Floorcloths Floorcloths were popular in the homes of America’s founding fathers George Washington, Thomas Jefferson and John Adams. Now these beautifully painted floor coverings are enjoying a comeback as artists have rediscovered the craft of painting on canvas. Weathersfield, Vt.-based Lisa Curry Mair crafts her rugs in a 200-year-old farmhouse adorned with many of her creations. She brings a love of history, children’s book illustrations and mathematics to her designs. A mariner’s compass, an artichoke and a woven, cane-like pattern are among her best-sellers, and she does custom designs. The hardest thing to get across, she says, is how durable the pieces are, and that’s largely due to the number of “hobby” crafters producing inferior product. “They use lightweight canvas, cheap paint and finishes. A floorcloth in a high-traffic kitchen should stand up to dogs, kids and all kinds of abuse,” Mair says. A good heavy floorcloth should lie flat with no bumps or ripples, she says. If you’re interested in trying your hand at the floorcloth craft yourself, HGTV’s website offers instructions. Mair’s website has a how-to video plus a supplies shop.

It’s called “going faux” – turning homes into something they basically are not through prefab architectural embellishments and eye-tricking wall finishes. Design experts have been doing it for years, and now it’s gone mainstream with DIY enthusiasts and homeowners happy to pay a professional. Faux wood beams, decorative molding and faux painting techniques can transform a ho-hum space into a “wow!” room. A

beautiful headboard can be a work of art. It can add character and focus to a room and can transform the place where we sleep into a luxurious retreat. Sheri Guillot of Custom Creations by Sheri in Dysart designs custom headboards for clients and cuts them out of plywood. Foam padding and batting softens the headboards in preparation for upholstering in silk, velvet, taffeta and other fabrics. “I have more power tools than most men,” Guillot says, smiling. “I love making them, and they’re fairly simple to do. It’s a break from the

12

fairly complicated process of making window treatments.” The process also includes sanding and drilling holes for tufting, covering the headboard with foam and batting, then stretching the fabric tautly over the headboard before stapling it into place. The backs of her headboards are finished. “I want the back to look nice, too.” She particularly enjoys tufting, using a long needle to draw string through drilled holes to attach self-covered buttons, tufting the fabric around the buttons. “It adds an elegant fashion detail to the headboard, but you can also use brass tacks to create a different look.”

We spend nearly one-third of our lives sleeping, so it pays to know all the options and choose which types of pillows, sheets and comforters are right for you. Pillow test: Stop punching pillows in the store. Instead use these easy indicators to check a pillow’s quality. Down or feather-filled: Fold pillow in half on the floor or a flat surface. Squeeze out the air and release. It should return to its original shape. Synthetic: Fold pillow in half on the floor or a flat surface and place a tennis shoe on top; release. Thread count Thread count is the number of threads woven into one square inch of fabric. A higher number equals softer linens. Kid’sstuff

They grow up so fast – without old-school ideas

B

right, lively and whimsical – how much fun is that for a child? This bedroom is sleeping quarters (with a dress-up closet, too!) for nine grandchildren – eight girls under age 4 and one baby boy – who regularly rotate in and out of the space on visits. “I wanted a decorating scheme that would grow with the children and not be too babyish,” said the homeowner. “The fabrics needed to be sturdy because they get lots of use, and I wanted it to be comfortable and pretty, too.” Like a lot of modern decor, children’s rooms are enjoying a rethinking. No longer restrained by old-school ideals for juvenile decor, these spaces now feature elements that transcend genres and traditional gender themes. The design doors are flung wide open. This busy grandmother trusted the decorating project to Sheri Guillot, owner of Custom Creations by Sheri in Dysart, because she wanted custom bedding and had worked with Sheri on other projects. “I had lots of fun working on this room. She wanted a colorful

room that wasn’t garish. I made matching headboards that were attached to the wall for safety, and went with a mix of coordinating fabrics for the beds,” Guillot explained. Soft yellow walls and white painted furniture are the perfect backdrop for the plaid coverlets in green, bright pink and lilac on twin beds. Bedskirts add a bit of flounce, and 24-inch pillows and throw pillows are plumped up against the headboards create a cozy look. Initialed pillows are switched out to match each visiting grandchild. At the foot of each bed is an upholstered storage ottoman for games, books and toys. Sitting on one is a favorite stuffed animal. Guillot smocked the spring green window panels, a sweet and oldfashioned detail that suits the shuttered windows. The window seat is filled with pillows covered with fabric remnants from the bedding. There’s a large round crib in the room, too, for the baby. The crib bedding coordinates with the twin beds, but for Christmas, Guillot constructed a red velvet crib coverlet. Guillot’s goal was to make the bedroom kid-friendly and fun, but sophisticated enough with room for growth and change so grandchildren will enjoy the room from preschool to college.

Line up pattern or texture in the fabric with the edges of the seat. 4 Bring sides of fabric up over the back of the seat and cut fabric, leaving about 2 inches of overlap on the back. If you prefer, use a measuring tape and measure. 5 Place the fabric on a hard table or floor, right-side down. Place the seat on top with the back facing you. 6 Bring one side up and staple in the middle of the side, about 1 inch in. 7 Bring the opposite side up, check the alignment with pattern, and then stretch tight and staple. Move to the sides and repeat stapling. 8 Then move around the seat and staple every inch, stopping 2 inches before each corner. Pull tight with every staple. 9 Do the corners. Pull the point of the fabric corner up over the point of the seat, holding so the sides of the fabric are perpendicular to the sides of the seat. Pull tight and staple. Tuck the corners in, forming a nice point one side, pull and staple. Do the same on the other side of the corner. Proceed to do all four corners. 10 If the corner is rounded, still staple the first corner step at the middle of the curve. Then do several small pleats one at a time, stapling as you go. This should result in a rounded corner with no or little puckers. Use scissors to trim fabric close to staples.

Tips: If you have a compressor at home, invest in a pneumatic upholstery gun. It’s worth its weight in gold. It will make your job much faster, more professional looking, and it’s easier on your hands and wrists. Think before you staple. Make sure you've got the fabric nice and tight, no puckers. Make sure it's lined up right with any pattern. If in doubt, re-pull and reposition. Add charm and character by adding any pieces of trim. Use your staple gun as your sewing machine and place the trim around the piece. Be environmentally responsible and recycle old coats, sofa backs, burlap feed sacks, etc.

Ottoman: Steps are basically the same as for the chair. Position your fabric before you cut. Pull tight and staple. In this example I added red piping by stapling the cover to the top of the ottoman, then stapling on the red piping, then stapling on the lower fabric, and finally pulling in all underneath the ottoman and stapling.

oke your head into a home decor store these days, you'll probably notice that it's a jungle out there — in more ways than one. Among popular design trends, one of the most widespread revolves around all things animal — and all indications are that it is only growing. Many of you will naturally think of zebra-patterned throw pillows, leopard-spotted ottomans and tortoise-inspired mirror frames but those are just the foundation of what we're seeing unleashed on the world of home interior design.

Antlers are sprouting on everything – lamp bases, sculptures, artwork, images printed on pillows, throws, chandeliers, wall sconces, candlesticks, tabletop decor, artistically interpreted in photographs and woven into baskets as handles. For the holidays, vintage reindeer and moose fit into the landscape. Naturally shed deer antlers can be found in the woods and fields, too. Antlers can introduce an organic, rustic element in a living room or den, either above a fireplace or a collection of antlers (mounted and otherwise) can be attractively clustered as a focal point on a wall.

Antlers are a popular, rustic and masculine motif in lamp bases and photography, for example.

Inspired textiles The animal home-decor trend still has its foundation in all of the incredible textiles in the marketplace. Partially inspired by the endless parade of leopard- and zebra-printed frocks that parade down fashion runways every year, animal prints are bigger than ever. Colorado comes home to Iowa for family’s personal retreat Imagine if you could move mountains. Or better yet, imagine if you didn’t have to move mountains because you were fortunate enough to re-create your idea of the perfect Aspen lodge right here in Iowa. The effort took seven years – planning, building and obsessing over each and every detail, but finally these homeowners have achieved their dream home, a customdesigned Aspen retreat nestled in a bucolic Midwestern setting. “They loved their Colorado vacations, and they wanted to have that same feeling at home,” said Kennon Springer of Interior Perfection in Hiawatha. He designed the home for his long-time clients, which was then engineered by an architectural firm in Minnesota. Wayne’s Homes built the home, and Springer designed custom interiors and furnishings. “They wanted warmth and comfort. It’s a large home with about 6,500 square feet, but they wanted it to feel intimate and cozy and take full advantage of the views. You walk in, and you feel like you’ve walked into an Aspen lodge. Just close the front door, and you’re transported.” In the main living area, a bank of large windows affords views of Iowa’s ever-changing seasons. The massive beamed ceiling looks as if it has been there for centuries, as does the hand-scraped, distressed 100-year-old alder wood recycled as flooring. A mixture of real Colorado stone was brought in for the towering fireplace with its 10- by 12-foot cedar slab mantel. Stone also

the generous dining table can seat 16, and is fully decked out in a wintry, organic theme. A gnarled dough bowl is filled with pine cones and rustic ball ornaments, flanked by small bark and rusty jingle bell trees. The motif carries through right down to the twigshaped tableware, echoing the large light fixture above the table, a sort of “twiggy chandelier” that introduces a whimsical note. Knotty alder was the wood of choice for kitchen cabinetry, paired with an unusual but highly durable Brazilian stone that resembles petrified wood. A trio of vintage-evoking, industrial-style pendants hang above the island, given a veneer of sophistication by a coffered ceiling.

climbs the walls in the foyer, complementing slate-look porcelain entry tiles, and along stairs leading to the lower level. Artfully arranged tree branches and twigs create the stair railing with cedar plank stair treads. A large, vintage-looking cast-iron Santa welcomes guests from the landing for the holiday season. Setting the right mood with furnishings and playing with texture was paramount. Springer chose buttery quilted leather for aesthetic and luxurious appeal for the pillow-laden sofa. A cross-cut cypress slab elevated on sturdy metal legs makes a dramatic coffee table. He also designed an imposing knotty alder cabinet in a dark finish that dominates one wall, housing a 70-inch TV screen. “I couldn’t find a piece that would pull off the scale of the room. I didn’t want something ordinary. It had to be beautiful on its own and artistically pleasing,” Springer explained. And who wouldn’t enjoy settling back with a good book (or Kindle) in one of the handsome wing-backed chairs arranged on either side of the fireplace? Visions of sugarplums

Remodeled condo offers luxurious – and comfortable – glamorous appeal

E

ffortlessly elegant, there’s a gleam in every room of this newly remodeled condo. True, it’s adorned for the holidays, and everything carries that special luster during this season of light. But there’s a welcoming glow that keeps visions of sugar plums dancing in these homeowners’ heads long after the last ornament has been tucked away. An asymmetrical fireplace is the open living area’s focal point. Originally rather unremarkable, interior designer Kathy Flack beefed up the entire wall with architectural details and moldings, adding emphasis to a TV center and bookcase, as well as bringing in a substantial mantel. “It gives scale and presence to the fireplace, and the asymmetrical look is visually stimulating,” said Flack, of Flack Interior Design Associates, Inc., a division of Simpson Furniture. One of the homeowners’ favorite paintings, a pig-tailed girl playing hopscotch, hangs above the mantel which is filled with an array of candle sticks and bejeweled evergreen garland. Enveloping the fireplace is a sink-into cozy sectional with spring down cushions. Upholstered in taupe chenille with metallic silver backing, the fabric sparkles on close review. “The sectional doesn’t cut off the room, and the cushions are a luxury to sit on. The fabric is family-friendly, too, and easy to maintain,” Flack explained. Satin-finished parchment walls are complemented by cabinetry, moldings, woodwork and some wood furnishings in a rich champagne metallic finish. The color scheme is a subtly glamorous, complexionflattering background used throughout the home, creating an inviting and comfortable appeal. Silk draperies in antique bronze frame wide windows, held back on one side with crystal tie backs. “The left side is not tied back so it fits the space’s proportions and gives a sense of lush

fullness, and again, continues the subtle asymmetrical look of the room,” Flack said. A glittering chandelier further defines the dining area. In the best of times, downsizing can be both distressing and tricky. These homeowners left behind a 5,000-squarefoot home for the condo, which is just over 2,000 square feet, in what can only be described as the blink of an eye. Their home sold almost immediately, and they had just six weeks to find, remodel and move into new digs. “It could have been overwhelming, and they felt that the new space was small and it wouldn’t be possible to bring all the things they wanted. We did an inventory of all of their belongings, measured all their furnishings and their new space, and developed a floor plan in advance,” Flack explained. The homeowners were able to relocate all of their special pieces, including a large buffet and side pieces. Various other pieces were repurposed into other rooms, such as the glass-topped desk from the former home’s loft now being used in the breakfast nook, and metallic leather tufted ottoman in front of the fireplace. “We were able to save heirloom pieces. The homeowner didn’t have to suffer the regrets of leaving behind things she loved.” Although the square footage has changed, the homeowners don’t feel cramped. “I thought I was going to dread it, but it makes me happy. It’s so exciting when someone can bring your memories from an older house

and put them in your new house, and they look as good and even better,” said the homeowner. New carpeting was laid and every surface painted and refinished. Both bathrooms were gutted and redone and a dome ceiling and chandelier installed in the master bedroom. Existing tile stayed put in the kitchen, along with base cabinets. New doors with added molding and Flack chose new knobs and handles in antique silver finish for polish. Custom cabinetry by Glenn Petersen of Kitchens Plus was stacked above existing cabinets to the ceiling to create a wall of storage. Everything was given a parchment finish with a light glaze. “It makes the kitchen look twice as big because the finish blends with the walls and flooring,” Flack said. The homeowners find the overall color scheme soothing. “There was a lot of woodwork and it was all oak, so the space felt small. Now it doesn’t. I like neutrals because I like to change with all the seasons, and the metallic is soothing and simplifies things, but it’s also dressy. aster carpenter Steve Johannes has built his award-winning career on creating architecturally splendid homes filled with character. Barrelvaulted ceilings constructed from cherry and other fine woods, custom cabinetry and exquisite finish details are his stock in trade. When it came time to leave their multilevel home for an acreage, Pam Johannes trusted her husband to build their dream home to reflect a love for wide-open views and easy entertaining, not to mention the occasional afternoon nap. They found the perfect spot in a new development out in the country, but still on hard surface roads and city utilities. Johannes oriented the single-level home to face the view of nature and a pond. “Steve really likes Frank Lloyd Wright and Prairie-style architecture, and I trusted him to make all the decisions. We wanted an open concept and a gourmet kitchen because Steve loves to cook,” said Pam, a retired teacher. “Everything was carefully planned and thought out. There was lots of graph work, drawing, furniture cut-outs, and it was all transferred to auto-CAD – computer-assisted design.” Johannes has a passion for perfection, but the couple also wanted their home to be comfortable and livable with a sense of permanence and warmth. Windows are unadorned by fussy window treatments, allowing interiors to connect with the exterior and let natural light flood into the home. Transoms enhance air flow throughout the home, and glass-front top cabinets mimic the transom style. In the main living area, Johannes played with horizontal lines reminiscent of Wright’s signature designs. Anamosa limestone adds an organic heft to the fireplace, blending easily with built-in maple cabinetry and cabinetry. Ceilings are high but of varying heights for human-scale coziness. Walls throughout are painted mushroom, a color subtly repeated on the crown molding embracing each room. Neutral commercial-grade carpeting holds up like iron to daily wear and tear. Johannes, a gourmet cook, organized an impeccable kitchen for practicality and function. Food prep and storage, cooking with ease and an island for gathering were top of mind. Maple cabinetry blends nicely with bamboo floors, with dark blue and white tiles adding accent. Avonite, not granite, tops the island.

Interior designer Rhonda Staley, IIDA, from Iowa City’s The Mansion, has worked with Johannes on numerous projects, so it was only natural to enlist her expertise in furnishings. “The furniture had to be linear to enhance the custom pieces that Steve built and all his architectural details. Fabric had to withstand the sunlight without fading because there is so much natural light in the home,” Staley explained. “They aren’t into clutter or fuss either, so every piece of furniture and every accessory has to serve a purpose. There isn’t a thing in this house that wasn’t given lots of thought – even the doggie door,” she said. In the living room, the sectional sofa from TCS Design features inner springs to support the cushions and is upholstered in Pindler and Pindler fabric. It’s cushy and comfortable enough for an afternoon nap. Johannes designed the cocktail ottoman which Staley dressed in a fabric from Kravet. Throughout, the neutral color scheme has pops of red. Johannes also designed and built the ebonized maple dining table and granite-topped buffet. Pomegranates are one of the season’s brightest jewels

Y

ou can eat the fresh arils, juice them and cook with them, like any other fruit. They are high in antioxidants, potassium, Vitamin C and fiber. But they’re also versatile as traditional decorations or centerpieces, making them a feast for the eyes during the holidays. Here we’ve gathered some wonderful recipes using pomegranates, including favorites of Chef Haley Silhacek, chef at Waterloo’s Hy-Vee Food Store on Ansborough Avenue. Three steps to revealing those red gems: 1. Cut off the crown. Cut the pomegranate into sections. 2. Place sections in a bowl of water, then roll out the arils (seeds or juice sacs) with your fingers. Discard membrane and skin. 3. Strain out water and let arils drain.

Pork Tenderloin with Pomegranate Reduction Serves 3 or 4 2 tablespoons butter 1 ½ pound pork tenderloin, trimmed ½ teaspoon black pepper ½ teaspoon kosher salt ½ teaspoon dried thyme ½ teaspoon dried oregano 1 cup pomegranate juice 1/3 cup honey 1 tablespoons garlic minced Juice of one orange 1 teaspoon cornstarch 1 teaspoon cold water Preheat oven to 350 F. In a bowl combine pepper, salt, thyme and oregano and rub evenly over the trimmed pork tenderloin. In a large saute pan, melt butter and sear the pork on medium to high heat rotating as each side turns a nice golden brown with tongs. After all sides of the pork are golden brown, transfer to a pan sprayed cookie sheet and roast for 20 to 25 minutes or until reaches an internal temperature of 145 F. While pork is roasting, in a saucepan combine pomegranate juice, honey, garlic and juice of one orange and simmer until reduces by half. To make the reduction thicker, combine 1 teaspoon cornstarch with 1 teaspoon of cold water and stir. Add to the reduction when boiling to make a thicker reduction. Remove pork from oven and let rest for 20 minutes before slicing. Serve with pomegranate reduction.

| entertaining | Pumpkin Risotto Makes 4 main dish or 8 side-dish servings ¾ cup pomegranate juice ½ cup pomegranate arils 1 4- by 4-inch double-thick piece of cheesecloth and kitchen string 5 cups chicken broth ¼ cup olive oil 1 cup finely chopped onion 1 cup finely chopped carrots ¼ cup finely chopped fresh basil, or 2 teaspoons crushed dried basil 2 teaspoons fresh chopped thyme leaves, or ½ teaspoon crushed dried thyme 1 15-ounce can 100% pumpkin 1½ cups Italian Arborio rice 1 cup freshly grated Parmesan cheese 3 tablespoons pomegranate arils Freshly grated Parmesan cheese In a medium saucepan, combine the pomegranate juice, cheesecloth bag and chicken broth. Bring to a boil, and simmer for 5 minutes, covered. Remove cheesecloth bag and discard. Turn heat to low to keep the mixture hot. Place oil in a large saucepan, and heat until hot. Saute onion, carrots and herbs for 5 minutes. Stir in pumpkin and rice. Add 1 cup of broth mixture; cook until liquid cooks away stirring constantly (about 5 minutes). Stir in remaining broth mixture and cook for 25–30 minutes, stirring very frequently, until rice is thick, creamy and tender. Stir in Parmesan cheese until melted. Garnish risotto with reserved arils and additional cheese.

French Toast with Pomegranate and Maple Fruit Salad Serves 4 1 cup fresh pomegranate seeds 2 cups fresh blueberries 2 fresh mangos, diced 1 cup fresh strawberries, diced ½ cup sliced, toasted almonds Juice of one lime ½ cup maple syrup 8 slices Texas style bread 4 eggs ¼ cup heavy cream ½ teaspoon ground cinnamon ¼ cup brown sugar 1 cup whipped cream Combine fresh pomegranate seeds, blueberries, mangos, strawberries, almonds, the juice of one lime and the maple syrup in a large bowl and let set for 30 minutes. To make the French toast: Preheat a nonstick pan on low to medium heat. In a large bowl combine eggs, heavy cream, cinnamon and brown sugar and whisk until completely combined. Place each slice of bread in the batter on both sides and cook on the nonstick pan. Flip when golden brown about two to three minutes on each side. After all eight slices are cooked serve with pomegranate fruit salad and whipped cream.

Makes 6 servings 3 tablespoons butter 2 cups sliced onions 1 (10-ounce) can refrigerated pizza crust 6 (3/4-ounce) slices deli swiss cheese, quartered 1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry 4 slices crisply cooked bacon, crumbled 2 tablespoons chopped red bell pepper 3 eggs, beaten ¾ cup half & half ¼ teaspoon pepper Heat oven to 350 F. Spray 9-inch pie pan with no-stick cooking spray; set aside. Melt butter in 12-inch nonstick skillet until sizzling; add onions. Cook over medium heat, stirring occasionally, 15-20 minutes or until onions are deep golden brown. Meanwhile, pat or roll pizza crust into 11-inch circle on lightly floured surface. Combine eggs, half & half and pepper in small bowl; mix well. Pour egg mixture over spinach. Top with remaining cheese pieces. Bake 35-45 minutes or until eggs are set 2 inches from edges. Sweet Potato and Turkey Frittata

Makes 6 servings 6 large eggs 1/4 cup skim milk 1 cup sweet potatoes, mashed or cubed, already cooked 1 cup turkey breast, shredded 1/2 cup mozzarella cheese, part skim 1 teaspoon salt 1 teaspoon pepper Nonstick cooking spray In a medium bowl, blend the eggs, salt, pepper, and skim milk and beat until eggs are fluffy. Stir in cheese and set aside. Spray a large, oven-proof skillet with nonstick cooking spray and heat over medium-high heat. Add potatoes and turkey in the skillet, stirring until just warm. Pour eggs over potato and turkey mixture, stirring until eggs just begin to set on the bottom, but are slightly uncooked on top. Turn on oven broiler, and place pan in oven. Cook for 3-4 minutes or until eggs are completely set and top of frittata is lightly golden brown. Cool for 5 minutes before serving.

Pecan Pie Bread Pudding

1 6-ounce mini loaf French bread, cubed (8 cups loosely packed) No-stick cooking spray 6 large eggs 1 (14 ounce) can sweetened condensed millk ¾ cup dark corn syrup ½ cup firmly packed brown sugar ½ cup butter, melted 1 tablespoon vanilla extract 1½ cup coarsely chopped pecans, divided Vanilla ice cream Hungry Jack Original Syrup Smucker’s Sundae Syrup Caramel Flavored Syrup Whipped topping Heat oven to 350 F. Spread bread cubes in single layer on 15 x 10-inch baking pan. Bake, stirring occasionally, 10 minutes or until cubes are toasted. Coat 13 x 9-inch baking dish with no-stick cooking spray. Beat eggs in large bowl with electric mixer on medium speed until fluffy. Blend in sweetened condensed milk, dark corn syrup, brown sugar, butter and vanilla. Stir in toasted bread cubes and 1 cup pecans until evenly moistened. Pour into prepared baking dish. Sprinkle with remaining pecans. Allow to stand 30 minutes. Bake 40 to 45 minutes or until golden brown around the edges. Cool 5 minutes. Serve warm or cooled with ice cream, syrup, caramel syrup or whipped topping, as desired. This recipe may be served as a dessert or a breakfast entree. To serve for dessert, top with ice cream, caramel syrup or whipped cream. For breakfast, serve warm drizzled with pancake syrup. Tap into the trend by hosting your own tasting party

merican whiskey is no longer the fuddy-duddy drink favored by dads in cardigan sweaters. Maybe it’s the “Mad Men” effect or renewed enthusiasm for the cocktail culture, but suddenly it’s hip to drink whiskey and bourbon. In fact, it’s booming. According to the Distilled Spirits Council of the United States, whiskey sales in 2012 increased faster than all other spirits, and revenues for Kentucky and Tennessee whiskey and bourbon have soared. Last year, 46 new bourbons and three flavored whiskeys were introduced, the Distilled Spirits Council reports. Did you know you can sample – and savor – whiskey in the same manner as wine? It’s a white-hot trend among aficionados who favor sipping over swilling, and view sampling as a cerebral and sensory experience. “It’s growing like mad,” says Dwight Dehl of HyVee Wine & Spirits at Kimball Avenue, Waterloo. “Bourbon, especially. They’ve added flavors like honey, maple, cherry, hardcore cider, cinnamon. With the premium whiskeys, people really enjoy the honey flavor and the maple, sipping it neat or on the rocks.” Dehl is both a whiskey expert and aficionado.

What you need to know Whiskey can be confusing. That’s because the word is used interchangeably with Bourbon, Irish, Scotch, Canadians and rye, although they aren’t really interchangeable at all. Let’s take Bourbon. It’s a whiskey, but not all whiskeys are Bourbons. To be labeled Bourbon, it must be made in the U.S.A., made with at least 51 percent corn mash, aged in new, charred oak barrels, distilled at no more than 160 proof or 80 percent alcohol, entered in the barrel at no more than 125 proof, bottled at no less than 80 proof and have nothing added to it but water. To be really authentic, it should be from Bourbon County, Kentucky. So think of whiskey as the patriarch of the family tree with Bourbon, rye, single-malt and blended Scotch, Irish and Canadians as its branches. Whiskey or whisky? You say tomato, we say “tomah-toe.” Whisky usually is used for Scotch and Scotch-inspired liquor. Whiskey refers to American and Irish liquors. For most of us, whiskey is an acquired taste. A tasting is a user-friendly and refined way to sample several types of whiskey without getting toasted. If you want to enliven your holiday entertaining, why not host a whiskey tasting? Dehl talks us through how to do it:

| entertaining | First, the whiskeys He recommends premium whiskeys for the most satisfying tasting experience. Include Irish, Scotch, bourbon and sourmash types. Names to look for: Woodford Reserve, Maker’s Mark, Knob Creek, Jameson, Bushmills. There’s so much variety in whiskey, it pays to do some background research on chosen brands – heritage, locale, how they’re made, etc., so you know what to expect in flavor. Consult an expert at your favorite wine and spirits shop for guidance. Choose a variety of whiskeys to deepen and broaden the tasting experience, especially for novices. Taste and flavor is what it’s all about, but complexity of flavor and a long finish is paramount.

Next, the glassware Select tulip-shaped glasses. Save the shot glasses and tumblers for another time. ”The tulip shape channels the vapor from the wide base up the narrow top and concentrates the aroma, so you get a bigger nose hit,” Dehl says “A big part of tasting is your sense of smell. Your nose is sensitive and will pick up hints of flavors and fragrances long after you’ve swallowed.” An ounce is considered the perfect size serving for a tasting. Water, water Whether you “cut” the whiskey with room-temperature spring water is up to you. For some palates, it smooths out the flavor. But the more water you add, the more it distorts and weakens the flavor. Whiskey is already cut with water when it’s bottled unless it’s labeled “barrel-strength,” in which case it’s too expensive and rare to share at a mere tasting. If you add water, don’t match the cut 50-50. “I like 1 part water to 3 parts whiskey. That usually works for me unless it’s an excellent whiskey I can drink neat,” Dehl says. Neat means straight-up, out of the bottle. Why spring water? Because tap water can have minerals and chemicals that alter whiskey’s flavors and aromas.

Cleanse your palate No, don’t take a toothbrush to your tongue. And this isn’t the time to make a Doritos run. Oyster crackers or unsalted saltines are perfect palate-cleansers. So, why cleanse and refresh your palate? Dehl says, “Whiskey definitely is going to impart flavor on your tongue, and you’re going to get cross-over flavors.” THE TASTING 1| Set up the table. Give it a holiday theme and make it a little masculine, too, if you’re so inclined. It suits the subject matter to have a cigar humidor at hand, for example, but save the stogies for after the tasting is concluded or you’ll muck up the flavors. Arrange the whiskey bottles, then arrange the same number of glasses for each participant. 2| Pour 1 ounce of whiskey into each glass. Like wine, you need to examine the color. Hold it up to the light and look for clarity. It should sparkle. Murkiness is bad experts say. 3| Study the color that can range from light to deep amber. Color will tip you off to the intensity of the whiskey’s flavor. Light color means lighter flavor; darker colors are fuller flavored. Usually the longer a whiskey ages, the darker the color. 4| Now is the time to decide whether or not to add a drop or two of water – before you sniff the whiskey. Be sure the water is room temperature. Some experts say adding water allows you to “nose” more of the whiskey’s character. Obviously, it also reduces the impact of the alcohol. 5| Gently swirl the glass to release the aromas. Bring the glass to your nose and delicately sniff, keeping lips slightly apart. Try to discern notes in the whiskey – chocolate, spice, leather, fruit, etc. Don’t take a big snort over the glass because all you’ll smell is alcohol. (Amazing how much this is like nosing wine!) 6| Taste. Try to identify flavors you nosed in the glass. There is no “wrong” answer to the flavors you sense because everyone’s palate is different. 7| Cleanse your palate and move on to the next whiskey. Repeat the process until you’ve tastes all the offerings.

It’s an old-fashioned, familyoriented occasion complete with hot chocolate and all the toppings (flavored coffee for the adults!), snowflake-decorated sugar cookies, doughnuts and other treats. And don’t forget popcorn and everyone’s favorite – gooey toasted marshmallows on sticks. On our family farm, I transformed an old corn crib into party central. All you need to stage your own party is a place to have it – outdoors, in a garage, the family room – and a few winter-themed accessories and easy decorating tricks.

Set a wintry scene

Cozy up to hot cocoa

Make your own cozies for serving hot chocolate in Mason jars. Gather white batting and burlap ribbon around the jar and tie with tartan ribbon. For fun, we added initialed wood circles to each jar. They’re easy to make – and can be used to make signage, too. You’ll need: 2-inch round log, 4-inch round log, chalkboard paint, Whisper White ink, black acrylic hobby paint, sealer, stencils, monogram and letter rubber stamps, jute twine, ½ to ¾-inch wide ribbon, ornament hangers or wire, drill, saw. Cut ¼-inch thick circles from the logs. Drill a small hole near the top of each circle. Paint each 2- and 4-inch circle with chalkboard paint, let dry, and stamp or write letters or numbers to create monograms or messages such as Joy, Peace, etc. To create a banner, thread an ornament hanger through each hole in 2-inch circles; loop to create a circle, then string circles onto twine. Tie a ribbon before and after each letter for added detail. Use 4-inch circles to create vertical sayings using black paint and 2 ½-inch letter stencils. Drill holes near the top and bottom and thread each letter onto twine. Spray with sealer before using outdoors.

Transform your indoor landscape from “blah” to “wow” by planting seductive, sensual amaryllis. You’ll fall in love with the look of mass-planted amaryllis – three, five or seven big bulbs rubbing shoulders and sending up buds in succession. It takes six to eight weeks for bulbs to begin bloom. Some varieties can take as much as eight to 10 weeks. Hippeastrum or Dutch amaryllis, is the flower most familiar to us for indoor winter blooms, a relative to the true amaryllis, a South African native, Amaryllis belladonna. There are large-flowered, small-flowered (miniatures), double-flowered, trumpets and cybister categories. Trumpet amaryllis resemble lilies and are lightly fragrant, while small-flowered ones have flowers that are only 3 to 5 inches in diameter on 12- to 15-inch stems. Amaryllis papilio or butterfly amaryllis are unusual and harder to grow, taking up to four months to bloom. Look for these striking varieties: › “Nymph” series, with large, lustrous, almost peony-like blooms on plump stems in colors from pristine white to massive double “Cherry.” › "Galaxy" series beauty "Black Pearl," with its dark red-black blooms that look like velvet, and its sibling "Galaxy Flamenco Queen," a deep red shot through with white. › "Tres Chic" stars of dark red, green and crimson, held aloft on a purplish stem. It can have six to seven blooms on each stem. › For gardeners who want quick results, the "Pizzaz" amaryllis --- bright red with a white center --- blooms in four to six weeks. Another quickie is "Gold Medal," a single that produces large, salmon-gold blooms. › If you love red amaryllis, give these varieties the once-over: "Merry Christmas," "Miracle," "Galaxy Red 58

Peacock," "Red Charm," "Royal Velvet," "Deep Red Rock 'n' Roll," "Double Six" and "Rapido." › White varieties include "White Peacock," a full, double version of the "Red Peacock"; "Ice Queen," pure white blooms with thick petals, yellow-green throat and fully double; "Antarctica," glowing white as snow with a barely green throat; and "Moonlight," soft ivory blooms tinged with green with blooms that reach 4 1/2 inches wide. › And don't overlook picotee types -- really hot stuff. Planting 1| Bulbs like to be crowded and a little rootbound and are normally planted in a small pots just a bit larger than the bulb itself. Stagger plantings to bloom succession.

2| Plant three or five bulbs (odd numbers for best effect) cheek-to-jowl in larger pots. 3| Fill the pots with potting soil mixed with a little sand, if desired - and pop in the bulb, making sure the bulb's shoulders and neck are left exposed. Water well. Check the pot and keep the soil barely moist until growth begins. 4| When the shoot appears, water more regularly to keep soil moist, not wet, and feed lightly. | cuttings | Water-forcing amaryllis Choose containers that are wide enough to accommodate an amaryllis bulb (or two or more for really large glass vases). Make sure containers are clean. Fill the bottom of the container with about 4 inches of polished river rock or decorative vase fillers, such as glass gems or marbles. Snip away brown or dead roots off the bottom of the amaryllis bulb. Leave only the healthy, fleshy white ones. Place the amaryllis bulb on top of the rocks/filler with the roots down and fill in around the bulb with more decorative rocks or filler. This will secure the bulb and keep it upright. About 1/3 of the bulb's shoulders should be exposed. Add water up to, but not touching, the base of the bulb. Roots will grow down to meet the water. If the bulb is allowed to actually rest in water, it will rot. Check water level daily.

Old World look Cabin fever prescription Architect Dale Mulfinger’s new book, “Back to the Cabin” is a good cure for cabin fever. Mulfinger, who has designed cabins across North America, takes readers on a tour of 37 getaways, both old and new. Among them is the cabin in northern Minnesota that he and his wife share with another couple. These are not grand vacation homes, but rather simple getaways that fit Mulfinger’s rule that a cabin be modest, include shared social spaces and have an open, relaxed atmosphere. For many years, the only option for achieving the coveted look of hand-scraped wood flooring, as seen in the Aspen retreat featured in this issue, was to find skilled contractors who literally scrape the flooring by hand – it takes true talent to realistically recreate a worn appearance. Kwikset's new Kevo deadbolt lock can be unlocked with a smartphone and a simple touch. The Bluetooth-enabled door lock communicates with the smartphone via an app that essentially turns the phone into an electronic key. When the phone comes within range of the lock, the lock recognizes it and can be unlocked with a touch. You don't even have to take the phone out of your pocket or purse. You can send "eKeys" to others with compatible phones to give them access to your home, and you can disable or delete those eKeys.

The American Lung Association recommends homeowners test their homes for radon, a radioactive gas that leaks into homes. Radon is a class-A human carcinogen recognized as the leading cause of lung cancer in the United States among nonsmokers. Radon is a naturally occurring, radioactive gas released ruing the decay of thorium and uranium, which are common elements found in varying amounts of rock soil and water. It is colorless, odorless and tasteless. When radioactive elements such as radon decay, radiation is released. Radon can enter a home from the soil through cracks in the floor and walls, floor drains, sump pumps and construction joints and can buildup in the house, says Lonnie Mallon, president of Mallon Construction & Radon Mitigation. Radon is usually, but not always, concentrated in basements and ground floor rooms that have contact with the soil. This gas is transferred through the house by your heating and cooling system. The primary exposure to radon is through inhalation. Mallon’s company has mitigated radon in 1,000 homes and businesses in the Cedar Valley since 1992.
