organic Consumers Association has sited many studies that show levels of calcium, iron and vitamins A and C are 20 – 30% lower than in the 1970’s. The key to improving nutrient levels is building healthier soil. Organic farming does this. Without getting into all the nitty gritty details, organic farming restores and replenishes the microbes that make up a healthy soil. What is most important? Start by making small changes. During the holiday season our itinerant wanderer remained in his native city, New York. He knows that his mission in search of the “Quintessential Cocktail” continues to elude him, but in no way has his enthusiasm for the project diminished. While regaling with friends and family during the holidays, he became aware of how much activity centered around individual’s homes. Delicious cocktails would be mixed at parties, many of which he compared to those he consumed at various establishments in Wayne. Consequently, in reviewing his activity plans for the New Year, a novel idea developed. Instead of concentrating on bars and lounges in Wayne, why not consider that perhaps Wayne’s private residents are perfectly capable of producing the answer to our man’s quest. On this possibility his thoughts returned to his days at the University. Fish House and Rum Punches were commonly amongst the many liquid refreshments prepared for social events. But to achieve the ultimate individual award winning cocktail was something that evaded the connoisseurs at the fraternity house. This trip down memory
lane provided a reinforcement of his latest idea which revolves around the thought that people in a community such as Wayne do take pride in mixing a private cocktail for family and friends. Following this line of reasoning our Old Codger arrived at a decision which he earnestly feels will get him closer to his desired goal if not attain it in its entirety. Accordingly, our traveler puts forth the following proposal to the residents of Wayne. In the spirit of community involvement, our Wayward Traveler enlists the aid of Wayne’s citizens, asking those who are interested to participate in an informal contest by sending Wayne Magazine their best cocktail along with ingredients. The cocktails will be evaluated by the Traveler himself. The most suitable entry will be featured in the following month’s issue along with a noble prize for the exclusive winner.
