Salt and Pepper Squid Preparation Time: 10 minutes, plus marinating time Cooking Time: Barbecue setting, 30-60 seconds You’ll need: breakfast plate 500g calamari hoods, halved MARINADE 1 cup white wine 1 /2 cup olive oil 1 small onion, roughly sliced 4 cloves garlic, pressed 3 bay leaves 1 /4 teaspoon salt 1 tablespoon cracked pepper 4 tablespoons fish sauce
Prepare the squid by cutting diagonally on the flesh side, creating diamond shapes. Be careful not to cut all of the way through. In a bowl, combine the white wine, olive oil, onion, garlic, bay leaves and salt. Place squid halves in the marinade and allow to stand for at least 1/2 hour. Remove the squid from the marinade and sprinkle with salt and pepper. Cook the squid on the pre-heated breakfast plate for 30-60 seconds, turning once. Serve with salad.
