Recipe

Heeng ki Kachori

Ingredients : Maida – half cup Atta (wheat flour) – half cup Pure ghee – 1 tb sp Ajwain – 1 tea sp Salt – ½ tea sp For stuffing: Boiled & mashed potato – 2 nos Onion – 1 fine chopped Green chilli – 1 (chopped) Red chilli powder – ½ tea sp Salt – according to taste Refined oil – 1 ½ cup (for frying) Heeng – 1 pinch Method : 1. Take a pan and fry the onions in 1 tb sp oil until golden. 2. Add green chillies, red chilli powder, CMYK

heeng and salt according to taste. 3. Fry for a minute and add mashed potato, mix well and keep aside. 4. Take a bowl and add atta, maida, pure ghee, salt and ajwain and knead it to soft dough using very little water. 5. Take a lemon size of dough and make katori type shape, fill in with a spoon full of the stuffing and close it. 6. With the help of rolling pin, roll the kachoris in a round shape, puri like but a little thicker. 7. Heat the remaining refined oil in a pan and fry the kachoris. 8. Hills are often crowned with a fort or a temple. And when we visit these hills, they not only serve the purpose of pilgrimage or archaeology but also afford some scenic surroundings amidst nature which leaves us fresh and relaxed.
