I was excited to inform them that we had what I would consider to be near perfect weather conditions for ice fishing, light winds and overcast skies. These conditions aren’t the rule, but they’re pretty darn close to it. While many love being on the lake when the skies are sunny, that bright sun often shuts down the bite, as it is most often accompanied by high pressure. As a professional guide, some days the fishing is just better than others. I don’t necessarily mean the people, although that can sometimes be true too. I just mean, some days everything just goes your way. The weather is good, with light winds and overcast skies, the temperatures are cold enough that the ice stays firm on top, but not unbearably cold, the fish bite consistently throughout the trip, and the
clients are great. The latter being the icing on the cake. A recent trip with a family from New Hampshire was just this. Everything went right and being a guide felt easy, which isn’t always the case. When I met my crew of two adults and two children at 7am, they were excited for their first ever ice fishing outing. They were quick to let me know that while they had never been before, a little research into my business and myself got them even more excited than they already were.
Her husband was a New Hampshire Governor and Senator but she may have greater name recognition than he has, partially because he died in 1938 and she lived until 1975. He is Henry Keyes and she is Frances Parkinson Keyes, though it is my guess that most people pronounce her last name as keys instead of being a k followed by eyes, not keys. Frances was born in Virginia, but her mother, Louise Johnson, was born in Newbury, Vermont, as was her future husband Henry Keyes. Louise Johnson was married four times. Her first husband was a New York lawyer named James Underhill and the second was a professor from the University of Virginia, John Henry Wheeler, the father of Frances Parkinson Wheeler, who was named after her father’s mother who taught her to read. Because of her father’s illness the Wheeler family moved to Frances’ mother’s birthplace, Newbury,

The Vice Presidency To The Editor: A political canard runs rampant across our nation. They cannot be trusted.) political ads “ad nauseam” to force “ whatever her name is” onto the Republican ticket. The canard is that the Vice President does not matter. History shows us otherwise. Here is why! Seventeen Vice-Presidents have become POTUS for one reason or another. On the Belknap County Mount Washington cruise this summer I informed Vivek Ramaswamy of this lost historical fact. . That means almost 40% of VPs have become POTUS. Interestingly, the brilliant political minds in early 20th century convinced President William McKinley , an Ohioan, to sideline the Governor of New York’s presidential aspirations by picking TR for VP. The assassination of McKinley launched the national political career of a man by the name of Theodore “Teddy” Roosevelt. TR dominated national politics for over two decades in the early 20th century. More recently, Harry Truman, Richard Nixon, LBJ, Gerald Ford and Biden , all held the office of the Vice President. Additionally, several VPs were nominated , but defeated in the general election: Bob Dole and Al Gore spring to mind. Another interesting histori-
cal footnote is that 7 or 8 POTUS have come from the great state of Ohio, a trove of electoral votes. Hopefully, someone will let President Trump in on these historical tidbits. 1 EV = 91 Houses How would you feel if your electricity was given to someone else? Brownouts and blackouts are looming on the horizon for homes and businesses in central New Hampshire. It’s all because of EVs electric vehicles. Do you know how much electricity charging one of these cars sucks from the grid? It will astonish you. The typical Tesla or Ford Lightning pickup truck might be at a high-speed charging station for about an hour. It’s not unusual for the vehicle to pull from the grid about 137 kWh of electricity to recharge the huge battery. Do you know how much the average house here in the Lakes region consumes in that same hour? Check your utility bill and you’ll discover about 1.5 kWh. That means charging one EV for one hour consumes the same amount of electricity that 91 houses use in that same hour. If 100 EVs pull up to the charging stations in and around the area and plug
in, they suck the electricity that should be going to 9,100 houses. What happens in a few years when 1,000 EVs driven by tourists and locals are charging at the same time? They’ll suck from the grid the power that was supposed to go to 91,000 houses. The population of the state of NH is just under 1.4 million people. If there are 2.5 people on average in each house, that means there are approximately 550,000 houses in NH. One thousand EVs charging at the same time consume 20% of the electricity going to all the houses in NH! Wake up! The current grid and power lines can’t handle this load. That means your smart meter is going to turn off your electricity when too many EVs plug in. Are ten new power plants being built here in NH soon? The answer is No. You better be buying a generator that runs on fossil fuel to keep your lights on and food from spoiling. Don’t say I didn’t warn you. Tim Carter Meredith, NH.

For the past two weeks, I’ve written about surprise winter bird sightings such as the catbirds, hermit thrushes, yellowbellied sapsuckers and purple finches I’ve seen on my recent walks. It could be shaping up to be an interesting Great Backyard Bird Count this year with all these birds that typically migrate out of New England still hanging around. Who knows what other surprises will show up on the checklists of birders throughout the region, and the world for that matter? The 27th annual Great Backyard Bird Count takes place from Friday, Feb. 16 through Monday, Feb. 19. Birders of all skill levels may participate

Simply count birds – alone or with a group – for at least 15 minutes and enter the birds able to be identified and the location at the GBBC website www.

The citizen science project has grown from rather humble beginnings in North America to a worldwide event. SPOILER ALERT: If you haven’t seen the movie and plan to, then don’t read this whole column. Sports fans are understandably pulled to sports movies. And fans can be harsh critics when the screen action isn’t authentic. The “Mighty Ducks” was a successful hockey movie, but, sheesh, intense body checking just doesn’t happen in pee wee hockey. And when Mae Mordabito (Madonna) caught a baseball in her cap during “A League of Their Own,” it really wouldn’t have counted as an out. And the countless violent head punches those boxers took in any of the “Rocky” movies was way beyond realistic. But “Rocky,” like “Field of Dreams” and so many other sports movies involve fantasy escapism. Think “The Natural.” Which is fine. But sports movies based on real people or events are risky ventures. “The Babe Ruth Story” (1948, starring William Bendix) is remembered as one of the worst movies ever. Then again “Miracle” (2004) was a triumph in how it captured the story of the 1980 USA Olympic hockey champs. Which brings us to “The Boys in the Boat,” produced by George Clooney, about the USA’s 1936 eight-man crew team which won
University of Washington’s Championship 1936 Crew Team -- the Boys in the Boat. Olympic Gold in Berlin. I saw this latest sports flick at my favorite theater, the Gilford Cinemas 8. Full disclosure: Sports historian that I am, I must admit I wasn’t aware of this true story. I did know about Jesse Owens winning four gold medals in sprint events at the ’36 Games, supposedly to the chagrin of Adolph Hitler, but the crew story eluded me. (A Jessie Owens character, naturally, is in Clooney’s movie. As is Hitler.) Anyway, the story mostly takes place in Seattle, Washington, in mid-30’s Depressionera America. University of Washington Huskies crew coach Al Ulbrickson Sr. put together a team of rowing stalwarts that upset west coast power UCal Berkeley to go to the nationals in Poughkeepsie, N.Y. There the Huskies came from behind to upset the established east coast powers (Syracuse, Navy, Cornell, Penn) to earn a shot at the Olympics.
Sadly, there was no money to support the trip, but the team frantically fundraised and off they went to Europe. Suddenly the boys are surrounded by ominous swastikas, which dramatically changes the mood of the film—exactly as happened late in “The Sound of Music,” which was nominated for ten Academy Awards. But I digress. The Americans qualified for the rowing finals with a world record preliminary time, which should have given them the choice starting position. But naturally the Germans screwed them, so the USA got the worst start position, meaning they fell way behind early, and then doggedly struggled to catch up with the English, the Hungarians, and the Swiss. Then down the home stretch the Americans pulled even with the Italians and Germans. A frenetic threeway photo finish saw the USA earning first place. The disappointed Ger-
man dictator left unhappily. Nice. (Apparently, Hitler was really there. I looked it up. I love true stories where Nazis really get smacked down, with apologies to “Raiders of the Lost Ark.”) “The Boys in the Boat” is replete with subplots, of course. Depression era poverty pathos. And yes, there is a bit of sweet 1930s romance. Nice. A problem with a crew story is that there could not be more boring sports action. Eight guys metronomically rowing in synchronicity. Boring! (Except for the photo finishes.) The sports action would have been much better if the American boat ran into the German boat and people started swinging fists and throwing oars. But (Spoiler Alert!) this is a true story. Check it out. BASEBALL MAILBAG “Mike: Thanks for the article on ‘baseball treasures.’ Little did I know when I traded one of my four Mickey Mantles for a Charlie Silvera to give me a complete 1952 Topps Baseball Card set, what a treasure I’d given up. I guess it was probably ‘tossed out’ 50-55 years ago, while I was off in the Navy. The value of the set left, besides the ‘Mickie Mantles’ could have paid for all four of my grandkids’ college, as the value would be in seven figure area. the TV remote when, but it is a thought in progress.) I know that the thought of this sounds a little strange at the moment, but so did the automobile at one time (I think). With the money that F.A.T.S.O could make from a “cramping” facility in the summer, we might just survive these tough mild winters. Who knows? Maybe the idea of “cramping” will catch on and it will become a national phenomenon like “glamping.” And not only that, we are helping out the little guy; the families that never before thought they could experience the wonder of camping out without actually camping out. Of course, I can already forsee the problems of “glamping” sites suddenly abutting up against “cramping” sites and the planning and legal nightmares that would emerge as well as the outrage from “glampers” who would have to deal with close proximity to “crampers.” But we’ll worry about that later. only hope. I do have an idea in mind to beef up the old bank account. Recently I was reading about a new development being proposed in the Weirs area where a portion of land would be used to construct a series of tent-like structures with all of the amenities of home. This would bring the phenomenon of “Glamping” to the area. “Glamping” in case you didn’t already know, is where people pay good money to experience all of the rustic charm of outdoor camping without any of the annoying realities of actually camping. There would be a kitchen and an indoor bathroom, electricity and even heating and air conditioning. I’m sure there would be a great Wi-Fi signal as well. After all, you can have all those comforts of home, but if you can’t spend hours looking at your phone instead of the stars in the night sky, why bother. I would imagine that the cost of this version of Twenty-First Century “roughing it” wouldn’t be cheap and not necessarily affordable to everyone. So, my idea would be a scaled down version of this “Glamping” phenomenon which I thought would be called “Cramping.” In my version, families coming to visit in New Hampshire, shut out by the cost of “glamping” could “cramp.” I am searching for an available plot of land somewhere in the Lakes Region where I could build one big giant tent that contains all of the amenities of the “glamping” camp, but it could be shared by up to ten families at once. Our crew would search for homes under construction and see if we could talk the contractors into saving us some old sheet rock walls we could put up to separate the bedrooms. The rest of the “Cramping Tent” would be used as a community space. (We would need to work out bathroom schedules and who gets to use

A Good Idea? Admittedly, the mild winter so far has put a kink into F.A.T.S.O’s operations. F.A.T.S.O, for those of you unfamiliar, by Brendan Smith stands for Flatlanders Weirs Times Editor Adjusting To Solitary Oblivion. It is a support group that I started with a fellow Flatlander back in the late 1990s to provide help to new transplants to New Hampshire in surviving their first few winters here and letting them get their “winter legs” so to speak. F.A.T.S.O. thrives in cold, snowy, below zero temperature winters, but every once in a while, the Old “El Nino” rears its ugly head and we find ourselves with lower funding So, as with any organization, our funding is based on our membership. So, it is obvious that this winter we are struggling a bit. Unfortunately, we can’t go back to those easy living days of Covid19 when all we had to do was stick out our hand to the government, blame our lack of funds on the so-called disease and then collect our windfall. Now we have to struggle though it ourselves. Of course, me being a registered Republican doesn’t help with getting any cash from Uncle Sam. (Also, I am on video somewhere saying I thought Donald Trump did a pretty good job as president, so I’m told I am on some kind of list as a possible insurrectionist.) While I wait to see if anything does come from all of that, I still have to find ways to make up for our dwindling F.A.T.S.O. funds so we will be ready for next winter providing it is full of snow, heavy winds, power outages and terrible road conditions. Benefits Of Fixed-Income Investments When many people think about investing, the first thing that comes to mind is the stock market. And that’s not surprising, as the rise and fall of stock prices is constantly in the news. But if you’re going to achieve your financial goals, you may well need to look beyond stocks and include fixed-income investments in your portfolio. Fixed-income investments offer three important benefits: Income – When you invest in fixed-income vehicles, such as bonds, Treasury securities and certificates of deposit (CDs), you receive regular income in the form of interest payments. And you continue to receive this income until your investment matures or you sell it, no matter what’s happening in the financial markets. Of course, the income you can receive from fixed-income investments will always depend on the interest rates at which these investments were issued. But if you own a mix of long-term and short-term fixed-income investments, you can gain some protection against fluctuating rates. When market rates are low, you can get greater income from your longer-term bonds, which typically — although not always — pay higher rates. And when market rates rise, you can benefit by reinvesting the proceeds from your shorter-term bonds. Diversification – If you were only to own stocks, or stock-based mutual funds, your portfolio would be susceptible to higher risks, especially with market downturns. But you may be able to reduce the impact of market volatility by adding fixed-income investments to your holdings. Bond prices often move in a different direction from stocks, so if stock prices are falling, you might find that the value of your bonds is rising. You can also diversify within the
fixed-income portion of your portfolio by owning a mix of corporate and Treasury bonds, as well as CDs, just to name a few. Stability – As mentioned, you will always receive interest payments from your bonds if you hold them until maturity. But if you wanted to sell your bonds before they mature, you could get more, or less, than what you originally paid for them. When market interest rates rise, the price of your current bonds will likely fall, as no one will pay you the full price for them when they get newer ones that pay more — this is what’s known as interest-rate risk. Conversely, when market rates fall, the prices of your current bonds will probably rise. But here’s the key point to remember: Bond prices generally don’t fluctuate as much as stock prices. In other words, bonds are typically less volatile than stocks. Consequently, owning bonds can add diversification to your portfolio. And to maximize the stabilizing effects of bonds, you may want to stick with high-quality bonds rated as “investment grade” by independent bond-rating agencies. How much of your portfolio should consist of fixed-income investments? There’s no one right answer for everyone. And over time, your interest in these types of investments may well change — for example, as you near retirement, you may want to consider shifting some of your growth-oriented investments into income-producing ones, though you’ll still need some growth potential to keep up with inflation. In any case, the combination of income, diversification and stability provided by bonds and similar securities should be compelling enough for you to find a place for them in your investment mix.

Payback, Peril And Politics The attack on Tower 22 was a accident waiting to happen. And it did. But then following the deadly drone by John J. Unleashing massive American retaliatory airstrikes responding to the Iranian militia attacks on U.S. forces were just a matter of time. But then we waited nearly a week to respond following President Joe Biden’s dictum; “we will respond
at the time and place of our choosing.” Sounds tough, but… Telegraphing to the world and your enemy that you are coming echoed a kind of bravado that plays well in the media or a movie but equally allowed the militants and terrorist commanders to shift their locations and to move valuable assets before the counterstrikes. Elsewhere Iranian proxies continue to attack American interests from the Red Sea where the Houthi rebels harass merchant shipping, to sustained assaults on isolated American garrisons in Iraq, Jordan and Syria. Since Hamas started the Gaza war with an heinous and unprovoked offensive against Israel on October 7, there have been over 160 attacks on American interests
in the Middle East causing many causalities but no fatalities until last week . The killing of the three U.S. Army soldiers and the wounding of 42 others upped the ante. Firstly, Tower 22 base was highly vulnerable to deadly drone strikes. The facility of 350 troops sits on the border of Jordan with Syria. This outpost and a string of others are, politely put, are sitting ducks for Iranian insurgents to attack and harass at will. The Islamic Resistance in Iraq, an Iranianbacked group, was responsible for the incident. The drone was also Iranian-made. The American response is justified but too late. It militarily punishes the terrorists but may not deter them from further actions.
This is the gamble. The actions can also ignite a wider Mid- East war which already has two fronts, Gaza and the Red Sea. In both cases Iran is already an active player. The air attacks were wide-ranging, 85 targets across Iraq and Syria, aiming to degrade the capacities of Iranian-backed militias and Iran’s Islamic Revolutionary Guard Corps, (IRGC). Later other Anglo/American strikes pounded Houthi rebel positions in Yemen. The Administration keeps stressing it wants “no conflict with Iran” the paymaster of a gaggle of terrorists and militias who plague the region, serving as the cat’s paw of the Islamic Republic. Letters From God This series of Letters From God is an attempt to put the thoughts of God as revealed in the Scriptures.
I would one day bring the hope of life to your dying world through my son Jesus. He described me as his & Israel’s Lord and as a result of this relationship with me, they had the privilege of “dwelling” with me, God, “through all generations.” (:1). They enjoyed a unique privilege because they were my chosen people. After recounting how my existence is eternal, (:2,4) he contrasted it with the ephemeral nature of Israel and all mankind. Instead of being eternal, you will die and return to mere dust from which I created you.(:3). (see also, Genesis 2:7). He attributed this fate to me and my wrath saying, “you sweep men away in the sleep of death; they are like the new grass of the morning—though in the morning it springs up new, by evening it is dry and withered.” (:5,6). He went on to say, “we are consumed by your anger and terrified by your indignation.” (:7). He would add the sad consequences of my wrath saying, “all our days pass away under your wrath; we finish our years with a moan. The length of our days is seventy years—or eighty, if we have strength; yet their span is but trouble and sorrow, for they quickly pass and we fly away.” (:9-10). It is because of my wrath that your life is filled with trouble and sorrow, it is truncated to 70-80 years on average, and before you know it your life ends and you “fly away, a euphemism for die. But why would I, a
loving God, be wrathful and bring such tragic consequences? Notice the next verse (:8). Moses explains why when he says, “you have set our iniquities before you, our secret sins in the light of your presence.” Sin, as I have often reminded you, is an archery term and it means to miss the mark. In archery the mark is the bullseye, and anywhere else on the target is “sin” for it misses the bullseye. In life, the bullseye that I set for all humanity is perfect obedience to me and my commands. Anything other than perfect obedience is sin and misses the mark with tragic consequences. Since I am the source of life and since I am without sin you can only have life through me and through a relationship with me. Since even one sin separates you from me, the natural consequences of even one act of disobedience is separation from me and an inevitable life of trouble, sorrow, truncated life spans and flying away through death. My wrath is the natural consequences to your sin. I can’t live with that sin and so being separated from me by your sin you inexorably decay and die. If you die physically in this condition it will be an eternal separation and an eternal experience of death. But Moses isn’t finished yet. He asks me, “teach us to number our days aright, that we may gain a heart of wisdom.” (:12). A “heart of wisdom” is one that desire and does my will. Moses is asking me to teach him, Israel and

QUESTION: If You Are A Loving God Why Are You Said To Be Wrathful?
Don’t you know that being wrathful and loving are not mutually exclusive? Wrath is intense anger, and anger when exercised properly and with the right motives is very loving. Judges, Parents, Doctors and even Nations, when they see injustices or wicked behavior or in the case of Doctors, cancer that is hurting others, must express loving anger and move to stop behavior that is wrong. To not be angry is to tacitly approve of wrong behavior and as a result encourage it, which if unchanged will be disastrous for all. This anger is vastly different from capricious, cruel, vindictive anger that seeks to hurt others in order to satisfy selfish and evil desires. I express loving anger to punish wrongdoing and thereby protect those who are wronged and motivate the wrongdoer to turn from their ways, which left unchecked will be deadly. Let me point you to a Psalm that was a song of Israel, which I had my servant Moses write to develop the concept of my righteous and loving wrath. In Psalm 90 in my book, the Bible, Moses begins by remembering how he and all Israel were my chosen people through whom
even you, to “number our days aright.” He asks that I teach how to add day after day in obedience instead of sinful disobedience. How is this possible when you have already missed the mark of perfect obedience? How is this possible when I, as a righteous judge must allow the penalty for obliterating my commands through repeated disobedience, instead of whimsically excusing away lawbreaking, like many in your Nation do? It is possible because Moses knew, as did all the prophets, that one day I would send my son, Jesus, who being perfect and eternal, would die to take your penalty for sin. He did this so that if you humbly confess your sins and received his payment, you would be freed from the penalty of death and my loving and righteous wrath. With my provision he could conclude such a desperate destiny by asking and expecting me to, “make us glad for as many days as you have afflicted us, for as many years as we have seen trouble.” (:15). You, like Moses and Israel, are a sinful people. Your nation is awash in despicable sin and my loving wrath is upon you. If you will acknowledge your sin and accept my provision for life instead of death, you too can be glad that wrath is replaced by eternal peace with me. SMITH from 1 P. Keyes, Henry W. Keyes,Jr. and Fransis Keyes, who was called Peter. It was revealed that Mrs. Keyes made her husband promise that if they had a girl, which they didn’t, that she could attend college. All three boys followed in the steps of their father by attending Harvard College. Though many of Frances Keyes’ writings were produced after her husband’s death she had made a name for herself in the literary world while he was still alive. She had in fact received an honorary Doctor of Letters degree in 1921 from George Washington University in Washington at the centennial celebration of the schools founding, being only the second woman in the university’s history to receive an honorary degree. She lived in Washington, D.C. with her husband during the years he served as a United States Senator (1919-1937) and in the 1920’s wrote a series of articles for Good Housekeeping magazine called Letters from a Senator’s Wife which was later published as a book. She was also a
Frances Parkinson Keyes with her children pictured in old newspaper photo contributing editor of Good Housekeeping. Her first book, Old Gray Homestead, was written while living at the New Hampshire home in North Haverhill and was published in 1919. A newspaper article from the early 1920’s described Frances Keyes with the following paragraph: “Gifted with acute observation, sprightly imagination, clearness and conciseness of expression, literary work is her diversion and her passion. Despite her duties as wife and mother, which have never been neglected, and amidst the social activities incident to her position as the wife
of one of the present United States Senators from New Hampshire and one of its former governors, she has found time to read, think, and write. Country and city alike have furnished material for vivid description by her facile pen and for stories of our modern American life.” And just so that statement is not misunderstood the Senator and the Governor in the quote are the same person; Frances had but one husband, Henry Keyes who died in 1938. After his death Frances traveled and lived in different locations, including overseas, that she wrote
about, living the latter part of her life in New Orleans and writing about life in the South. Mrs. Keyes, perhaps best known for the more than fifty novels she wrote, was also a writer of non-fiction books including some about her own life. Besides the honorary degree from George Washington University she received an honorary doctorate from Bates College in Maine. Though the exact origin of the term Gold Star Mothers seems uncertain its use seems to have begun in World War I and Frances Keyes is said to have endorsed this use in her first published article in the year 1917 with the title “The Pride and Form of Mourning.” Frances Keyes contributed articles to magazines and the early 1920’s newspaper clipping previously mentioned (possibly from the Boston Globe) mentions her articles in the Granite Monthly and the Atlantic Monthly magazines. She had membership in several organizations inclucding the Daughters of the American Revolution and the Colonial Dames. While in her mid-thirties she was serving as the vice president of the League of American Pen Women and a member of the

It has been indicated that her writings about social life in Washington while she and her husband lived there make interesting reading though some of the Washington people would like others to think of it as fiction though it is fact. In Letters from a Senator’s Wife Mrs. Keyes tells of a letter from a friend in New Hampshire writing, “Every time I hear from youand that’s usually indirectly- you’re doing some wonderful thing or meeting some wonderful people, and I’m afraid that the Connecticut valley is beginning to seem very provincial to you, and that you’ll forget your country cousins and your old friends. Yet not long ago you were living on a farm, just as I am, pretty lonely at times after having grown up in a big city...” Frances Keyes assured her friend that she had not forgotten her country cousins and friends. But she also wrote of the tension and hardship of a vigil at the telephone waiting for the results
of the New Hampshire senatorial primaries. Her husband was “pacing up and down the room, tired after a hard campaign.” She said “It was not until four in the morning that I answered the telephone for the last time, and turned to him almost sobbing out what I had to tell him. ‘ They say at Headquarters that you’ve won by a handsome margin.’ He snatched the receiver from me. ‘What do you call a handsome margin?’ he shouted; and then we burst out laughing together.” And for the Keyes family it was on to Washington and new material for Francis to write about. I read that some libraries are clearing their shelves of Frances Parkinson Keyes’ books. What was welcomed as modern upto-date literary work in the 1900’s is now old and to some not all an acceptable portrayal of society for today’s world.

with Valentine’s Day right around the corner here is a cookie to share with your sweetheart! Don’t let the name fool you, these cookies offer something for everyone. With a salted crispy crunch that paves the way to soft chewy toffee bits and chocolate chips, these cookies were a surprise in the making. For starters, the flavors imparted by the cocoa and bits of dark chocolate give this cookie balance when paired with the rich taste of creamed sugar, butter, and eggs. The sweetness is just right for those who like the taste of dark chocolate. And the hint of cracked sea salt adds that little extra “sumpin’ sumpin’” to the flavor profile that makes these cookies pop. The results can only be described as a decidedly delicious yet sophisticated decadent yum! These cookies are a testament to the fact that my taste buds are changing. As much as I love chocolate I will be the first to admit
that I have never been a huge fan of dark chocolate. And while I have always enjoyed salt, I have made great strides in significantly reducing my daily consumption over the last 15 years. The unexpected benefit of this accomplishment? I now have a heightened awareness of sodium, foods taste different, fresher, cleaner, without the full on assault of salt. And some, like dark chocolate, I find, actually taste better when paired with a touch of salt. I don’t know who it was that first figured out the delicious combination created from things like toffee, dark chocolate, and salt but whoever it was hit upon a winner. And honestly, I once was a naysayer about sea salt, pooh poohing it as some elitist haute cuisine trend. But honestly, I have come
to appreciate sea salt as something special. There truly is a difference between common table salt bought in a carton or canister and the sea salt you buy for a grinder or mill. But that is not to say one is better than the other. I think it would be more appropriate to say that each has its merits and can be beneficial when taken in moderation. So allow me a brief digression. Common table salt comes from the mining of salt deposits and is iodized, meaning it contains iodine. Now this may be an oversimplification of the process but table salt is salt dug from mines and processed to pulverize and refine it. During processing and refining, other minerals that are naturally found in these salt deposits are removed. Iodine is then added to the processed salt. Why? Good ques-
tion. Along with sodium (salt) being essential to the regulation of some bodily functions, iodine too, is essential for the human body as it helps the thyroid gland function properly. Simplistically speaking, the thyroid gland’s job is to help produce hormones that in turn work to regulate metabolic rate, growth, and development of the body. As well, it plays a role in both brain and bone development. (It must be true, I read it on the internet!) So, with just a small amount of iodine taken through the judicious use of iodized table salt, a healthy body can stay healthy. As noted earlier, while the making of table salt may add iodine, it removes other minerals, most notably magnesium, calcium, and potassium. These too are minerals that help to regulate and benefit the body’s complex systems. Sea salt however, is processed differently than table salt. While sea salt does not naturally contain iodine, nor is it typically added to it, it does contain those other beneficial minerals mentioned previously. But, the physiological benefits pale in comparison for it is sea salt’s coarse granular state, unlike table salt, that lends itself to a greater array of culinary uses. I did not know there was only one until my family was looking for a way to honor my dad’s memory with a gift. Of course, in a pandemic, some extreme measures are needed. But repressive government controls like China’s should not be our role model. We are being drawn into the Iranian vortex where the Islamic Republic can turn up or turn down the heat and pressure on 3,500 vulnerable American forces be they in Iraq, Syria or the Red Sea? The Biden Administration has been careful not to hit Iranian targets directly as to avoid a direct confrontation with the Islamic Republic. President Biden states, air attacks “will continue at times and places of our choosing” but added his country “does not seek conflict in the Middle East”. Iran’s President
Ebrahim Raisi vows his country will not initiate a war but shall “respond strongly.” Nonetheless events are pulling Washington deeper into the Mid East vortex as every day becomes closer to the November U.S. Presidential and Congressional elections. Though the Biden Administration had not responded to over 160 earlier attacks on American forces in the region; these Iranian proxies crossed the proverbial red line. Thus a Tough Guy approach with the firing of cruise missiles lighting up the Middle East night sky offers a dramatic backdrop to lessen domestic political pressures and to jolt Tehran into putting its Shiite militias back into their box. Will there be a war with Iran? Neither Washington nor Tehran want it but unintended consequences loom. But what about the cookies? Well, it was during a string of emails back and forth between me and a friend that I hit upon the idea for an English Toffee Chocolate Cookie. I suggested it would be the perfect finish for a snowy day after outside chores were done. Pictured in my mind’s eye was the 20/20 vision. The snow gently falling outside, a light dusting on the evergreens, as the pellet stove blazes away. There I am, reclined with my feet comfortably ensconced in

SALTED CHOCOLATE TOFFEE CRUNCH COOKIES Yield:34-36 Slightly Irregular Size Cookies Time: About 2 Hours
INGREDIENTS 1 Stick of Butter Softened 1 tsp. Baking Soda 1 Cup Light Brown Sugar ½ tsp. Salt (plus more for 2/3 Cup White Sugar “dusting”) 2 tsp. Vanilla Extract 1 Cup Dark Chocolate Chips 2 Eggs 3.5 oz. Dark Chocolate Bar 1 Cup AP Flour (72%) optional ¾ Cup Cocoa Powder ¾ Cup Toffee Bits

Grey with a dollop of cream, reading the latest hunting magazine. (Yes, I know, my life is filled with odd contradictions.) Beside me on the window sill is a plate of Salted Chocolate Toffee Crunch Cookies. What could be better? So I set out on a journey to find the cookie. It was a short trip. After typing into the search bar Chocolate Toffee Cookie and hitting enter, the screen exploded with cookies (the edible kind). I can honestly say that I envisioned a light tan (blonde) cookie dotted with
-Preparation & Cooking- In a mixing bowl combine butter and sugars and blend thoroughly. Add the eggs and vanilla and blend again until incorporated. - In a separate bowl combine cocoa powder, flour, soda, and salt and mix together. Add this by the third cup full to the creamed butter sugar mixture until the dry and wet ingredients are thoroughly combined. - Into a bowl combine the dark chocolate chips and toffee bits and add this to the cookie dough. - Break up the dark chocolate bar using a heavy spoon or spatula and add to the dough, mix with a heavy spoon until just combined. Refrigerate the dough for about one hour. - Preheat the oven to 375 degrees F. On a parchment lined cookie sheet, drop dough by the “spoonful” (small scoop) about 2 inches or so apart from one another. Put dough back into the fridge between cooking batches. - Bake for 13-14 minutes (time will vary depending upon the size of the cookie desired). - Cookies are done when the edges are crisp and the centers still look a bit soft. Remove and immediately lightly dust with cracked sea salt. - Let cookies rest on the cookie sheet for about 5-7 minutes before removing to a wire rack.

The sea salt was my own addition and I was not disappointed with the combination. Now, I will admit that I was a bit skeptical at first. And seeing these cookies come out of the oven after 14 minutes, mimicking hot lava, only enhanced my skepticism. There before me on parchment lined sheet pans lay 18 circular black blobs puffing, popping, and panting, nine to a cookie sheet. It is times like this that remind me of the 1931 classic Frankenstien, as I wanted to scream out,
“It’s Alive!” This molten lava stage is when you will want to dust the cookies with sea salt, by the way, so it will stick to the top of each cookie. Nearly five minutes later and the cookies are beginning to stabilize. It is time to separate any cookies that may have fused together during their time in the oven. Just drive the edge of a metal spatula between the two, no pushing or prodding side to side needed. Let them sit for a few more minutes before removing them from the cookie sheet and onto a wire rack. Once they have cooled completely they are ready for an airtight container. These Salted Chocolate Toffee Crunch
Cookies are the perfect companion for a lazy snowy afternoon by the fire. Freckled with cracked sea salt and bits of English Toffee for a crispy crunch and dotted with dark chocolate bits for a bitter chocolatey yum, these cookies are the real deal. They are, without a doubt, the perfect companion for the mature chocolate lover that dwells within each of us. With a warm beverage, a good book, and your toes toasty warm in their pink fuzzy bunny slippers, I cannot imagine a better way to enjoy this Simple Feast.

Fish tacos anyone? Thomas and Georgia with a couple prize white perch catches. MOORE from 1 from our meeting location. The surface of the ice was firm, with just a touch of snow that hadn’t melted and refroze, giving my fan cooled snowmobile just enough lubrication to prevent the plastic sliders from overheating. Ten or so minutes later we arrived on our spot and I began getting a few tip ups in the water so that there was some fishing happening while I set up the portable shelter and heater. While I was showing the family how to set a tip up, a fish grabbed the bait before I was able to even set the flag. I told them that this was either a good sign or a bad omen, and I don’t really believe in superstitions, so I was hopeful. I set three tip ups and turned my attention to the shelter, which is a Clam Outdoors X600 hub style shelter and takes just a few minutes to set up. I kept an eye on the tip ups out of the corner of my eye while I set up the shelter and some chairs, and got the heater hooked up and turned on. Things were quiet and I have
to admit that a little doubt crept into my mind about the fishing. I’ve lost count of how many times I have started with a bang, but quickly fizzled and I was really wanting to give my crew of first timers the best day I could. I got back to setting more tip ups and it didn’t take long before another flag popped. We made our way over to it and I showed them how I like to handle a tip up when the flag goes off. I have a few things that I do to make resetting them much easier, like the way I manage the line as they pull in their fish. Young Thomas was the first to pull in a fish and it was a whopper of a white perch, the biggest of the season so far. There was a brief lull in the action before another flag went up, and that was our pace most of the morning. Brief lulls followed by a small flurry, usually consisting of one or two flags going up in rapid succession or at the same time. When the trip was over, I sent my crew home with some tasty fish, which they had planned to share with
some other family members, and a lifetime of memories. In between catches and a few missed flags we spent the time chatting or snacking. All in all, it was a great day for all of us. They had fun catching fish and it wasn’t too cold to stay outside most of the morning. I had fun because it felt easy. I love my job, but like any job no matter how much you love it, some days it feels like work and some days it doesn’t. While the tougher days are definitely rare, days like this one are the ones that I keep in the back of my mind on the hard days when the wind is blowing or it’s below zero…or both. To The Editor: With hope for outside activities this winter, such as ice fishing, many complaints have been previously filed with NH Fish & Game. The problem–access to the lake. The culprit–circulators/agitators located under and around docks to purposely keep the lake open. Winter activities need cold weather and the ice needs to be safe. Unfortunately, many lake houses use circulators which, when pumping all together, create a current, making the lake only usable for large flocks of wintering ducks. We recently spoke to NH Fish & Game and were told that this has become a huge problem for people who want access to the lake, especially from their own property. It has gotten worse because some people let agitators run 24/7 when they close their house for the winter. The officer we spoke with had already begun to research laws that might remediate
the issue and we soon received the following information: TITLE XXII Use of Aqua-Therm Section 270:33 270:33 Heating, Agitating, or Other Devices in Public Waters; Safety Hazard. – No person shall put, place, operate, or cause to be put, placed, or operated in the waters of this state any so-called heating, agitating, or other device which inhibits or prevents the natural freezing of water, or forming of ice, and thereby impedes either the ingress or egress to or from the ice from any property other than that of the owner of the device…The provisions of this section shall be enforced by any law enforcement agency under the direction of the department of safety pursuant to RSA 106-A:14 and the department of fish and game pursuant to RSA 206:26. That was the end of that particular exchange. It turns out that if there is one party in the Middle East that wants a U.S.-Iran war less than the United States, it is Iran. Which is how deterrence works.
That’s what makes it so absurd that the Biden White House’s first Middle Eastern goal upon taking office was to destroy deterrence against Iran. The White House first declared itself in opposition to the Saudi regime, chiding Mohammed Bin Salman over human rights violations; the White House removed the Iranianbacked Houthis from the terror list; the White House tried to reopen Iranian nuclear talks. Despite the White House’s idiocy, SunniIsraeli peace seemed to be in the offing. In fact, as a result of the White House’s idiocy, Saudi Arabia had drawn closer to Israel than ever before as a defensive measure against a resurgent Iran. So Iran acted. Iran acted knowing that the Biden administration is cowardly in its approach
to foreign affairs -- that they’re willing to slowwalk aid to American allies under pressure but unwilling to countenance the credible threats of military force by which deterrence is established. And now the Biden administration continues to vacillate. After spending the months since Oct. 7 repeating ad nauseam an admonition to Iran not to escalate its violence -- “Don’t!” every Biden official, including Biden himself, has repeated -- Iran has indeed escalated its violence. It turns out that saying “Don’t” to aggressive foreign powers isn’t nearly as effective as saying “Don’t, or you may not be breathing tomorrow.” Napoleon Bonaparte once supposedly stated that his military policy was an “iron hand in a velvet glove.” When the
iron hand disappears, replaced with fluff, there isn’t much for Iran to fear. And in an election year in which the president deeply fears a further conflict with Iran, Iran isn’t the party being deterred. America is, at the cost of American lives.

Just as I have reported seeing birds not usually seen in New England during the winter, many other birds have been reported across the U.S. out of their normal range. “Strong El Niño conditions this year could bring surprises to the 2024 Great Backyard Bird Count,” Patrick Nadeau, President and CEO of Birds Canada, said in a release. “Temperatures are likely to be warmer which could have an effect on the timing of spring migration and influence food availability. There may be more sightings of unusual visitors wherever you’re looking for birds.” In addition, New Hampshire Audubon will hold its annual Backyard Winter Bird Survey on Saturday, Feb. 10 and Sunday, Feb. 11. The aim of the survey is similar to that of the GBBC: to get an idea of winter bird population trends. As always, let me know if you participate and if you have any unusual sightings. If the recent emails I have received are any indication, there should be some interesting sightings on these counts. Pat from Sandwich wrote to say an eastern towhee, as well as a pair of Carolina wrens, has been visiting this winter. Towhees, similar to catbirds and hermit thrushes, typically migrate south during the winter, but a few individuals may try to stick out the New England winter. Lenny from Green-
field had a yellowbellied sapsucker pay a visit, along with a northern flicker, redbellied woodpecker and some purple finches. Norma from Spofford has a group of eastern bluebirds visiting her feeder for mealworms. She also has a lone redpoll visiting. As I mentioned before, it should be an interesting month for birdwatchers.
