Using this Convection Tray with your Weber速 QTM Extensive recipe testing has shown that using slightly higher heat settings for roasting and baking increases the flavour and quality of the food being cooked on a trivet over the tray. Remember, always preheat your Q for 10 minutes with the burner on high and the lid down before you commence cooking. We have found that the ideal setting for roasting and baking on a Q when using a Convection Tray is two marks down from the high position (see picture below). Successfully crackling pork needs more heat. Before attempting to crackle pork you will need to remove any excess buildup of food remnants and grease from inside the bowl of your Q. Use a plastic spatula to do this before preheating the barbecue. This will eliminate the chance of the grease under the pork from igniting. For crackling pork, preheat your Q for 15 minutes on high and then add the pork. Keep cooking on high for another 25 minutes (under no circumstances keep cooking on high for more than 25 minutes) before turning the setting back to the roasting / baking setting pictured left.
