DRamatic MAKEUP

For a smokey Persian and Indian inspired look that is seductive and sexy, stick to espresso and charcoal grey shadows. For eyes that are seductive but still appear wide, focus the darkest shade on the outer corner of the lid. For brightness, sweep a light shimmery shade on the inside corner and brow bone. Sweep the upper eye with dark liner and extend at the end to create an almond shape. Run the liner under the eye and in the waterline for more intensity. Apply thick lashes and coat with mascara. Stay nude on the lips and keep the cheeks light pink.

HAIR

Create drama by pulling the hair away from the face and build lots of volume. For this look, structure is key. Use lacing underneath the bun to lock the hair in place or try a sock bun for a tighter finish. For a soft look, pull on the hair after it’s finished to release the tension.

Romantic MAKEUP

Create a dreamy, doe-eyed look with mauves and pinks. First, sweep a light shadow on the lid and finish with a darker shade on the outer corner to create depth. Use liner to draw a thin line on the upper lid only and trace the lower lid with the dark shadow. Intensify natural skin with a matte, tinted moisturizer, and use pink blush for a feminine finish. On the lips, stick with soft pinks. Using a liner to fill in the entire lip before apply a gloss will make your lip look last.

HAIR

Floral crowns are romantic and whimsical. You can make one using items from your local craft store. Real flowers are ideal, but silks have more longevity. Keep curls soft and playful. Instead of using the clamp on the iron as usual, wrap your hair around the closed barrel in a twisted motion. Set and release. But don’t drop the curl! Hold it in your hand until it’s cool for a lasting look.

NatuRal MAKEUP

If you want to look like a refined version of yourself on your big day, sweep a light beige or taupe across the lid. Use a gel or powder liner with a stiff angle brush to create a thin line very close to the lashes and extend at the end. Apply two coats of mascara. Keep face dewy and natural with a tinted moisturizer. Finish with nude blush and glossy lips.

HAIR

Braids are natural and timeless. Try a crown braid for a regal look. If you want to keep it refined but natural, part the hair from front to back, zigzagging with the end of a comb. Braid each side and wrap around, overlapping on the top of the head. Secure with pins, pins, and more pins! Spray a long lasting finishing spray for control and shine.

Classic MAKEUP

Red lips are always in style. Try a long wearing oxblood, or wine red for a trendy take on the look. Use a long lasting primer before filling the lip with a pencil and covering with a lipstick. Keep the eyes simple with a sweep of neutral shadow and extend black gel liner past the eye for a little drama. Contour the cheeks with bronzer but stay away from pink and peach blush— you don’t want your cheaks to compete with your lips!

HAIR

A faux bob is a modern take on a timeless Gatsby look. Curl and set the hair (similar to romantic), and create a deep side part. Place a wide tooth comb at the bottom of the hair and brush backwards, pushing up. Pin, but let pieces come loose to enhance the bob effect. Pin one side back with a brass clip for an added 1920s touch. Find custom art deco inspired designs on Etsy.com.

Fairy Tale Say “I do” to One King West. Treat your guests to one of the most gorgeous, historically significant venues in Toronto— a space that blends traditional opulence with modern flare. Situated at King St. and Yonge St., One King West offers a glimpse into the city’s banking past. It’s beautifully restored to the historical grandeur of The Dominion Bank, as it stood in 1914. Stepping into the Grand Banking Hall is like stepping back in time. The unique, ornate ceiling immediately draws the eyes upward, and adding to the magnificent architecture of the room are stately Corinthian columns and towering floor to ceiling cathedral windows. One of the most breathtaking features is the bank’s original marble deposit tables which still flanks the entrance to the room, while the 100ft long bar – the longest in Canada – has been artfully modeled after the original tellers’ counter. One King West offers a variety of unique, historical spaces to accommodate rehearsal dinners, ceremonies and receptions. Celebrate in the Chairman’s Boardroom, which was once the private domain of the bank’s board of directors, or in the Austin Gallery, which housed the executive offices of the bank. The staircases and original bank vault are intimate spaces and ideal settings for memorable photos. A DRESS TO IMPRESS Whether you’re curvy, petite, tall or busty, owner of Ritche Bridal, Vivian Prussky, offers tips on how to navigate through the racks to select the right dress shape for your body. Here are the five most popular shapes to look out for, and their many attributes. by JENNIFER ROMANO I photographs by KELSEY LARKIN

BALL GOWN

2014 EDDY K Princess ball gowns are always in style, but this year they’re high in demand. Lace, sparkle and tulle can add elegance and opulence to a bodice top and full skirt. Several layers of tulle can add even more drama. “This gown is for the girl who wants to look like a princess. Sheer corset bodices are popular for our more daring bride.” Cap sleeves can be added to a sweetheart bodice, but if you are heavy set, you might choose to go with a sweetheart that fits your bust instead of hiding your arms. Cap sleeves can often draw attention. All body types can easily wear a ball gown. “Whether you’re petite, tall or curvy, a ball gown can work on your body. The boning in the bodice helps give you a shape.” GoodLifeMagazine.ca | 49 15

SLEEK SHEATH

2014 ALLURE BRIDAL “The sheath dress is body hugging and can be very sexy.” The shape allows for a low v-back, which is both seductive and glamorous. Brides looking for an old Hollywood inspired look should consider a two piece sheath with a charmeuse slip and lace overlay. A gold charmeuse gives this dress a vintage, 1920s inspired look, which is on trend for 2014. The v-neck sheath is a great option for brides who have a fuller bust and are tall.

16 | Wedding Trends 2014

NATURAL WAIST

2014 MAGGY SOTTERO Natural waist dresses are light and airy, thanks to a flowing skirt. “Natural waist is perfect for brides who are having a destination wedding, but don’t want to go with a typical chiffon dress.” Natural waists work great on petite frames because the shape helps with body proportion. Petite girls should avoid wearing something too long wasted (like a mermaid) because you can end up creating a very long and awkward torso. This dress also works on a full figure because of the soft gathered skirt and the highlighted waist.

*All dresses available at Ritche Bridal I www.ritche.com

MERMAID

2014 ALLURE COUTURE Mermaid dresses are fitted below the waist before dramatically extending to the floor. Because of its fitted nature and long torso, it might not work on every bride— it all depends on where your waist lies. “Petite brides might find this shape difficult to wear because they can appear disproportionate... adding a belt can help create a waist.” Taller brides from 5’4” to 6’ look great in this shape because of their longer upper body. Fuller figured brides gravitate towards this look because it shows off curves.

SCAN FOR MORE TIPS

A-LINE

2013 PALOMA BLANCA “A soft a-line is a true “fits all sizes” dress.” The shape works great on girls who are bigger in the hip area because it hides the mid section with the soft gradual extension of the skirt from the waist. The sweetheart neck line that doesn’t cut too deep can be warm by small and large busts. A belt can easily be added for brides that are looking for more of a waist and the soft flowing skirts not only adds romance, but it adds proportion for brides with bigger hips and broader shoulders.

Brooke & Shandy Brooke and Shandy’s proposal didn’t exactly go as planned. “We were in New York City,” recalls Brooke. “Shandy had so many opportunities to do it when we walked around Central Park, or when we had a really nice dinner. But, then we had a few drinks and that’s when he decided to pop the question. He said the ring was burning a hole in his pocket and he had to get rid of it before he got pick pocketed.” Just like their proposal, Brooke and Shandy’s wedding was full of unpredictable laughs, and lots of love, and it took place against a beautiful city backdrop.

Photography: Kevin Arsenault 416-428-3221 22 | Wedding Trends 2014

Steps away from downtown Toronto, the ceremony and reception was at St. Lawrence Hall. Filled with historical charm, gas lanterns and fireplaces, it was the perfect venue for a fall wedding. Brooke incorporated her love for film by including a red carpet for guests as they arrived at the venue. They posed with life size cut outs of E!’s Ryan Seacrest and Juliana Rancic while the “paparazzi” snapped their photos under the spotlights. “There were many laughs. It was a lot of fun,” says Brooke. “Shandy is a graphic designer so he made all the signage including a red carpet backdrop that had our logo on it.”

Venue: St. Lawrence Hall www.stlawrencemarket.com

“Do-it-yourself, Hollywood glamour” Hollywood glamour was carried into the reception area where shades of deep purples filled the floral centerpieces. Moroccan style lanterns created warm lighting that illuminated the room with romance. The best part of the night for the couple was when they let loose on the dance floor. “We both love to dance so we looked forward to it, and we got to watch everyone celebrate.” Brooke’s advice for brides-to-be, “Go on a honeymoon right away. You are so busy leading up to it... spend the next few days doing something relaxing together.”

Brooke’s dress came from The Bride’s Project, a second hand dress store where all the proceeds go towards cancer research. After her wedding, she donated the dress back to store and include a photo and a description of her big day.

Shandy and Brooke’s vows included a passage from one of her favourite Robert Munsch storybooks, with slight changes made to fit the occasion. “I’ll love you forever, I’ll love you for always, as long as I’m living my lovely you’ll be.”

Shandy helped custom design Brooke’s ring with local designer Aimee Kennedy, through Made You Look on Queen St. It included two borrowed emeralds— one each from both his and her mothers’ engagement rings.

Brooke designed and assembled the centrepieces. Deep purple, bright pink and green flowers were arranged in tea pots that lined the rectangular tables.

Hayley & Eamon It’s about as Canadian as a first meeting gets and it all has to do with hockey. “My best friend played on the same hockey team as Eamon, and he introduced us in high school - so it was a long time ago,” says Hayley. “We started dating right away, and on and off for about 10 years - and now we’re married!” Eamon proposed on to Hayley on Christmas Eve with a ring he had purchased with his mother and sister, and Hayley’s mother. “I had no idea, it was a really big surprise. I had asked for a jewellery box for Christmas, and he bought it and put it in there. It was just the two of

us at home with our dogs, it was really nice.” Hayley and Eamon’s wedding day was a familyfilled event from start to finish. The couple had a Unitarian ceremony that included friends and members of their families who supported their relationship over the years. “It was all about love, and really personal to who we are.” The couple’s reception was held at The Burroughes, a raw space with exposed brick walls. With tons of help from her mother, Joanne, Hayley incorporated whimsical decor items in pretty feminine colours to soften the space.

“Modern, whimsical, and full of love ” “It was really whimsical, but at the same time modern. It was a good balance of the two.” Hailing from a family of foodies, Eamon took over the reins when it came to the menu, which he designed himself with help from his friends at the Food Dudes. He also personally selected all the wines that were served at their reception. When it comes to advice to other brides, Hayley says getting help is key. “Take your time and really think about the decisions. We had so many people helping, it really came together. We were really lucky. Don’t get too stressed out - it’s just one day!”

Hayley’s dress was a custom creation from Lea Ann Belzer. The staff took the front of one dress, and the back of another, and put them together to create a wonderfully pink and unique mermaid gown that was complimented by Eamon’s pink tie and handkerchief.

Hayley and Eamon’s wedding was a master class in DIY. Nearly every accessory was created by friends or family. Hayley’s mother Joanne sourced tons of vintage handkerchiefs, made fabric streamers for the giant white balloons, and created the floral arrangements herself.

Food was a big part of Hayley and Eamon’s day. Oysters were served as an homage to Eamon’s family, who owns Rodney’s Oyster House downtown. Food stations were set up to cater to every taste, offering fish, short ribs, ravioli, and more! GoodLifeMagazine.ca | 27

Sandra & Sam To this day, Sandra doesn’t remember who she met first - her husband Sam, or his brother. She can be forgiven though - he’s one half of a set of identical twins! The couple does remember getting to know each other through their church youth group, but it didn’t take Sandra long to know he was the man she wanted to marry. “He’s the most generous person in the world. He’s just kind hearted and compassionate.” Sam proposed to Sandra in an elaborate set-up while on vacation in Cuba that involved most of their friends.

When it came time to plan their big day, Sandra took charge of the elaborate organization. “I’m a planner, so I always take the lead when it comes to these things. I’m really organized! Sam would voice his opinions and his input, but I like to be in control of these kids of things. The vendors told me I was the most organized bride they’ve ever met! Sam and Sandra’s ceremony was an hour-long, traditional Lebanese ceremony. When it came time to party, the day transitioned from traditional and serene to regal and lush. Their theme was a fairytale Cinderella wed-

“A fairytale Cinderella wedding” ding - intimate, romantic, and classic. Sandra, who grew up loving the Disney princesses, chose silver, grey and a touch of lavender to create a soft and elegant feel. Sandra’s powers of organization meant that no decor opportunity was overlooked. THe wedding featured numerous personal touches, props for photos, picture frames, hand made place settings and napkin holders, and candy bags. “We also made a heart from our thumbprints as sort of our logo, and we incorporated it throughout, and on our RSVPs and thank you cards!”

Sandra’s vision of a Cinderella wedding was realized in almost every detail. From the pumpkin carriage as a money box and the bejeweled decorating scheme, to the glittery pumps and first dance in a romantic fog, the whole day was a fairy tale come true.

Sandra went all out with her dramatic sweetheart neckline ball gown from Mandolina’s, which she fell in love with at first sight. “It's the dress I always had in my mind. The minute I put it on, I knew it was my dress.”

A Lebanese couple, Sam and Sandra wanted to incorporate a few traditional items into their wedding. They were carried into the reception in a Zaffeh dance, a traditional way of bringing in the bride and groom. Their ceremony also featured cultural touches.

Jennifer & Justin

In a small town like Bronte, the high school rumor mill churns briskly. Through the grapevine, Jennifer knew that attractive twin boys would be moving to her school, and she anticipated their arrival. “We are good friends, and we’re both funny – even though I’m funnier! We found we wanted the same things in life, and when we started dating, we continued as friends, I know it sounds cheesy, but it’s the truth.” After college, Jennifer and Justin moved in together, and began sharing their holidays. One Thanksgiving, they decided to opt out of the family feast and make a romantic meal together. Justin,

and avid cook, made everything from scratch. “At the end of the meal, Justin pushed a slice of pecan pie across the table at me and it had my ring sticking out of the top. He was really nervous. Now it’s our favourite dessert!” Both lovers of winter and snow, Jennifer and Justin were married in a January ceremony in front of 160 at St. Mary’s Church in Toronto. Jennifer wore a Paloma Blanca gown, a formfitting mermaid-style dress that suited her petite frame, while floral embellishments along the bottom were mirrored in her bridesmaids’ dresses. The winter theme carried over to their reception at Steamwhistle, a labour of love for Jennifer,

“Rustic winter romance with a modern twist” who planned her own wedding. “I wanted a blank canvas downtown that had history, and was a little bit raw. I wanted people to come out of the cold and walk into a dimly lit, rustic venue lit by hundreds of candles, which is where the romance came in. The modern elements came with clear ghost chairs and table settings.” Jennifer’s advice to brides-to-be is to relax, and enjoy your day. “Don’t stress about the small details, because no one notices if they’re not there. No one’s going to notice if there aren’t candles on the bar, or scented soap in the bathroom. They’re looking at a bigger picture.”

Jennifer’s modern twists came through with the clear ghost chairs and table settings. In order for the colours of the flowers to really pop, she selected black table cloths.

Instead of a cake, Jennifer and Justin opted for cupcakes strawberry/vanilla for the Mrs. and red velvet for the Mr. The reception also featured dessert stations, including a s’mores table where guests could roast their own.

While the church itself was opulent enough for a wedding, Jennifer and Justin elected to add a few small romantic details of their own, like the white lanterns that lined the aisle. GoodLifeMagazine.ca | 35

Julia & Joe

Mutual friends as adolescence, Julia and Joe, gave each other a second glance about a decade ago when running into each other at a night club. It wasn’t just the strobe lights that shone that night, there were sparks in the air. After 10 years of dating, Joe popped the question at their new home, over a game of Taboo. “He tried to act out ‘will you marry me’,” says Julia. “Even though it took me a while to get it, it was very romantic and I had family there which made it special.” Both coming from strong cultural backgrounds, Julia, who is Chinese Vietnamese, and Joe, who is Indian Chinese, wanted to incorporate tradi-

tions from both sides, while introducing modern elements. With their fun loving personalities, they planned an event that satisfied their heritages, and their desire to throw a great party that lasted from morning to night. On July 13, 2013, they started their day with a Chinese tradition that had Joe and his groomsmen overcoming obstacles (staged by Julia’s bridesmaids) in order to for him to see his bride. “It’s a traditional game to prove that my girls aren’t prepared to let me go easily and to prove his love for me,” says Julia. “Some of the groomsmen had to shave their legs and pass around seaweed using only their mouths. It was a lot of fun.”

“Traditionally unconventional with a modern flare ” Once Joe was allowed to join his bride, they held a traditional tea ceremony where they offered their elders tea as a sign of respect and honour. Julia wore a traditional Cheongsam dress, custom made with a modern twist. “It’s usually satin with gold on it but I had it made with red lace,” says Julia. “I kept the high neck but made it more western to match my taste.” For the reception, Julia wore a modern white gown with a long veil. The decor and entertainment at The Scarborough Convention Centre was a perfect blend of western, and Chinese Indian and Vietnamese elements— from the elephant tusks to the dancing dragons to the Gangnam Style dance off.

The traditional Chinese cake was a reflection of Julia’s gown. The embroidered button detail mimicked her Cheongsam dress. The Chinese symbol for ‘doublehappiness’ topped the third tier. Elephant tusks framed the head table as an ode to the groom’s Indian Chinese culture.

Chinese cards were handed out as favours along with a thank you card that was placed at each seat. Disposable cameras were also on the tables along with fun props for memorable photos.

World champion Latin dancers took the stage as a gift from a family member. Chinese dragons danced for the bride and groom who in turn gave them a red pocket of money by feeding it to them with a big stick.

The reception was decorated with traditional shades of red and gold, with unexpected pops of hot pink that were found in the tall, floral centerpieces. Modern touches were also found in the bride’s second dress and in the choreographed dance off that included the bridal party.

Jaime & Roman Who says the wingman never finds love? Newlyweds Jaime and Roman met when they were both acting as wingmen for their respective friends, who were dating each other. “Roman and I were the backup people for each of our friends, so we kept getting thrown together on outings. Eventually we decided to give it a shot ourselves!” Jaime and Roman share a love of fine wine and delicious food, and are known to visit Niagara’s wine region. So it’s no sur-

prise that Roman chose that location to ask for Jaime’s hand. Both Jaime and Roman were very involved in planning their wedding day. “We wanted to be both involved because it was a day for both of us. It was a day about having a good time, with good food, a good bar, and having everyone we loved there. For us, everything was really simple and romantic.” The couple never had an over-the-top theme in mind, instead they chose to in-

“Fine wine, fine cheese and fine food” corporate Jaime’s favourite colour, purple, with their favourite vintages, rare cheeses, and gourmet food. “Our money was spent mostly on food and bar because that meant the most to us. The caterers at the Columbus Centre were above and beyond amazing. For our card box we used a wooden wine case, we made place card holders out of corks for everyone. My sister in law did the menus for us. We did a lot of do it yourself – aside from the centrepieces, we made everything!”

Both big wine lovers, Jaime and Roman were engaged in the heart of Niagara’s wine country, and wanted their reception to highlight their love of fine wines and fine foods. Their dinner dishes included a pasta and a meat, risotto and a steak, and surf and turf.

Jaime says that, for her and Roman, it was all about the food. The couple isn’t big on sweets, so in place of a cake, the staff at the Columbus Centre created a fake cake – four cheese wheels stacked on top of each other!

While they didn’t have an overriding theme, Jaime chose the colour purple because it’s always been her favourite - and her sister was OK with purple as a bridesmaid dress! Handmade touches through the reception picked up on the vibrant shade. GoodLifeMagazine.ca | 43

Vandana & Pawel

For Vandana and Pawel, watching their friends get married was inspiration for their own love story. After meeting in University, they started their relationship at an engagement party and five years later, Pawel proposed. Once the ring was placed on the bride-to-be’s finger, Vandana and Pawel started planning two weddings— a Polish, Catholic ceremony which took place at St. Gabriel’s Church in Burlington, and a Hindu ceremony that kicked off their grand reception at The Berkeley Church in Toronto. “The Catholic ceremony was pretty traditional,” says Pawel. “We incorporated a lot of my Polish traditions and held a small reception at my par-

ent’s house after church. Even though there were only about 90 people, we had a pretty good dance party.” Vandana wore the first of her two wedding dresses which was a traditional white gown with a veil, finished off with pink shoes— a colour which carried over into the next day’s Hindu celebration. “Our Hindu ceremony was very traditional but incorporated both of our families,” says Vandana. Under a mandap on the Berkeley Church stage, Vandana and Pawel where dressed in traditional Munduk Hindu attire. He wore a deep red kameez, which is typical for a traditional Indian groom and she wore a custom Lehenga dress from India,

“A multicultural masterpiece” which was two pieces— a skirt and a top with a big scarf, made of silk and lined with intricate beading. Though the 230 guest reception was mostly traditional Munduk Hindu, the couple incorporated Polish customs. As two cultures came together to celebrate, their traditions melded into an unforgettable event. “One of our guests took Pawel’s shoe and we had to give them money to get it back. It’s a big tradition in the Polish community,” says Vandana. “We also played a video that was filmed with a Bollywood theme. It went through the proposal and showed us dancing and spinning. Everyone loved it.”

Pinned up on clothes lines next to the dessert table were photos of the couples from when they were growing up. Photographs were also displayed on candles placed on each table with a little saying: “Like a river flows so surely to the sea darling so it goes some things are meant to be.”

The reception was filled with traditional Munduk elements including flowing cream and deep red fabrics. Menus, signs, and the guests’ gift boxes containing chai tea were branded with an Indian inspired paisley motif.

When Vandana and Pawel arrived at his parents house for their Polish reception, they were greeted by his family who presented the couple with bread and salt— a ceremonial gesture to ensure they will always have plenty of food to eat.

The centerpieces were designed with a peacock motif that carried though the reception at Berkeley Church. Peacock feathers were displayed amongst bluish, purple hydrangeas and orchids. Pictures of peacocks were also featured on the tables.

menu makeover Social dining takes over tables in 2014 by JENNIFER ROMANO

photographs by TED CHAI PHOTOGRAPHY Just like Toronto’s current food scene, wedding receptions are quickly becoming less about stuffy, formal meals, and more about bold flavours, comfort foods and edible entertainment. In the age of food stations and food trucks, 2014 promises to be a year for delicious food, with a social twist. Known for big, bold flavours and his refreshing approach to event catering in the city, The Food Dudes founder and executive chef, Adrian Niman, shares the latest food trends for 2014.

Make it a mouthful

With a cocktail in one hand, guests should be able to eat hors d’oeuvres with the other. Niman suggests bite size morsels for cocktail hour that can be eaten with one mouthful, but are still “lick your fingers” good. “Serve macro dishes on a micro scale. If you’re serving a more refined nacho as bite size, include all the Mexican flavours and textures you would expect in a plate of nachos.” 54 | Wedding Trends 2014

Pile crunchy tortillas high with cool guacamole, fresh salsa verde and triple seared steak. Finish them off with hot sauce for a full Mexican experience in one bite.

Man the stations

Food stations encourage guests to get up out of their seats and socialize. Serving the same quality dishes as a sitdown meal, food stations are generally open all evening, so guests can choose when they want to grab a bite. It also gives them the opportunity to try different dishes beyond their assigned meal. Setting up do-it-yourself food stations also provides a diverse and interactive food experience. “If you want to stick with a traditional sit down dinner, serve dessert in food stations so guests can get up and move around after dinner. It becomes a part of the nightly entertainment when you can make your own s’mores.”

Roll in the food trucks

With one of the hottest food trucks serving street-side in Toronto, Food Dudes has intro-

duced a food truck dining experience at accessible wedding venues. “If guests have access to an outdoor patio or the street, food trucks are a great option to serve a late-night menu and desserts.” Ice cream, mac n’ cheese, braised pork poutine and grilled cheese are rib-sticking foods with big flavours— easily served from a truck. Booking multiple food trucks to serve a complete menu is also an option. Depending on the venue, schedule food trucks to line up and serve their own unique dishes with different cultural flavours— right from their windows. It makes for a memorable dining experience.

Bring back family-style

Big platters and serving dishes will decorate tables this year. Anti pastas, cured fishes and meats, cheese boards, proteins and pastas are easily shared. “Family-style works great for smaller groups and outdoor wedding receptions because it’s casual. Food is becoming less serious and more about delicious flavours and familiar dishes, with an updated twist.” When choosing a caterer, select one that caters in many styles and will work with you to create a menu that fits your venue style and your taste buds.

Asian chopped salads and fresh quinoa salads are becoming popular because they are light, healthy and easy to eat. Hemp seeds are being used for texture and avocado adds creaminess to non dairy caesar dressing. Taco stations offer steamed cabbage wraps instead of tortilla and chickpea flour is delicious in pakora and falafel dishes.

Comfort foods with a twist are taking over wedding menus. Instead of your regular steak and potatoes, 24 hour braised short ribs with a cauliflower puree, roasted beat infused salmon and smoked carrot risotto can all spice up the main course.

Experimenting with food entertainment includes adding visual elements to wow the crowd. Ice cream sundaes made to order using liquid nitrogen produces a mystical smoky effect that is sure to draw a crowd.

Frozen spring rolls and shrimp rings are becoming event foods of the past. Guests are looking for fresh, and exciting dishes with bold flavours and substantial portions at reasonable prices. GoodLifeMagazine.ca | 55

Just Desserts by NICOLE LARKIN Forget fondant, blinking lights, cupcake towers, and ‘display only’ cakes that look prettier than they taste - 2014 will see a return to natural, traditional cakes that make a greater impression on your taste buds than your eyes. Cindy Coelho, co-owner of The Wedding Cake Shoppe - Toronto’s first retail wedding cake boutique, shares her inside scoop on the latest trends in cakes and desserts.

Flavours

Foodies are requesting a larger variety of cake flavours to compliment their dinner’s flavour profile. From passion fruit to baked raspberry cake, couples are more willing to experiment with flavours that are more exotic – even lavender and Mayan chocolate.

Colours

While white is still the dominant colour, The Wedding Cake Shoppe is seeing a lot of requests for ombre, a gradiation of different shades of the same colour. Coelho also expects to see a lot of colour blocking, and use of vibrant colours in a very graphic, punchy way. 58 | Wedding Trends 2014

Finishes

“One of the biggest trends we’re seeing develop for 2014 is natural, naked cakes, with no icing on the outside,” says Coelho “We’re also seeing a ton of orders for buttercream finished cakes. Foodie weddings usually go for these,” says Coelho. A classic, less complicated look, buttercream cakes are surging in popularity simply because they taste better than their fondant counterparts. “I’m a pastry chef first, so that means a lot to me. Sometimes people are more interested in what the cakes look like, but your wedding cake should be as tasty as it is beautiful.”

Outside the cake box

Perhaps the biggest trend of 2014 is keeping it unique. Brides are starting to forgo trendy desserts, like the cupcake towers that dominated the last several years, in favour of their favourites. “A lot of times, the cupcake trees are to save money, as the venue might have a high cake cutting fee,” says Coelho. “However, I think the cupcake tower is declining because it became a huge fad. Five years ago, it was the thing. Now, people think ‘everyone else has already done it, I want something different.’”

Bells and whistles take a back seat to flavours and tradition Tips and Tricks

“Toronto brides are spoiled for choice! We have more wedding cake shops per capita than I would say even New York City,” says Coelho. She advises brides to start booking tastings early in the year. If you book a cake in January or February, then it should be no problem to have it ready in time for a summer wedding. If you book too far in advance, you may second guess yourself as you get closer to your date. “Research is super important, it’s good to meet and sit down with three cake designers. Anything over three, and you’re going to get confused and forget what which cake tastes like,” says Coelho, who stresses that it’s important to choose a cake designer who gives you a quick response - within 24 hours in the winter. “Winter is traditionally a slow time for us,” says Coelho. “Most cake designers will respond quickly in the winter time, so if they’re not getting back to you promptly in winter, that’s a giant red flag for things to come. If they can’t keep up with you in winter, they won’t be able to in the busy summer months. Narrow down to your three contenders, and taste all the cakes - don’t buy without tasting!”

Sweet Table

Coelho says the sweet table has become standard, a way to incorporate several dessert items on a table to create a scene. Towers of doughnuts and pies are starting to become more common as well.

Buttercream

“Buttercream icings are very textured, and applied with a knife, not rolled on like fondant. Buttercream is more informal, and would suit a vintage, organic, low key, or woodland wedding, as opposed to a princess wedding.”

Naked Cakes

Naked cakes are surging in popularity for 2014. “You get to see the skeleton cake embellished with fresh florals. They’re very organic looking.” GoodLifeMagazine.ca | 59

the air of an elegant cocktail party, rather than a frat-house rager.

Signature cocktails are all the rage. Or rather, they were – until everyone decided to jump on board. Just because one of your wedding colours is green, doesn’t mean your drink needs to be. Recently the Toronto cocktail scene has witnessed a resurgence in classic spirits and cocktails, with bartenders shying away from the Blue Curacao and flashy drinks in favour of flavour. We spoke with Kate Rodrigues, owner of The Gabardine, about all the ins and outs of creating delicious seasonal cocktails that will please your guests’ palette and stand the test of time. Rodrigues has shared four seasonal recipes that are easy to replicate, and will give your big day

“Much like wedding menus are becoming more focused on the flavours as opposed to the presentation, cocktails with classic elements and pleasant flavour profiles are returning to fashion,” says Rodrigues. “These drinks are classics for a reason!” Rodrigues suggests that, rather than matching your drink to your wedding colours, instead match your cocktail to the smells and flavours of your reception meal for a more cohesive effect. Make sure you provide ample drink alternatives for those who don’t sip the hard stuff, and ensure your wine selections match the flavour profile of your cocktail.

62 | Wedding Trends 2014

The Good:

Ditch the overdone drinks in favour of classic seasonal elegance The Bad:

Brightly coloured liquors like melon, blue curacao, and the like are often high in sugar and artificially flavoured, which can lead to nasty headaches come morning, and an unnatural, chemical taste to your cocktails. They can also trigger allergic reactions in some of your guests. Stick to the safe side, and avoid anything with unnatural colours or flavours. When it comes to wine, resist the temptation to create your own vintages. While the personalized labels can be a nice touch, improperly aged wines can leave bitter aftertastes on the tongue, and are hard to balance, acidity-wise. If you’re looking for a signature wine for your evening, consider speaking with a sommelier to select an appropriate vintage, and affix your own labels prior to your reception.

Years after your big day, the one way you’ll look back and recapture the memories you made is through your photographs, and it’s why they’re such a crucial element of any couple’s journey, from engagement to the alter. We spoke with photographer Brandon Gray (bmgray.com), whose Friday the 13th themed engagement photographs went viral last year, appearing on Buzzfeed, Huffington Post, and even in the UK’s Guardian newspaper. He shared his tips and tricks for perfect wedding pics. Informal Formality I’ve noticed couples throwing in one or two shots that speak more to their specific interests. I don’t think as a whole the photos are becoming less formal, but it’s now pretty common for couples to ask for something out of the ordinary in addition to traditional photos. Personality The brides and grooms that let their personalities impact the photos are the couples I want to work with. There’s so much opportunity to spice it up, so have some fun! Hidden Camera Candid photos are very important for wedding and engagement photography because you’re capturing sincere emotions. That smile isn’t fake, that laugh isn’t phony, and those tears aren’t staged. They’re real, and if captured candidly, you’re preserving how people felt on that day forever. If the bride and groom feel more passionate and involved towards what the photographer is shooting, they’ll be more comfortable on the day, and the final product will show. Wedding Trends 2014 | 65

A BUDGET FOR

Every Bride

by NICOLE LARKIN Ask any bride, and you’re likely to receive the same response: The most mind-bending, stress-inducing, and hair-pulling aspect of planning a wedding comes down to budgeting. Wether you’re planning a lavishly luxe ceremony, or sticking to the basics, having a good idea of your budget from the outset can save you headaches galore as your big day approaches. We spoke with expert Toronto wedding planner Karina Lemke of TV’s Rich Bride, Poor Bride to get some straight talk on bridal budgets.

“There is a pretty serious lack of transparency in the wedding business, and basic budget outlines are not necessarily helpful to most brides,” says Lemke. “When trying to establish a budget, think about how much you are able to spend on a per guest basis for the entire wedding. If it’s $100-200, you are in a lower price range and need to make some very careful decisions right from the start.” Lemke strongly suggests hiring a planner for a few hours when you begin to organize your wedding to help figure things out. “If you are in the $300 -400 range per person - that is the average - you still need to be careful, but you can usually manage to have

many of the usual bells and whistles. If you can spring for $500 per person and up, you are able to go a bit more luxe.” “When planning a wedding, I prefer to work with the concept of primary and secondary vendors. Primary is the reception. In Toronto, any hall is a minimum of $100 per person for a three or four course meal with bar, plus 33 per cent tax and service. Secondary vendors are the bells and whistles. In Toronto it ranges from about $15K to $45K.” Lemke breaks down all the extras in three different budget packages to suit your ceremony - low priced weddings: $100-200/pp inclusive; mid range: $250-350/pp; and higher end: $500/pp and up.
