New wedding photography styles put some personality in your pose. BY

Posing awkwardly in a line with all of your bridesmaids and groomsmen is a thing of the past. While wedding photography used to be stiff and posed, the current trend is for images with personality. From photos that look like they belong in a magazine to priceless snaps of your family enjoying your big day, photography is one more an opportunity for you to put your own stamp on your wedding. After all, your photos will tell the story of the start of your happily every after. CONSIDER ONE OF THESE THREE STYLES WHEN BOOKING YOUR WEDDING PHOTOGRAPHER.

DOCUMENTARY

The goal of documentary style photography is to capture the spontaneous moments of the wedding day with an eye for beauty. The style is “un-posed”—you won’t find any stoic photographs of a bride holding her bouquet here. “I like to get to know my couple before the day,” says photographer Tara McMullen, who describes her style as storytelling with a mix of fine art. “On the day, I’m like a bird on the shoulder. It’s much more intimate than traditional wedding photography.” When a couple looks at the images, it feels like someone was there with them on the day instead of just watching it.

EDITORIAL

Editorial style photography is heavily influenced by fashion photography. “It’s kind of like you’re a celebrity for the day having a fashion shoot and a lot of brides love it,” says Alex Albojer of lifeimages. With editorial style, photographers and couples get to try a few new things to create lasting images that look like they belong in a magazine. An editorial photographer will spend time posing the couple in a way that is natural and ultimately flattering, whether that means angling a hand a certain way or positioning the bride into the light for a slimming effect. “It’s all about expression,” says Albojer, who believes if you feel good you look good. “People are always going to be looking at the eyes.”

FINE ARTS

Fine art photography works to capture portraits with an artistic flair. “I really use the location to complement the couple,” says Erika Hammer of Ten2Ten Photography, who describes her photographs as fine art with a touch of photojournalism. Hammer looks for geometry on the location, such as architecture with strong angles or picturesque landscaping. Fine art also relies on natural lighting, the colours of the surroundings and changing perspective by getting on the ground or standing on a bench to create a stunning portrait. “Unlike traditional photography. I won’t have the same five poses for every couple,” says Hammer. In post-production, the images are edited for colour, contrast and exposure.

Breaking down your dream wedding by budget BY

From “Will you marry me?” (Yes!) to your big “I dos”, there are hundred of decisions, big and small, to be made when planning your wedding. The picture perfect wedding day comes with months of planning, but possibly your biggest decision is going to be your budget—and how to stick to it. “Your wedding can be everything you ever wanted, but you need to approach your vendors with firm numbers in mind,” says Lynzie Kent, owner of Love by Lynzie Wedding and Events. Kent believes a wedding is a couple’s one opportunity to throw the party of their dreams, to show family and friends what they eat, drink, listen to and the style that makes them unique. Kent and her team of stylists and planners work with wedding budgets ranging from $20,000 to $250,000. Her first piece of advice—set your budget immediately. “Even if the sky is the limit, it is important to have guidelines to give your vendors,” Kent says. When looking at your budget, Kent suggests determining your guest list first. “Your physical location makes a difference too. If you are planning a wedding in downtown Toronto, you’ll want to know the average wedding is around $45,000 to $65,000,” says Kent, though that same budget make take you further if you plan on marrying outside of the city. In York Region, the average wedding budget ranges from $35,000 to $45,000. “Gone are the days of the $25,000 wedding,” says Janis Martinello, owner and principal event planner at Brocade Event, an event and wedding planning company based in York Region. “It’s still lower than downtown Toronto, unless they’re doing an outside venue and have to bring everything in,” Martinello says. Rental costs can end up bringing the wedding budget to the higher end of the scale. There are so many aspects that come into play when planning this exciting milestone. Key to creating a realistic budget you can stick to are an understanding of how much products and services cost and decisions on your must-haves. Will it be the Hollywood-style dress and tux and all-star photographer or the Pinterest-worthy flowers and décor? Kent breaks down two budgets for couples with different wedding priorities. \ 7EDDING 4RENDS

DÉCOR, FLOWERS & WEDDING PLANNER bouquets and bouts, centrepieces, additional décor, furniture and prop rentals, draping, custom or luxury linens and chairs Since this is your priority category, break down how much you want to spend on each sub category. Don’t settle on just any decorator or wedding stylist—make sure you meet with a few and truly understand their aesthetic before booking. Review their Pinterest and Instagram accounts to ensure your tastes align. Then, get ready for the mutual joy and excitement you will share as you embark on transforming a space with your wild ideas.

STATIONERY invitations and printing, postage, additional day-of stationery Forego expensive calligraphy for your envelopes by taking a calligraphy class and DIYing it. If that fails, try clear labels from an office supplies store and a cool font. Choose to have guests email or phone you to RSVP to save on a second round of postage. Hand-delivering invites to friends and loved ones can save on postage too and is a nice touch.

RECEPTION food and alcohol, cake, venue rental fee, rentals (tables, linens, dishware) This is always the hardest place to save. If your priority is décor, first find a venue that is either a blank slate or fits with your theme. Aside from hosting a cocktail reception, choosing food stations, finding a venue where you can bring your own booze or considering food trucks, the best way to save here is to keep your guest list down. The fewer guests you have, the fewer plates/ chairs/tables/drinks/napkins/centrepieces/ etc. you’ll need. And it all adds up.

PHOTOGRAPHY AND/OR VIDEOGRAPHY photographer, videographer A fabulous photographer can cost anywhere from $3,500 to $8.000. If you plan to spend this much on photos, make sure you click (pun intended) with the photographer before booking. You will be spending a lot of time with them on your wedding day. You’ll need to understand their day-of process as well so you can be sure your schedule is timed properly to get your money’s worth. If you plan to hire a videographer too, be sure that they have worked with your photographer before and understand each other’s process. Both will require certain light and timing, so they’ll need to work well together.

Once again, consider family talents when thinking of appropriate favours to give to your guests. Perhaps you have a family member who bakes killer cookies that you could package as a DIY or maybe your grandmother makes amazing pasta sauce. Bringing family in to make favours not only saves money, but also adds personality to the event.

Another option would be to check out DJs at your favourite bars and clubs. Many of these DJs don’t specialize in weddings and their rates may be surprisingly reasonable.

Transportation is a good place to save money. Consider asking a friend with a nice car to chauffeur you for the day or, if the entire event is happening in one location, skip booking transportation all together. You’ll spend the least amount of time on your wedding day in a car, so if you can stomach it, book cabs or have your dad or uncle drive you to the ceremony. If the love story of Nicole and Justin was written in a book, “once upon a time” would be found in two different chapters. For Nicole it would be on Page 1, in 1998, when, unbeknownst to Justin, she set her eyes on him to play the role of Prince Charming in her real life fairytale. “I was in Grade 7 at a new school after moving from Toronto to Maple. I developed a serious crush on Justin who was in Grade 8,” Nicole recalls. “My school year consisted of sneaking peeks into his classroom, watching him from across the playground and, of course, writing about him in my diary.”

in a tent as in a five-star resort,” she explains. “I really wanted something that felt naturally sophisticated, not forced or contrived.” Aug. 23, 2014, 265 guests gathered at historic St. Mary’s Church, a focal point of the Portuguese community in the GTA, to witness Nicole and Justin pledge their undying love to each other. The bride was radiant in a fabulous Ines di Santo gown, complemented by a cathedral veil. Her floral bouquet, a mix of creams, red and oxblood, was wrapped in a hand-embroidered handkerchief prepared by her grandmother. The groom was a picture of sophistication donning a dark Armani suit and white Eton dress shirt. “I walked down the aisle to our groomsman Domenic playing an acoustic, slightly modified version, of Hey Ho by the Lumineers. It was perfection and projected beautifully in the church, creating a solemn ambiance that allowed me to focus on 20 | Wedding Trends 2015

the feel of my father’s arm and the look on Justin’s face,” Nicole says. After the ceremony, photographs were taken at the architecturally stunning St. Mary’s and around the Kensington Market area. With the “I dos” and “you may kiss the bride” said, it was time for the reception at Paramount Conference and Event Venue in Woodbridge. The newlyweds couldn’t wait to mingle with family and friends, some of whom had come from overseas. Dinner began with a delicious antipasto bar, enjoyed to the soft sounds of live tango music played by two guitarists. A four-course dinner followed consisting of soup, pasta, main entrée and dessert trio. The lavish feast continued later in the evening with a seafood buffet, international pizza station and sweet table. Guests danced the night away to musical entertainment provided by the in-house DJ. The bride and groom held each other close for their first

dance to Coldplay’s Green Eyes. We really wanted people to connect with what this gift was doing.” Not many girls can say they married the boy they snuck glances at in grade school. Destiny eventually brought them together and their love story is still being written. “Ten years together has felt like 10 days,” Nicole says. “It has never felt like work, even when we had to sort things out. It has always just felt like where we were supposed to be.”

A picture is worth a thousand words and it was a stolen picture of Mickael at a banquet that convinced Jodie to give a blind date a try back in 2001. “We were both in high school,” Jodie says. “This was before the days of Facebook.” Jodie liked what she saw, so their mutual friend delivered a photo of Jodie to Mickael in return. “Needless to say, she was pretty cute,” says Mickael, so he popped in to her workplace to

introduce himself. They’ve been a couple ever since. “She laughs at my corny jokes and we’re both avid readers and we really do balance each other,” Mickael says. “I am more spontaneous but she balances me out.” As the planner, Jodie was expecting Mickael to propose during their trip to Spain, in June 2012. He did plan for a romantic Mediterranean proposal by the ocean, but naturally, Mickael

He tiptoed across the room, took the ring out of the closet, gently placed it on her bedside table and woke her up for dinner. “I said, ‘You left a box out here what is it?’” Mickael recalls . “Then I turned around and left the room.” A bleary-eyed Jodie couldn’t believe what

was happening. She remembers saying, “It wasn’t supposed to happen like this!” But of course, she said yes. Though the couple wanted a destination wedding, the logistics of coordinating guests from Canada, Trinidad, Jamaica and the United States took that option off the table. Instead, a weekend wedding in Niagara-on-the-Lake gave everyone a mini-vacation and the feeling of being much farther than a few hours from Toronto. Jodie envisioned a classic wedding with vintage touches, so they chose to incorporate gold, cream and purple colours as well as Jodie’s love of Paris, France into the theme. The ceremony and reception were held at Château des Charmes, whose large gardens and the classic façade are reminiscent of a French estate.

Following the vintage theme, mercury votive candleholders topped the table and gold charger plates and pearlized menus reflected the light from the candles. Crystal chandeliers hung from the ceiling of the tent and large white balloons framed the dessert table, creating an opulent garden party worthy of Marie Antoinette. Earlier in the day, the couple used those balloons to take their “first look” photographs, opting to take the majority of their photos before the ceremony to make sure their guests wouldn’t be waiting for he reception to start. Mickael held one of those white balloons in front of his face, blocking his view of a hallway, and patiently waited for his bride to approach. Their “first look” photos captured the excitement in his eyes when Jodie appeared before

him dressed in a lace Monique Lhuillier sheath dress. The groom walked down the aisle first in a custom made suit from Garrison Bespoke. A lover of classical music, it was his decision to have a quartet playing as they walked in the ceremony. “It’s a solemn occasion but we’re fun-loving people so we had moments of humour and fun with the ceremony,” Mickael says, alluding to the red polka dot handkerchief he carried with him— which Jodie used to wipe her tears. The newlyweds walked back down the aisle and into the sunset wearing sunglasses and feeling like rockstars. “We ‘re really cool together,” Mickael reflects. “There’s an easygoingness I’ve never had with anyone else.” Wedding Trends 2015 | 25

To add a bit of opulence to the alter, Jodie and Mickael worked with their florist to hang purple orchids in vases from a Manzanita tree. They lined the aisle with white lanterns to light up their evening ceremony.

The pair opted for a fourtier cake, with some unique flavours—chocolate, coconut key lime and almond amaretto—though they were too busy mingling with their guests to even have a slice.

Ask any caterer and they will tell you food sets the tone for the wedding reception. The day starts with the ceremony, but the celebration really gets started when food and drinks are served. And what better way to celebrate the union of two people than to unite the flavours of their heritage through a blended menu. “We’ve done a lot of weddings this year,” says Russell Day, vice-president at Daniel et Daniel Event Creation and Catering. “The couple always puts their stamps on their event. A lot has to do with individual likes and also ‘How am I going to please my family?’ So that’s where culture comes in the menu.” In multicultural York Region and Toronto, more and more couples are serving a mix of flavours on the menu.

Celebrating the union of two souls certainly deserves a party. Just as we blend two lives and two families, the drinks we serve combine flavours and liquors to create a cocktail that represents the new couple. Sugary signature drinks are a thing of the past. In a switch to darker traditional cocktails, we are seeing more artisanal spirits, whiskeys and bourbons on wedding drink menus. “In the same sense that people are beginning to appreciate food and fine wines, they’re also turning to more elegant cocktails,” says Frankie Solarik, co-owner of Barchef, a Toronto bar known for creative cocktails and unique specialty drinks

created for the catering side of the business. In the same way they incorporate their culture, individuality and memories into the menu using certain flavours or foods, couples can carry their personalities into these classic cocktails. More sophisticated and balanced flavour profiles allow bartenders to draw from the bride and grooms favourite things to add unique flavours and colours to their signature drinks, expertly mixing liquors with more natural ingredients. “I look at what I do as, in a sense, creating a very nostalgic experience with liquids, tapping into nostalgic experiences with flavours or scents,” Solarik says.


THE GALA 1 sugar cube 4 oz sparkling wine 1/4 oz apricot bitters 3/4 oz St. Germain elderflower liqueur grapefruit zest fresh sage

In champagne coupe, place all ingredients, garnish with grapefruit zest and sprig of sage. Apricot bitter: In 60-oz infusion jar, place 250 g dehydrated apricots, 3 licorice root sticks, 6 2-inch cinnamon sticks, 20 g cardamom, 20 g cloves, 30 g fennel, 10 g black pepper and 20 g star anise. Top with 50 oz rye and let infuse for 3 months. Strain and serve.

BASIL DAIQUIRI 2 oz coconut rum 2 oz fresh pineapple 4 leaves fresh basil 1 oz honey and black pepper syrup 1/2 oz lime juice

Place all ingredients into shaker tin and muddle basil. Add ice, shake to chill and fine strain into cocktail glass. Honey and black pepper syrup: In pot, place 1 L of water, 500 mL honey and 100 mL black peppercorns. Bring to boil, then reduce heat and simmer for 15 minutes to reduce. Skim film from top, cool to room temperature, strain and serve.

STRAWBERRY NEGRONI 1-1/2 oz strawberry infused gin 1/2 oz Campari 1/2 oz strawberry and elderberry bitters

Place all ingredients in shaker tin, add ice, stir to chill and strain over ice in rock glass. Strawberry infused gin: Slice 450 g strawberries and place in 60-oz infusion jar. Add 50 oz gin, let infuse for 1 week, strain and serve. Strawberry and elderberry bitters: In 60-oz infusion jar, place 150 g sliced strawberries, 5 g dehydrated elderberry, 5 licorice root sticks, 4 2-inch cinnamon sticks, 30 g cardamom, 30 g fennel, 30 g star anise, 30 g cloves and 30 g black peppercorns. Top with 50 oz sweet vermouth and let infuse for 3 months. Strain and serve.

APRICOT BRANDY SOUR 1-1/4 oz apricotinfused brandy 1-1/4 oz mint syrup 1 oz lemon juice 1/4 oz cherry an vanilla bitters 1 egg white fresh mint

In shaker, combine brandy, syrup, lemon juice, bitters and egg white. Dry shake to aerate and emulsify ingredients, then add ice and shake to chill. Fine strain into coupe glass and garnish with sprig of mint. Mint syrup: In pot, place 1 L water and 500 mL sugar, 1 bunch (10 sprigs) of mint. Bring to boil, then reduce heat to simmer for 15 minutes. Strain and cool to room temperature before storing in air-tight container in fridge. Apricot infused brandy: Place 500 g dehydrated apricots into 60-oz infusion jar. Top with St. Remy brandy and let infuse for 3 months. Cherry and vanilla: In 60-oz infusion jar, place 1 can cherries (discard juice) or 300 g pitted cherries (if available), 2 pods sliced vertically bourbon vanilla, 30 g star anise, 20 g cloves, 20 g cardamom, 10 g black pepper corns, 30 g fennel, 4 sticks licorice root and 3 2-inch cinnamon sticks. Top with 55 oz rye and let infuse for 3 months. Strain with cheese cloth and serve. 7EDDING 4RENDS \

Flowers can be costly—but working with your florist and the season can keep you budget in check. “Every bride has a dream, but we as professionals have to keep in mind the budget. Winter arrangements may seem tougher to pull off but there are many beautiful options to choose from—such as boronia, amaryllis, roses and spider mums. Boronia, in particular, is prized for its fragrance. Spider mums are a great choice because of their staying power; they will last through an entire wedding without the slightest wilt.

Spring is a time of renewal and budding life. Flowers such as forever tulips, hyacinth, daffodils and orchids are all good choices for the spring. They are available in a wide array of colours and textures and can be mixed and matched to create a bright and lively floral arrangement. Orchids are long lasting and can be used in a vase with water for centrepieces or on a boutonnière.

Summer offers the best selection of flowers. Some popular choices for summer weddings include sunflowers, peonies and classic roses. Few people want to sit through their entire wedding day frame by frame. Montages of key elements of the day are much more popular than a chronological unfolding of the ceremony and reception. Some videographers like to show snippets of what’s to come at the start of the wedding video, then go into more extensive segments later on.

Instead of a stationary camera on a tripod, this method of filming incorporates different angles and close-up shots. It’s shot more like a movie than a documentary, allowing viewers to feel as though they’re really experiencing the event.

Jennifer and Benjamin’s love story began as a summer romance. The pair met during the annual senior camping trip, a tradition at the high school they attended. The couple went the distance to keep their summer romance alive when the leaves started to fall and they moved to separate cities to pursue their education. “I was in Waterloo and he was in Toronto and we just made it work,” Jennifer recalls.

They took turns visiting each other, but after they graduated it was in a new city that Benjamin popped the question. Being the more adventurous half of the couple, Jennifer was surprised when Ben said yes to a trip to Boston, but Ben’s surprises didn’t stop there. While walking along the river by Harvard, Ben suggested stopping to take a photo of the two of them in front of the river. After saying no a few times, Jennifer finally agreed, but she wasn’t paying

attention when he placed the camera on a bench for the photo and then got down on one knee. The picture he wanted was the one of him proposing— and the look of surprise on her face. The couple tied the knot in a small but beautiful 125-year-old white church in Oakville. Keely. It was the first dress she tried on, but 50 dresses later the unique ivory lace and classic sweetheart neckline were still on her mind. Ivory and blush hydrangeas and peonies were used throughout their reception venue—as Jennifer knew she wanted a clean and classic theme to complement the lavish Liberty Grand venue. “My sister worked for the florist, so we had a connection there. So she created our bouquets,” Jennifer says, adding her sister also made crowns for the flower girls’ hair. The night started in the reception area, while guests sipped their cocktails to the sounds of a

pianist playing a grand piano. “One thing I knew I wanted was for you to open the doors and there was a big ‘wow’ factor,” says Jennifer. They created the effect with lighting—spotlights over every circular table, pillars lit up in pink and tealights covering the head table. Another personal touch they added, were “bride’s” and “groom’s” drinks at the bar, a pink mojito for her

They ended their night with a special moment. “We have a tradition with our friends that we end every night with an Oasis song because my husband has loved Oasis since he was a little kid,” Jennifer says. So, once again, at their wedding they ended the night with an Oasis song, with all their friends and family linking arms and singing along, while Jennifer and Benjamin took in the incredibly special moment in the centre of it all.

It wasn’t your average birthday dinner with some friends. Back in April, Annie’s boyfriend, Jon, invited her to celebrate at Panorama Lounge in downtown Toronto. But her friends didn’t show up. Unbeknownst to Annie, the pair—a husband and wife team of photographers—were hiding in the back of the restaurant, paparazzi-style. They were there all right, to capture photos of the special moment Jon proposed. Markham residents Annie and Jon first met 12 years ago through family friends. They crossed

paths again years later and both were fresh off a break-up. They decided to attend a bunch of singles events together. “We discovered that we actually get along,” laughs Annie. They soon started dating. With an April engagement and a September wedding the same year, it’s clear these two weren’t wasting any time. Neither was particularly picky about the day or the venue. Annie, who describes herself as low maintenance, jumped right into planning. She wanted something really simple. No bridesmaids or groomsmen. Her heart was set on an

outdoor wedding. She chose Fantasy Farm because of its central location in the heart of Toronto and its beautiful grounds for wedding photography. “I didn’t have to go anywhere else and could have everything in one place: the reception, the ceremony, even the picture taking,” she says. Annie wore a vanilla Sottero and Midgley satin gown. It was strapless with a sweetheart neckline, beading on top and a balloon bottom. Her flowers were a mix of calla lilies and roses. To match the wedding’s pink and gold theme, Jon wore a pink vest and tie with his tuxedo.

Annie chose two flavours of cupcakes instead of a traditional wedding cake and had an ice cream bar open later in the evening.

Satine Studio did Annie’s hair and make-up. “A lot of Chinese people go to her because she caters to that clientele. The make-up really suits Asian features and skin tones,” she says. Annie didn’t use a wedding planner but is blessed with helpful, generous friends, many she has known since high school, including the photographers. Another friend, who is a musician, played in the string trio during the ceremony. Friends also helped Annie make, transport and set up the decorations. The group handmade the centrepieces of manzanita branches spraypainted gold. “The food at Fantasy Farm is unique,” says Annie. “Their specialty is barbecue and it’s amazing.” Outdoors on the patio, guests can order their steaks (or chicken or vegetarian options) as they like. “Other courses are served at the table but the main course is the barbecue outside. It’s an opportunity for guests to get up, walk outside

and mingle a little with friends.” She chose two flavours of cupcakes instead of a traditional wedding cake: lemon chiffon with vanilla icing and red velvet with cream cheese. A Menchie’s ice cream bar opened later in the evening. The 100 guests took advantage of a photo booth to create their own keepsakes of the event. The pair decided to marry on a Friday for two reasons. They really liked the venue and it was one of the few days it was available, but even more importantly Annie’s mom picked the date after consulting the Chinese calendar. While they had no way of knowing this at the time, the date proved to be hugely important. Two years ago, Annie’s father had been diagnosed with multiple myeloma. In 2013, he went through chemo treatments and had a stem cell transplant. Two days before the wedding, he experienced

liver failure and was admitted to hospital. Thankfully his doctor gave him a temporary pass— six hours to attend his daughter’s wedding before he had to return. Her father being able to attend her wedding made the day spectacular for Annie. “Had it been a few days later, he would have been too sick to leave the hospital,” she says. “I will always remember his laughter, smiles and jokes that will always bring a smile to my face.” The past few months have been chaotic for the newlyweds. After the wedding was her father’s funeral. The couple has already looked for and bought a house and they’re now in the process of selling their condo. A few days after the wedding Annie and Jon did manage to get away for a mini-moon, spending a few days in Chicago. They plan to do a longer honeymoon soon and they certainly deserve it. DANIELLE AND PAUL set for love

A shared adoration of volleyball sparked a friendship between Danielle and Paul that, over time, would grow to be the love of their lifetimes. Each admits to a longtime crush on the other— and when they were finally single at the same time, that was it; they went for it. “As soon as we had the chance, we were quick to try it out. We bought a house within six months and were engaged a year and a half later,” Danielle says.

Paul proposed to Danielle the night before a planned trip to Aruba, but first he asked her to promise to unplug and just enjoy the time together, then he reached behind his back and pulled out a ring. True to Danielle’s promise, the two kept their engagement secret for the duration of their trip and took the opportunity to enjoy the next step of their lives together in total intimacy. The venue looked like a church and, with the sun setting, as I walked down the aisle, a beautiful song was playing that described our love perfectly,” Danielle says. As she walked down the aisle with her father, Danielle couldn’t help but think that “the ceremony itself was the very best moment.” The couple decided to incorporate their Polish roots into their big day with food and drink. had a selection of Polish sausages and sliders with mustard for guests to feast on while they enjoyed the R&B mash-ups coming from the DJ’s spin table. “Our DJ was great. He played the classic wedding songs to get your feet moving and I got the chance to get requests from friends and family beforehand,” Danielle says. Another highlight came before dinner when the couple took another Polish tradition and infused it into their day.

“The tradition is that both the bride and groom have to do a vodka shot—only one shot glass has vodka and one has water. We choose, link arms and whoever gets the vodka wears the pants in the relationship. He got the vodka,” Danielle says. The couple didn’t just make their big day about them, though. Both their fathers had gone through an ordeal with cancer, so they decided to veto guest gifts and make a donation to the organization Movember with the money they would have spent.

Wedding desserts are as much style as sweet treat and there are many ways you can take the traditional and make it exceptional when it comes to alternatives to the simple tiered cake. “It is really an element that is a part of the overall décor. It has to be delicious and unforgettable and the limits are endless,” says Nadia Colella, owner of Nadia & Co. Art and Pastry in Vaughan. “Who doesn’t love dessert?” asks Vanessa Baudanza, co-owner of The Rolling Pin in Toronto. “After a nice meal, you want to end off doing something sweet.” Cakes can be designed to suit any couple’s big plans but so can other types of desserts. Baudanza and Colella share their takes on the latest trends that will take your guests to dessert heaven. Whether you want to go with a simple apple pie or an elaborate sweets tower, a wedding wouldn’t be the same without a remarkable dessert table. “It ends the night off on a sweet note, no pun intended,” Baudanza says.

It’s no wonder Alejandro and Shiera met online through an app called OKCupid. An experience designer and a developer, they were a match made in heaven and now work at the same company building websites and mobile apps together. “I knew really early on that he was the one,” Shiera says. “The first day I met him, I had an intuition.” When Shiera was invited to visit Vancouver for a freelance project, Alejandro took the opportunity to work on a project of his own—the proposal. a destination wedding, but knew they wanted to be married with their friends and family around them, so opted for a summer wedding and hoped for a sunny day. “I’ve always been a hopeless romantic,” Shiera says. “So we had a lot of crafted things.” Alejandro built their archway with branches from their home and in place of cake stands, Shiera’s father brought down tree stumps from Muskoka, into which they carved “Mr. and Mrs.” Keeping with the romantic theme, Shiera and Alejandro used flowers everywhere. “I absolutely love flowers, and knew that this would be the most flowers I’d ever get in a single day in my life,” Shiera says. She worked with her florist to create organic arrangements for the bride and her bridesmaids to

wear in their hair, as well as bouquets and a wand and crown for the flower girl. Flowers topped the cake, as well as the tree branch alter. As Alejandro hails from Argentina, they decided to import the best dulce de leche from his home country and make cute jars of the decadent confection for their favours. They set up a little factory in Alejandro’s mom’s house and the whole family came together to make 100 hand-crafted jars. Their cake was also dulce de leche, Alejandro’s favourite flavour. They used their receiving table to tell their story, filling gold-painted vintage frames with baby photographs and snapshots from their travels around the world. Romantic and free-spirited, Shiera was married in a dress that matched her personality—and one

she could dance in. She chose a beautiful lace dress by Pronovias with a custom-tailored open back and V-neck front. “When I put it on and said yes, the wedding bells rang and the lady at the store sang, ‘She said yes to the dress,’” Shiera recalls. On the day of their August wedding, everything they had planned in the past 14 months came together beautifully, the sun was shining and the weather was warm. In a surprise one-minute video of the day, created by photographer friend Taylor Jackson, they got to see the details of their planning played out before all of their friends and family. “Your marriage starts that day, but it lasts a lifetime,” says Shiera, who advises couples to enjoy the process. World-class dancers Sanna Averbuch and Misha Rubezine have represented Canada at the World Latin Championship in Moscow. As friends of the family, they also performed at Shiera and Alejandro’s wedding.

Before her wedding, Vanessa received some sage advice. Her cousin warned her that the big day tends to fly by quickly and suggested she stop for a moment and take it all in. “She was so right,” says Vanessa, who pulled her new husband, Marco, aside during the celebration. The couple watched their guests closely but surreptitiously—some were at the bar, others were on the dance floor, still others were busy helping themselves to some dessert. “It was just a split-second but it really was amazing. All of these people are here for you and your

partner. We were able to stand back and watch the room light up with love and laughter,” she says. Marco proposed to Vanessa on her birthday. The pair had gone bike riding in downtown Toronto and after touring the city, they stopped to enjoy a picnic Marco had prepared. He laid out their favourite snacks and drinks on a blanket, but soon he was eager to go for a walk—and Vanessa knew something was up. “He was so nervous, he wouldn’t even sit down beside me,” she says. She was thrilled when he asked and they quickly started making plans.

“I really wanted something simple and classic,” Vanessa says, “nothing too bold or loud. I wanted it to be soft and subtle, for our personalities, for everyone’s smiles and happiness to stand out.” April 5, 2014 was a sunny spring day with a cool breeze in the air. Hazelton Manor in Vaughan was the venue. “From the moment I first walked in the doors, I knew this was the place,” Vanessa says. It was welcoming, beautiful and chic, and she loved that she didn’t have to do anything to it to dress it up. It was already perfect as is. Vanessa wanted a vintage look for her flowers. Her friend Ashley from Ashton Creative mixed bluish-white flowers with leaves that looked as if they’d been dusted with snow. Her dress was made of tulle. It was a big, full Vera Wang ball gown that had a long train. “I felt like a princess and it was so comfortable,” she says. Marco and his groomsmen wore sleek grey suits from the Vera Wang Black line. Vanessa’s four bridesmaids wore dresses in a very light Icelandic shade between green and blue. teal dress. When the bridal party took pictures at Evergreen Brickworks, they were surprised to find their outfits matched the site’s blue graffiti so perfectly. At the reception the couple really focused on their guests’ enjoyment. They were glad to see staff at the venue took the same approach. Vanessa noticed that when guests weren’t at their seat, servers would cover their food to keep it warm. “That just shows you they go out of their way, and they should,” she says. “The bride and groom aren’t the only important people at a wedding—it’s everyone else who has come out to support and celebrate them.” The party was missing one important guest, however. Vanessa’s grandfather died just a few years ago. To ensure he’d still be with her on her special day, she found a two-sided frame and placed a picture of him in it, together with the words, “We know you couldn’t be here today because heaven was too far away.” “I thought that was really special,” Vanessa says. “Whether anyone else noticed it or not, I knew it was there and that he was there with us.” The couple’s first dance song was Leather and

Lace, a duet by Stevie Nicks and Don Henley. Later the music-loving pair, who are known to pick up and dance at a moment’s notice—even if it’s just to a catchy commercial on TV—made good use of the in-house DJ. “We were on that dance floor the whole night. I was a sweaty mess,” Vanessa confesses. Usually very emotional when she sees people getting married, Vanessa often cries because she’s so moved that two people have found happiness together. “But on my own wedding day, I was so happy I couldn’t even cry,” she says. “You couldn’t take the smile off my face if you tried.” The couple honeymooned for a week at a Sandals resort in Antigua. They awoke every morning to a stunning view of the ocean. They took a helicopter ride around the small island and soaked in the gorgeous weather. It was an indulgence the couple says was totally worth it. Married life just felt like a sleepover at first. It didn’t feel real, Vanessa says. “Honestly, it’s wonderful. It’s so nice to be able to share your life with someone who wants the same things you do.”

Laura was out having lunch with friends in April when she saw smoke billowing from Aurora United Church, the location she had booked for her September wedding. Laura watched in horror as the landmark church, the site of countless weddings over the years, went up in flames. “It was really heartbreaking because you had envisioned having your wedding there,” says Laura. “But the people from Aurora United Church were

very helpful. They made all the arrangements to switch the wedding to Trinity Anglican Church.” Laura had been planning her wedding to beau Matthew since August 2013, when he proposed on a secluded Wasaga Beach island, presenting Laura with an almost-two-karat princess cut diamond engagement ring. “I had no clue. I was literally stunned,” says Laura. Unbeknownst to her, Matthew had asked her parents, Lynda and Mark, for permission the day before. Laura, who speaks with her mother every day,

says her mom found it hard to keep the secret. The couple let Mom off the hook quickly, heading straight to her house after the proposal. “We went to a bunch of houses that night to tell everyone in person,” Laura says. Laura and Matthew first met a decade ago, introduced by Laura’s best friend (and later maid of honour) Caroline. The two remained friends for three years before they started dating. Although the couple now snowmobiles and seadoos together, for girly-girl Laura it wasn’t always the case.

With rain coming down the morning of the wedding, and a dove release scheduled for after the ceremony, the bride was concerned but determined to look on the bright side.

“I never used to be an active person. He kind of got me into it,” she says. “I think opposites attract. We have our own separate interests but we do things together as well.” Laura expressed those separate interests through the wedding cake topper, a “running shopping bride” she ordered on Etsy. The topper features a red Corvette and a bride on the run with shopping bags in hand. The couple duplicated the scene in real life for a photo using Matthew’s own red Corvette. The bride decided on a “bling” theme for the wedding, starting with crystal rhinestones on the invitations. The Maggie Sottero bridal gown Laura eventually selected from Helen’s Bridal in Barrie carried on the theme. The strapless, mermaid-style dress in

ivory features a Swarovski crystal jewel on bodice. “I tried it on and everyone started crying,” Laura says. “But I was still stuck on another one. I didn’t buy it right away.” The bride’s bouquet was a serene mix of white roses with special touches of bling. A butterfly from her mother represented her beloved grandmother who had passed away. A locket held pictures of all her deceased grandparents. The flowers, including centrepieces—white hydrangeas in tall vases on mirrored plates—came from Blooming Wellies Flower Boutique in Newmarket. Laura says owner Tina is “a fabulous lady” who organized everything. “She went over and beyond for me. I just told her what I wanted and she put it all together.” Laura’s godmother, cake maker Cindy, made the

For the wedding reception, the couple welcomed 155 guests to Emerald Hills Golf Club in Stouffville. “I knew I wanted a golf course,” Laura says. “I wanted to take pictures outdoors there. Emerald Hills to me had the most character. I had the feeling of ‘that’s it’ when I saw it.” With rain coming down the morning of the wedding, and a dove release scheduled for after the ceremony, the bride was concerned but determined to look on the bright side. “I was very calm the day of the wedding,” she says. “I didn’t let anything bother me that day. You’re not the average couple, so why would you plan an average honeymoon? Forgo sun and sand for safari — and more, in Kenya. To help you plan this trip of a lifetime, here’s my list of must-dos for the adventurous romantics. 92 | Wedding Trends 2015

A perfect start or end (or both) to your honeymoon is a night at Hemingways Nairobi. This boutique hotel, located in Karen, an affluent suburb in the southwest of the bustling capital, is the epitome of luxury. Relax after your journey in a spacious room, featuring a four-poster king-size bed dressed in fine linens, soaker tub and marble-tiled shower big enough for two and wall mural of acacia trees at sunset. Visit the spa for a hot stone massage, sea salt exfoliation or seaweed wrap. At breakfast, the fresh-squeezed mango juice, homemade baked goods and excellent coffee are a must.

The sundowner is a must when in Kenya. A couple of days on safari in the Maasai Mara National Reserve will bring you within metres of herds of zebra, wildebeest and gazelles, elephants and giraffes, lions, leopards and cheetahs, hippos and crocodiles as well as a myriad of majestic and colourful birds. Experienced guides will know where to find the animals and provide information about their habits and habitats.

up, up and away A hot air balloon ride wouldn’t have been on my itinerary—but after an early morning trip over the Maasai Mara, I would recommend it to anyone visiting Kenya. The gentle ride provided a remarkable bird’seye view of the landscape and its animals—one you simply can’t get from a jeep or even a small plane. That view—and the champagne breakfast upon landing — are well worth the 4 a.m. wake-up call. For another view from the air, book a helicopter ride. At Ol Malo, a luxury resort in Kenya’s northeast, owner and pilot Andrew Francombe will take guests on a spectacular ride through the Uaso Nyiro River valley and beyond.

a room with a view Book the crocodile room (often reserved for honeymooners) at Ol Malo. A short walk away from the main lodge, the private quarters feature a covered verandah (perfect for enjoying morning coffee and biscuits) overlooking a valley where giraffe and zebra graze and the hills beyond, a bedroom with dressing quarters and desk tucked behind and, through another door and over a small bridge, the bathroom. Here, you’ll find the crocodile, in the form of a sculpted tub, as well as a shower and double sinks. Natural elements—stone floors, rustic carved furniture, thatch roofs—abound. You’ll also enjoy the food at Ol Malo—lamb and beef raised on site, homemade yogurt, local honey and fruit such as papaya, mango, passion fruit, pineapple and tree tomato. Don’t pass up an offer of a local cocktail, dawa—a delicious combination of vodka, lime and honey.

the ultimate in “glamping” If you want to see the animals, you have to go to where the animals are. For many visitors to Kenya, that means a trip to the Maasai Mara and a stay at a tented camp. Camps range in size, price and amenities. But, rest assured, there is no need to sleep on a thin pad on the ground and cook your meals over a portable stove. The tents at Ol Seki Hemingways Mara feature wooden floors, soaring ceilings and canvas walls, which can be rolled up to allow for additional light and air circulation. They are furnished with large comfortable

beds and sofas and decorated with sisal rugs, white linens and accessories in shades of white, cream and tan. The result is an atmosphere of comfortable elegance.

The women wear beaded necklaces and bracelets—the colours and numbers of which tell her personal story. The Maasai are semi-nomadic cattle herders, moving their settlements as is necessary to find new grazing grounds for their herds. Many still wear the traditional shuka, a colourful sheet wrapped around the body.

A trek on my personal bucket list, summiting Mount Kenya, Africa’s second highest peak at 5,199 metres, is a four- to six-day hike. Accommodation is in huts or tents. You can expect to see wildlife, unusual alpine flora, rock towers, glacial lakes and, from the summit, views of the rolling landscape of Mount Kenya National Park. Expedition companies are numerous; do your research and book well before you go. There are many opportunities, small and large, to help the Kenyan people, wildlife and landscape. Here’s one: Since 2013, Jim Justus Nyamu, a Kenyan research scientist and founder of the Take the opportunity to visit a traditional Maasai Elephant Neighbors Center, has been walking across eastern Africa, speaking to residents in or Samburu community. The Samburu are polygamous. An extended rural communities about the need to protect family lives together—a man, his wives, their chil- elephants. He calls his campaign Ivory Belongs

The date was June 2, late in the spring, and the sun shone bright against the real life castle where Emily and Blake had decided to marry. The wedding itself was a picture of elegance, with a simple and beautiful colour scheme of silver, grey and blush pink. The décor, all designed online by Emily, was loyal to that palette from the linens to the centrepieces and everything in between. “I did a lot of online research about the cen

Emily handled the details by herself to completely personalize it. “I found the vendors by myself and personally discussed all the details and finalized everything with him.”

trepieces and I decided I wanted to go big when it came to them. I just wanted it—the décor—to be very romantic and dreamy. So we decided to do something with roses, peonies and tulips,” Emily says. Emily chose an ivory, A-line dress by Vera Wang with a layered skirt to give it that princess gown look. She knew the moment she put it on that this particular dress was the one she wanted to get married in. The couple had two ceremonies—a conventional Western ceremony at Casa Loma and a very private, traditional Korean affair at Emily’s apartment.

Their heritage wasn’t ignored at the big wedding though. Blake and Emily decided to incorporate parts of both their backgrounds into the reception to honour each of their cultures. “At the reception I changed into a traditional Korean dress and I made an entrance by dancing to traditional Korean music. We also used a DJ that played a mix of English, Korean and Chinese music. Because of my family being from Korea and Blake’s from China, it showed something special between us,” Emily says. The entire wedding was planned by the husband- and wife to-be—because it was important

to Emily to focus on them as a couple and not just herself as a bride. Together, Emily and Blake oversaw all the details—right down to the chair covers. And it turned out to be the collaboration of a lifetime. After the ceremony had finished, the couple entered as husband and wife for their first dance, which according to Emily, was the best part of the experience. “Our first dance—it was really good and romantic. The entire day just felt very good. I just kept thinking how right this decision is. It was just perfect,” Emily says. Wedding Trends 2015 | 97

Amanda met her future husband Shane nine years ago at the movies with a shared group of friends. The movie was Doom, but the relationship fared better. Although Shane was dating somebody else at the time, the two chatted for a bit. After he broke up with his movie date, Shane asked Amanda out. They were married on May 26, 2014 in picturesque Cayo Santa Maria, Cuba. “I always thought I would have more of a princess wedding, with a big huge ball gown and a tiara,” says Amanda. of two recently married friends. They decided a destination wedding would be simpler. Shane proposed on Dec. 30, 2011, the anniversary of their first official date. “I knew it was coming, but I thought I was going to get the ring on my birthday in March,” Amanda says. They went out for dinner and came home to a bedroom decorated with candles and flower petals. He proposed with flowers and a teddy bear with a ring tied to its neck. Amanda had casually pointed out rings on a couple of visits to stores. On their third store visit, she found the one—a one-karat

After a day of bridal gown shopping with her mom in Toronto, Amanda returned to Keswick

dejected. “I spent the entire day in Toronto and I hated everything,” she says. Her mom called the owner of The Fashion Boutique in Keswick, who was able to fit them in for a visit that day. “The first one I tried on there I ended up loving,” Amanda says. “It was such a relief after the day we had in Toronto.” Having imagined that she would choose a big ball gown, Amanda found herself instead drawn to an ivory, mermaid-style, strapless dress. She added a sash with a diamond on it just under the chest. Thirty-one friends and family members joined the couple for a virtually stress-free wedding at 100 | Wedding Trends 2015

the Melia Las Dunas resort. “The only stressful thing was three weeks before the wedding they changed the day of our flight,” Amanda says. “We called all the guests to make sure they could take an extra day. I was stressed to the max that whole day.” Once the flight was arranged, it was sunny skies from there on in. “Everything else ran smoothly,” Amanda says. The ceremony was held at the beach, about 20 feet from the water. The couple tied the knot under a white archway, decorated with blue tulle and flowers. On the sand, orange and pink hibiscus flowers

had been arranged into hearts where the couple stood. The bridesmaids’ dresses and groomsmen’s shirts were deep coral. Amanda and Shane rented an outdoor covered area for the wedding meal, as well as a space for drinks and dancing. The wedding ceremony was even better than Amanda had imagined. She had to gaze at the water to keep from crying. “I just remember walking onto the beach and I was half looking at him and half looking at the water because I saw the waterworks coming from his eyes,” she says.

ASHLEIGH & MICHAEL sparks fly

Sparks flew when Ashleigh met future husband Michael in 2007. Lots of sparks. It was Canada Day and Mike was doing the pyrotechnics for the City of Mississauga’s fireworks show. Ashleigh attended the event with best friend Georgie, who was meeting up with Mike and a friend. “She says she set us up because we would be perfect together,” says Ashleigh with a laugh. “But I think she just needed a drive to the fireworks.” Fast-forward to Dec. 22, 2013, the day Mike proposed. The ring, based on a Vera Wang design,

it is a double halo of diamonds around a central diamond, with two sapphires on the sides. Ashleigh had picked it out earlier. “I was pretty dead set on getting the ring I wanted,” she says. “It was going to be on my finger forever.” Ashleigh, who runs the family business, Needham Promotions, went to work right away planning the wedding for Sept. 14, 2014. With guests expected to travel from England and Nova Scotia, the Bradford couple decided to hold the wedding in Toronto. “I’m very proud of

the city. I wanted to showcase it,” Ashleigh says. She settled on Archeo Italian restaurant in the Distillery District as the venue for both ceremony and reception. Ashleigh refused to try on any dress that was over her budget. Her mom, aunt and uncle joined her on a visit to David’s Bridal in Scarborough, where she found her dream dress. “They all liked the lace one and I went with the other one,” she says. “You could just tell when I put it on. A rhinestone belt was the finishing touch. “As soon as I put on the belt, people were like, ‘Oh yeah, that’s you,’ because I’m into the bling,” she says. After the ceremony, Sue, a dressmaker friend of Ashleigh’s mom, chopped off the train so Ashleigh could move freely. “The dress is cut to above the knee now,” says Ashleigh. “I took it on our honeymoon and wore it for the formal night on our Mediterranean cruise. People keep it and never look at it again. Your daughter’s not going to wear it. bling, started with the invitations—silver writing on a navy background with a trim of sparkles. During the rehearsal, the couple asked that the attendants dance a little bit down the aisle. They got more than they bargained for. “The groomsmen were almost doing the worm down the aisle,” Ashleigh laughs. But you won’t find the event recorded on dozens of phone cams. “We asked for no photos to be taken by guests at the ceremony because I wanted them to be present and in the moment,” Ashleigh says. The couple stepped outside of tradition, taking photographs before the ceremony. They captured the moment they first saw each other in “first look” pictures. “I wasn’t so nervous walking down the aisle because I’d already seen him and he’d seen me. Then we just had fun,” Ashleigh says. Archeo provided the blend of rustic and tasteful decor that Ashleigh was hoping for.

“It’s kind of like a barn but more upscale than that,” she says. “We had a red brick wall as a background for the ceremony.” A private, outdoor courtyard added to the appeal. The more than 80 guests chose from a selection of mains including roast chicken, pan-seared Arctic char and vegan vegetable curry. Archeo staff wore custom t-shirts featuring the couple’s monogram, which was also printed on napkins and coasters. In lieu of the traditional mother/son dance, Mike and his mom performed Skinnamarink, as they used to do when he was a child. “It was a very fun, very personal, beautiful day,” says Ashleigh. While many brides find the months leading up to the wedding stressful, Ashleigh was in her element. “This was right up my alley. If I wasn’t doing what I’m doing now I’d be a wedding planner.
